Sheet Pan Pork Taquitos

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Sheet Pan Pork Taquitos! To season or not to season. Everyone has a basic slow cooker recipe for preparing roast pork. I like to keep mine fairly simple so, when finished, I have several options for the recipes I have in mind later on. If you’re thinking these taquitos sound too bland for your palate, simply add spices like chili powder, garlic, cumin, onion, and kosher salt during the cooking process. (Some of my friends use a prepackaged taco seasoning mix, for convenience.) You’re the chef, so you’re in charge. Make sense? Then carry on. 

SHEET PAN PORK TAQUITOS

Ingredients: 

12 corn tortillas 

3 cups pulled pork, precooked 

1 cup Mexican blend cheeses,  finely shredded

3-4 tablespoons butter, melted

Ranch dressing, for drizzling

Instructions:

Preheat oven to 400°. Spray a sheet pan with nonstick oil. Set aside. In a bowl, combine pulled pork and Mexican blend cheeses. Mix well. Warm corn tortilla shells in the microwave until malleable. Place one tortilla down on a flat surface. Fill it with pork and cheese mixture just below the center of the tortilla. Roll up the tortilla tightly and transfer it, seam side down, to the sheet pan. Repeat with remaining ingredients. Using a silicone brush, lightly oil the tops of the tortillas with melted butter. Bake 15-20 minutes, or until tortillas are crispy. Drizzle with ranch dressing. Serve with shredded lettuce, red onion, salsa, cilantro, and lime. 

Zapata Tequila Shots

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Zapata Tequila Shots! You’re either going to love me or hate me for this recipe, so first hear me out. I’m a tequila-girl; not a crazy one, but one who has a zest for life. I like chili peppers, too. As you read through the recipe, let me offer alternative ways to “tone down” the cocktail. Because the non-alcoholic margarita mix is frozen into cubes, they can be dropped into a blender and made into a tasty frozen margarita. Simply adjust the amount of spicy tequila (or not) to suit your taste. A slushy is also very tasty, using the non-alcoholic margarita mix ice cubes and adding sparkling water. Now you see, everyone can be happy with this tasty margarita. 

ZAPATA TEQUILA SHOTS

Ingredients:

Chili-lime seasoning blend

1 cube of frozen margarita mix*

1 1/2 ounces pepper-infused tequila**

Jalapeño slice, for garnish 

Lime wedge, for garnish

Instructions:

Sprinkle the chili-lime seasoning onto a saucer. Circle the rim of a stemmed cocktail shot glass with a fresh cut lime. Dip the glass onto the saucer of chili-lime seasoning to create a flavorful rim. Add one cube of frozen margarita mix. Pour the pepper-infused tequila over the ice cube. Add a jalapeño slice and lime wedge for garnish. Serve. 

Advanced Instructions for Frozen Margarita Mix Ice Cubes:

*Using small 15-count square silicone ice cube trays, fill each tray with your favorite margarita mix. Freeze overnight. Remove cocktail ice cubes and store in zipper freezer bags. Repeat until all the margarita mix is frozen into ice cubes. 

Advanced Instructions for Pepper-Infused Tequila:

**To make your own version of pepper-infused tequila, begin with 750 mL of blue agave tequila gold. Using gloves, slice 2-3 chili peppers. Remove stems and partial seeds to control heat; discard. Add the sliced chili peppers to bottle of tequila. Reseal; shake bottle. Store in a cool, dry area for one week. Then pour the tequila through a fine mesh sieve into a large measuring cup. Transfer the pepper-infused tequila back into the bottle. Seal and store in the refrigerator.

Never mind the antioxidants, vitamins A or C, or it’s antiviral benefits; these seeds are amazingly sweet. Add lime zest for zing and pizzazz. Did you know there are over a hundred juicy gem-like seeds in every pomegranate?  Another reason to choose this powerfully magnetic mythological mystery. 

