If I told you there was a slightly healthier alternative to regular potato chips and tortilla corn chips, would you believe me? Naturally blueish-purple potatoes seriously come in chip form in the snack aisle at the grocery store. At first bite, you may notice a slightly nutty taste. It’s different, but good. By adding a layer of melted cheeses, suddenly this snack has become a gourmet appetizer. Personally, I like the added kick of sriracha and green onions. If you’re not sure of the rest of the family, put these finishes on the side to add later. It could mean more for you. 

GORGONZOLA BLUE CHIP APPETIZER

Ingredients:

5-ounce bag blue vegetable chips

4-ounces Gorgonzola cheese crumbles

1/2 cup mozzarella cheese, shredded 

1-2 green onions, sliced thin

Sriracha sauce, to taste

Instructions:

Layer blue vegetable chips in a single layer on a microwave-safe serving platter. Arrange crumbled Gorgonzola cheese over chips. Evenly cover with shredded mozzarella cheese. Microwave platter on level four for two minutes. Repeat, if necessary, to melt the cheeses. Top with green onion strips. Drizzle with sriracha sauce. Serve immediately. 

Xtra Cheesy White Flatbread

What’s Cooking in Gail’s Kitchen? Time To Eat: Xtra Cheesy White Flatbread! Know what’s better than chewy pizza-like dough? Chewy pizza-like dough slathered in a mountain of cheese that turns gooey after it’s baked! Honestly, cheese can become addictive. I’ve (finally) broken my cravings for added salt by no longer reaching for the salt shaker at the kitchen table. But, cheese. Now, that’s another story. I’m crazy for extra sharp Cheddar, creamy Brie, pungent Bleu, nutty Jarlsberg, smoky Gouda, and the list goes on.

XTRA CHEESY WHITE FLATBREAD

Ingredients:

1 prepared flatbread

1 tablespoon olive oil

1 tablespoon cornmeal

1/8 teaspoon garlic powder

1/4 teaspoon sea salt

6 ounces fresh mozzarella cheese, sliced

4 ounces parmesan cheese, grated

4 ounces gorgonzola cheese, crumbled

Red pepper flakes and dried oregano, for garnish

Instructions:

Preheat the oven to 400°. Rub the bottom of the flatbread with olive oil; sprinkle with cornmeal, garlic powder, and sea salt. Place seasoned side down on a baking sheet. Bake 5 minutes; remove from oven. Cover the top side with fresh mozzarella cheese slices, grated parmesan cheese, and gorgonzola cheese crumbles. Bake 10 minutes longer, or until the cheese is completely melted, bubbly, and golden brown. Cool slightly before cutting into pieces.

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Piquant Pear Passion! Did you know a little bit of cheese and fruit make a great dessert at the end of a meal? Sure you did. The French have been doing it for years. Europeans, too. Bleu cheese, or its milder cousins Roquefort and Gorgonzola, is a perfect match with sweet ripe pears. Nuts provide that little extra crunch you crave. If making ahead, to keep the pears from turning brown, simply dip them in a wash of lemon juice and water. It works. If you wish to top off the dessert plate with subtle sweetness, drizzle some natural honey over the pears before serving. Obviously I threw in the greens as garnish. Habit, that’s for sure.

PIQUANT PEAR PASSION

Ingredients:

1-2 ripe pears, cored and sliced

4-ounces Bleu cheese, crumbled

1/2 cup walnut pieces

Arugula leaves, for garnish

Natural Honey, for drizzling (optional)

Instructions:

Arrange pear slices in a dessert dish. Add the bleu cheese crumbles. Sprinkle with walnut pieces. Garnish with arugula leaves. Drizzle pears with natural honey.

What’s Cooking in Gail’s Kitchen? Be Our Guest: Unconventional Peach Side Salad! What a blessing to partake in the abundance of plump and juicy peaches. The options are endless. For instance, I like to substitute tomatoes for fresh peaches in a side salad. By adding the buttery taste of Gorgonzola cheese, it creates a robust flavor that easily compliments the sweetness of the peach. Just thinking about it makes my mouth water. Oh my!

UNCONVENTIONAL PEACH SIDE SALAD

Ingredients:

1-2 fresh peaches, washed and skin on

2 cups organic salad greens

1/3 cup Gorgonzola cheese, crumbled

2 tablespoons pecan bits

2 tablespoons lemon olive oil

2 tablespoons pomegranate balsamic reduction

Croutons for garnish

Instructions:

Cut peaches into wedges. Divide organic salad greens into shallow serving dishes. Distribute peach slices. Sprinkle with crumbled Gorgonzola cheese and pecan bits. Drizzle lemon olive oil and pomegranate balsamic reduction sauce over all. Garnish with toasted croutons.
