What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Shrimp-Cargot! Not everyone is a fan of the traditional escargot, especially when you mention the word “snails”. By substituting today’s version of that classic French dish with shrimp, it appeals to a more conservative palate. Not only will it satisfy the shrimp-lover in your family, but it’s a little easier on the pocketbook as well. Face it, shrimp is readily available and pretty economical. Combine it with gooey melted cheese and it can make children finish their chores or hypnotize a husband into tackling that “Honey-Do List”. Hurray for shrimp!

SHRIMP-CARGOT

Ingredients:

12 frozen precooked shrimp, thawed

1 tablespoon olive oil

2 tablespoons butter

1/4 teaspoon garlic powder

1 teaspoon seafood spice blend

1/8 teaspoon red pepper flakes

Sea salt and pepper, to taste

1/4 cup dry white wine

1 cup Havarti cheese with dill, shaved

Garnish with fresh chives

Instructions:

Preheat oven to 350°. In a large skillet over medium heat, add olive oil and butter. Do not scorch. Transfer shrimp to skillet in a single layer. Sprinkle with garlic powder, seafood spice blend, red pepper flakes, sea salt, and pepper. Brown shrimp 1 minute, turn and brown 1 minute longer. Add white wine, scraping brown bits from the bottom of the pan. Remove from heat. Transfer mixture to a shallow ovenproof dish. Cover shrimp with shaved Havarti cheese. Bake 15-20 minutes until hot and cheese is melted. Remove from oven. Garnish with fresh chives. Serve with crusty bread or toast points.

Quinoa BLTE Sandwich

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Quinoa BLTE Sandwich! What exactly is quinoa; does anyone know for sure? I took a trip down Wikipedia Lane and discovered “it is an experimental crop in NASA’s Controlled Ecological Life Support System for long-duration human occupied space flights.” It’s also gluten-free and easy to digest. That’s pretty important stuff in my book. Oh yeah, it’s been around for human consumption for at least 3,000 years. Maybe it’s time to give it a whirl.

QUINOA BLTE SANDWICH

Ingredients:

2 slices organic quinoa multigrain bread, toasted

1-2 tablespoons mayonnaise

2 slices tomato

2 romaine lettuce leaves

2-4 slices thick bacon, cooked crisp

1 large egg, cooked over-easy

Pinch seasoned salt

Black pepper to taste

Garnish with parsley

Instructions:

Microwave bacon on paper-towel-lined plate for 5 minutes on High or until crisp. Set aside. In a small skillet sprayed with nonstick oil, crack an egg over medium-high heat. Sprinkle with seasoned salt and black pepper. Fry until set, then carefully flip over. Turn off heat. Continue cooking until white is set, but yolk is still runny. To assemble sandwich, slather both pieces of quinoa toast with mayonnaise. Layer ripe tomatoes, romaine lettuce leaves, and bacon strips on one slice. Slide the fried egg onto the bacon. Top the sandwich with the remaining slice of quinoa toast. Garnish with parsley. Serve immediately.

Stuffed with cheese and veggies makes sinking your teeth into this spicy popper feel like eating from a Mexican cobblestone street vendor in Puerto Vallarta. Anything goes! Give your taste buds an “old town” vacation and then go shopping afterwards!

OLD MEXICO STREET POPPERS

Ingredients:

8 ounces Neufchâtel cheese, softened

1/2 teaspoon Mexican oregano, snipped

1/8 teaspoon garlic powder

1/8 teaspoon onion salt

1/4 teaspoon cumin powder

1/2 cup organic black beans, drained and rinsed

1/2 cup sweet corn, whole kernel

1/3 cup Monterey Jack cheese, shredded

1/2 cup panko bread crumbs

1/2 cup Mexican cheese blend cheese, shredded

2 tablespoons butter, melted

1/8 teaspoon taco seasoning

12 jalapeño peppers, cut lengthwise and seeded

1 tablespoon cilantro leaves, chopped

Instructions:

Preheat oven to 350°. Place a wire rack on a baking sheet. Spray with nonso like. Set aside. In a bowl, combine Neufchâtel cheese, Mexican oregano, garlic powder, onion salt, cumin powder, black beans, sweet corn, and Monterey Jack cheese. Mix well. Set aside. In another bowl, combine panko bread crumbs, Mexican cheese, melted butter, and taco seasoning. Mix well. Set aside. To prepare jalapeños, wear rubber gloves. Leaving the stem on, slice the upper third portion lengthwise. Discard top. Scoop out the seeds and discard. Divide filling evenly between jalapeños. Place on wire rack. Cover top of jalapeños with crumb topping. Press gently into cream cheese mixture. Bake 30-35 minutes or until tops are golden brown and jalapeños are tender. Garnish with cilantro. Serve warm.

Nested Scrambled Eggs

This grab-and-go option can be yours by investing a little effort on the weekend. Believe me, it’s worth it. By creating a “nest” of cheesy hash browns, the outer edge satisfies the salty crunch before your teeth sink into a creamy middle of scrambled eggs and veggies. The size of a muffin makes it a guilt-free pleasure. Try some. There’s actually a lot to crow about.

NESTED SCRAMBLED EGGS

Ingredients:

20-ounce package refrigerated hash brown potatoes

1/2 teaspoon seasoned salt

1/8 teaspoon black pepper

1 tablespoon olive oil

1/4 cup cheddar cheese, shredded

4 eggs

2 tablespoons milk

1 teaspoon Worcestershire sauce

1-2 tablespoons bacon drippings

7 ounces mushrooms, sliced

1/2 bell green pepper, diced

1/2 sweet onion, chopped

1/2 cup Monterey Jack cheese, shredded, divided

2 slices bacon, cooked and crumbled

1 tomato, diced

Fresh basil

Instructions:

Preheat oven to 425°. Combine hash brown potatoes, seasoned salt, black pepper, olive oil, and cheddar cheese. Mix well. Divide mixture between the 12 cups in a prepared muffin tin. Press potato mixture into sides and bottom of each cup leaving the center hollow. Bake 15-20 minutes until hashbrowns are golden and crispy. Meanwhile, whisk together eggs, milk, and Worcestershire sauce. Set aside. Remove “nests” from oven. Reduce oven temperature to 350°. In a large skillet over medium-high heat, add bacon drippings. Sauté mushrooms, green pepper, and sweet onion. Cook until tender, about 5 minutes. Add egg mixture, stirring constantly, until eggs are set. This will take about 4 minutes. Turn off heat. Fold in 1/4 cup Monterey Jack cheese. Fill “nests” with egg mixture. Sprinkle with remaining Monterey Jack cheese, bacon crumbles, and diced tomatoes. Bake 3-4 minutes until the cheese is melted. Garnish with fresh basil before serving.

Mountainous Meatball

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Mountainous Meatball! It doesn’t have to be National Meatball Day to indulge in authentic cuisine found in Little Italy. By using everyday ingredients, mix and shape a giant meatball with your own two hands to feel like a gourmet chef. Smother the meatballs in a jar of marinara sauce, store-bought or made-from-scratch for perfection. And my secret, you ask? Tucked in the top of the meatball, like snow on a mountaintop, is a creamy mozzarella ball. Bet you can’t wait to bite into that!

