It’s easily doable by using a ring mold. Who knew? Restaurants have kept this tip to themselves for the longest time. But no more. You can make it at home to impress out-of-town guests as well as privileged family members and friends. I find it’s best to have a set of four ring molds the same size on hand. 

LEFTOVER TURKEY TOWER

Ingredients:

1/2 cup leftover stuffing, precooked

1/3 cup roasted turkey, chopped

1 celery rib, chopped

2 tablespoons mayonnaise 

1/8 teaspoon celery seed

1/8 teaspoon sea salt

1/8 teaspoon white pepper 

1 tablespoon cranberry sauce

Sprig of fresh thyme, for garnish

Instructions:

Warm the leftover stuffing in the microwave for about 30 seconds. Place the ring mold on a salad plate. Gently pack the warmed stuffing into the bottom of the mold, keeping the layer as level as possible. Set aside. In a bowl, combine the roasted turkey, chopped celery, mayonnaise, celery seed, sea salt, and white pepper. Mix thoroughly. There should be enough mayonnaise to keep the turkey salad together. Spoon the turkey mixture into the ring mold, pressing lightly to form a layer on top of the dressing. Gently lift the ring mold, without force, pulling straight up to reveal the tower of food. Place a dollop of cranberry sauce on top. Garnish with fresh thyme. Serve immediately. 

Urban Pea Salad

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Urban Pea Salad! It’s funny. I remember eating pea salad when I went to visit my mother. I also remember placing a spoonful of pea salad on my plate at a church dinner buffet. In addition, I remember adding pea salad as a flavorful choice from a bountiful restaurant salad bar. But I don’t ever remember making pea salad at home for myself or my family. And I’m not sure why not. I guess as we age, we peruse our memory banks to revisit those satisfying moments that bring a smile to our faces. Don’t be surprised if you discover more of these bits of nostalgia for yourself. After all, they’re only a memory “snapshot” away. 

URBAN PEA SALAD

Ingredients:

1/4 cup mayonnaise 

2 cups frozen baby peas, slightly thawed

4 slice’s applewood smoked bacon, cooked until crisp; crumbled

1/4 cup red onion, finely sliced 

1/3 cup sharp cheddar cheese, finely shredded

Instructions:

Gently combine the mayonnaise, baby peas, bacon crumbles, red onion, and shredded cheddar cheese in a bowl. Stir until the peas are coated and everything is mixed. Cover with plastic wrap; refrigerate two hours. Serve slightly chilled. 

Dried Beef Pretzel Dip

Eating My Way Through the Holidays! Special Edition: Dried Beef Pretzel Dip! Try a new creamy variation of the traditional chipped beef cheeseball. In lieu of the cream cheese, substitute Greek yogurt instead. Make it super lo-cal by serving it with fresh veggies and whole-grain crackers. The blend of parsley and dill give it an irresistible twist only lighter! 

DRIED BEEF PRETZEL DIP

Ingredients:

16 ounces of Greek yogurt 

16 ounces of light mayonnaise 

1 teaspoon seasoned salt

2 teaspoons dill weed

2 teaspoons parsley flakes 

1/2 teaspoon onion powder 

2 2.5-ounce packages lean smoked chopped beef, cut-up

Instructions:

In a medium size mixing bowl, combine yogurt and mayonnaise. Blend until smooth. Add seasoned salt, dill weed, parsley flakes, and onion powder. Stir until combined. Fold in cut-up smoked beef pieces. Refrigerate one hour before serving. Easy peasy. 

Homemade Bleu Cheese Dressing

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Homemade Bleu Cheese Dressing! What is it about ranch dressing that practically makes you slurp it with a straw? Ever dip raw veggies in it? Of course. Did you know if you add taco seasoning to ranch dressing, it becomes a popular “Calypso Dressing” at a Mexican cantina? Try dipping tortilla chips in that sometime. Ahhh, you wondered how they did that. One of my favorite concoctions is crumbled bleu cheese. Talk about that briny earthy zing of saltiness. Oh, yum. 

HOMEMADE BLEU CHESE DRESSING

Ingredients:

1 cup Greek yogurt 

1/2 cup mayonnaise 

1 packet dry Ranch dressing mix 

1 cup bleu cheese crumbles

Instructions:

Combine Greek yogurt and mayonnaise. Stir until smooth. Add packet of Ranch dressing mix. Blend well. Fold in bleu cheese crumbles. Refrigerate for one hour. Drizzle over salads, vegetables, chips, cheese sticks, French fries, pizza, or meats. Store leftovers (if any) in refrigerator for one week. 

Smoked Mahi Fish Dip

What’s Cooking in Gail’s Kitchen? Food With Soul: Smoked Mahi Fish Dip! If you haven’t had the opportunity to taste Florida’s smoked fish dip, you must add it to your list of interesting foods. It has a creamy texture accented by a rich smoky flavor. Did you just wrinkle your nose at the word “Fish”? Hold on a sec, because we’re not talking about pungent canned tuna here. The fish that is used has white flesh, is pretty mild and actually sweet tasting, so it balances beautifully with a citrusy kick that will entice you to another mouthful. Try it in a restaurant or seafood diner first. Then come back for this recipe and make it yourself. Without reservations.

