What’s Cooking in Gail’s Kitchen? Start Smart: Tuna Tartare with Seaweed! Do you wrinkle your nose when you hear the word “raw”? Some people get a little squeamish. How about if you see the word “sushi”? My grandkids’ eyes light up and their mouths begin to salivate. See the difference? “Tartare” is a fancy word for raw meat or seafood. In Hawaii, you may see the words “Ahi Poke”, which is a healthy raw tuna dish made with the best tuna right out of the sea. By adding a mixture of ginger, garlic, sesame oil, and red pepper flakes, the flavor becomes incredibly irresistible. Check out the closest Asian Deli to pick up a container of ready-to-serve seaweed salad. It’s already marinated in a delicious sauce. Together on a plate, you’ve just created a masterpiece.

TUNA TARTARE WITH SEAWEED

Ingredients:

2 ahi tuna steaks, cut into 1/4” cubes

3 tablespoons organic soy sauce

1 teaspoon sesame oil

1 teaspoon chili garlic sauce

1 tablespoon toasted sesame seeds

1/2 green onion

1 red jalapeño pepper, sliced

4-ounce container of prepared seaweed salad

Green onion slivers for garnish

Instructions:

Pat ahi tuna dry with a paper towel. Transfer to a bowl. Add organic soy sauce, sesame oil, chili garlic sauce, toasted sesame seeds, the chopped white ends of the green onions, and the red jalapeño pepper slices. Gently toss to coat. Cover and refrigerate one hour. To serve, place prepared seaweed salad on a plate. Layer ahi tuna over salad. Garnish with the remaining green onion curls.

Urban Lemon Curd French Toast

What’s Cooking in Gail’s Kitchen? The Clean Plate Club: Urban Lemon Curd French Toast! Shortcuts, gotta love them. Just because you’re preparing food at home doesn’t mean everything has to be made from scratch. Betty Crocker, an American cultural icon, is proof of that. I used a store-bought lemon curd instead of making it from scratch. And if you want to take this recipe one step closer to simplifying your life, merely substitute the fresh berry compote with frozen strawberries in syrup, thawed of course. After all, the main attraction is the lemony rich oven-baked French toast sprinkled with vanilla bean and nutmeg. Everything is prepared the night before so all that’s needed is baking time the next morning. See? Simple isn’t so bad.

URBAN LEMON CURD FRENCH TOAST

Ingredients:

4 eggs

2 cups milk

1/2 cup heavy cream

1 vanilla bean, split lengthwise, seeds scraped out and reserved

10-ounce jar lemon curd

1 loaf Hawaiian Sweet Bread, sliced

1/2 cup blueberries

1/2 cup cherries

1/2 cup mulberries

1/2 cup cranberries

1/2 cup sugar

1 cup heavy cream

3 tablespoons sugar

1/2 teaspoon vanilla extract

Powdered sugar, garnish

Instructions:

To make the French toast, butter an oval baking dish. In a large bowl, whisk together eggs, milk, heavy cream, and vanilla bean seeds. Fold in the lemon curd. Stir well. Arrange the Hawaiian Sweet Bread slices evenly in the prepared dish, slightly overlapping them. Pour egg mixture over bread. Spoon to coat all slices. Cover and refrigerate overnight. To make the fruit compote, in a saucepan over medium heat, combine blueberries, cherries, mulberries, cranberries, and sugar. Cook, stirring occasionally, until the fruit breaks down, about 15 minutes. As the juices are released, the fruit will thicken. Remove from heat, cover, and refrigerate. Warm in the microwave the next day before serving. The next day, to bake the French toast, preheat oven to 350°. Let the French toast stand at room temperature 15 minutes before placing in the oven. Remove lid. Bake 45-50 minutes. To make the whipped topping, chill the mixing bowl and beaters beforehand. Place the heavy cream, sugar, and vanilla extract in the mixer bowl. Beat on medium speed until the cream begins to thicken, about 4-6 minutes. The whipped cream will double in volume and form soft peaks. Remove the French toast from the oven. Let it cool for 10 minutes. Top with warm berry compote, whipped cream, and dusting of powdered sugar. Serve warm.

Vanilla Laced French Toast

If you prefer the outside to be crispy, don’t be ashamed to coat the bread with crushed cracker crumbs before dropping it into the buttered skillet. It not only seals in the flavor, but also produces a “to-die-for” custard filling. Forget soggy bread, go instead for a golden brown crunch drizzled in dark maple syrup and topped with the rich flavor of vanilla glazed pears. Have I got your attention?

