What’s Cooking in Gail’s Kitchen? All the Buzz: Kiwi Granita Siciliana! Everyone knows Italy is famous for its pasta, wine, and pizza. It is also known for its granitas, a semi-frozen fruit concoction that can be served as a dessert at the end of a meal or to cleanse the palate between courses. Choose a flavor that mirrors your mood. Or choose one that reflects the season. The liquid can vary from champagne to coffee. I wanted to combine the melon-like fragrance of elderflower liqueur balancing the sweetness of ripened kiwi fruit with citrus undertones of lemongrass green tea. The results, in my opinion, are refreshingly harmonious. Ease into summer with charm and grace. 
KIWI GRANITA SICILIANA 
Ingredients:

6 kiwi, ripe

1 cup green lemongrass tea, chilled

1/2 cup St. Germaine Elderflower Liqueur 

1/2 cup sugar

2 tablespoons lime juice
Instructions:

Peel kiwi fruit and place in a mini chopper. Pulse until smooth; it should appear the consistency of a purée. Transfer to a freezer-safe dish. Add green lemongrass tea, elderflower liqueur, sugar, and fresh lime juice. Mix well. Cover and freeze overnight. Using a fork, scrape icy shavings into the middle of the container until the entire mixture is in the form of flaky crystals. Keep frozen until ready to serve. Garnish with lime wedge.

Eating My Way Through the Holidays! What’s cooking in Gail’s Kitchen? Home For the Holidays: Precious Pomegranate Arils! Never mind the antioxidants, vitamins A or C, or it’s antiviral benefits; these seeds are amazingly sweet. Add lime zest for zing and pizzazz. Did you know there are over a hundred juicy gem-like seeds in every pomegranate? Another reason to choose this powerfully magnetic mythological mystery. 
PRECIOUS POMEGRANATE ARILS
Ingredients:

1 ripe pomegranate 

1 fresh lime
Instructions:

Make sure the pomegranate’s skin is hard to the touch. No dark spots or blemishes which indicate bruising. There’s more than one way to open a pomegranate. For me, the underwater technique wins my vote. It’s less messy without staining my fingers red and can be done in a few minutes. Fill a large bowl with cool water. Cut the end that looks like a small crown. Then score the skin as though you were going to quarter the fruit. Basically this gives you a line where you can separate it into four sections. Now place one section under water. Turn the skin inside out. The seeds will sink to the bottom of the bowl and the membrane will float. Remove the membrane pieces and repeat with the remaining three sections. When finished pour the bowl of water through a strainer to rinse the pomegranate arils. Transfer them back to the empty bowl. Take a fresh lime and zest the entire skin. Quarter the lime squeezing the juice over all. Use the ruby red seeds to garnish beverages, top yogurt, embellish a smoothie, or as a simple indulgence.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Lively Calypso Mac ‘n Cheese! When I needed a quick side dish to serve with the Xtreme Sloppy Joes, I turned to my pantry for a flavorful inspiration from Pappardelle’s*. The multicolored shapes alone are conversation starters. Picture this: Lime gnocchi shells, mango-peach sea shells, and red southwestern chile lumache. The natural flavors explode when cooked and mixed with cheese, butter, and milk. It’s macaroni and cheese with a Caribbean twist. Well done!
LIVELY CALYPSO MAC ‘N CHEESE
Ingredients:

8 ounces Pappardelle’s Calypso Blend pasta

1 teaspoon sea salt

1/4 cup butter

1 cup cheddar cheese, shredded

1/2 cup milk

Crushed croutons for garnish
Instructions:

Bring a 2-quart pan of salted water to a rolling boil on high heat. Add 8 ounces of Pappardelle’s Calypso Blend pasta. Stir for the first 15 seconds. As the water returns to a slow simmer, reduce heat to medium and cook until al dente, about 10 minutes. Stir occasionally. Drain pasta. Melt butter in pan on low heat. Add cheddar cheese and milk. Stir to blend until cheese is melted. Return pasta to pan and stir to coat evenly. Do not burn. Transfer to a serving bowl and garnish with crushed croutons.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Key Lime Pie in a Flash! I’m Busy! When the hours fly by in a flurry of activity, it’s nice to know shortcuts don’t imply sacrificing flavor. After all, pre-packaged dessert mixes and sweet treats have gone the distance with culinary masters. Tried and true components can become the foundation for producing inspiring results, like today’s version of Key Lime Pie. By using fewer ingredients, preparation can be done in a flash! 
KEY LIME PIE IN A FLASH
Ingredients:

