I can attest to the deliciousness of it with my morning cuppa joe. The espresso bitterness balances out the sweetness with perfection. And overnight guests definitely gave it a stamp of approval with a scoop of ice cream on top, making it almost cobbler-like in the dessert category. Giving it a quick zap in the microwave warmed it up as well. My third category, the late-night snack, must also be true. When I arose the next morning, I noticed there was one less serving under the cake dome than when I turned in the night before. Huh. Must’ve been the family dog. After all, we know they watch TV.

RASPBERRY NUT GRANOLA BARS

Ingredients for Bars:

2 cups flour

1 cup sugar

1/2 teaspoon sea salt

3/4 cup butter, unsalted

1 cup raspberry preserves

3/4 cup fresh raspberries

2 teaspoons lemon juice

3 tablespoons brown sugar

1/3 cup cinnamon almond granola

Instructions:

Preheat oven to 350°. Spray a 9”x13” glass baking dish with nonstick oil. Set aside. Using a mixer, combine flour, sugar, and sea salt for about 10 seconds. Slowly add butter, one tablespoon at a time, on low speed until all the butter has been used. In a couple minutes the dough will pull away from the side of the bowl. Reserve a quarter of the mixture; set aside. Transfer the remaining 3/4 dough mixture to the prepared pan, pressing it create a single layer of crust. For the raspberry filling, combine the raspberry preserves, fresh raspberries, and lemon juice. Lightly mash the larger pieces of fruit, yet allowing a chunky appearance. Pour the raspberry filling over the crust, spreading the filling into an even layer. Crumble the remaining dough mixture over the filling. Cover the top with brown sugar. Finish with a layer of cinnamon almond granola. Bake 20-30 minutes, or until the filling is bubbly. The topping will be golden brown. Allow the bars to cool slightly before cutting into squares.

That makes sense because when I checked the ingredient list on the package, sure enough….coffee was actually there. I sampled a taste before making the cookies and realized this could be a match made in heaven, especially when paired with chocolate and peanut butter. A little more research revealed not only does iced coffee come in this popular combination, but also milkshakes and ice cream. Perhaps I need to explore these other foods that offer a mind-boggling caffeine jolt. Now we’re talking.

NO-BAKE GRANOLA COOKIES

Ingredients:

1/2 cup peanut butter, creamy

1/2 cup Tupelo honey

1/4 cup brown sugar

2 cups coffee booster granola, slightly crushed in a mini chopper

1/4 cup quick oats

1/3 cup mini chocolate chips

Instructions:

In a microwave-safe bowl, combine creamy peanut butter, Tupelo honey, and brown sugar. Microwave on High setting for 30 seconds. Stir completely and microwave on High 60 seconds longer. Stir again and set aside. In a mixing bowl, combine coffee booster granola and quick oats. Pour warm peanut butter mixture over top. Mix well. Line a baking sheet with waxed paper. Place mini chocolate chips in a shallow dish. Using a cookie scoop, portion dough into rounded cookies. Firmly press mini chocolate chips into the top. Place each cookie, chocolate chip side up, onto the waxed paper. Repeat until all dough is formed into bite-sized cookies. Chill slightly to set. Store in a sealed container.

Remember playing outside all day with the neighborhood kids and returning home as hungry as a wolf? One foot in the door told you mother had baked a wonderful surprise. The pleasant aroma of bananas wafted through the house, intermingled with cinnamon spice sweet bread. You knew it had her stamp of approval because permission was granted to have a slice even before dinner was served. Which brings me to reason number two. Banana bread is one of Life’s comfort foods. And that’s all I’m going to say about that.

GRANOLA BANANA BREAD

Ingredients:

1/3 cup butter, softened

1/2 cup sugar

2 ripe bananas, plus 1 banana sliced horizontally

2 cups flour

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 cup milk

1 teaspoon vanilla extract

1/2 cup cinnamon almond granola

1 tablespoon turbinado sugar

Instructions:

Preheat oven to 350°. Line a loaf pan with parchment paper, overlapping on the sides. Set aside. In a food processor, cream together butter and sugar. Add 2 bananas; mix until bananas are mashed. Stir in flour, baking powder, and baking soda. Pulse, alternating with milk, until mixed. Add vanilla extract. Pour batter into prepared loaf pan. Press both halves of the remaining banana onto the top of the batter. Lightly press the cinnamon almond granola over all. Sprinkle with turbinado sugar. Bake 50 minutes, or until a tester comes out clean. Remove loaf from the pan and allow bread to cool on a wire rack for 30 minutes before slicing.

