NEUFCHÂTEL CRAB DIP
Ingredients:

6-ounce can crabmeat, drained, flaked, and cartilage removed 

1/2 cup lobster meat, chunk style

1 green onion, snipped

1 teaspoon dried dill weed

1 teaspoon lemon peel, finely shredded 

1 teaspoon lemon juice

1/2 cup mayonnaise 

1/4 cup Greek yogurt 

1/2 cup Parmesan cheese, grated

1/8 teaspoon garlic powder 

1/8 teaspoon seasoned salt

1/8 teaspoon red pepper flakes (optional)

1/4 cup Jalapeño Confetti Jelly* 

15-count package miniature phyllo dough shells

Fresh dill sprigs
Instructions:

Preheat oven to 350°. Arrange phyllo shells on a baking sheet. Bake 5-7 minutes until crisp. Remove and set aside. In a medium bowl, toss crabmeat, lobster, and green onion snips in dill weed, shredded lemon peel, and lemon juice. In a another bowl, combine mayonnaise, Greek yogurt, Parmesan cheese, garlic powder, seasoned salt, and red pepper flakes. Mix well. Fold crabmeat mixture into mayonnaise mixture. Transfer dip to an oven-proof dish. Top with Jalapeño Confetti Jelly. Bake 20 minutes. Spoon warm crab dip into phyllo shells. Garnish with fresh dill sprigs. Serve warm.

What’s Cooking in Gail’s Kitchen? Timeless Classics: Italian Bread Salad! Panzanella. Travel with me to Tuscany for a delightful dinner on a gardened terrace. Indulge in a bountiful salad of artisan bread, juicy tomatoes, sweet onions, and green bell peppers. Appreciate the herbs de Provence perfectly blended with garlic wine vinegar whisked in extra-virgin olive oil. It’s enough to make you swoon. The ingredients are very forgiving. Tomatoes a little soft? Has the bread gone stale? No worries. This classic Italian meal was originally meant to be eaten that way. It’s truly amazing!
ITALIAN BREAD SALAD
Ingredients:

1-pound loaf artisan bread

2 tablespoons olive oil

1 teaspoon Herbs de Provence, crushed

8 Roma tomatoes, sliced

1 medium green bell pepper, cut into strips

1/2 Vidalia onion, chopped

1/2 cup olive oil

1/4 cup red wine garlic vinegar

1/2 teaspoon sea salt

1/2 cup fresh basil, thinly sliced

Cracked black pepper to taste
Instructions:

Preheat the oven to 300°. Slice and cube the bread in bite-size pieces, leaving crusts on. Spray a baking sheet with nonstick oil. Form a single layer of bread cubes. Drizzle with 2 tablespoons olive oil and sprinkle with Herbs de Provence. Bake 10 minutes; flip over and bake 10 minutes longer. Cool. For dressing, whisk together olive oil, red wine garlic vinegar, and sea salt. In a large salad bowl, combine bread with tomatoes, green pepper, and onion. Pour vinaigrette over all and toss to coat. Refrigerate for one hour before serving. Stir occasionally to blend flavors. Just before serving, gently toss with fresh basil. Add cracked black pepper to taste.

What’s Cooking in Gail’s Kitchen? Timeless Classics: Habanero Hot Sauce! Let’s kick things up a notch or two with one of the hottest known chili peppers legally sold in grocery stores. And I mean REALLY hot, compared to the average pepperoncini. The adorable orange lantern with its sweet-looking dimples can be deceiving. Its sting may feel as strong as a viper while simultaneously releasing an endorphin rush that’ll knock you off your feet. This is my fourth batch from the garden harvest. I’m hooked! However, it comes with a few words of caution: Wear gloves and avoid the juices near your face and eyes. While oven roasting, set the exhaust fan on High. When taste-testing, keep a wedge of white cheese nearby. It actually cuts the heat almost instantly. Be brave, my Peeps. Heed these simple rules. Then and only then, will you become the master of your own domain. 
HABANERO HOT SAUCE
Ingredients:

