KA-POW! THAI CURRY TACOS

Ingredients:

12 corn tortillas, street-size

2 tablespoons canola oil

3 tablespoons Thai red curry paste

1 tablespoon garlic, minced

1/2 cup yellow onion, finely chopped

2 cups cooked turkey meat, shredded

1/4 teaspoon sea salt

1/8 teaspoon black pepper

1/4 cup coconut milk

2 tablespoons fresh lime juice

8.5 ounce jar sun-dried tomatoes in olive oil, drained and finely chopped

10-ounce bag broccoli slaw

1 cup sweet corn, off the cob

Lime wedge, for garnish

Instructions:

Preheat oven to 400°. Spray each corn tortilla on both sides with nonstick oil. Place on a baking sheet. Bake 8 to 12 minutes or until golden brown. Set aside. Warm canola oil in a large skillet over low heat. Add the Thai red curry paste, minced garlic, and chopped onion. Cook about 3 minutes, stirring occasionally until the garlic and onions are softened. Add the shredded turkey. Season with sea salt and black pepper. Cook over medium heat for 3 minutes. Stir in the coconut milk, lime juice, and sun dried tomatoes; simmer until the sauce is thickened, about 15 minutes. To assemble tacos, layer the broccoli slaw onto the crispy corn tacos. Divide the turkey mixture among the tortillas. Top with sweet corn. Garnish with lime wedges. Serve immediately.

Everyone loves dumplings, those little flavorful puffs of dough soaked in chicken broth, surrounded by fresh vegetables. Xavier soup got its name in honor of the patron saint of missionaries and may be served on the feast day celebration in December. I like the soup so much I can’t wait all year before making it again. Taste it once and you’ll see what I mean.

XAVIER DUMPLING SOUP

Ingredients:

1 tablespoon butter

1/2 yellow onion, diced

2 stalks celery, sliced

1/4 cup matchstick carrots

1 clove garlic, minced

2 cups chicken, cooked and shredded

4 ounces evaporated milk

10.5-ounce can cream of chicken soup, concentrated

20 ounces chicken broth

1/2 teaspoon sea salt

1/8 teaspoon black pepper

1 tube buttermilk biscuits

2 tablespoons flour

Parsley, for garnish

Instructions:

In a Dutch oven, warm butter over medium-high heat. Do not scorch. Add diced onions, sliced celery, matchstick carrots, and minced garlic. Sauté until tender, 6-8 minutes. Add shredded chicken, evaporated milk, condensed cream of chicken soup, and chicken broth. Bring to a simmer, stirring occasionally. Season with sea salt and black pepper. Cut the biscuits into quarter pieces; lightly toss in flour. Add the biscuit chunks to the pot; Cook 8-9 minutes. Once the biscuits are cooked through, ladle into bowls, garnish with parsley, and serve immediately.

Quarantined Mac ‘n Cheese

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Quarantined Mac ‘n Cheese! We all know the effects of social distancing and being quarantined at home. It can reek havoc on mental health and increase anxiety, that’s for sure. Rising costs of groceries can contribute to feelings of fear, worry, and frustration as well. That’s when comfort foods come to the rescue. I actually made this dish when my kitchen was being renovated during the pandemic and all I had was a counter microwave for cooking meals. This one-bowl meal eased the pain of feeling like things were out of control. Perhaps it may help you, too.

QUARANTINED MAC ‘N CHEESE

Ingredients For One:

1/2 cup dried macaroni pasta

1/2 cup water

1/8 teaspoon sea salt

1/4 cup milk

1 tablespoon butter

1/2 cup cheddar cheese, finely shredded

Everything But Bagel Seasoning, for garnish

Instructions:

In a deep microwave-safe dish, combine macaroni pasta, water, and sea salt. Stir to combine. Microwave uncovered on high power for 2 minutes. Stir. Repeat for 4-8 minutes longer, stirring every 2 minutes until pasta is cooked. Using oven mitts, remove dish from microwave. Stir in milk, butter, and cheddar cheese. Microwave on high power in 30-second intervals until cheese has melted and forms a creamy sauce. This will take about 90 seconds total. Garnish with a sprinkling of Everything But Bagel Seasoning. Serve immediately.

Copycat Jiffy Cornbread

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Copycat Jiffy Cornbread! If you’re wondering why anyone would make a homemade version of a boxed mix, read on. Could it be I’m a control freak? Maybe I want a healthier version? Or is it because my adult son says he recalls fond memories of the blue and yellow box from his childhood? Truth be told, I was too lazy to drive into town to buy the store-bought variety. Good thing I keep a well-stocked pantry.

COPYCAT JIFFY CORNBREAD

Ingredients:

2/3 cup flour

1/2 cup organic cornmeal

1/3 cup sugar

1 tablespoon baking powder

1/2 teaspoon sea salt

2 tablespoons vegetable oil

1 egg

1/3 cup milk

Instructions:

Preheat oven to 400°. Spray a square pan with non-stick oil. Set aside. In a bowl, combine flour, organic cornmeal, sugar, baking powder, and sea salt. Mix well. Whisk in vegetable oil until smooth. Add egg and milk. Stir only until lumps no longer remain. Do not over-beat. Transfer batter to prepared pan. Bake 15-20 minutes, or until a cake tester comes out clean. Serve warm.

Butter Chicken

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Butter Chicken! At first glance, this dish looks surprisingly similar to curry chicken, doesn’t it? Sooo, what is the difference, you wonder. The secret is in the name. It’s made with butter! The tomatoes, coconut milk, and seasonings are cooked slow enough to transform the sauce into a gravy-like consistency with a nice kick of flavor. Also, by slow-cooking the chicken, it becomes fork tender and juicy. Ahhh, now I have your attention. Sounds like a grocery list is in order. Bravo. Your family will thank you.