SMOKED MAHI FISH DIP

Ingredients:

2 8-ounce smoked fillets of mahi-mahi, skin removed

1/2 cup cream cheese, room temperature

1/4 cup mayonnaise

1 tablespoon olive oil

1/4 cup lemon juice

1/2 teaspoon cayenne pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon kosher salt

1/4 teaspoon white pepper

1/2 cup scallions, thinly sliced

1/4 cup fresh dill, chopped

1 tablespoon capers, finely chopped

Instructions:

Flake smoked mahi-mahi fish into 1/2” chunks in a bowl. Set aside. In a larger bowl, combine cream cheese, mayonnaise, olive oil, lemon juice, cayenne pepper, garlic powder, onion powder, kosher salt, and white pepper. Mix until smooth. Add sliced scallions, chopped dill, and capers. Gently stir. Fold in smoked mahi-mahi until incorporated. Do not over mix. Small chunks will keep the dip from turn mushy. Chill slightly. Spread the smoked fish dip over crackers or toasted baguettes.

Quick Egg Salad Subs

What’s Cooking in Gail’s Kitchen? Food With Soul: Quick Egg Salad Subs! Lucky for you, egg salad is a no-brainer when it comes to a fulfilling lunchtime meal. It’s quick, basic Cooking 101, and all you need as additives are salt and mayo. Now if you happen to have celery, onions, mustard, or pickles in the back of the fridge, you can elevate this sammie to a level fit for the royals. For me, brioche buns carry enough natural sweetness, are chewy, and serve as a gourmet vessel for all that chunky, flavorful deliciousness. Serve with a side of kettle chips.

QUICK EGG SALAD SUBS

Ingredients:

4 hard-cooked eggs, peeled and chopped

3 tablespoons mayonnaise

1 rib celery, finely chopped

1 teaspoon scallion, minced

1/2 teaspoon kosher salt

1/2 teaspoon celery seed

2 brioche split-top sub buns, toasted

Watercress, for garnish

Instructions:

In a bowl, combine hard-cooked eggs, mayonnaise, finely chopped celery, minced scallion, kosher salt, and celery seed. Stir until completely mixed. Divide between 2 brioche sub sandwiches. Garnish with fresh watercress.

Old Bay Mayo

What’s Cooking in Gail’s Kitchen? Food With Soul: Old Bay Mayo! First of all, there is no substitute for Old Bay seasoning as a core ingredient in this post. It’s a sacred concoction, invented in the 1940s and respected by Southerners, containing 18 unspecified ingredients. If you try to use Cajun, Jerk, or generic blends, don’t blame me if the results are less than phenomenal. What I can assure is that it taste ah-mazing with shrimp, crab cakes, seafood, and more. Turn Old Bay Mayo into an aioli for sandwiches, dressing for salads, or condiment for meats. I can see you coming up with a dip for french fries, too. Don’t blame me; I’m just the messenger.

OLD BAY MAYO

Ingredients:

1/2 cup mayonnaise

2 teaspoons fresh chives, chopped

2 teaspoons dill weed, snipped

2 teaspoons lemon zest, grated

1 tablespoon lemon juice

1 teaspoon Old Bay* seasoning

Instructions:

In a small bowl, whisk together mayonnaise, fresh chives, dill weed, lemon zest, lemon juice, and Old Bay seasoning. Stir until smooth. Cover and refrigerate for one hour. Serve as a condiment or dipping sauce for seafood.

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Lettuce Cup Shrimp Salad! When you need a boost from the usual lunch menu, treat yourself to an outstanding salad that feels gourmet-worthy. As a shrimp-lover, I already had ideas about serving this to my husband. In my opinion, the bigger the shrimp you can find, the better. Because I saw for myself the seafood deli offered humongous jumbo shrimp (yeah, I know), I couldn’t resist getting a pound to take home. Here’s the secret: oftentimes the market gets specific seafood brought in frozen. Frozen shrimp is usually same-day fresh. They thaw it for the customers and sell it individually or by the pound. I asked the seafood specialist if I could buy a frozen quantity from him. He was more than happy to oblige. Now you know.

LETTUCE CUP SHRIMP SALAD

Ingredients:

1 pound jumbo shrimp, precooked and tails removed

1/2 cup mayonnaise

1 teaspoon lemon juice

1 tablespoon fresh dill, chopped

1 stalk celery, sliced

2-3 lettuce leaves, washed and patted dry

Red onion, finely sliced, for garnish

Instructions:

In a large bowl, whisk together mayonnaise, lemon juice, and fresh dill. Gently fold in the precooked shrimp and celery slices. Place a lettuce leaf onto a plate. Scoop shrimp salad on top. Garnish with red onion. Cover and refrigerate for 15 minutes. Serve.

Bang Bang Sauce

Look no further for a tasty condiment that can be smeared, dunked, or drizzled all over fried chicken, grilled shrimp, or even steamed broccoli if the mood strikes you. It’s smooth and creamy, a little bit spicy, honey sweet, and tingles your tongue. You absolutely must share with everyone else at the table. After all, garlic tastes delicious in food, but it leaves behind a slightly pungent odor that can find some people feeling offended or jealous. And we wouldn’t want that.

BANG BANG SAUCE

Ingredients:

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha

1 teaspoon natural honey

1/2 teaspoon rice vinegar

1 clove garlic, minced

Green onions, for garnish

Red pepper flakes, for garnish

Instructions:

In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, natural honey, rice vinegar, and minced garlic. Whisk until everything is combined. Pour into a serving dish. Garnish with green onion snips and red pepper flakes. Serve as a dipping sauce with seafood.
