Too spicy? No worries. Cool things down with a dollop of tangy crema. After a leisurely meal, carry on with a short walk to the beach for a sensational sunset.

Country Casual Cravings

Going through a kitchen remodel has to be one of the most challenging home improvements ever. Symmetry and balance are important. Changing the layout was not an option since it remains functional as an open-ended galley kitchen including a central corridor. In fact, it all began being a simple goal to modernize the kitchen cabinets from 1970s dark wood to the bright airiness of antique white. As often happens, one thing leads to another. Before long we were updating stainless steel appliances, replacing countertops, leaving the double sink behind in lieu of a large single basin, choosing black matte cabinet pulls with copper accents, and more. One constant remained: the authentic dark hardwood flooring. To this day, it endures as the solid foundation from the time it was installed. Now that the kitchen remodel is complete, is it a state-of-the-art gourmet kitchen, you wonder. Not at all. But it has been designed around my needs, which makes it perfect. Everyone has childhood memories that conjure up nostalgia. For me, fast food takeout and restaurant dining was less common back then, reserved mostly for special occasions. Stay-at-home moms took great pride in budget-friendly menus stretching groceries to the max. Waste not, want not. My home economics teacher encouraged me to serve colorful food on the plate. One of the expressions I used to hear from adults was, “Eat everything, so you can be a member of the Clean Plate Club.” Sound familiar? Mealtime became an emotional all-star event tapping into our sense of accomplishment. Edamame Spicy Stix

What’s Cooking in Gail’s Kitchen? The Chow Down: Edamame Spicy Stix! You’ve probably been to a restaurant where the server placed a bowl of edamame on the table, in lieu of the bread basket. Next to it was an empty bowl for placing the discarded pods. If it was a first for you, no worries. Friends, this is one time you are allowed to eat with your fingers. Truth. Simply pick up one pod with your fingers and put it in your mouth, not letting go. Bite down with your teeth and slide the beans out as you pull the pod away. Tender green beans, about the size of peas, will drop onto your tongue. Chew and enjoy the flavor sensation. Easily toss the pod into the empty bowl and reach for another. Who would’ve thought eating edamame could be this much fun?

EDAMAME SPICY STIX

Ingredients:

12-ounce bag frozen Edamame with sea salt

2 tablespoons butter, divided

3 garlic cloves, minced

1/4 seasoned salt

1/8 teaspoon red pepper flakes

1 teaspoon sriracha sauce

Instructions:

Microwave edamame according to package directions. Let stand for one minute. Open package and set aside. In a cast iron skillet, melt one tablespoon butter over medium heat. Add minced garlic cloves, seasoned salt, and red pepper flakes. Cook for 1-2 minutes, stirring constantly. Reduce heat and add cooked edamame. Transfer to a serving bowl. Fit with remaining butter. Drizzle with sriracha sauce. Serve immediately. Remove shells before eating. Do not consume pods.
