What’s Cooking in Gail’s Kitchen? Talking Points: X-Tra Cheese, Please Appetizer! Ever since I visited a popular Las Vegas restaurant, I’ve been looking for a cheese appetizer like this one. It’s not the traditional gooey soupy cheese dip you swipe tortilla chips through before gobbling down. The waiter set the iron skillet in front of us and said, “This is a cheese you need to use a knife and fork with. It’s not going to jump onto the chip.” Come to find out it was flambéed over an open fire in the kitchen. Wow! And they used tequila to ignite it. I wish I could tell you that’s what I did here, but sorry, “no comprendo”. Instead I baked it at a high temperature and dredged it through a spicy honey. Show compassion. I tried.

X-TRA CHEESE, PLEASE APPETIZER

Ingredients:

2 tablespoons butter, unsalted

1 yellow onion, diced

1 teaspoon kosher salt

1 1/2 cups Monterey Jack cheese, shredded

1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/4 cup raw Tupelo honey

1 teaspoon sriracha

1 teaspoon garlic habanero sauce

2 tablespoons ranch dressing

Chives, for garnish

Instructions:

Preheat oven to 475°. Using a 10” iron skillet, warm butter over medium heat. Add diced onion and kosher salt. Sauté for 5-8 minutes, or until onions are soft and golden brown. Add Monterey Jack cheese, shredded cheddar cheese, and shredded mozzarella cheese. Mix thoroughly with onions. To make the spicy honey, in a microwave-safe dish combine raw Tupelo honey, sriracha, and garlic habanero sauce. Stir well. Microwave on High for 30 seconds. Stir again. Set aside. Transfer cheese-filled iron skillet to the oven. Bake 10 minutes until cheese is bubbly. Turn oven setting to High on Broil. Allow dark spots to appear on the surface, about 1-2 minutes. Watch carefully as this happens very quickly. Remove skillet from oven. Drizzle with spicy honey and ranch dressing. Garnish with chopped chives. Serve with tortilla chips.

What’s Cooking in Gail’s Kitchen? Food With Soul: Almaco Jack Skinny Fajitas! Since fish tacos are a popular menu item these days, it’s not a far stretch to serve fish fajitas. The buttery sweet taste of grilled Almaco Jack fillets, combined with strips of charred peppers and onions, allow us to customize our meal by choosing the stuff we like best. Some prefer the handheld tortilla, others nix the bread and go for the endless toppings. No matter what, you seldom see leftovers and everyone usually walks away feeling satisfied.

ALMACO JACK SKINNY FAJITAS

Ingredients:

4 3-ounce Almaco Jack fish fillets

1/2 cup white wine

1 tablespoon mayonnaise

2 teaspoons seafood seasoning

8 mini peppers, sliced

1 sweet onion, sliced

1 tablespoon olive oil

1 teaspoon seasoned salt

Fresh cilantro, for garnish

Lime wedges, for garnish

Instructions:

In a glass baking dish, arrange fish fillets in a single layer. Pour white wine over top. Coat each fish with a thin layer of mayonnaise. Sprinkle seafood seasoning on top. Cover dish with plastic wrap and refrigerate for 30 minutes; turn occasionally. Meanwhile, prepare the gas grill for medium heat, approximately 350°. Transfer each fish fillet to the grill rack. Discard marinade. Close the grill cover. Cook 4 minutes; carefully flip and cook 4 minutes longer. Transfer fish to a platter. The fish will flake easily when done. Cook the vegetables at the same time by using a grill pan. Allow vegetables to char. Serve fajitas with flour tortillas, side salad, and guacamole. Garnish with fresh cilantro and lime wedges.

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Jarcuterie Jumbles! How’s this for a “Wow!” factor? Instead of preparing an entire platter full of goodies, create a personal jarcuterie allowing mobility for every party guest to mingle. By assembling jars containing fresh fruits, crudités, whole olives, cubed cheese, sea salt crackers, cured meats, and pretzel sticks, people can nibble at their leisure. Choose jars you may already have on hand to keep it interesting. I went one step further and made cheese ball minis rolled in Everything But Bagel seasoning. The results were worth the advanced planning. Simply keep the jars chilled until you wish to serve them. Place baskets of extra crackers and pretzels for those who crave more. Leftover jarcuteries can be refrigerated for the next day. Guests may simply attach the lid and take it with them or leave them behind for you to recycle for your next gathering.

