What’s Cooking in Gail’s Kitchen? Be Our Guest: Cantaloupe Chicken Salad! Indiana Cantaloupe is a popular fruit these days. Some even dub it a “labor of love”. As a sweet and fragrant melon, it quickly becomes a perfect alternative to the summer watermelon. Wonderfully rich and appealing in color, the cantaloupe becomes an ideal serving vessel. One scoop and the seeds are gone. Fill half with a savory chicken salad and save the other for vanilla ice cream later on. Win, Win!
CANTALOUPE CHICKEN SALAD
Ingredients:

1 cantaloupe, cut in half or quarters, seeds removed 

10-ounce can premium chicken breast, chunk in water; drained

1/4 teaspoon celery seed

1/4 cup mayonnaise 

10 seedless green grapes, halved

1 tablespoon pecan pieces

1/8 teaspoon fresh Mexican tarragon, chopped
Instructions:

One cantaloupe serves four. Cut the cantaloupe in half; using a spoon, scoop out the seeds. Tip to remove any juice. Slice each half into a quarter wedge. Place each wedge into a luncheon plate. Set aside. In a large bowl, add drained chicken chunks. Shred chunks slightly, using two forks. Sprinkle with celery seed. Add mayonnaise and mix well. Fold in green grapes and pecan pieces. Stir to blend together. Divide chicken salad equally over each cantaloupe wedge. Garnish with chopped tarragon. Serve.

What’s Cooking in Gail’s Kitchen? All the Buzz: Norwegian Jarlsberg Cheese Spread! Sometimes you feel like a nut, sometimes you don’t. Jarlsberg cheese originated in Norway as a buttery mild cow’s milk cheese with a sweet nutty flavor. In some photos it may appear similar to Swiss cheese, full of holes, but in essence it is much smoother and richer. Don’t believe me? Order a grilled cheese sandwich made with semi-soft imported Jarlsberg cheese sometime and try not to faint when you are asked to pay a much higher price for this gooey better-than-generic extravagance. 
NORWEGIAN JARLSBERG CHEESE SPREAD 
Ingredients:

4 ounces Neufchâtel cheese

4 ounces Jarlsberg cheese, shredded

2 tablespoons mayonnaise

2 tablespoons red onion, chopped

1 can (4 ounce size) stuffed green olives, sliced

Sea salt, to taste

Cracked black pepper, to taste

1/4 cup chives, chopped

1/4 cup pecans, finely chopped
Instructions:

Mix together Neufchâtel cheese, Jarlsberg cheese, and mayonnaise until well blended. Stir in red onion and green olives. Add sea salt and cracked black pepper to taste. Form into a log. Wrap in plastic wrap. Refrigerate 1 hour. Roll cheese ball in chopped chives and pecans bits before serving. Spread into crackers or bagel chips.

Substitute ingredients to match your family’s personal cravings. On the go? Pack it in single serving jars for fuss-free options. 
VERMICELLI PASTA SALAD
Ingredients:

1 pound vermicelli 

1 1/2 tablespoons Accent seasoning

2 tablespoons seasoned salt

1/2 cup lemon juice

1/3 cup vegetable oil

3/4 cup green pepper, chopped

3/4 cup onion, chopped

1 1/2 cups broccoli/carrot/red cabbage slaw

1 cup black olives, sliced

1 tablespoon poppy seeds

1 cup mayonnaise 
Instructions:

Cook vermicelli as directed on package. Rinse in cold water. Drain. Place in large bowl. Make a marinade of Accent seasoning, seasoned salt, lemon juice, and vegetable oil. Pour over vermicelli; mix well. Cover and marinate for two days, stirring once or twice. Add green pepper, onion, cut-up broccoli/carrot/cabbage slaw, black olives, poppy seeds, and mayonnaise. Mix well. Marinate overnight. Serve chilled.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Wasabi Furikake Aioli! For a homemade sauce that can be spread on fish and poultry or used as a spicy dip for vegetable crudités, this one is spot on. The “kick” of wasabi is a distant cousin to horseradish making its intensity a roller coaster ride for the palate. Wasabi lovers know all about the health benefits. Sushi bars offer it as a regular condiment. I find this superfood absolutely delicious. 
WASABI FURIKAKE AIOLI
Ingredients:

1/2 cup mayonnaise 

1/4 teaspoon furikake seasoning (sesame seed and green seaweed)

1/4 teaspoon ground ginger

1/8 teaspoon garlic powder

1 teaspoon rice vinegar 

1 teaspoon soy sauce

2 teaspoons wasabi powder

1 tablespoon olive oil

1 tablespoon water
Instructions:

Combine all ingredients and mix until well blended. Cover and refrigerate one hour before serving.

