What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Holy Capers-Salmon Avocado Toast! Whenever I have leftover grilled salmon, this is my favorite indulgence. The first time I made it, my husband and I literally stood at the kitchen counter nibbling on it until it was completely gone. Each morsel had us licking our fingers and begging for more. The combination of lemon thyme and salty capers balance the slightly smoky texture of the salmon. It’s followed by a crunch of sesame seed artisan toast with a creamy avocado finish. If you take the time to sit down and enjoy this delightful open-face sandwich, think about pairing it with a light and fruity rosé wine. It’ll tickle your palate and have you giggling all afternoon or evening long. 

HOLY CAPERS—SALMON AVOCADO TOAST

Ingredients:

6 ounces of grilled salmon fillet, flaked 

Sprigs of fresh lemon thyme

2 teaspoons imported capers, non-pareil 

2 slices of sesame artisan bread, toasted

1 small avocado, mashed

1 small tomatillo, diced

Pinch of garlic powder 

1 teaspoon lemon juice

Instructions:

Make sure the grilled salmon fillet is flaked. Set aside. Combine the mashed avocado, diced tomatillos, garlic powder, and lemon juice in a bowl. Blend well. To assemble the open-face sandwich, place the toasted artisan sesame slice on a luncheon plate. Next spoon avocado mixture over top. Layer flaked salmon over all. Sprinkle with capers and garnish with lemon thyme. 

Yellow Roasted Pears

What’s Cooking in Gail’s Kitchen? Food Plating: Yellow Roasted Pears! Need a show stopping dessert that will thrill your guests? Pears definitely check all the boxes. Dessert pears are naturally sweet, delicious warm, have an impressive beauty quality, manage portion-control, are super simple to make, and pear-fectly delightful. If you, like me, appreciate a cordial glass of wine with dessert, think a fizzy Moscato, spicy Gewürztraminer, or classic Pinot Gris. I did notice a couple of readers shaking their heads about the bleu cheese crumbles, mumbling “No Way!” Take heart because Gorgonzola, Gouda, or Ricotta can be milder choices as an excellent pairing instead. And while I’m at it, walnuts or almonds can be substituted for the sugared pecans. You see? It’s all good. Everyone can justify this versatile dessert. 

YELLOW ROASTED PEARS 

Ingredients: 

4 Bartlett pears, ripe but firm

2 tablespoons butter, unsalted 

1/2 teaspoon cinnamon

1/4 cup bleu cheese, crumbled

1/4 cup sugared pecans 

2 tablespoons natural honey

1 tablespoon lemon juice

Fresh thyme, for garnish

Instructions: 

Preheat oven to 375°. Line a baking sheet with parchment paper. Set aside. Slice the pears lengthwise, leaving the stem in place where possible. Using a melon ball utensil, remove the core to create a small cavity. Brush the pears with melted butter; sprinkle with cinnamon. Place the pears, cut side up, on the prepared baking sheet. Roast in the preheated oven for 20 minutes, or until lightly golden. Carefully remove the pears from the oven. Fill each cavity with crumbled bleu cheese and chopped sugared pecans. Drizzle with honey. Sprinkle with lemon juice for brightness. Broil the pears on High setting for 2 minutes, or just until the bleu cheese begins to melt slightly. Watch carefully. Transfer the pears to a serving platter. Garnish with fresh thyme. 

Taro Tuna Crudo

What’s Cooking in Gail’s Kitchen? Food Plating: Taro Tuna Crudo! Pay attention to the kind of tuna you need for this recipe. It needs to be a high-quality (sashimi) raw fish. Also you should use a good quality olive oil. Remember what I said the other day about quality ingredients? There’s nothing worse than catching a stale fish odor right before that first bite. It can put a damper on the whole “raw fish” experience. I think you know what I’m talking about. Crudo is an Italian dish containing raw fish. The difference comes when it is paired with a simple dressing of olive oil and citrus juice. It requires no marination whatsoever. Just mix and serve. Perfetto! 

TARO TUNA CRUDO

Ingredients: 

2 tablespoons lemon juice

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon white pepper

8-ounces ahi tuna steaks, sashimi-grade

1-2 green onions, thinly sliced

1 teaspoon toasted sesame seeds

Instructions:

In a bowl, whisk together lemon juice, olive oil, sea salt, and white pepper. Set aside. Cut the raw ahi tuna into bite-size cubes. Add to the dressing; gently toss. Top with sliced green onions and toasted sesame seeds. Serve with taro chips. 

