After all, Pizza checks the right boxes in the following food group categories: grain, milk, meat, and vegetable. What I like about this kid-friendly recipe is the fact that adults control the quality of ingredients. Plus, by involving the youngsters you’re feeding, they can feel good about making healthy choices. For instance, substitute plain white bread with crusty artisan varieties. Choose 90% lean meat. Nix the high fructose corn syrup brand of ketchup for the organic one. Try pimentos for natural sweetness. The opportunities are endless.

KID-FRIENDLY PIZZA TOAST

Ingredients:

1 pound ground beef sirloin

1 teaspoon sea salt

1 cup tomato ketchup

2 tablespoons lemon juice

2 tablespoons vinegar

1 tablespoon brown sugar

1 teaspoon yellow mustard

1/2 yellow onion, chopped

1/2 green pepper, chopped

1/4 cup diced pimentos

6 slices artisan bread

3 tablespoons butter

1 cup mozzarella cheese, shredded

Instructions:

In a large skillet over medium-high heat, brown ground beef until cooked and crumbled. Drain excess liquid. Reduce heat to low. Add sea salt, ketchup, lemon juice, vinegar, brown sugar, and mustard. Stir well. Add chopped yellow onions, green peppers, and diced pimentos. Mix well. Cover and simmer for 30 minutes. Preheat oven to 400°. Butter one side of artisan bread. Place buttered side down on a baking sheet. Top with spoonfuls of pizza mixture. Sprinkle on mozzarella cheese. Bake 15 minutes until cheese melts and toast is crunchy. Bada-bing-bada-boom!

Elderflower Lemon Cake

In honor of the royal wedding, I treated my friends to an unofficial version of Harry and Meghan’s delicious inspiration. It lends to the warm floral notes of Spring with just enough citrus and vanilla to make a moist and fluffy cake. Notice the luscious cream cheese icing drizzling down the sides like a cascading satin gown. Petite flowers, crushed pistachios, and lemon segments produce a sensational finish. Sounds like a royal pairing of Love and Happiness, doesn’t it?

ELDERFLOWER LEMON CAKE

Ingredients:

4 eggs, room temperature

3/4 cup sugar

2/3 cup olive oil

1/3 cup butter, melted

1 teaspoon citrus peel, granulated

1 teaspoon vanilla extract

4 tablespoons elderflower liqueur

1 1/2 cups flour

1 tablespoon baking powder

1 small box lemon pudding mix, instant

3/4 teaspoon sea salt

4 ounces cream cheese, room temperature

4 tablespoons natural golden honey

1 tablespoon elderflower liqueur

1 tablespoon pistachios, crushed

Fresh lemon slices, cut into segments

Fresh flowers

Instructions:

Preheat oven to 325°. Grease and flour a bundt pan. Set aside. In a stand mixer, combine eggs and sugar. Beat on High for 3 minutes. Turn to Low setting; drizzle in olive oil and melted butter. Continue beating one minute longer. Fold in citrus peel, vanilla extract, and elderflower liqueur. In another bowl, combine flour, baking powder, lemon pudding mix, and sea salt. Gradually add the dry ingredients to the wet batter, scraping down the sides as needed. Pour cake batter into the prepared bundt pan. Bake 55-60 minutes until cake is golden brown and a tester comes out clean. Remove pan from oven and cool on a wire rack for 15 minutes. Invert onto a cake plate to unmold. To make icing, combine cream cheese, natural honey, and elderflower liqueur. Beat until light and fluffy. Drizzle over cooled cake. Sprinkle with crushed pistachios. Garnish with lemon segments and tiny fresh flowers.

Sure, it takes a few extra minutes to chop things up…but it’s so worth it. Check out the delicate, spears of baby asparagus. Imagine that sweet nutty taste. Or what about the thin-as-paper radish slices? They provide a slight tickle of pepper spray. Did you notice the tiny shallot rings nestled between the romaine and radicchio? Their subtle oniony/garlic taste may surprise you. Without a doubt, the finishing touch reveals feathery fronds of dill that promise not to overpower. Together, Chop Chop Salad comes across as ineffably sublime.

