What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Delicious Dill Dip! “Remember to eat your veggies.” We’ve all ignored that inner voice that tends to remind us not to reach for a second cookie. So today we’re going to make eating vegetables FUN! This dip is so yummy, you can scoop it up with cucumber spears, celery sticks, baby carrots, snow peas, cherry tomatoes, or cauliflower. But don’t stop there. The fresh dill even complements a toasted bagel, which you’ll see later on. 
DELICIOUS DILL DIP
Ingredients:

1 cup Greek yogurt 

1 cup mayonnaise 

1/4 teaspoon sea salt

1/4 teaspoon celery seed

1/4 teaspoon onion powder

1 tablespoon celery flakes

1 tablespoon onion, chopped

1 tablespoon fresh dill
Instructions:

Mix thoroughly yogurt and mayonnaise. Add sea salt, celery seed, onion powder, celery flakes, and chopped onion; blend well. Fold in fresh dill. Refrigerate one hour before serving.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Kale Chips! Mention the word “kale” and you can see the noses wrinkle. But, seriously, if you eat leafy vegetables anyway…what’s the big deal? I find kale quite versatile. Its rich dark leaves hold up well in salads, pasta dishes, and snacks. Once baked, with the right seasonings, they turn into a spicy guilt-free alternative. 
KALE CHIPS 
Ingredients:

2 cups baby Kale leaves

1 tablespoon olive oil

1/8 teaspoon seasoned salt

1/8 teaspoon cayenne pepper

1 tablespoon Parmesan cheese, grated
Instructions:

Preheat oven to 300°. Line a baking sheet with parchment paper. Break off the stems of the kale leaves and discard. Gently wash each leaf and dry on a paper towel to eliminate all moisture. One by one, using your fingers, rub both sides of each leaf with olive oil. Place the kale on the prepared baking sheet in a single layer without overlapping. Sprinkle with seasoned salt, cayenne pepper, and Parmesan cheese. Bake for 10 minutes. Rotate the pan and bake 10 minutes longer. The kale leaves will shrink and begin to curl. Do not over-bake! Remove baking sheet from oven and cool for 2-3 minutes. Serve immediately.

Never mind the antioxidants, vitamins A or C, or it’s antiviral benefits; these seeds are amazingly sweet. Add lime zest for zing and pizzazz. Did you know there are over a hundred juicy gem-like seeds in every pomegranate? Another reason to choose this powerfully magnetic mythological mystery. 
PRECIOUS POMEGRANATE ARILS
Ingredients:

1 ripe pomegranate 

1 fresh lime
Instructions:

Make sure the pomegranate’s skin is hard to the touch. No dark spots or blemishes which indicate bruising. There’s more than one way to open a pomegranate. For me, the underwater technique wins my vote. It’s less messy without staining my fingers red and can be done in a few minutes. Fill a large bowl with cool water. Cut the end that looks like a small crown. Then score the skin as though you were going to quarter the fruit. Basically this gives you a line where you can separate it into four sections. Now place one section under water. Turn the skin inside out. The seeds will sink to the bottom of the bowl and the membrane will float. Remove the membrane pieces and repeat with the remaining three sections. When finished pour the bowl of water through a strainer to rinse the pomegranate arils. Transfer them back to the empty bowl. Take a fresh lime and zest the entire skin. Quarter the lime squeezing the juice over all. Use the ruby red seeds to garnish beverages, top yogurt, embellish a smoothie, or as a simple indulgence.

Well, here’s a way to get a tasty boost of energy without the guilt of a candy bar. By choosing pure and organic ingredients, you not only reap the health benefits, but you also gain the satisfaction your tummy needs in order to feel full. Make up a batch in minutes, store in the refrigerator, then Grab and Go! 
EASY ENERGY BALLS
Ingredients:

1 cup organic creamy dark roasted peanut butter 

2/3 cup pure honey

2 cups flaked coconut 

2 cups old fashioned whole grain oats

1 cup organic flaxseed 

1 cup dark chocolate chips

2 teaspoons vanilla extract 

1 teaspoon ground cinnamon 

1/2 cup ground nuts
Instructions:

Warm peanut butter just enough to blend well with the honey. Remove from heat and add coconut, oats, flaxseed, and chocolate chips. Mix well. Sprinkle in cinnamon and vanilla extract. Mix thoroughly. Roll into 30 bite-size balls, coat in ground nuts, and store in the refrigerator in a sealed container.

Well, I’m here to share with you some very good news. By eating certain fruits and vegetables, which carry a high water content, you can cut down the number of glasses you drink throughout the day. Take a tomato, for example. It’s 94% water. Strawberries are 92%. Celery contains 95% water. Are you getting the gist? And the best part is these foods are guilt-free. Plus, the added fiber fills your stomach so those midafternoon cravings don’t send you on a stomach-growling quest for junk food.

What’s Cooking in Gail’s Kitchen? The Daily Special: You Are What You Eat! I’ve been hearing this phrase my entire life, and it wasn’t until recently I actually began paying attention to it again. Oh sure, I knew moderation was key, exercise important, and water essential. I tried to maintain a balanced diet of fruit, vegetables, grains, dairy, meats, and even fats because it made a difference in how well I felt. Plus it reflected in my energy level as well. So, as I was collecting all this produce, it seemed like a no-brainer to share the snapshot with everyone. Bon Appétit.

KINKY RED CABBAGE SLAW
Ingredients:

1/2 head red cabbage, shredded

1/2 cup apple cider vinegar

2 tablespoons sugar

1/4 cup olive oil

2 teaspoons celery seed

Sea salt and pepper to taste

1 tablespoon red onion, diced
Instructions:

Whisk together vinegar and sugar until dissolved. Slowly add oil, celery seed, salt, and pepper. Toss in cabbage and onions. Coat well. Refrigerate for one hour.