VANILLA LACED FRENCH TOAST

Ingredients:

2 eggs

1/2 cup light cream

2 tablespoons sugar

1 tablespoon pure vanilla extract

1/4 teaspoon cinnamon

1 cup Ritz crackers, crushed*

1/4 teaspoon cinnamon

1/8 teaspoon nutmeg

1-2 tablespoons butter

6 slices Hawaiian sweet bread

Glazed Pear Topping, if desired**

Powdered sugar, sprinkling

Pecan halves, as garnish

Instructions:

Whisk eggs, light cream, sugar, vanilla extract, and cinnamon in a shallow bowl. Set aside. On a sheet of waxed paper, combine crushed crackers, cinnamon, and nutmeg with a fork. Melt butter on low heat in an iron skillet. Do not burn. Increase heat to medium. Dip bread slices in egg mixture, coat both sides in cracker crumbs, and place in the skillet. Cook 3 minutes until brown. Turn. Cook 3 minutes longer. Remove to a platter. Repeat until all slices are used. Serve with butter, maple syrup, and fruit, if desired. Garnish with a sprinkling of powdered sugar and pecans.

Hawaiian Crunch PB Bars

What’s Cooking in Gail’s Kitchen? The Chow Down: Hawaiian Crunch PB Bars! When I asked my grandson what his favorite food was, he shrugged his shoulders and said, “That’s easy, Nana. It’s peanut butter.” It was all I needed to know to head to my kitchen to prepare something special for him for the weekend. By switching things up a bit with Hawaiian shortbread cookies, the results produced an amazing crunch that teamed well with the hazelnut spread frosting. How’s that for double coverage? His opinion, you wonder? Being a teenager, a thumb’s up was approval enough.

HAWAIIAN CRUNCH PB BARS

Ingredients:

12 ounces Hawaiian banzai furikake shortbread cookies or vanilla wafers

1 cup butter, room temperature

1 cup natural peanut butter, chunky

2 cups powdered sugar

12 ounces mini semisweet chocolate chips

13 ounces hazelnut cocoa spread

1/2 cup honey roasted peanuts, chopped

Instructions:

Pulse cookies in a food processor until crumbly. Set aside. Spray a 9”x13” pan with nonstick oil. Combine butter and natural chunky peanut butter until smooth. Gradually add powdered sugar until blended. Next fold in cookie crumbs and mini chocolate chips. Mix to combine. Spread evenly in the prepared pan. Warm hazelnut spread in a microwave until it is easy to spread. Cover the peanut butter layer completely. Sprinkle with chopped honey roasted peanuts. Refrigerate one hour. Cut into squares. Store in the refrigerator until ready to serve.

Hawaiian Spam Breakfast

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Hawaiian Spam Breakfast! Not everyone is on the same page when it comes to breakfast. Some prefer a bowl of cereal in front of the tv, others like yogurt and fruit while checking their email, and some are perfectly happy with their morning cuppa joe watching the sunrise. That’s where this recipe comes in handy. It is a Hawaiian meal for one.

It takes only a couple minutes to heat and eat. So when everyone comes crowding into the kitchen because it smells so good, just roll your shoulders and say, “You already had breakfast.”

HAWAIIAN SPAM BREAKFAST

Ingredients:

10.5 ounce package heat-and-eat microwaveable rice

2 slices Spam* brand canned meat

1 egg, scrambled

1 green onion, snipped

1/8 teaspoon red pepper flakes

1 tablespoon soy sauce

Fresh cilantro

Instructions:

Microwave rice according to package directions. Spray a small skillet with nonstick oil. Over medium-high heat, quick-fry 2 slices of Spam. Flip to get both sides crispy. Chop into bite-size pieces. Set aside. Crack an egg into a small dish. Whisk to break the yolk. Spray the small skillet again with nonstick oil. Pour the egg mixture into the pan using the same setting, medium high. Cover. Cook one minute. Remove lid, break up the egg with a spatula. Turn off the burner. Replace the lid for one minute longer. Transfer rice to a bowl, add Spam, scrambled egg, green onion snips, red pepper flakes, and soy sauce. Mix well. Garnish with fresh cilantro. Serve with chopsticks.

Macadamia Nut Pineapple French Toast

What’s Cooking in Gail’s Kitchen? Something to Savor: Macadamia Nut Pineapple French Toast! Forget the maple syrup. Indulge instead in a tropical fruit explosion of flavor. Some compare this breakfast specialty to caramelized pineapple bliss. I suppose the taste could remind you of a tropical Pina Colada cocktail. It’s that good. For your next “Staycation”, why not treat yourself to paradise on a plate.

MACADAMIA NUT PINEAPPLE FRENCH TOAST

Ingredients for Sauce:

1/4 cup butter

1/2 cup brown sugar

1/4 cup cream

1/4 cup maple syrup

1 tablespoon coconut syrup

1 teaspoon almond extract

8-ounce can pineapple chunks, drained

1/8 teaspoon cinnamon

1 smidgen nutmeg

2 tablespoons shredded coconut

Instructions:

Melt butter in small saucepan over low heat. Do not scorch. Add brown sugar. Stir. Gradually bring to a boil. Add cream, stirring constantly. Cook until thick, about 4 minutes. Turn heat to lowest setting. Add maple syrup, coconut syrup, and almond extract. Stir until smooth. Add pineapple chunks, cinnamon, nutmeg, and shredded coconut. Cook until tender.