CHOP CHOP SALAD

Ingredients for Vinaigrette:

1 shallot, sliced and chopped

1/8 teaspoon lemon citrus peel

1/4 cup lemon juice

1 tablespoon garlic wine vinegar

1/4 cup olive oil

2 tablespoons Dijon mustard

2 tablespoons agave nectar

Instructions for Vinaigrette:

Combine shallot pieces, lemon citrus peel, lemon juice, garlic wine vinegar, olive oil, Dijon mustard, and agave nectar. Whisk well. Set aside at room temperature.

Ingredients for Salad:

Kosher salt

1 cup snow peas

1/2 bunch baby asparagus

5-6 radishes, thinly sliced

1 romaine heart, sliced

1/4 head radicchio, chopped

1/2 cup dill fronds, snipped

Instructions for Salad:

Fill a large bowl with ice water. Add a handful of kosher salt. Stir. Submerge snow peas and asparagus in ice water for 10 minutes. This makes them very crisp. Drain well; pat dry. Chop into bite-size pieces. Mix together romaine lettuce, chopped radicchio, snow peas, baby asparagus, and radish slices. Pour vinaigrette over all. Toss to coat. Add dill fronds. Serve immediately.

Vanilla Pineapple Jam

What’s Cooking in Gail’s Kitchen? The Color of Food: Vanilla Pineapple Jam! I learn so much by following other foodies. My friend, Lathiya, featured this aromatic recipe on her blog recently. I never thought of adding vanilla to pineapple. The results are amazing! VANILLA PINEAPPLE JAM

Ingredients:

2 cups pineapple chunks, drain juice if using canned

3/4 cup sugar

3 discs sugared ginger, finely chopped

1 tablespoon pure vanilla extract

Pinch sea salt

1 tablespoon lemon juice

Instructions:

Using a 9-inch saucepan, combine pineapple chunks and sugar over medium-high heat to boil. Reduce to low and continue cooking. Gently mash the chunks with a fork as pineapple softens. Add sugared ginger, vanilla extract, and sea salt. Cook until mixture becomes jam, about 20 minutes. Add lemon juice; stir and cook 10 minutes longer. Jam will begin to thicken. Remove from heat and let sit for 10 minutes before transferring to a jar. Store covered in the refrigerator.

What’s Cooking in Gail’s Kitchen? The Chow Down: Nutty Cherry Crostini! Go international with an Italian appetizer that has become a timeless classic. Crostini is a fancy word for “little crusts”, according to Wikipedia. Did you know during medieval times it was pretty normal for Italian peasants to eat their meals on slices of bread instead of using pottery? Lucky for us, the idea caught on. I can’t think of a better way to socialize before dinner.

NUTTY CHERRY CROSTINI

Ingredients:

1 tablespoon olive oil

1 1/2 cups sweet cherries, pitted and halved

4 baguette slices, toasted

4 ounces Danish bleu cheese, room temperature

1-2 tablespoons pistachio nuts, chopped

Fresh sprigs if lemon thyme, for garnish

Instructions:

In an iron skillet over medium-high heat, warm olive oil. Add sliced cherries, stirring gently to soften. Meanwhile toast baguette slices. Spread on bleu cheese. Add a spoonful of cherries. Sprinkle with chopped pistachio nuts. Garnish with fresh lemon thyme leaves.

“Kale” Caesar Salad

What’s Cooking in Gail’s Kitchen? The Chow Down: “Kale” Caesar Salad! Isn’t it entertaining to take ordinary food, mix it up a bit, and then give it a new name? That’s exactly what I did with the traditional Caesar salad. By partnering tender baby kale with sturdy romaine leaves, it creates a blend that is satisfying to the taste buds. The creamy Caesar dressing alone brings a nice anchovy flavor to the salad with a robust hint of garlic. Just think what would happen if we added grilled chicken. The possibilities are endless.

“KALE” CAESAR SALAD

Ingredients:

2 cups baby kale, gently torn

2 cups romaine lettuce, shredded

4 radishes, sliced

1 shallot, thinly sliced

2 tablespoons olive oil

1 tablespoon lemon juice

Kosher salt, to taste

4 tablespoons prepared Caesar dressing

1/3 cup garlic croutons

1/4 cup parmesan cheese, shaved

1 tablespoon fresh parsley

Cracked black pepper, to taste

Instructions:

In a large bowl, combine baby kale, romaine lettuce, radishes, and shallot. Drizzle with olive oil, lemon juice, and kosher salt. Toss gently. Top with prepared Caesar dressing, garlic croutons, shaved parmesan cheese, fresh parsley, and cracked black pepper. Serve immediately.