PRECIOUS POMEGRANATE ARILS

Ingredients:

1 ripe pomegranate 

1 fresh lime

Instructions:

Make sure the pomegranate’s skin is hard to the touch. No dark spots or blemishes which indicate bruising. There’s more than one way to open a pomegranate. For me, the underwater technique wins my vote. It’s less messy without staining my fingers red and can be done in a few minutes. Fill a large bowl with cool water. Cut the end that looks like a small crown. Then score the skin as though you were going to quarter the fruit. Basically this gives you a line where you can separate it into four sections. Now place one section under water. Turn the skin inside out. The seeds will sink to the bottom of the bowl and the membrane will float. Remove the membrane pieces and repeat with the remaining three sections. When finished pour the bowl of water through a strainer to rinse the pomegranate arils. Transfer them back to the empty bowl. Take a fresh lime and zest the entire skin. Quarter the lime squeezing the juice over all. Use the ruby red seeds to garnish beverages, top yogurt, embellish a smoothie, or as a simple indulgence. 

Lime Wedges Cut Simply

What’s Cooking in Gail’s Kitchen? Fabulous Fixings: Lime Wedges Cut Simply! When needing that perfect garnish, think limes. A bit of zesty flavor can also add a pop of color to an ordinary dish. As you’re standing at the produce bin, take notice of the range of colors from yellow to green. Look both ways to make sure no one is sneaking up behind you. Then, quickly and quietly, begin to choose the ones leaning more toward yellow skins than green. That means they are more ripe, less acidic, and often juicier. Now, if you want the “pucker effect”, especially in margaritas, choose the green ones for tartness. Are we good-to-go?

LIME WEDGES CUT SIMPLY

Ingredients:

3 ripe limes

Instructions:

Gently scrub each lime to remove any dirt, debris, or produce stickers. Wash and rinse the limes thoroughly. Pat dry. Next, place the lime on a cutting board. Using a paring knife, slice off the tips to eliminate the stem, if preferred. It’s a choice, so for a more uniform shape, do not detach. When making a cocktail garnish, cut the lime from one end to another. Then add a slit to perch the wedge on the rim of the glass. For other dishes needing a garnish, cut across the width of the lime to form four equal wedges. It adds character as well as a cross section of juice. 

Agave Wine Margarita

Before you pass judgment, let me first say that although agave wine is made from the same plant as tequila, it is lighter in balance and contains less alcohol. It still tastes amazing with freshly squeezed lime juice and an orange wedge garnish. The tartness of the fruit also produces a medium body with a smooth finish. Move over tequila; you’ve got competition. 

AGAVE WINE MARGARITA 

Ingredients for One:

5 ounces agave wine

2 ounces freshly squeezed lime juice

2 ounces orange juice

5 ounces lime sparkling water

Lime slice, for garnish

Orange slice, for garnish ( optional)

Instructions:

Combine agave wine, lime juice, and orange juice. Mix well. Top with lime sparkling water. Stir and serve chilled in a stemmed glass. Garnish with fresh lime or orange slices.

What’s Cooking in Gail’s Kitchen? Food With Soul: “X” Marks the Spot Toast! Wake up your mornings with crunchy toast points slathered in guacamole. That’s what I do when I have a ripe avocado begging to be used. By adding the tomatoes, lime juice, and seasoning, it jumpstarts my day with zest and creaminess that makes me smile. If you’re a brave warrior, sprinkle on some red pepper flakes and slay the day!

“X” MARKS THE SPOT TOAST

Ingredients:

1 large ripe avocado, halved, pitted, and peeled

1 tomato, diced

1/2 teaspoon lime juice

1 teaspoon sea salt

1/8 teaspoon garlic powder

4 slices wheat bread, toasted and cut into four points

Instructions:

In a shallow bowl, mash ripe avocado with a fork. Leave small chunks for flavor. Fold in diced tomatoes and lime juice. Season with sea salt and garlic powder. Gently mix. Divide the mashed avocado among the toast points. Arrange toast into an “X” on each plate. Serve immediately.

