Easter Coconut Macaroons

In my childhood I had two choices of candy bars featuring chewy coconut centers: one with chocolate or one with chocolate and almonds. (I’m sure you can recall the names.) I was drawn to the slightly caramelized taste around the edges as well as the sugary sweet dense centers. Years later I realized this was an Easter springtime favorite, highlighting Passover, because it fell into the kosher restrictions of omitting flour. No gluten! Some people dip the macaroons into chocolate. I like the candy-coated chocolate eggs and thought you might, too. 

EASTER COCONUT MACAROONS 

Ingredients: 

14-ounces sweetened flaked coconut 

3/4 cup plus 2 tablespoons sweetened condensed milk 

1 teaspoon vanilla extract

2 large eggs, whites only

1/4 teaspoon sea salt

4 ounces candy coated chocolate eggs, roughly chopped 

Instructions: 

Preheat oven to 350°. Line a baking sheet with parchment paper; set aside. In a mixing bowl, combine flaked coconut, sweetened condensed milk, and vanilla extract. Mix well. In another bowl, place the egg whites and sea salt. Beat with an electric mixer until stiff peaks form. Gently fold the egg whites into the coconut mixture until combined. Using two spoons, form heaping tablespoons of the cookie mixture into mounds on the prepared baking sheet; spacing about one inch apart. Bake for 25 minutes, or until the bottoms and edges are a deep golden brown. The tops should be lightly browned. Allow the macaroons to cool for a minute. Press chopped chocolate eggs into the center of each cookie. Cool completely on a wire rack. 

Quasi Cherry Almond Macaroon Slab Pie

Eating My Way Through the Holidays. Festive Food Gifts: Quasi Cherry Almond Macaroon Slab Pie! Now that’s a mouthful. But truth-be-told when you’re talking about a dessert with mounds of plump cherry clusters, flaked coconut, and sliced nuts…well, nothing else will do. By transforming it all into a slab pie, portions become more manageable over traditional sliced servings. The crust is still flaky, even if there is less of it. Focus instead on a sweet treat with a single shot of Italian espresso or scoop of ice cream. It’s a perfect balance for the taste buds. 

QUASI CHERRY ALMOND MACAROON SLAB PIE

Ingredients:

1 prepared pie crust

Ingredients for filling:

21-ounce can cherry pie filling

1/2 teaspoon cinnamon 

1/8 teaspoon sea salt

1 teaspoon lemon juice

Ingredients for topping:

1 cup coconut, shredded

1/2 cup almonds, sliced

1/4 cup sugar 

1/8 teaspoon sea salt

1/4 cup milk

1 tablespoon butter, melted

1/4 teaspoon almond extract 

1/4 teaspoon coconut extract 

1 egg, beaten

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Roll the prepared pie crust to fit the baking sheet. Trim the dough to only fit the bottom of the pan. If necessary, use the extra dough pieces to fill in the corners. Pinch to seal. In a large bowl, combine the cherry pie filling, cinnamon, sea salt, and lemon juice. Mix thoroughly. Spoon the filling onto the pie crust. Spread in a single layer. Bake for 20 minutes. Meanwhile, for the topping, fill a mixing bowl with the shredded coconut, sliced almonds, sugar, sea salt, milk, melted butter, almond extract, coconut extract, and beaten egg. Remove the slab pie from the oven. Spread macaroon topping over all. Return slab pie to oven, bake 25 minutes longer, or until bubbly and golden brown. Cut into slices. Serve with vanilla bean ice cream. 

Vanilla Frosting-Dipped Fruit & Cookies

The trick is making others believe you spent hours creating such a masterpiece. Choose your favorite fruit, cookies, and frosting. (Now some may really need to cut corners and buy the ready-made frosting as well. I’ll pretend that doesn’t happen so I can share my easy buttercream frosting recipe with you today.)

VANILLA FROSTING-DIPPED FRUIT & COOKIES

Ingredients:

1 pound strawberries, whole with stems

1 package Strawberry Macaroons

2 ounces white nonpareils

12 bamboo skewers

Frosting Ingredients:

1/2 cup butter

3 cups powdered sugar

1 teaspoon vanilla extract

1 teaspoon almond extract

1-2 tablespoons milk, warmed

Instructions:

Cream butter and sugar on low speed with hand mixer. Gradually add extracts. Blend until smooth. Add enough milk to keep it creamy, but not runny. Spoon a portion into a small microwave-safe dish and warm frosting 10 seconds in the microwave. While the frosting is warm, dip a piece of fruit or a cookie into the bowl. Using a swirling motion, rotate each piece to cover. Immediate dip into the nonpareils to coat. Place on a baking sheet lined with wax paper. Repeat until all desired pieces are covered. Refrigerate for half an hour or until firm.
