What’s Cooking in Gail’s Kitchen? Simple Sensations: Zesty Fish Tacos. The first time my California friend ordered Fish Tacos, I was like, “Whaaaaaaat??” After all, being a Midwestern girl, fish was caught to be dredged in beer-batter or lemon-peppered, deep fried, and eaten with a side of French fries. Not exactly good for the heart, but tasty. Well, my taste buds have matured over the years and now I tend to cook a little healthier without sacrificing great flavor…..which brings me to the Recipe of the Day.
ZESTY FISH TACOS 
Ingredients:
2 Tilapia fillets

1 egg

2 tablespoons lime juice

2 tablespoons flour

2 tablespoons yellow cornmeal 

2 tablespoons Panko seasoned bread crumbs

1/8 teaspoon garlic powder

1 tablespoon crushed red pepper flakes

1/4 teaspoon sea salt

1/8 teaspoon black pepper 

2 tortillas, flour or corn

1 cup shredded broccoli-carrot blend

1/4 cup salsa

1/4 cup Greek yogurt

1 green onion, snipped
Instructions:
Preheat oven to 400°. Mix egg and lime juice in a shallow dish. On a sheet of waxed paper, use a fork to blend flour, cornmeal, Panko crumbs, salt, pepper, garlic, red pepper flakes, cumin powder. Dip fish fillet in egg mixture to cover. Then coat with crumb topping. (This can be done more than once for an extra crispy crust.) Place breaded fillets on a greased baking dish. Bake for 8 minutes. Flip over bake 4 minutes longer. If you prefer a crispier crust, broil 4 minutes longer. Watch carefully. Fill each tortilla with fish, broccoli-carrot blend, salsa, and Greek yogurt. Garnish with green onion snips.

Ask the waiter for the special condiment caddy. Among others, you’ll get a trio of Hawaiian Chili Pepper Sauces for a gratifying south-of-the-border taste extravaganza. These sauces are made locally by the Kauai Juice Company in the heart of Kapaa. Sample between the Chocolate Habanero, the Kiawe Smoked, and the Mango Garlic Ghost. Trust me, you’ll know. The grilled flour tortillas come with shredded cabbage and an avocado mousse to balance out the heat. Go strong…or go home!

Dining Outside the Home: Sushi Bushido in Kapaa, Kauai!  Is it a Japanese art gallery in a restaurant or a Japanese restaurant in an art gallery? Take a peek inside and see. You will be amazed! Located in the center of Old Kapaa Town in a place known as the “Dragon Building”, Sushi Bushido is a blend of everything traditional in local-style sushi through contemporary creations in dinner entrées. And the art, you wonder? The artist has a tiny studio next door, which is why an entire red wall inside Sushi Bushido is dedicated to her paintings. That’s what I call a “Win! Win!” for both parties. Check out the Sushi Bar, specialty rolls, and Tempura dishes along with a nice selection of beer and Sake. Trust me, you’ll be in good company. 

Take a Walk on Hanalei Pier

The scenic view on the North Shore of Kauai is right out of a Hollywood movie. And that film is the 1957 Rodgers and Hammerstein classic, “South Pacific”. The Hanalei Pier was originally built in 1892, when it was used to transport taro and rice to Honolulu. Made of wood at that time, it became too difficult to maintain the pier in a tropical climate. Thus, it was replaced with a concrete finger deck and a framed shed roof in the 1940s until Hurricane Iniki damaged the 340-foot pier beyond use in 1992. Today, the local history and its iconic charm continue to lure curiosity seekers as well as vacationers and beach lovers. Hanalei Bay is the largest on the island of Kauai with its 2-mile long crescent moon and white sandy beach. Known to natives as Black Pot Beach, it can be seen littered with avid fisherman, energetic surfers, carefree picnickers, and leisurely landlubbers. We mustn’t forget the romantic lovebirds who stroll to the end of the pier, gaze into each other’s eyes, share a wet kiss, and then snap a Selfie against the opulent aqua-blue waters. Hanalei Pier does Hollywood proud.

Dining Outside the Home: JJ’s Broiler in Lihue, Kauai!  When visiting a tropical island, it’s not unusual to expect fresh fish daily as well as locally-grown ingredients. Open the menu at JJ’s Broiler and see. “Voted Island’s Best” Fish and Chips is a natural choice, in my opinion. A generous platter of Pacific Mahi Mahi engulfed in a crispy beer batter coating is paired with seasoned french fries for a salty crunch that does not disappoint. The house tartar sauce is a nice complement. Take advantage of the spectacular ocean view. Dine on the outdoor terrace for an open-air experience. Ignore the feathered friends wandering around. They simply cannot resist a crumb or two that has fallen to the ground.

Dining Outside the Home: Garden Island Grille in Old Kōloa Town, Kauai!  Ramble down the boardwalk of Old Kōloa Town to where you see remnants of the theatre that once was the social gathering spot of the community. Follow the signs to the Garden Island Grille which now occupies an old plantation site some still believe is visited by lingering spirits. Now a restaurant that specializes in seafood and fresh island fish, the Garden Island Grille features fresh island-grown products, including organic cocktails. Sample the Seared Ahi seasoned with volcanic spices and pickled ginger. Move on to the fish tacos, lightly grilled corn tortilla shells stuffed with the catch of the day, shredded cabbage, and chipotle-lime sauce. Yum. Stick around for the live entertainment. It’s worth another round of plum sugar-rimmed margaritas.

Dining Outside the Home: Kalapaki Joe’s Sports Bar in Lihue, Kauai!  Known as the “Westernmost Sports Bar in the U.S.”, it is a favorite gathering place for fun and entertainment. And the extensive menu is pretty tasty, too. I chose Ahi tuna seasoned with a toasted sesame furikake, then grilled to perfection and laid on a bed of shredded cabbage and white rice. Feel the kick? That’s wasabi cream, you’re newest addiction. Don’t hate me. These volcanic spices are what makes this plate an island favorite. Come early, relax, chat a bit, and take advantage of Happy Hour specials before the crowd sets in and the games begin. Well done, Kalapaki Joe’s.

Dining Outside the Home: Merriman’s Gourmet Pizza & Burgers in Poipu, Kauai!  When you know the fish is caught fresh that day, it’s easy to choose the chef’s choice, especially when it comes highly recommended. There was a time I could not imagine ordering a fish taco, let alone eating one, but those days are gone. I now seem addicted to them. Perhaps it was the flaky striped marlin, or the fire roasted tomato salsa, the incredibly fresh avocado, and sliced jalapeño peppers. No matter how you serve it up, which happened to be in a crispy corn tortilla shell, the results were astounding! That’s perfection, in my opinion. I appreciate the farm-to-table concept Merriman’s Gourmet Pizza and Burgers holds true. It rules.
