Dining Outside the Home: Unko’s Kitchen in Hanapepe, Kauai

Dining Outside the Home: Unko’s Kitchen in Hanapepe, Kauai. “Ohana”, in Hawaiian, translates to “Family”. And Unko’s Kitchen is the epitome of family. From the time-honored recipes to the helpful wait staff, everyone serves according to their talents and gifts. After all, this is their legacy. Open weekends only at mealtimes, means you make a date and don’t be late. The Kalua Taco Salad is a heaping plate of Hawaiian-seasoned slow-cooked pork served in a crunchy flour tortilla bowl filled with fresh greens, spicy salsa, shredded cheese, black olives, and sour cream. The menu features catering favorites in generous portions for carry out and “Ohana” gatherings. Life is Good.

Dog-Day at the Beach

Dogs love to play at the beach. Running through the water makes them very happy. As a master grabs a frisbee and tosses it across the shoreline to be retrieved by a shaggy red Irish Setter, it’s enough to pause a pick-up game of sand volleyball. Heads turn. Everyone waits to see it happen. When it does, you hear “Good boy!” as the dog races back, tongue dangling, and tail wagging ready to go again. I watched as two terriers fought over a piece of driftwood a guy tossed into the ocean. The smaller of the two was more aggressive, obviously the Alpha Dog, since it would clamp its teeth around the stick and shake its head back and forth until the larger one backed down and relinquished it. Napoleon complex? I thought all dogs loved water, but upon closer scrutiny, I saw a ten-year old girl cradling her pet spaniel as she stood waist deep with salty waves splashing her mid-section. This dog had a mortal fear of water and had no intention of entering the unpredictable ocean. I wonder if she assured it all dogs instinctively know how to “doggie paddle”. At least, I thought they did. On the other hand, maybe this species of man’s best friend tended to sink like a sack of bricks when submerged. I’ll have to ask “June” the next time I see her.

Sipping Tiki Cocktails

“I see you two are working on your tan.” The Slovakian accent came from over our shoulders as we were walking hand in hand across the muted grey slate patio at the beach resort. We turned in unison to be cheerfully greeted with open smiles by Andrea and her mother. Regaining our composure from the aftershock of being recognized from behind took a split second before we settled into charming introductions and comfortable conversation.   (Andrea and her husband are the discerning owners of our luxury condo, residing above us on the second and third floors as their own year-round permanent residence.)

Although Andrea’s mother (Matka) spoke no English, we discovered she was visiting her daughter for the winter months to escape from the cold, snow, and harsh weather of her native homeland. The wrinkles on her eyes were unique and lightly creased as if they were made for her. In unfeigned fashion, her universal smile was as refreshing as a couple of Mai Tai tiki cocktails sipped poolside. She went on to point to her right forearm while Andrea translated her message: “Matka was working on her tan as well.” It just goes to show you, the inner child in all of us is willing to leave our cares and winter coats behind to head for a paradise of luminous sand, sparkling blue water that stays summer warm, and golden rays of sunshine.

This Old Man of the Sea

The slender European stood sentinel at the water’s edge one foot barely touching the base of a black lava boulder, the other steadying himself against the shifting sand. Wave after wave broke ashore turning soothing colors of turquoise, aqua and finally sea foam green. His short red swimming trunks were marked with a tiny striped flag, no doubt proclaiming pride of his native homeland. As he raised his hand to shield his timeworn eyes from the reflecting sun, he squinted at the horizon. Following his gaze, I saw a tiny silver-haired pinhead bobbing up and down on each incoming wave. This Old Man of the Sea who radiated wisdom and experience stood there protectively keeping watch on his cherished partner, the love of his life, as she slowly and methodically swam toward him.

Gift-Wrapping Like a Pro

Gift-Wrapping Like a Pro!When fellow blogger, Bluebird of http://bluebird4udaily.wordpress.com

encouraged me to share my love of gift-wrapping in a “How To” post on my blog, I couldn’t resist! Supplies are simple: satin ribbons, decorative boxes, colorful berries, gift tags, quirky embellishments, and framed photographs. Put them all together and you have a captivating gift-wrapped package that will have your friends and family adoring its beauty rather than trying to sneak a peek inside. Place the the gifts under the Christmas tree or on the fireplace hearth to spread excitement as well as anticipation of an upcoming event. Decorated packages become “Instant Décor”. Interesting boxes can be found anywhere all year long. Often greeting cards, scented candles, exotic fragrances, and luxury beauty products are packaged in unique and vibrant boxes. It’s a shame to discard them after opening when you can go “green” and give them a facelift as a phenomenal package for someone else. Satin ribbon is classy and elegant, in my opinion. Choose polka dots, geometrics, or muted tones. Make single or multiple bows. Angle cut the ends to create a nice finish. Incorporate any embellishment such as a sprig of rosemary, a pine cone, a branch of holly, or an interesting ornament. Let your creativity shine! Sometimes I attach a gift tag, other times I take a snapshot of the recipient and put it in a miniature frame. Who doesn’t love seeing photos? Afterwards, the frames hang on the tree as memorable ornaments. Just be sure to include the date on the back for reminiscing years later. Whatever you design, have fun and be creative. Anything goes!

Play At Your Own Risk

“Nana, look at me!”, squealed Kamdyn, the active blonde-haired preschooler. She and her nine-year old brother, Landen, had forfeited an afternoon of sitting at home playing Xbox action games and perusing the internet for baby videos on YouTube. They tumbled instead into the back seat of the late model car to spend six hours with Grandpa and Nana.  Currently they were among hoards of kids heartily involved in physical activity at the newly-opened “Rec Plex”, an indoor recreation center. Kamdyn was hanging upside down on the parallel bars swinging hands-free as her ponytail nearly brushed the cushioned floor mat. Her eyes danced with laughter as she viewed the world topsy-turvy.

Meanwhile, Landen was buckled into harness gear ready to challenge a sequence of towering rock walls before him.  Upon closer scrutiny, obstacles were placed from floor to ceiling designed to test balance and agility. Some steps whirled creating a false sense of security while others slanted causing the climber to anchor sure footing before ascending further. Climbers Beware. One false move could trigger a misstep resulting in a safety harness free-fall back to the base. Now it was Landen’s turn.  He drew a deep breath and focused his attention on the summit above him. Within seconds he began the vertical ascent. In synchronized motion, he calculated each step along the way, testing the objects for stationary weight resistance. The upward slope was jumbled with hand grips as well as distance markers. Halfway to the top he paused, looked in our direction for moral support, and then climbed higher.  Once he reached the peak, he grabbed the ringer to sound the brass bell before scaling back down the rock wall. A quick victory cheer and he was on to the next challenge.  Meanwhile, Kamdyn cart-wheeled acrobatically down the sloping trampoline ramp leading to the gigantic pool of foam blocks.  “Nana, I did it!”, she shouted afterwards in a thrilling voice. It just goes to show you, the youth of today are willing to leave technology behind in lieu of normal physical activity.  In their innocence, they strive for encouragement as well as an outlet to gain our attention and approval.