MOUNTAINOUS MEATBALL

Ingredients:

1 medium onion, chopped

1 tablespoon olive oil

1 cup Italian bread, soaked in milk and squeezed out

1 pound ground sirloin

1/2 teaspoon garlic powder

2 eggs

1/4 cup dry Italian breadcrumbs

1/2 teaspoon sea salt

1/8 teaspoon black pepper

3 sprigs Italian parsley, chopped

3 Ciliegine mozzarella balls (cherry size)

2 cups marinara sauce

3/4 cup Parmesan cheese, grated

3/4 cup ricotta

Fresh basil for garnish

Instructions:

Preheat oven to 400°. Sauté onions in olive oil over medium heat. Set aside. Tear Italian bread into chunks. Add enough milk to cover. Set aside. In a medium bowl, combine ground sirloin, garlic powder, eggs, dry Italian breadcrumbs, sea salt, black pepper, Italian parsley, and the milk-soaked breadcrumbs (with the liquid squeezed out). Mix well. Form into three meatballs the size of a tennis ball. Make an indentation in the top of each meatball. Stuff with a Ciliegine mozzarella ball. Press meat around the cheese leaving only a small bit visible. Place meatballs on a baking sheet covered with parchment paper. Bake 30 minutes until brown and firm. Remove from oven and place each meatball in an individual oven-proof serving dish. Reduce oven temperature to 375°. Spoon marinara sauce over meatballs, dividing it equally between the serving dishes. Top with 1/2 cup of grated Parmesan cheese, between the three dishes. Bake 15 minutes longer. Remove from oven. Sprinkle on the remaining parmesan cheese. Add a dollop of ricotta cheese. Drizzle with olive oil and garnish with fresh basil. Serve with garlic toast.

Jamaican Jerk Chicken

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Jamaican Jerk Chicken! I admit, I tend to take the path of least resistance. By the time I decided I was making this dish for dinner, all I had on hand was frozen chicken. Solution: Slow-cooker to the rescue. Have I ever mentioned how much I love my crockpot? Honestly, some days I’d be lost without it. Not only is the chicken tender and moist, but the citrusy-sweet-spicy glaze made it a perfect accompaniment for steamed sticky rice. Win! Win!

JAMAICAN JERK CHICKEN

Ingredients:

2-3 pounds bone-in chicken thighs and drumsticks

12 ounces nonalcoholic beer

2 tablespoons orange juice

2 tablespoons lime juice

1/4 cup puréed Habanero peppers

2 teaspoons cinnamon

2 teaspoons allspice

2 teaspoons thyme

1 teaspoon garlic powder

1 tablespoon soy sauce

2 teaspoons agave nectar

1 tablespoon kosher salt

2 tablespoons olive oil

1 teaspoon red pepper flakes

2 tablespoons natural honey

2 tablespoons olive oil, for frying

Instructions:

Place frozen chicken in crockpot. In a measuring cup add nonalcoholic beer, orange juice, lime juice, and Habanero purée. Stir to combine. Pour over chicken. Sprinkle with cinnamon, allspice, thyme, and garlic powder. Add soy sauce, agave nectar, kosher salt, and olive oil. Pour over meat. Cover and cook 4 hours on High setting. After chicken is cooked, using a tongs, carefully transfer meat to a platter. Chicken will be very tender. Transfer drippings to a heatproof bowl. Add red pepper flakes and honey. Mix well. On the stovetop, heat an iron skillet on medium-high. Add olive oil. Transfer the chicken to the skillet. Add half the marinade to the skillet. Cook until the skin is crispy and deep brown or charred in places. Turn chicken over and repeat, adding more marinade. Reduce heat and simmer the sauce to thicken, about 5 minutes longer. Brush over the chicken as it thickens.

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: USA Happy Snack! Did I ever tell you I spent my childhood surrounded by apple trees? It’s one of my favorite memories, growing up in the Midwest. If I was in a feisty mood, I’d nibble on sour green apples. Forget that my impatience may have caused a tart pursing of the lips and a slight ache in the stomach. As the apples ripened, I’d pluck the prettiest one off the tree, rub it against my knee for a mirrored sheen, and admire its beauty. Sometimes I’d twist the stem until it broke, reciting my ABCs. Whatever letter I was on when the stem splintered away became the name of my next boyfriend. But not if it matched my brothers’ names. That didn’t count. Here’s to all-American healthy food wrapped up in a little nostalgia.

