What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Jelly Roll Cake! Sweetness never tasted so good. The best part about this classic cake recipe is the filling can be whatever flavor you wish it to be. I used all-natural Red-Cherry Swiss Preserves for a fruit flavor resulting in a gourmet experience. It created an international glimpse of Switzerland without setting foot on an airplane. 
JELLY ROLL CAKE
Ingredients:

3 eggs, room temperature 

1 cup sugar 

1/3 cup water

1 teaspoon almond extract

3/4 cup flour

1 teaspoon baking powder 

1/4 teaspoon salt

1/3 cup almonds, sliced

2/3 cup jelly or jam, any flavor

Powdered sugar
Instructions:

Preheat oven to 375°. Grease and line a 10″x15″ jelly roll pan. Beat eggs until thick and lemon-colored, about 5 minutes. Gradually add sugar, water, and almond extract. Mix thoroughly. Add flour, baking powder, and salt until well blended and no lumps remain. Pour into pan and sprinkle with almonds. Bake 12-15 minutes. Loosen cake from pan and invert onto a tea towel generously sprinkled with powdered sugar. While cake is hot, roll up. Refrigerate one hour. Unroll cake and top with jelly or jam, spreading to edges. Roll up cake again, sprinkle with powdered sugar, cover in plastic wrap and refrigerate two more hours before serving.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Belgian Waffles! Call me crazy, or call me lazy, but truth be told sometimes you need to take a shortcut in preparing a meal. Just because you’re short on time doesn’t mean you have to sacrifice taste. Here’s a perfect example: Belgian Waffles made from starter pancake mix in a box. Add a few extras like pure vanilla and fresh fruit to turn an ordinary waffle into a spectacular one. Make a batch for breakfast, brunch, or dinner. Let the cheers begin!
BELGIAN WAFFLES
Ingredients:

2 cups Log Cabin All Natural Pancake Mix

4 tablespoons oil

2 eggs

1 1/3 cups milk

1 tablespoon vanilla extract 
Instructions:

Preheat waffle iron. Combine pancake mix, oil, eggs, milk, and vanilla in a blender. Blend 30 seconds until lumps are removed. Let batter rest for a few minutes. Grease waffle iron if necessary. Pour batter by scant cupfuls onto center of hot waffle iron. Bake 3-5 minutes or until steaming slows and waffle is golden brown. Carefully remove. Serving suggestions: Fresh fruit, melted butter, dark amber maple syrup, pecans, whipped cream, and a side of bacon.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Ina Garten’s Fruit Crunch Sundae! The Barefoot Contessa is a familiar face on the Food Network these days. Not only does she offer great ideas for any meal, but she makes them seem incredibly simple. Today’s recipe comes from a recent episode where Ina wanted to serve up a special breakfast for her husband. I like the idea of taking everyday food and turning it into something extraordinary. By baking a batch of crunchy granola and storing it in an airtight container, single servings can be assembled in a flash. Use whatever fruit is on hand to make it unique. 
INA GARTEN’S FRUIT CRUNCH SUNDAE 
Ingredients:

1 cup old-fashioned oats

1/2 cup shredded coconut 

1/2 cup sliced almonds 

3 tablespoons vegetable oil

2 tablespoons pure honey

4 strawberries 

1/4 cup blueberries 

1/4 cup pineapple tidbits

1 cup Greek yogurt
Instructions:

Preheat oven to 350°. Toss the oats, coconut, almonds, oil, and honey together in a large bowl until completely combined. Pour into a baking sheet and bake until mixture turns golden brown. Stir occasionally. Remove the granola from the oven and allow to cool. Stir once. Combine the strawberries, blueberries, and pineapple in a bowl. Using stemmed glasses or parfait glasses, layer granola, yogurt, and fruit until full. You may alternate ingredients to repeat layers. Serve immediately.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Bleu Plate Special! As the day winds down, the kids are fed, and the sunset turns to burnt-sugar orange, take some time out for yourself. Make a delightful cheese plate filled with inviting textures balanced by a range of flavors from aged and smoky to salty and sweet. Pair with a glass of sweet wine (or fruity spritzer) for an amazing taste sensation. Sink back into a comfy chaise lounge and let soft music fill the room. Remind yourself this is a classic French dessert, and prepare to be pampered. 
BLEU PLATE SPECIAL
Ingredients:

Wedge of Bleu Cheese (or any aged cheese variety)

Bunch of Green Grapes (or any seasonal fruit)

Smoked Almonds

Water Crackers (or crusty breads)
Instructions:

Choose a platter where all ingredients can be arranged in a simple way, leaving space between choices. Identify cheeses if offering more than one kind. Rule of thumb: Place one cheese knife or spreader for each type of cheese. Keep it simple.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Jam Session! This recipe guarantees to be music to your ears. For once, you can make a single jar of your favorite fruit jam without spending an entire day in the kitchen. Simply put: This recipe is an answer to a time-saving prayer. Adapt to whatever is in season. If your craving today is raspberry, or strawberry, or apricot, or peach, have a jam session in minutes. 
JAM SESSION 
Ingredients:

