Water Spouts on the Horizon 

“The whales are out! I’ll bring some binoculars to your table,” exclaimed the casually dressed blue-eyed waiter in flip-flops as he offered us two menus. It was “Happy Hour” at the Beachwalk Restaurant and Grill on the east side of the island and Markus wasn’t referring to the side effects of their signature Bloody Mary cocktails. He was all-Kauaiian native with his ivory-carved octopus medallion choker and long dark hair tied back into a knot at the nape of his neck. 
Humpback whales can be seen from shore at any number of locations around Kauai, but peak season is during the winter months of January and February when most of the calving occurs for them to mate and birth their young in the warm, tropical waters. It was a little premature for their inaugural appearance, but we still caught a glimpse of their water spouts on the horizon. 
Presently, we had a nice balcony front-row seat for watching seaside activities. When the humpback whales refused to make another appearance, we simply observed a class of elementary schoolchildren participating in Field Day activities as tag-team cheers exploded from the sidelines. 
Roosters with bright red combs and plumed tail feathers strutted back and forth demanding attention until an ambitious tourist tried to capture their images on film. Only then would they kick up their taloned feet and strut away crowing a “cock-a-doodle doo” in defiance. 
By now the famed fish and chips entree had appeared and we both sunk our teeth into the depths of pinnacle exclamatory utterance, practically rolling our eyes back in culmination. If this wasn’t a taste of Heaven, then we had no idea what was.   
We sat there until the afternoon delivery of sweet onions, fresh garlic, and garden produce arrived and our appetite had long been sated. Five bamboo swizzle sticks scattered topsy-turvey on the signature cocktail napkins were all the evidence left remaining of an afternoon spent in open-air tropical bliss and latter day delight.

NIGELLA SEED CHEESE BITES
Ingredients for Dough:

2 1/2 cups flour

1 cup butter, softened 

1-8 ounce Neufchâtel cheese, room temperature 
Ingredients for Filling:

2 cups Nigella seed string cheese

1/2 cup Colby cheese, finely shredded 
Instructions:

Preheat oven to 350°. Combine Neufchâtel cheese and butter. Mix well. Add flour and stir until smooth. Cover in plastic and refrigerate for one hour. Remove and divide into four equal-sized balls. Roll one ball at a time into a flat shape larger than a pie plate. Sprinkle with cheese. Roll up and fold ends to seal. With seam side down, transfer to a baking sheet. Repeat with remaining dough balls. Using a knife, slit each loaf where it will be cut into serving pieces. Bake 30 minutes or until golden brown. Slice and serve.*
*As a garnish, I sprinkled a mixture of Parmesan cheese and dill weed over the top during the last 5 minutes of baking.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Judy’s Pumpkin Sea Salt Caramel Sauce! I always get excited when I receive the gift of food. My friend, Judy, thrilled me beyond measure when she shared this treat from her kitchen. It’s the perfect combination of sea salt caramel and pumpkin purée. It not only transforms a cup of coffee into a pumpkin spice addiction, but it also tastes incredible on a breakfast muffin. If you ask my husband, he’ll say you can eat it over ice cream by the spoonful.
JUDY’S PUMPKIN SEA SALT CARAMEL SAUCE 
Ingredients:

1 cup sugar

1 tablespoon water

3/4 cup heavy cream, room temperature 

4 tablespoons unsalted butter, melted

1/3 cup pumpkin purée 

1/2 teaspoon cinnamon

1/8 teaspoon nutmeg

1/4 teaspoon sea salt

1 teaspoon vanilla
Instructions:

In a 2-quart heavy-bottomed pan over medium-low heat, combine sugar and water. Bring to a boil, stirring often to avoid scorching. Continue cooking until sugar turns light amber in color and all sugar crystals have dissolved, about 8-10 minutes. Remove from heat. Add butter and mix well. Change utensils to a heat-resistant whisk and quickly whisk in the cream and pumpkin. Lastly, add cinnamon, nutmeg, sea salt, and vanilla. Whisk until smooth, removing all lumps. Transfer to a jar. Cool at room temperature, seal, and store in the refrigerator.

Seaport Village is Waterfront Destination in San Diego, California! Laughter fills the air as hand-carved animals move to and fro on an 100-year-old lighted carousel. Anyone can ride, you know. Nearby calypso music captivates passersby crisscrossing the food court on a quest to step into the fudge shoppe for a tempting sample. Will it be a ‘Cookies and Cream’ concoction or the ‘Traditional Chocolate’? Perhaps both. Several walking paths wind past marble statues in waterfront fountains, yachts awaiting carefree guests, open-door shops, interesting art galleries, and aromatic eateries. Entertainment takes all forms from sword swallowing to pet cockatoos and parrots perched on the shoulders of a jolly pirate. As you meander towards the bay where the sunset is mesmerizing, the lapping waves provide sound therapy.

Dining Outside the Home: Little Italy Mercato Farmers’ Market San Diego, California! Three city blocks were filled with artisans and tent vendors. California growers sold bushels of farm fresh produce while gourmet chefs filled platters of specialty foods offer tempting samples for patrons walking by. Wide selections of fresh cut flowers and seasonal arrangements brightened up street corners. From European linens and handmade soaps to sushi-filled sea urchins and artisan breads, the weekly Little Italy Mercato Farmers’ Market is well worth the walk. 

Appetizers to Desserts 

Everything has a beginning and an ending. Food is no different. It sets the stage for informal gatherings, romantic interludes, festive celebrations, and grande finales. From the first bite of crudité to the last sip of coffee, the entire experience can be extraordinary. That’s exactly what Leroy’s Kitchen is all about. They partner with local farmers to create specialty dishes from seasonal ingredients for a flavor explosion in every bite. It doesn’t hurt that they’re a block from the ocean and dishes appear served farm-to-table on a salty breeze. Portions were so generous I didn’t dare take a peek at the Dessert Menu. Sounds like a great reason to return.

Dining Outside the Home: Café Coyote in Old Town San Diego, California! Nestled in the heart of the city, at the site of the oldest settlement in San Diego, you can stand on the street corner and inhale the spicy aromas. Turn one way and you’ll be lured by mariachi music. Turn the other, and you’ll catch a glimpse of smiling señoritas making handmade tortillas from scratch sold warm to those passing by. Our table on the open patio at the Café Coyote afforded us the advantage of an authentic Mexican meal with a view that entertained. After all, this was the “Day of the Dead! (Dia de Los Muertos).

The rustic atmosphere enveloped us as we settled into a cozy booth where the anniversary celebration began with chilled margaritas.