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Icebox Lemon-Lavender Pie! Are you ready for a decadent dessert that is light, luscious, and requires no baking? Take a trip with me down South, where the summers are balmy and the desserts are as cool and refreshing as a glass of southern iced tea. The dessert begins with a foolproof graham cracker crust, store-bought is fine. The filling is a blend of tart lemon and flowery lavender swaddled in a lush sweet creamy texture that literally melts in your mouth. Mix it all together and pop it in the freezer, although it won’t stay there for long.

ICEBOX LEMON-LAVENDER PIE

Ingredients:

1 graham cracker crust

2 cans sweetened condensed milk

1 teaspoon lemon extract

1 teaspoon lavender extract

3/4 cup lemon juice

1 teaspoon citrus peel, granulated

1 tablespoon organic lavender buds, dried

Lavender sprigs for garnish

Instructions:

Chill prepared pie crust, stand mixer bowl, and beater beforehand. Mix sweetened condensed milk, lemon extract, and lavender extract on Low setting until blended. Add lemon juice and citrus peel, mixing until filling thickens and is smooth. Fold in lavender buds. Pour into chilled pie crust. Cover and freeze overnight. Remove from freezer, cut, and serve. Garnish with fresh lavender sprigs. Store leftovers in the freezer.

Flaming Cherries Jubilee

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Flaming Cherries Jubilee! Here’s a dessert that always leaves a nice impression. And why wouldn’t it? After all, it was specially prepared for Queen Victoria’s Jubilee celebration in the late 1800’s. Hence the name. Begin with the season’s plump and juicy cherries found at the local Farmer’s Market or neighborhood grocery. Gently warm them in a sweet simple syrup. Add brandy and ignite for an amazing presentation. Then serve over bowls of ice cream. Super-simple yet super-delish!

FLAMING CHERRIES JUBILEE

Ingredients:

1/2 cup water

1/2 cup sugar

2 cinnamon sticks

Lemon rind

1 cup cherries, stems and stones removed; halved

2 tablespoons brandy

Vanilla Ice Cream

Instructions:

In a saucepan over medium heat, combine water, sugar, cinnamon sticks, and lemon rind. Stir to dissolve sugar. Boil for 3-5 minutes until mixture thickens. Reduce heat to simmer, add cherries. Cook over low heat until fruit is softened. The syrup will turn color to match the cherries. Remove the lemon rind; discard. Add the brandy, but do not boil. Turn off stove. Flame the cherries with a kitchen torch. Using a spoon, baste cherries with liqueur and juices until the flames extinguish. Spoon over bowls of vanilla ice cream. Serve warm.

Zen Himalayan Plate

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Zen Himalayan Plate! Go above ordinary ingredients and transform your palate with a meal on the Himalayan salt plate. Foods pick up a delicate saltiness that transcends the flavor and leaves behind monotony. By creating bite-size pieces of fish, shellfish, and cucumber sushi, nourishment balances out the inner peace from within. Good for health-crazed affenciados as well as those soul-searching for expression.

ZEN HIMALAYAN PLATE

Ingredients:

3.75-ounce tin Wild Caught Sardines, in olive oil

1 lemon, sliced and quartered

3.75-ounce tin smoked oysters

Fresh lemon thyme

7-ounces prepared crab dip

4 mini cucumbers, seedless

Fresh dill

Assorted crackers

Instructions:

Arrange sardines on a Himalayan salt plate. Drizzle with olive oil from the tin. Place lemon wedges on fish and garnish with fresh lemon thyme. Smoked oysters may be served in individual sea shells. Drizzle with sauce from the tin. Oysters may also be served on a cracker. To assemble the cucumber sushi, slice mini cucumbers into thick rolls. To remove the inside portion of each disc, place the cucumber on a cutting board, use a sharp knife, and rotate the cuke until the center is cut out. Make sure the walls remain. Discard fleshy pulp. Place the cucumber “rings” on the Himalayan salt plate. Spoon prepared crabmeat dip into each ring. Press gently to fill the sushi roll. Garnish with dill.