USA HAPPY SNACK

Ingredients:

1 Gala apple, cored and sliced

1 tablespoon lemon juice

3 slices smoked Virginia ham

4 ounces extra sharp cheddar cheese, sliced thick

Fresh mint

Instructions:

Brush the sliced apples with lemon juice to prevent browning. Cut the ham slices in half. Take one apple slice and place it on top of a piece of cheddar cheese. Wrap them with one piece of ham, seam side down. Tuck a sprig of fresh mint into the snack. Enjoy!

Drunken Chicken Tenders

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Drunken Chicken Tenders! For those who hate to drink alone, here’s a recipe even Julia Child would approve. Just kidding. Actually, when cooking with wine, the alcohol evaporates as the food cooks, leaving behind an incredible flavor loaded with natural moisture. There’s nothing worse than dry chicken, in my opinion. And we’ve all been there. If you think of wine as a fat substitute in recipes, it all begins to make sense why the French eat the way they do and still maintain a healthy weight. Give it a try.

DRUNKEN CHICKEN TENDERS

Ingredients:

16 ounces crimini mushrooms, sliced

3 tablespoons butter, divided

2 cloves garlic, minced

1 cup dry Marsala wine

1 teaspoon cornstarch dissolved in 1 tablespoon cold water

2 cups heavy cream

1/2 teaspoon sea salt

1 1/2 pounds boneless skinless chicken tenders

1 tablespoon olive oil

1/3 cup flour

1 teaspoon Herbes de Provence

1/8 teaspoon black pepper

1-2 cups cherry tomatoes

Fresh parsley for garnish

Instructions:

Heat 1 tablespoon butter in a large saucepan over medium heat. Add mushrooms. Sauté for 10 minutes. Add minced garlic and wine. Simmer gently to reduce the wine, stirring occasionally. After 15 minutes, add cornstarch, cream, and sea salt. Stir as it thickens. Set aside. To prepare the chicken, combine flour, Herbes de Provence, and black pepper on waxed paper. Toss the chicken until coated on both sides. Shake off excess. Heat the remaining 2 tablespoons of butter in a large skillet over medium high heat. Pan-fry the chicken tenders for 2-3 minutes per side until golden brown and cooked through. Add sauce and mushrooms to the skillet with the chicken tenders. Top with cherry tomatoes. Simmer until the tomatoes are soft. Garnish with fresh parsley.

Antipasto Salad

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Antipasto Salad! This recipe is for those of you, like me, who choose a zesty salad every time they visit a Deli. In a few simple steps, you can throw this together and let it marinate in your own refrigerator. Make it the night before, or first thing in the morning. By the time you’re ready for the next meal, it’s done. The flavors blend so well when refrigerated, you’ll think it was store-bought instead. Be kind to yourself. Permission granted.

ANTIPASTO SALAD

Ingredients for Pasta:

1 cup dry rigatoni

1 Roma tomatoes, quartered

6 slices Italian salami, quartered

2 orange sweet mini-peppers, seeded and sliced

1/3 cup pimento-stuffed olives

4 pepperoncini, whole stemmed

3 basil leaves, chopped

For Dressing:

1/4 cup olive oil

1 teaspoon Italian seasoning dry mix

1 tablespoon Parmesan cheese, grated

1 teaspoon balsamic vinegar

Bibb lettuce leaves

Garnish with shaved Parmesan cheese

Instructions:

Cook pasta in a pot of boiling salted water, according to package directions. Drain pasta; rinse with cold water and set aside. Combine pasta, Roma tomatoes, Italian salami, sweet mini peppers, olives, pepperoncini, and basil. Toss to mix. In a measuring bowl, whisk together olive oil, Italian seasoning mix, grated Parmesan cheese, and balsamic vinegar. Drizzle over pasta mixture. Spoon into Bibb lettuce leaves. Garnish with shaved Parmesan cheese.