Sriracha Mayo Dipping Sauce

What’s Cooking in Gail’s Kitchen? Food Plating: Sriracha Mayo Dipping Sauce! Please don’t accuse me of serving under-seasoned food. Years ago I saw people dipping their French Fries in a bowl of mayonnaise and thought it very strange. And then I was informed the Europeans do it all the time. They say the full earthy flavor of the potatoes are enhanced by the rich, tangy taste of mayonnaise rather than the stronger sweet taste of ketchup. Fast forward to now, and I can justify a mayonnaise-based chili sauce, known as sriracha mayo, as a popular condiment. It’s thicker consistency latches onto a chip and won’t drop off on its way to your mouth. Adding the kick of spice is pure pleasure. Wouldn’t you agree?

SRIRACHA MAYO DIPPING SAUCE

Ingredients: 

1/4 cup mayonnaise 

1 tablespoon sriracha chili sauce

2 teaspoons lemon juice

1 teaspoon soy sauce

1/4 teaspoon kosher salt

1/8 teaspoon red pepper flakes

Instructions: 

In a bowl, combine mayonnaise, sriracha chili sauce, lemon juice, soy sauce, kosher salt, and red pepper flakes. Stir until smooth. Serve as a dipping sauce with Garden Salsa Sun Chips*.

Lobster Au Gratin

What’s Cooking in Gail’s Kitchen? Food Plating: Lobster Au Gratin! Go to any lobster hut along the eastern seaboard and you’re bound to see “Baked Lobster Pie” on the menu. Ask the server about it, and you may see her mouth drool and eyes roll back as she explains the buttery cracker topping mixed with luscious lobster chunks. And butter. Did I mention butter? Real butter. Just before she turns on her heel to sashay back to the kitchen to fill your drink order, she’ll mention an afterthought, “Of course you can order it without the cracker topping.” By that time you’ve already made up your mind and respond without thinking, “Um, duh. Why would I do that?” Her smile says it all. 

LOBSTER AU GRATIN

Ingredients: 

2-3 lobster tails, cooked and cut into bite-size chunks

1 1/2 cups Ritz* crackers, crushed

1/4 cup parsley, chopped

2 tablespoons parmesan cheese, grated

1/2 cup butter, melted

1/4 teaspoon garlic powder

2 tablespoons sherry

1/4 cup light cream

1 teaspoon lemon juice

1/2 teaspoon sea salt 

1/8 teaspoon black pepper

Parsley, for garnish

Instructions: 

Preheat oven to 350°. Spray 2 individual casserole dishes with nonstick oil. Place them on a baking sheet. Set aside. Combine crushed crackers, chopped parsley, parmesan cheese, melted butter, and garlic powder. Mix well. Set aside. In small bowl, combine sherry, light cream, lemon juice, sea salt, and black pepper. Mix well. Divide the cooked lobster between the two prepared casserole dishes. Spread the buttery cracker topping evenly over the lobster. Carefully pour the cream mixture over the top. Do not overflow. Bake 10-15 minutes, or until the crumb topping is golden brown. Remove the casseroles from the oven and allow to rest for a few minutes. Garnish with fresh parsley.

What’s Cooking in Gail’s Kitchen? The Daily Special: Lazy “Lobster” Wrap! When you don’t live at the ocean where lobster is in abundant supply, the next best thing is an imitation variety. Alaska pollock is not only heart-healthy, fat-free, and packed with omega-3 in every serving, it’s readily available at your neighborhood market. Amazingly, this mock lobster is a surprising alternative. Eat it now and with the money you save, you can stuff yourself with real lobster when you travel to the shore. 

LAZY “LOBSTER” WRAP

Ingredients:

7-ounce package of chunk-style imitation lobster

1 tablespoon lemon olive oil

1/8 teaspoon garlic powder

1/8 teaspoon red pepper flakes

cracked pepper to taste

sea salt to taste

1 pat of butter

Vidalia onion slices

1 4-ounce container of crab dip, deli-style

2 flour tortillas 

Spring Mix Salad Greens 

Instructions:

In a medium skillet, sauté imitation chunk lobster and onion slices in lemon olive oil, garlic powder, red pepper flakes, salt and pepper. While still warm, add 1 pat of butter. Cook an additional minute to blend flavors. Remove from heat. To assemble wrap: Take a flour tortilla, spread on a layer of crab dip, top with salad greens, and add a spoonful of lobster mixture. Roll it together to form a wrap. Serve warm or cold. 