16-20 habanero peppers, halved, stems, and seeds removed

3 cloves garlic, minced 

1/3 cup orange juice

3 tablespoons grapefruit juice

1/8 teaspoon lime juice

Sea salt to taste
Instructions:

Place habanero pepper halves, skin side up in a single layer, on a baking sheet sprayed with nonstick oil. Roast habanero peppers on High for 10 minutes, or until black spots appear. Remove. Using tongs, transfer habanero peppers to a covered bowl and allow to steam for 15 minutes. Using gloves, remove any loose skins; discard. Add peppers to a food processor. Pulse to a slightly coarse texture. Add minced garlic, orange juice, grapefruit juice, and lime juice. Pulse until desired consistency. Season with sea salt. Store in a jar in the refrigerator. Serve in dips, as a condiment, paired with ripe fruits in salsas, or on grilled meats.

What’s Cooking in Gail’s Kitchen? Be Our Guest: Street Tacos! This is literally Cooking 101. I have been making tacos since I was 16 years old, before microwave ovens and gourmet kitchens were commonplace. My Aunt Gail, in Michigan, taught me the timeless secrets of a classic Mexican staple. First of all, you must use authentic yellow corn tortillas. Forget the box because you’re going to fry up the shells for freshness. It’s worth the effort, believe me. 
STREET TACOS
Ingredients:

16-ounce package yellow corn tortillas

2-4 tablespoons vegetable oil

1 pound ground beef, lean

2 cloves garlic, minced

1 teaspoon cumin powder

1/8 teaspoon onion powder

1 teaspoon sea salt

1/8 teaspoon black pepper

2 green onions, snipped

1 cup cheddar cheese, finely shredded

Shredded lettuce

Fresh cilantro

Pico de Gallo or salsa
Instructions:

Preheat oven to 250°. Brown ground beef in a medium skillet over medium-high heat. Cook until the beef is crumbly. Drain, if necessary. Season beef with garlic, cumin powder, onion powder, sea salt, and black pepper. Set aside. In a small skillet, heat 2 tablespoons oil over medium-high heat. Add tortilla; cook 10 seconds per side. Remove to a paper towel-lined plate. Repeat until all tortillas have been fried. Reduce heat. One at a time, place a tortilla back into the skillet. Add 1-2 tablespoons ground beef mixture into each tortilla. Fold in half and place on a baking sheet. Repeat until all tortillas and ground beef are used. Warm in the oven until ready to serve. Assemble street tacos, per taste, with shredded lettuce, onion, cheese, cilantro, and Pico de Gallo.

I know people often wait for the holidays to serve this spicy little appetizer, but I recently discovered its popularity as a picnic basket companion. By making it ahead of time and storing it in a jar, it travels well. Add dill pickle chunks, bite-size cheese cubes, vegetable skewers, fresh fruit, chips, salsa, and double chocolate brownies. You’ll have the perfect portable picnic. Doesn’t everyone love finger foods?
GARLIC CLOVE LITTLE SMOKIES
Ingredients:

1/4 cup brown sugar

1/3 cup honey

1/2 cup catsup

2 tablespoons soy sauce

2 garlic cloves, minced

1 teaspoon red pepper flakes

1 teaspoon roasted sesame seeds

14 ounces little smokies cocktail wieners 

Fresh chives for garnish
Instructions:

Preheat oven to 250°. In a medium bowl, combine brown sugar, honey, catsup, soy sauce, garlic, red pepper flakes, and roasted sesame seeds. Mix well. Add cocktail wieners. Coat evenly. Transfer to a covered casserole dish. Bake for 4 hours, stirring occasionally. Garnish with roasted sesame seeds and fresh chives before serving.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Wasabi Furikake Aioli! For a homemade sauce that can be spread on fish and poultry or used as a spicy dip for vegetable crudités, this one is spot on. The “kick” of wasabi is a distant cousin to horseradish making its intensity a roller coaster ride for the palate. Wasabi lovers know all about the health benefits. Sushi bars offer it as a regular condiment. I find this superfood absolutely delicious. 
WASABI FURIKAKE AIOLI
Ingredients:

1/2 cup mayonnaise 

1/4 teaspoon furikake seasoning (sesame seed and green seaweed)

1/4 teaspoon ground ginger

1/8 teaspoon garlic powder

1 teaspoon rice vinegar 

1 teaspoon soy sauce

2 teaspoons wasabi powder

1 tablespoon olive oil

1 tablespoon water
Instructions:

Combine all ingredients and mix until well blended. Cover and refrigerate one hour before serving.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Olive Tapenade! Here’s a nice prelude to an evening meal. Forego the usual focaccia bread and herbed olive oil for a southern France hors d’oeuvre instead. By using an exotic mixture of olives and spices, it creates a versatile condiment for crackers, bread, cheese, and vegetables. Later on, serve it over pasta or fish as another option. Whatever you choose, seek adventure. You won’t be disappointed in the mellow salty garlic flavor lingering long into the night. 
OLIVE TAPENADE 
Ingredients:

1/2 cup green olives with pimentos 

1/2 cup black olives, pitted 

1/2 cup kalamata olives, pitted

2 tablespoons capers

4 tablespoons olive oil

1 garlic clove, minced

1/8 teaspoon sea salt

1/8 teaspoon cracked black pepper 
Instructions:

Combine all ingredients. Pulse in a food processor for several minutes. Scrape sides and repeat. Cover and chill in the refrigerator for one hour. Serve with crusty artisan bread or pita chips. Tastes great spread over cream cheese for party flavor.

Dining Outside the Home: Pizza Nova of Point Loma San Diego, California! You gotta love a pizzeria that serves hand-tossed garlic knots rolled in rosemary butter as soon as you reach your table. A view of the water doesn’t hurt either. The wood burning ovens lent a coziness to the atmosphere as aromas of time-honored Italian dishes kept our heads spinning. A traditional meat-lover specialty pizza oozing in heirloom San Marzano tomato sauce and fresh mozzarella was delivered to the table on a pedestal. Within seconds, the crunch of the award-winning crust had us yearning for more.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Garlic Butter Mussels! One of the best ways to experience new foods is to be adventurous at your nearby market. By trying a quality product there first, you can decide if you might want to step out and either order it at a restaurant or perhaps, attempt to make it at home from scratch. That’s exactly what I did with this version of mussels. By making subtle changes that appeal to my palate, it turned my kitchen into a gourmet restaurant. Picture this, my husband was drawn indoors by the enticing aromas of garlic and seafood. I literally stood there at the stove in my bare feet feeding him fingertip morsels of aromatic mussels and herb-infused vermicelli. Talk about romantic!!!
GARLIC BUTTER MUSSELS
Ingredients:

16-ounce package mussels in garlic sauce, frozen*

4 tablespoons butter

4 tablespoons white wine

1/8 teaspoon garlic powder

4 ounces vermicelli 

Sea salt to taste

2 tablespoons olive oil

1 tablespoon capers

1/8 teaspoon basil

1/8 teaspoon marjoram

1/8 teaspoon parsley
Instructions:

Empty contents of mussels pouch into a deep saucepan and cover. Heat on high for 3-4 minutes. Reduce heat and simmer for 2-3 minutes, stirring occasionally. Add butter, white wine, and garlic to increase juice. Meanwhile, cook vermicelli according to package directions. Drain. Return to pan. Add sea salt, olive oil, capers, basil, marjoram, and parsley. Mix well. Transfer vermicelli to individual serving pieces. Split mussels between them. (Serve in the shell.) Drizzle garlic butter wine sauce over all. Serve with crusty bread for dipping in juices. 
*The rule of thumb for serving mussels is ALWAYS ensure mussel shells are fully opened before serving.