It was a perfect portion for them after greeting the sunrise sipping on macadamia nut coffee. Ripe papaya has such a naturally sweet flavor. It practically melts in your mouth with its creamy, butter-like texture. If you like cantaloupe, I promise you this: Papaya will take you “Somewhere Over the Rainbow”. You may even hear the magical sounds of a ukulele strumming in the background.

PAPAYA BANANA BOAT

Ingredients:

1 ripe papaya, cut in half with seeds removed

1 banana, sliced

1/8 teaspoon cinnamon

2 dollops Greek yogurt

2 teaspoons granola

Drizzle of agave nectar

Instructions:

Split the papaya between two plates. Fill half the cavity with sliced bananas. Sprinkle cinnamon over banana slices. Fill the other half of the papaya with a generous dollop of Greek yogurt. Sprinkle granola over top of yogurt. Drizzle entire papaya boat with agave nectar.

It’s no wonder it has turned into a convenient substitute for breakfast when you’re on the run. Oats are full of iron and fiber, which the nutritionists keep drumming into our heads. It keeps us full, energizes the body, and detours junk food cravings. Nuts and seeds have heart-hearty benefits, which everyone wants, right? Personally, I prefer the crumbled version to sprinkle over my morning yogurt. Others prefer the chewy granola bars I find look too much like a candy bar. Don’t get me wrong, I enjoy peanut butter and chocolate chips as much as the next guy. I get it, but always check the sugar content because basically that’s what holds everything together. Talk about unwanted calories. No thanks. In the end do what is right for you. Meanwhile, if you want to make your own, this recipe is as easy as pie.

WALNUT MANGO GRANOLA

Ingredients:

1 cup walnut halves, chopped

1/4 cup coconut flakes

2 tablespoons pistachio nuts, roughly chopped

1 cup oats

1 tablespoon chia seeds

1/2 teaspoon cinnamon

1 tablespoon coconut sugar

1/4 teaspoon sea salt

3 tablespoons vegetable oil

2 tablespoons maple syrup

1/4 cup dried mango, chopped

1/4 cup dates, chopped

Instructions:

Preheat oven to 325°. Spray a baking sheet with nonstick oil. Set aside. In a large bowl, toss chopped walnuts, coconut flakes, pistachio nuts, oats, and chia seeds. Thoroughly combine; set aside. In another bowl, mix cinnamon, coconut sugar, sea salt, vegetable oil, and maple syrup. Drizzle over walnut mixture and toss to coat granola. Spread granola mixture onto baking sheet. Bake for 10 minutes; turn for even browning and bake 10 minutes longer. Remove pan from oven. Carefully stir in dried mango and chopped dates. Bake for 10 minutes. Remove granola from the oven and allow to cool completely. Transfer crumbled granola to an airtight container.

Family members “gift” us with a different fruit-of-the-month selection all year long. A box gets delivered to our doorstep with a little card that tells us about the delectables inside. Often there are serving suggestions as well as ripening and storage tips. Then my mind begins to wander as I plan different ways to come up with recipes. That is, unless I simply succumb to their aroma and eat them as they are. Here’s a festive dessert that will get you raves through the holidays.

LAVENDER CREAMED HONEY PEARS

Ingredients:

1 large pear, skin on, halved, and cored with a melon scooper

2 tablespoons sweet white wine

2 tablespoons creamed honey

1/8 teaspoon cinnamon

1 tablespoon butter, room temperature

1 tablespoon vanilla extract

For Lavender Filling:

1/2 cup vanilla Greek yogurt

1 tablespoon creamed cheese, softened

2 drops lavender extract

1 smidgen dried lavender buds

1 drop lemon extract

1 nip granulated citrus peel

1 teaspoon granola, for garnish

Instructions:

Preheat oven to 375°. In a small baking dish, place pear halves upright. Pour sweet wine over them. Slightly warm creamed honey on Low setting in the microwave for 30 seconds. Drizzle honey over pears. Sprinkle with cinnamon. Dot each pear half with butter. Finish with vanilla extract. Bake, uncovered, for 40 minutes. Carefully remove dish from oven. Baste pears with the juice. Turn each pear over, skin side up. Bake 20 minutes longer until tender. Using a spoon, transfer each pear half, flipping over with skin side down, to a dessert dish. The sauce will thicken slightly as it cools. Spoon reserve sauce over pears. While pears are baking, make the Lavender Filling. Combine vanilla Greek yogurt and creamed cheese. Mix until smooth. Fold in lavender extract, dried lavender buds, lemon extract, and granulated citrus peel. Keep refrigerated until ready to use. To serve, place a heaping dollop of filling into each pear half. Sprinkle with granola. Garnish with lavender buds. Serve warm.

Sooo, I went in for my annual health assessment, and learned I’m not eating enough fruits, vegetables, and whole grains each day. I reported 3-4 servings of each and learned those numbers need to be bumped up to 5 servings a day. Seriously??? You’d never know it by the foods I post on my blog. Let me be clear, I do prepare and eat EVERYTHING you see from Gail’s Kitchen. Granted, I am getting older. But in my defense, I simply cannot eat as much as I did when I was younger. My metabolism won’t allow it. I need to think about the stress and strain extra weight can put on the heart, back, joints, and feet. That being said, my BMI (body mass index) is within a healthy range, which is good. If you need to make substitutions of ingredients to meet your own personal goals, please do what is right for you.

INSTANT PLUM BREKKIE

Ingredients:

2 slices quinoa multigrain bread

1-2 tablespoons Neufchâtel cheese

1 plum, pit removed and sliced

1 teaspoon granola

Dusting of ground cinnamon and nutmeg

Instructions:

In a toaster oven, lightly brown bread on both sides. Spread Neufchâtel cheese on each piece of toast. Arrange sliced plums over creamed cheese layer. Add the granola-topper. Sprinkle with a light dusting of cinnamon and nutmeg.

Green tea combines its earthy flavors with a touch of bitterness to complement the natural sweetness of fresh fruit. The results will astound your taste buds, rounding off the cobbler’s cake-like topping. Choose any combination of fruit; blueberries, strawberries, blackberries, raspberries, or mulberries. One hint for best results: Spoon the cobbler topping in small portions leaving room for the fruit to “pop” through and become caramelized. Ingredients:

1 tablespoon butter

1/2 cup boiling water

1 Green Tea bag

1 cup blueberries

1/2 cup raspberries

1/2 cup mulberries

1 tablespoon sugar

1 teaspoon lemon juice

1/8 teaspoon cinnamon

1 egg, room temperature

2/3 cup sugar

1/4 teaspoon sea salt

1/4 cup Greek yogurt

1 teaspoon vanilla extract

1 cup flour

1 1/2 teaspoons baking powder

1/4 cup granola

Powdered Sugar, for garnish

Instructions:

Preheat oven to 350°. Grease a baking dish or iron skillet with butter. Set aside. Place teabag in 1/2 cup boiling water. Steep for 3 minutes. Discard tea bag. Cool tea to room temperature. In a medium bowl, combine berries, sugar, lemon juice, and cinnamon. Toss gently to coat; do not crush berries. In a large bowl, vigorously whisk together egg and sugar. Continue for one minute. Add sea salt, Greek yogurt, and vanilla extract. Whisk until completely blended. Add green tea. Mix well. Gradually add flour and baking powder. Stir until incorporated. Pour batter into prepared pan, leaving about 5 tablespoons reserved for topping. Gently layer berries over batter. Spoon remaining batter in dollops over fruit. Bake 10-12 minutes. Scatter granola over the top of the batter. Bake 20 minutes longer or until cobbler is golden brown and a tester comes out clean. Just before serving, dust with powdered sugar.

Ingredients:

2 cups Greek yogurt

1 tablespoon agave nectar

1 ripe peach, pit removed and sliced

1/3 cup fresh blueberries

1/2 cup crunchy granola with oats, almonds, and coconut

Instructions:

Combine Greek yogurt and agave nectar. Mix well. Begin with a spoonful of granola in the bottom of 4 parfait glasses. Layer Greek yogurt on the granola. Top with fresh peach slices, blueberries, and the remaining granola. Chill until ready to serve.