2 1/2 cups fresh peaches; peeled, diced, and stone removed 

1/2 cup sugar 

1 tablespoon white wine*

3 discs of spiced ginger, slivered 

2 cinnamon sticks 

1 lemon

Pinch of sea salt

*May be substituted for water. 
Instructions:

Pulse half the peaches in a food processor to make the fruit chunky. Transfer to a 2-3 quart saucepan. Add remaining diced peaches, sugar, wine, ginger, and juice of half the lemon. Slice a section of the lemon with rind on, remove seeds, and drop it into the pan. You will fish it back out later. (The lemon is a natural thickening agent.) Add two cinnamon sticks. Mix well. Cook the peaches over medium-high heat at a boil. It should begin to thicken. Reduce the heat to low and continue cooking until mixture becomes jam, about 30 minutes. Remove from heat and let it sit for 10 minutes. Before transferring to a jar, remove the cinnamon sticks and lemon wedge. Store in the refrigerator.

What’s Cooking in Gail’s Kitchen? Home Cooking: Vanilla Frosting-Dipped Fruit and Cookies! Sometimes providing a last minute dessert is easier than you think. The trick is making others believe you spent hours creating such a masterpiece. Choose your favorite fruit, cookies, and frosting. (Now some may really need to cut corners and buy the ready-made frosting as well. I’ll pretend that doesn’t happen so I can share my easy buttercream frosting recipe with you today.)
VANILLA FROSTING-DIPPED FRUIT & COOKIES
Ingredients:

1 pound strawberries, whole with stems

1 package Strawberry Macaroons

2 ounces white nonpareils

12 bamboo skewers
Frosting Ingredients:

1/2 cup butter

3 cups powdered sugar

1 teaspoon vanilla extract

1 teaspoon almond extract

1-2 tablespoons milk, warmed
Instructions:

Cream butter and sugar on low speed with hand mixer. Gradually add extracts. Blend until smooth. Add enough milk to keep it creamy, but not runny. Spoon a portion into a small microwave-safe dish and warm frosting 10 seconds in the microwave. While the frosting is warm, dip a piece of fruit or a cookie into the bowl. Using a swirling motion, rotate each piece to cover. Immediate dip into the nonpareils to coat. Place on a baking sheet lined with wax paper. Repeat until all desired pieces are covered. Refrigerate for half an hour or until firm.

What’s Cooking in Gail’s Kitchen? Home Cooking: Peachy Possibilities! With Summer upon us, nothing is more refreshing than fresh peaches. And the options for devouring them are endless! At first sight, you may be tempted to sink your teeth into the juicy sweet fruit as its nectar drizzles down your chin. But if you keep your willpower in check, the benefits are rewarding.  
Here are a few ideas:  

* Adding fresh peaches to your favorite salsa intensifies the flavor. It’s a perfect compliment to spicy jalapeños and tomatoes. 

* As you prepare nutritious oatmeal, dice part of a peach, then sprinkle it with cinnamon before preparing the cooked cereal in the microwave. It’s also a convenient shortcut to peach cobbler. 

* For that afternoon pick-me-up, toss a couple of frozen peaches, bananas, and strawberries in the blender. Simply add milk, a splash of orange juice, and ice cubes. Voilà, a Smoothie.

What’s Cooking in Gail’s Kitchen? A Second Helping of Yogurt Cups! Talk about healthy, nutritious, calcium-rich, and yummy! The best part is you create the parfait of flavors bursting in every spoonful. Will you make it Raspberry-White Chocolate? Strawberry-Kiwi? Banana-Chocolate Chip? Or Pineapple-Macadamia Nut? I chose four different combinations. The possibilities are endless. 
YOGURT CUPS
Ingredients:

1 16-ounce carton of Greek yogurt 

Assorted Fruit (blueberries, peaches, mandarin oranges, and Rainier cherries)

Mini marshmallows 

Dried cranberries

Toasted Coconut Flakes

Almond Slivers

Cinnamon Powder
Instructions:

Divide yogurt into individual servings. (If you like fruit on the bottom, layer some first.) Then assemble combined flavors together. Shown in photo from the top and going clockwise are:

What’s Cooking in Gail’s Kitchen? A Second Helping of Wonderful Waffles! This is perfect for that weekend brunch when it’s fun to plan things a little different. Add fruit and nuts, sausage or bacon, but top it off with real maple syrup. Then serve with mimosas on the side and you’ll be smiling all day long!
WONDERFUL WAFFLES
Ingredients:

2 cups flour

3/4 cup sugar

3 1/2 teaspoons baking powder 

1/2 teaspoon sea salt

1 1/2 cups milk

1 cup butter, melted 

2 eggs, separated 

1 teaspoon vanilla
Instructions:

Preheat waffle iron. In a bowl, combine flour, sugar, salt, and baking powder. In a second bowl, lightly beat egg yolks. Add milk, butter, and vanilla. Mix well. Stir into dry ingredients until moistened. Beat egg whites until stiff peaks form. Gently fold into batter. Spray the waffle iron with nonstick spray. Pour enough batter to just cover the waffle grid. Bake waffles until crisp on the outside, yet light and fluffy on the inside, about 2 to 3 minutes. They will appear golden brown. Sprinkle with powdered sugar and warm syrup. Serve immediately.