JARCUTERIE JUMBLES

Ingredients:

8 ounces cream cheese, softened

2-3 tablespoons Everything But Bagel seasoning

8 ounces Sharp Cheddar Cheese, cubed

8 ounces Monterey Jack Cheese, cubed

8 ounces hard salami, sliced thin

3 ounces whole manzanilla olives

6 ounces red raspberries, fresh

6 ounces blackberries, fresh

1 stalk celery, fresh

16 ounces green seedless grapes, fresh

8 ounces pretzel rods

5 ounces sea salt pita crackers

Party Picks, for assembly

Assorted Jars, sterilized

Celery Sprigs, for garnish

Instructions:

To prepare mini cheese balls, take a teaspoon of softened cream cheese, roll into a ball. Set aside. Repeat until the block of cream cheese is used. Sprinkle Everything But Bagel seasoning onto a sheet of waxed paper. Roll each mini cheese ball in the seasoning. Transfer to a plate. When finished, refrigerate to chill. Meanwhile, fill the base of each jar with green grapes. Skewer cheddar cheese, Monterey Jack cheese, hard salami, and olive as preferred. Skewer red raspberry, green grape, and blackberry together. Arrange skewers, pretzel rod, and celery stick into the jar. Finish with a fresh sprig of celery leaves. Refrigerate jars until ready to serve. Cover with plastic wrap.

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Drawn Butter Fish Favorite! Keeping it simple with a fresh catch is probably my favorite way of serving fish. Now that I’ve connected with a local fisherman, it practically feels like a luxury to plan evening meals. The marinade couldn’t get any easier; a couple of key ingredients do the trick. After all, the star attraction is the warm melted butter. You’ve heard me rave about the French sea salt butter we order once a year. It is ah-mazing. Serve dinner with fresh veggies from the produce bin and you’ll be smiling all through the meal.

DRAWN BUTTER FISH FAVORITE

Ingredients:

1 pound Almaco Jack fish fillets

1-2 tablespoons garlic wine vinegar

1-2 tablespoons olive oil

2 cloves garlic, minced

2 tablespoons sea salt butter

Juice of one Lemon

Instructions:

Rinse fish fillets and pat dry. In a shallow dish, combine garlic wine vinegar, olive oil, and minced garlic. Brush both sides of the fish fillets with marinade. Place fillets in the shallow dish, cover with plastic wrap, and refrigerate for one hour. To cook, warm butter in an iron skillet over medium-high heat. Add the fish fillets, cover, and cook for 4 minutes without turning. Flip and cook 4 minutes longer or until fish is crispy. Transfer fillets to a plate, drizzle with a squeeze of fresh lemon juice. Spoon drawn butter over all. Serve immediately.

Huevos Rancheros Casserole

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Huevos Rancheros Casserole! Looking for a little variety for a weekend breakfast? Take a trip down a rural road for an old classic that was served as “ranchers eggs” on the farms in Mexico. By turning it into a robust casserole, you can give it an American twist. It still has eggs, cheese, salsa, and tortillas in there. I chose street-size corn tortillas just because they were smaller and easier to work with. Obviously any type will do. Feel free to add beans and chorizo if you’re looking for hearty portions. Do ahead and refrigerate overnight so it’s ready to bake first thing in the morning.

HUEVOS RANCHEROS CASSEROLE

Ingredients:

10 street-size corn tortillas

1 cup chunky salsa

1 cup black beans, drain liquid

1 1/2 cups Colby-Monterey Jack cheese, shredded

1/2 pound chorizo sausage, coarsely chopped and cooked; drained

3 poblano peppers, stems and seeds removed, cut into strips

6 eggs

1/2 cup milk

1/2 teaspoon oregano

1/8 teaspoon red pepper flakes

1/8 teaspoon cumin

Sour cream, for garnish

Green onion snips, for garnish

Instructions:

Spray on 8-inch square casserole dish with nonstick oil. Line the sides and bottom with 8 street-size corn tortillas, slightly overlapping. Spread a layer of salsa over the bottom. Next, layer with black beans. Sprinkle on 1/2 cup of shredded cheese. Top with cooked chorizo, poblano peppers, and another 1/2 cup of shredded cheese. Cut the last 2 tortillas into strips and layer over cheese. In a bowl, combine eggs, milk, oregano, red pepper flakes, and cumin powder. Whisk together. Pour egg mixture over all. Sprinkle with remaining shredded cheese. Press lightly into egg mixture. Cover dish. Refrigerate 8 hours or overnight. To bake, preheat oven to 350°. Bake covered casserole 30 minutes. Remove lid and bake 15-20 minutes longer or until center is set. Let stand 5 minutes before serving. Garnish with sour cream and chopped green onions.

Vine-Ripened Tomato Pie

What’s Cooking in Gail’s Kitchen? Start Smart: Vine-Ripened Tomato Pie! Oddly enough, I’ve had a couple people tell me they’ve never heard of tomato pie. It may be more of a southern dish, or perhaps its more familiar to those of us who live in the country and can’t figure out what to do with the abundance of garden tomatoes. Who knows? I must admit there is a secret ingredient that I discovered from the Savannah restauranteur and popular chef, Paula Deen. Maybe you can pick it out, too.