Zuzu’s Peach Sparkler

What’s Cooking in Gail’s Kitchen? A Cut Above: Zuzu’s Peach Sparkler! Attention peach-lovers. For a refreshing cocktail, sit up and take notice. This simple, but elegant mixture can be the star attraction at your next brunch or afternoon happy hour. The recipe is for one drink, but can easily be made while chatting with your friends and family as they gather around the bar. Zuzu’s Peach Sparkler can also be topped off with a bubbly ginger beer, seltzer water, or splash of prosecco. The vibrant color practically screams, “Let’s kick back and have a great time. You’re worth it!”

ZUZU’S PEACH SPARKLER 

Ingredients: 

1 half peach, crushed

1 lemon wedge

1 orange wedge

2-3 mint leaves

1 1/2 ounce cognac

1/2 ounce peach schnapps 

1 1/2 teaspoon simple syrup

Peach slices, for garnish

Fresh mint sprig, for garnish

Instructions: 

In a cocktail shaker, combine the crushed peach, lemon wedge, orange wedge, and mint leaves. Muddle together. Add ice cubes, cognac, peach schnapps, and simple syrup. Shake until completely chilled. Strain sparkler into a cocktail glass filled with crushed ice. Add peach slices for presentation. Garnish with fresh mint sprig. Serve immediately. 

Whipped Feta Rice Cake

What’s Cooking in Gail’s Kitchen? A Cut Above: Whipped Feta Rice Cake! Every once in a while a craving for a rice cake enters my mind. Sure, I realize they are basically like eating fat-free air pockets with a satisfying crunch, so I can somewhat rationalize this temptation now and then by adding delicious toppings. Feta cheese, when whipped into submission becomes smooth, rich, and creamy. Lemon adds a refreshing zing, which goes well with pitas and veggies like my favorite, cherry tomatoes. Feel free to add fresh herbs or dried peppers. There’s really no limit to what you can do. 

WHIPPED FETA RICE CAKE

Ingredients: 

8 ounces Neufchâtel cheese, room temperature 

8 ounces feta cheese

1/4 cup water

2 1/2 tablespoons natural honey

1 teaspoon black pepper

1/2 teaspoon sea salt

1/2 lemon, zested

5.5 ounce package plain rice cakes

8 ounces cherry tomatoes, halved

Micro greens, for garnish

Instructions: 

In a food processor, combine Neufchâtel cheese, feta cheese, water, natural honey, black pepper, sea salt, and lemon zest. Blend until mixture is smooth and creamy. Spread the whipped feta onto a plain rice cake. Spoon the cherry tomatoes over the top. Garnish with micro greens. Repeat assembly steps for number of servings needed. Enjoy! 

Vinaigrette, Garlic Red Wine-Style

What’s Cooking in Gail’s Kitchen? A Cut Above: Vinaigrette, Garlic Red Wine-Style! Looking for a versatile salad dressing without mustard? Don’t give me that quizzical stare. I know mustard makes a wonderful bonding agent to keep the oil and vinegar from separating too quickly, but there are some people who simply don’t like the taste of it. Honestly, I could practically drink honey mustard salad dressing if the hubs wouldn’t look at me like I’ve gone off the deep end. SSShhh. It’s our little secret. 

VINAIGRETTE, GARLIC RED WINE-STYLE

Ingredients: 

1/4 cup garlic red wine vinegar 

2 tablespoons lemon juice

1 1/4 tablespoons natural honey

1 teaspoon sea salt

1/8 teaspoon black pepper

1/2 cup olive oil

Instructions: 

In a small bowl, combine garlic red wine vinegar, lemon juice, natural honey, sea salt, and black pepper. Whisk until ingredients are combined. Slowly pour in olive oil; continue whisking so create a smooth texture. Store in a covered jar in the refrigerator until ready to use. Before drizzling over a salad, whisk the ingredients to avoid separation of vinegar and oil.