Ingredients for French Toast:

4 slices Hawaiian sweet bread, sliced thick

3 whole eggs, beaten

1/2 cup light cream

1 teaspoon vanilla extract

2-3 tablespoons butter

Macadamia nuts, chopped

Fresh strawberries

Instructions:

Whisk together eggs, light cream, and vanilla extract. In a shallow dish, place 4 slices of Hawaiian bread, single layer. Pour custard egg mixture over bread; turn to coat both sides completely. Let moistened bread rest to soak up liquid. In an iron skillet, melt one tablespoon of butter on medium-low heat. Transfer the soaked bread to the skillet. Cook until golden brown, approximately 3 minutes per side. Add butter as needed. If cooking in batches, transfer browned French toast to a wire rack on a baking sheet and kept warm in a 200° oven. To serve, place one piece of French toast on a plate. Cover with pineapple sauce. Top with second slice of French toast. Add more pineapple sauce. Garnish with sliced strawberries and macadamia nut pieces. Dust with powdered sugar.

What’s Cooking in Gail’s Kitchen? Something to Savor: Dirty Breakfast Rice! What do you get when you blend Hawaiian culture with Louisiana spice? You get a savory breakfast that will rev your engine all day long. Too often we think a cold breakfast will give us the energy needed until time allows for the next meal. Sometimes that isn’t until after the workday is almost finished. At least with Dirty Breakfast Rice you get a running start on a busy schedule. Its healthy carb is easily digestible and nutty taste is simply satisfying. Be good to yourself.

DIRTY BREAKFAST RICE

Ingredients:

1/4 cup butter

1 cup instant brown rice

7-ounce vegetable broth

1/2 pound smoked sausage link, cut-up in chunks

4 green onions, chopped

2 eggs, scrambled

1 tablespoon sesame seeds

1 tablespoon crushed red pepper flakes

1 teaspoon Cajun seasoning

1/4 cup soybean sauce

Instructions:

Melt butter in a deep skillet. Do not burn. Add brown rice. Coat well. Cook over medium heat 3-5 minutes, turning often until golden brown. Stir in vegetable broth and smoked sausage chunks. Cover. Simmer 15 minutes until all liquid is absorbed. Scramble the eggs on the side of the pan. Once the eggs are almost cooked, combine the rice and eggs together. Add chopped green onion with tops, sesame seeds, red pepper flakes, Cajun seasoning, and soybean sauce. Mix well and serve immediately.

French Toast Bananas Foster

What’s Cooking in Gail’s Kitchen? Eat More: French Toast Bananas Foster! For that daily dose of potassium you get in bananas, think French Toast for breakfast. With an added twist of Bananas Foster, you may feel as though you’re dining on a private balcony overlooking the French Quarter in New Orleans. It’s that good! For starters, I used Hawaiian sweet bread for its unique fluffy texture. By soaking the slices in a custard-style egg mixture and browning them in a buttered iron skillet, the results were luscious.

FRENCH TOAST BANANAS FOSTER

Ingredients for Sauce:

1/4 cup butter

1/2 cup brown sugar

1/4 cup cream

1/4 cup maple syrup

1-2 tablespoons dark rum

3-4 bananas, cut into thick slices

1/8 teaspoon cinnamon

1 smidgen nutmeg

Instructions:

Melt butter in a small saucepan. Do not scorch. Add brown sugar; stir. Gradually bring to boil and add cream, stirring constantly. Cook until thick, about 4 minutes. Turn heat to lowest setting. Add maple syrup and dark rum. Stir until smooth. Add sliced bananas, cinnamon, and nutmeg. Cook until tender.

Transfer the soaked bread to the skillet. Cook until golden brown, approximately 3 minutes per side. Add butter as needed. If cooking in batches, transfer browned French toast to a wire rack on a baking sheet and keep warm in a 200° oven. To serve, place a piece of French toast on a plate. Cover with banana sauce and dollop of whipped cream. Top with a second slice of French toast. Add more banana sauce. Garnish with whipped cream, chocolate chips, and pecan pieces.

Dining Outside the Home: The Garden Grille at Wailua Bay in Kapaa, Kauai. “Hang Loose” in an open-air setting with the Pacific Ocean as a scenic backdrop. Life doesn’t get any better than this. Go Hawaiian with traditional long grain rice topped with succulent grilled shrimp. These are foods that are healthy but filling. Consider it lesson one to ease into island life. Never mind the speckled wild chicken that fluttered out of reach from the cocktail waitress. It practically teased her into playing a game of “Tag”. Later on, after eating, meander down to the bay to dip your toes in the sand.