VINE-RIPENED TOMATO PIE

Ingredients:

1 prepared deep-dish pie shell

4-6 Roma tomatoes, sliced

1 tablespoon kosher salt

1/8 teaspoon oregano

1/8 teaspoon marjoram

1/8 teaspoon basil

1/8 teaspoon garlic powder

1/2 cup sweet onion, chopped

1 cup mozzarella cheese, shredded

3/4 cup cheddar cheese, shredded

1/2 cup pepper jack cheese, shredded

1/4 cup parmesan cheese, grated

1 cup mayonnaise

Cherry tomatoes, for garnish

Basil leaves, for garnish

Instructions:

Preheat oven to 350°. Bake the pie shell according to package directions. Remove from oven and set aside. In a bowl, combine sliced tomatoes, kosher salt, oregano, marjoram, basil, and garlic powder. Allow tomatoes to “weep” for 10 minutes. Using a slotted spoon, transfer seasoned tomatoes to the pie shell. Layer sweet onion over tomatoes. In another bowl, combine mozzarella cheese, cheddar cheese, pepper jack cheese, and parmesan cheese with mayonnaise. Mix well. Spread cheese mixture over top of tomatoes and onions. Bake 30 minutes, or until lightly browned. Garnish with cherry tomatoes and basil leaves.

The waitress at the Mexican restaurant recommended the full bodied taste of Green Chile Soup. It hit the spot. From the first tangy spoonful of mild green chiles to the gentle creaminess on my tongue, I knew this wasn’t your typical soup. It may have been a regional delicacy, but by making it at home, I saved myself a round trip ticket to Colorado.

GREEN CHILE SOUP

Ingredients:

20 green chiles, large

1 yellow onion, chopped

1 tablespoon butter

1/2 teaspoon sea salt

1/4 teaspoon garlic powder

3 cups chicken broth

1 cup heavy cream

1/3 cup Greek yogurt

Monterey Jack cheese and cilantro, for garnish

Instructions:

Place green chiles on a wire rack over a foil-lined baking sheet. Roast on Broil until blistered and charred. Remove from oven. Cool. Discard stems and seeds. In a large pan, warm butter over medium heat. Add chopped onion. Sprinkle with sea salt and garlic powder. Cook until soft. Add roasted chiles and chicken broth. Reduce heat and simmer for 20 minutes. Transfer to a food processor and blend until smooth. Transfer mixture back to pan. Stir in cream and Greek yogurt. Gently warm mixture until soup is heated through. Serve with fresh cilantro and Monterey Jack cheese.

Restaurant and Food Truck menus are the trendsetters that carry over into our home kitchens. Fusion foods blend a couple cultures into a balanced dish with copacetic results. Take this one, for instance. Asian wonton meets Mexican spice. You get the gooey cheese with spicy meat perfectly portable in a crispy cup. Pick one up and walk around. These handheld appetizers don’t last long. Forgot a napkin? No worries. Lick your fingers and meander back to the buffet line to snag another.

JALAPEÑO CHEESY CUPS

Ingredients:

24 wonton wrappers

8 ounces cream cheese, softened

1 1/2 cups Monterey Jack cheese, shredded

2 tablespoons pickled jalapeños, chopped

2 tablespoons bacon bits

2 tablespoons cooked chorizo, crumbled

2 green onions, chopped

1/2 cup cheddar cheese, shredded

Jalapeño slices, garnish

Cilantro, garnish

Instructions:

Preheat oven to 400°. Grease a 12-cup muffin tin. Place 2 wonton wrappers in each cup. Bake 4 minutes. Remove muffin tin from oven. Set aside. In a large bowl, combine cream cheese, Monterey Jack cheese, chopped jalapeños, bacon bits, crumbled chorizo, and green onions. Mix well. Divide cheese mixture into cups. Top with cheddar cheese. Finish with jalapeño slices. Bake 10 minutes until cheese is bubbly. Wontons should appear golden brown and slightly crispy. Garnish with fresh cilantro. Serve warm.

What’s Cooking in Gail’s Kitchen? The Color of Food: Layered Taco Dip! Wait no longer for a great appetizer. Set the tone for a social gathering with foods that say, “Let’s get this party started!”. A creamy dense layer of Mexican spices over a base of refried beans make the perfect foundation to hold the remaining ingredients. Not a fan of black olives? Simply choose green peppers or mushrooms instead. After all it’s your kitchen, so own it!

LAYERED TACO DIP

16-ounce can refried beans, traditional

16-ounce carton sour cream

8-ounce block cream cheese, room temperature

1 taco seasoning packet

1 cup romaine lettuce, chopped

1 large tomato, diced

3 green onions, chopped

1 1/2 cups extra sharp cheddar cheese, shredded

1/2 cup Monterey Jack cheese, shredded

2.25-ounce can sliced black olives, drained

Tortilla chips or corn chips

Instructions:

Spread refried beans on the bottom layer of a serving platter. Combine sour cream, cream cheese, and taco seasoning packet in a bowl. Mix until smooth. Spread over refried beans. Divide romaine lettuce evenly over cream cheese layer. Top with diced tomatoes and green onion snips. Sprinkle shredded cheddar cheese followed by Monterey Jack cheese over all. Finish with black olive slices. Cover with plastic wrap and refrigerate dip for at least one hour. Serve with tortilla chips or corn chips.
