KAUAIIAN-RUB PORK MEDALLIONS

Ingredients:

2-3 pound Pork Filet Mignon, sliced in 3/4″ portions

1/3 cup olive oil

3 tablespoons soybean seasoning sauce

1-2 tablespoons Salty Wahine Gourmet Hawaiian Rub*

Instructions: 

Marinate at room temperature sliced medallions in a shallow dish with olive oil, soybean seasoning sauce, and gourmet rub on both sides of the pork. Preheat the outdoor gas grill to 500°. Place the tenderloins on the non-stick grate and lower the lid. The temperature should remain around 450°. After 4-5 minutes, turn medallions over, close lid, and grill for 5 minutes longer. To check for doneness, the internal temperature will register at 150°. Remove medallions and let them rest for 5 minutes in order for the juices to draw back inside.

It’s Li Hing Mui, a powdered flavoring that can be sprinkled on anything from fruit to candy to popcorn, and even rimming the glasses of adult cocktails. No kidding. So what exactly is this mysterious flavoring, you wonder. Li Hing is plum powder made from dried plums. It has a combination of sweet, salty, and tangy taste. Local children love it on sour gummy worms or shave ice. Anything goes. One taste and you’ll find yourself giggling like a kid.

Ingredients:

Fresh pineapple

Li Hing powder

Instructions:

Peel and core fresh pineapple. Cut into chunks. Using a sifter, lightly dust the fresh pineapple chunks with Li Hing powder. Let rest for a minute. Serve.

This flaky Filipino concoction is nothing short of amazing at Hualani’s Restaurant.

Wait, this is just the beginning. The entrées are first-class, the desserts divine. Surrender your will power. Every bite is worth it.

When the locals recommend a place to eat, pay attention, especially if they are making reservations for a private celebration behind shoji screens with tatami mat seating. Kintaro is that good. For others, it’s first-come, first-served whether you are seated at the exotic sushi bar, a table for two in the dining room, or family-style seating around the teppan yaki table grills. For starters a plate of complimentary crispy fried wontons were served by the friendly wait staff. They were so yummy, we ordered more. And because using chop sticks is part of the experience, the filet mignon and lobster tail combo were already cut into bite-sized cubes arranged on the plate. The rest is easy. Sit back, bask in the Asian decor, and enjoy the cuisine.

The layers of gooey cheese and fresh herbs are enough to make your eyes roll back. The savory marinara sauce slathered over Italian sausage on a bed of spaghetti is simply delish.