Jumbo Shrimp Over Avocado

What’s Cooking in Gail’s Kitchen? Food With Soul: Jumbo Shrimp Over Avocado! Grill marks on food are like a person’s signature tattoo. I don’t know about you, but when I see that food is slightly charred, visions of smoky goodness can cause me to drool. The creaminess of the warmed avocado filled with spicy salsa takes me down a country road to memorable experiences of Mexican favorites. The grilled shrimp is enhanced by the savory herbs, adding tangy flavors seductive to the tongue. Not only is this a quick meal or tempting appetizer, it transforms every cook into a gourmet chef. You should try it.

JUMBO SHRIMP OVER AVOCADO

Ingredients:

1 large ripe avocado, halved with pit removed

Fresh lime juice

6 frozen precooked jumbo shrimp, tail on and thawed

2 tablespoons olive oil

1 teaspoon Italian seasoning blend

1 teaspoon sea salt

1/4 teaspoon garlic powder

1/4 cup prepared salsa

Dill sprig, for garnish

Instructions:

Preheat grill to 400°. In a small dish, combine olive oil, Italian seasoning blend, sea salt, and garlic powder. Mix well; set aside. Squeeze lime juice onto both halves of avocado. Brush each avocado, as well as both sides of the shrimp, with the seasoned olive oil. Place directly onto the grill grates. Close lid. Cook the avocados for 4 minutes, or until slightly charred. Cook the jumbo shrimp for 2 minutes. Then flip the shrimp, close the lid, and cook 2 minutes longer. Transfer all to a platter. Spoon the salsa into the avocados. Arrange 3 jumbo shrimp over each portion. Garnish with a sprig of fresh dill. Serve immediately.

Island Pineapple Salsa

For healthy taste with a breath of an island paradise mixed in, treat yourself to this virtuous condiment that goes well with practically anything. Grilled meats, charred veggies, fresh fish, and exotic seafood are great dinner companions as well. For an excellent appetizer, serve the pineapple salsa with lightly seasoned tortilla chips. Goes well with tiki-themed cocktails showcasing dark rum floaters. Can you hear me now?

ISLAND PINEAPPLE SALSA

Ingredients:

2 cups pineapple, tidbits

1/4 cup red pepper, diced

1/4 cup red onion, thinly sliced

2 green onions, chopped

1 teaspoon ginger, finely chopped

1 tablespoon soy sauce

Instructions:

Combine pineapple tidbits, red pepper, red onion, green onions, chopped ginger, and soy sauce in a bowl. Stir well. Cover and refrigerate for one hour.

Blue Plate Fish Sliders

What’s Cooking in Gail’s Kitchen? Food With Soul: Blue Plate Fish Sliders! Switching from beef to fish has its rewards, especially when the fish is a fresh catch only hours ago. The fact that fish has less saturated fat is a bonus for me. I’m all about reducing the risk of cardiovascular disease. The delicate soft texture of fish practically melts in your mouth as it flakes off from one tasty bite to the next. The mini-version of a sandwich, in a world of super-size portions, makes sliders cute and fun as well. Whether you call it an appetizer or a meal, fish sliders are here to stay.

BLUE PLATE FISH SLIDERS

Ingredients:

4 4-ounce red grouper fillets

1 tablespoon olive oil

1 tablespoon Cajun seasoning

Slider buns

Prepared Coleslaw

Mixed Greens

Instructions:

Heat outdoor gas grill to medium heat, approximately 350°. Rinse and pat each fillet with a paper towel. Rub with olive oil and sprinkle with Cajun seasoning. Transfer to a platter. Oil the grill grates with a folded paper towel dipped in olive oil. Place each fillet directly on the grate. Close the grill cover. Cook 4 minutes. Using a flat spatula, slide under each fillet and carefully flip it over. Close the grill cover and cook 4 minutes longer. Transfer to a clean platter. Lightly toast slider buns, if desired. Assemble fish sliders with coleslaw, grilled fish, and mixed greens. Serve immediately.