What’s Cooking in Gail’s Kitchen? The Daily Special: Egg Salad Extravaganza, A Crêpe Idea! The debate continues………. Mayonnaise and Celery or Miracle Whip and Pickle Relish? What is your preference in Egg Salad? It probably all depends on how your mother made it during your childhood. Fortunately both can be made in a snap!
EGG SALAD EXTRAVAGANZA 
Ingredients:

3 eggs, hard cooked

3 tablespoons mayonnaise or Miracle Whip

1/8 teaspoon sea salt

1/8 teaspoon cracked pepper

1 tablespoon celery, chopped (optional)

1 tablespoon pickle relish (optional)
Instructions:

Combine mayonnaise or Miracle Whip, salt, and pepper in a bowl. Peel and chop eggs, breaking into small pieces. Gently stir into mayonnaise mixture. Add celery or pickle relish. Fill two Crêpes with egg salad. Tuck in several lettuce leaves. Sprinkle with Chia seeds.

What’s Cooking in Gail’s Kitchen? Home Cooking: Green Pepper Dip! Nothing says “presentation” like a vegetable dip served in a green pepper. If you don’t believe me, try this for your next gathering. People practically “oooh” and “aaah” when you enter the room with it. The best part is a subtle flavor of the pepper blends into the dip. Hint: Do your homework at the produce aisle. Make sure you buy a pepper that will sit straight on the serving dish. 
GREEN PEPPER DIP
Ingredients:

1 Large Green Bell Pepper 

1 cup mayonnaise 

1 cup Greek yogurt

1/8 teaspoon garlic powder 

1/8 teaspoon black pepper

1/2 teaspoon sea salt

1/2 teaspoon cayenne pepper

1/2 teaspoon basil

1/2 teaspoon chili powder

1/2 teaspoon thyme

1 teaspoon dill weed

1 teaspoon onion powder

1 teaspoon parsley flakes
Instructions:

Cut top off green pepper. Carefully scoop out all seeds and the four ribs. Rinse and pat dry. Combine all remaining ingredients. Mix well. Gently fill the pepper with dip, cover with plastic wrap, and refrigerate at least one hour. Garnish with shredded cheddar cheese and bacon bits. Serve with crudités and crackers.

What’s Cooking in Gail’s Kitchen? Home Cooking: Deviled Eggs! People ask me all the time how I can eat everything I make and not weigh 100 pounds more than I do. Well, portion control has a lot to do with it……plus the fact that I truly DO share much of what I make. And then there are days when I know I’m going to pig out, so I eat a lunch that looks like this! Trust me, it works. 
DEVILED EGGS
Ingredients:

6 hard-cooked eggs, peeled and halved

1/4 cup real mayonnaise 

1 teaspoon Dijon mustard

1/4 teaspoon sea salt

Dash white pepper

Paprika 
Instructions:

Separate egg whites from egg yolks. Smash egg yolks with a fork in a small bowl. Stir in mayonnaise, mustard, salt, and pepper. Spoon yolk filling into egg white halves. Garnish with paprika. Chill, if desired.

What’s Cooking in Gail’s Kitchen? A Second Helping of Tarragon Chicken Salad. If you’re tired of the same thing, here’s a gourmet twist on an old favorite. It can be served on a buttery croissant, a bed of mixed greens, or a wedge of sweet cantaloupe. You decide. 
TARRAGON CHICKEN SALAD
Ingredients:

1 10-ounce can of Premium Chicken Breast in Lemon Pepper sauce 

1/4 cup mayonnaise 

1/2 cup seedless red grapes, halved

1/4 cup celery, chopped

1/4 cup sliced almonds

Fresh Tarragon 
Instructions:

In a large bowl, combine chicken, celery, grapes, nuts, and mayonnaise. Gently fold in snipped tarragon leaves. Refrigerate until ready to use. Top with crunchy garlic croutons.