1 box Jell-o No Bake Real Cheesecake Dessert

2 tablespoons sugar

5 tablespoons butter, melted

1 1/2 cups cold milk

1 tablespoon lime extract

1 drop green food coloring

1 lime, sliced

1 tablespoon toasted coconut
Instructions:

To make the crust, combine butter, sugar, and crust mix. Reserve one teaspoon of crumb mixture for garnish. Press remaining crumbs into the bottom and up the sides of a 9-inch pie plate. Refrigerate until ready to fill. Next, pour milk into a medium bowl. Add filling mix and blend with a hand mixer on low speed for 30 seconds. Scrape sides and beat on medium speed 3 minutes until filling turns thick. Slowly add 1 tablespoon of pure lime extract. Mix 30 seconds longer. Add 1 drop of green food coloring and mix another 30 seconds. Pour into the chilled crust. Refrigerate one hour. Garnish with fresh lime slices, reserved crumb mixture, and toasted coconut.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Daily Diet of Papaya! OMG, the first time I had this in Kauai, I knew I had tasted the fruit of Paradise. It was like eating sunshine. Did you know Christopher Columbus called it “the fruit of angels”? If I had to describe the taste, I guess I would say papaya has a natural sweetness that feels like butter in your mouth. With a squeeze of lime, it is refreshingly nectarous. I could go on and on about its nutritional value, but I’d rather you taste it first. I can tell you this-just one single papaya provides 224% of your daily needs. Eat it for breakfast and you’re good to go!
DAILY DIET OF PAPAYA
Ingredients:

1 medium sized ripe papaya

1 avocado, peeled and sliced

Strawberries, halved

2 lime wedges
Instructions:

Cut papaya in half. Remove seeds. Squeeze lime juice over each half. Fill center with fresh strawberries. Serve with avocado slices.

What’s Cooking in Gail’s Kitchen? The Daily Special: Avocado on My Mind! Watermelon and avocado, when mixed together, have a uniquely gratifying flavor. Surprised? It’s as refreshing as a walk in the park. Not only is this salad appealing to the eye, it’s easy on the wallet. These two fruits are affordable, low in calories, and can be eaten often since they are packed with nutrients. Permission granted. 
AVOCADO ON MY MIND
Ingredients:

1 ripe avocado 

1 wedge watermelon, seedless

1/2 lime, sliced

1 tablespoon feta cheese, crumbled

1 sprig cilantro 
Instructions:

Open the avocado, discarding seed. Remove pulp. Squeeze lime juice over both halves to prevent discoloration. Chop avocado into pieces and place into a medium-sized bowl. Using a melon-ball utensil, scoop the watermelon into round pieces. Discard rind. Add watermelon balls to bowl, tossing gently. Sprinkle feta cheese over top. Snip cilantro to taste. Garnish with lime slices.

What’s Cooking in Gail’s Kitchen? A Second Helping of Xnipec Salsa, which translates to “smoking HOT” because it’s made with habanero chile peppers popular in the Yucatan region. I was pretty cautious in making this by first roasting the habaneros in the oven and then scraping out all the seeds. (Warning: Be sure to wear gloves when handling habanero peppers!) I served this salsa with the Zesty Fish Tacos coming up in Letter Z. 
XNIPEC SALSA

Ingredients:

1/3 cup Vidalia onion, chopped

1 clove garlic, peeled and minced

4-6 plum tomatoes, cut-up with juice

2 tablespoons orange juice

2 tablespoons lime juice 

Salt to taste 

2 Habanero peppers

3 tablespoons cilantro, chopped

Instructions:

Mix together onions, garlic, tomatoes, salt, lime juice, and orange juice. Set aside. The salt will make the tomatoes very juicy, which releases the flavor, in my opinion. If you prefer a thicker, chunkier sauce, do not add salt until ready to serve. 
Roast the habaneros in the oven at 400° until charred. Broil if necessary. Watch! Slice in half and remove stems. Scrape out all the seeds. Then dice the peppers. Combine with the onion/tomato mixture. Add chopped cilantro. Toss gently. Marinate salsa for one hour prior to serving.