BUTTER CHICKEN

Ingredients:

2 pounds chicken breasts, skinless and cut into chunks

1/2 sweet onion, chopped

1 jalapeño, seeds removed and diced

1/2 teaspoon garlic powder

2 tablespoons unsalted butter

1 tablespoon curry powder

2 teaspoons garam masala

1/2 teaspoon turmeric

1 teaspoon chili powder

1/2 teaspoon ground ginger

1/4 teaspoon cayenne pepper

14.5 ounce can coconut milk

6 ounce can tomato paste

Fresh cilantro, for garnish

Dollop of Greek yogurt, for garnish

Instructions:

In a slow cooker, add chicken chunks, chopped onion, diced jalapeño, and garlic powder. Stir to combine. Dot with cubes of butter. In a medium bowl, stir together curry powder, garam masala, turmeric, chili powder, ground ginger, and cayenne pepper. Add coconut milk and tomato paste. Whisk to combine. Pour over chicken mixture. Cover slow cooker; heat contents on LOW for 5 hours. Serve with cooked rice and naan bread. Garnish with cilantro and a dollop of Greek yogurt. Serve immediately.

Itty Bitty Pumpkin Cake

You know, that delectable blend of bakery spices recognized as nutmeg, cinnamon, ginger, and allspice. Perhaps they remind you of autumn. The days are still warm as the evenings turn chilly enough to gather around the fire pit in a thick cozy sweater. Childhood memories conjure up bumpy hayrides through apple orchards, jack-o-lanterns on the front porch, and disheveled piles of newly-raked leaves. Plus there’s all things pumpkin: pumpkin pie, pumpkin cake, pumpkin roll, pumpkin latte, and now this.

ITTY BITTY PUMPKIN CAKE

Ingredients:

1 1/4 cups flour

1/2 teaspoon baking soda

1/4 teaspoon sea salt

1 teaspoon baking powder

1 tablespoon pumpkin spice

1/4 tablespoon cinnamon

1/2 cup butter, softened

1/2 cup sugar

1 egg

3/4 cup pumpkin purée

1/3 cup buttermilk

1/2 teaspoon vanilla extract

Powdered sugar, for dusting

Fresh strawberries, for garnish

Instructions:

Preheat oven to 350°. Spray six mini bundt pans with nonstick oil containing flour. Place pans on a baking sheet. Set aside. In a bowl, whisk together flour, baking soda, sea salt, baking powder, pumpkin spice, and cinnamon. Set aside. In another bowl, cream together butter and sugar. Beat on High setting with a hand mixer for 2 minutes. Add egg and beat two minutes longer. Set aside. In a third bowl, combine the pumpkin purée, buttermilk, and vanilla extract. Mix well. Gradually pour half the pumpkin mixture and half the flour mixture into the egg mixture. Mix well, scraping the sides down as needed. Add the remaining ingredients; stirring only until combined. Do not over stir. Fill each prepared mini bundt pan 3/4 full. Bake 25-30 minutes or until a cake tester comes out clean. Allow cakes to cool 5 minutes before inverting onto a wire rack. Once cool, dust with powdered sugar. Garnish with a fresh strawberry before serving.

What’s Cooking in Gail’s Kitchen? The Food Whisperer: Yeast Dinner Rolls! There’s nothing better than the smell of freshly-baked bread wafting out the oven door, in my opinion. It seems as the yeast magically leavens with flour, it produces an aroma that is not only warm heartwarming, but nostalgic. Perhaps it brings back childhood memories for you as well. For instance, the Wonder Bread Years were a simpler time where I played outside til after dark, giggled with my girlfriend, dated a boy on the weekend, and took a sack lunch to school. Crisp autumn days with damp earthy leaves and woodsmoke aromas smell nice as well. Maybe it’s time for you to bake some bread, too.

YEAST DINNER ROLLS

Ingredients:

1 cup warm milk

1/2 cup butter, room temperature

2 eggs

1/4 cup sugar

1 1/2 teaspoons sea salt

4 cups bread flour

2 1/4 teaspoons active dry yeast

Instructions:

Using a bread machine, layer warm milk, butter, and eggs in the bottom of the pan. Next add sugar, sea salt, and bread flour. Form a slight well in the flour layer. Pour the dry yeast into the well. Close the lid. Select Dough setting and press the Start button. When cycle is complete, turn dough onto a lightly floured surface. Divide dough into 24 sections. Shape dough into balls. Place in a greased 9”x13” baking pan. Cover and let rise in a warm place for 40-45 minutes. Preheat oven to 350°. Bake for 15 minutes or until golden brown.

Traditional Plum Pudding

Everyone remembers Little Jack Horner’s fame from a childhood nursery rhyme: “He stuck in his thumb and pulled out a plum.” It’s hard to resist that urge while eating these sweet, fruity, luscious plums. To pull this off, do like my Gramma used to say, “Honey, just dump everything in the pan, stir a little bit, and bake.” Sometimes we try to make things too difficult.

TRADITIONAL PLUM PUDDING

Ingredients:

1 cup flour

1/2 cup sugar

1/2 teaspoon sea salt

2 teaspoons baking powder

1 tablespoon butter, melted

1/2 cup milk

4 cups ripe plums, pits removed, skin on, and sliced

1 cup natural honey

Instructions:

Preheat oven to 350°. Spray a 2-quart ovenproof baking dish with nonstick oil. Combine flour, sugar, sea salt, and baking powder in the prepared dish. Whisk together. Add melted butter and milk. Stir well. Spread evenly across the bottom of the baking dish. In a saucepan over medium heat, combine the sliced plums and honey. Bring to a boil. Remove from heat and carefully pour over the pudding batter. Do not stir. Bake for 35-40 minutes until pudding is bubbly and golden brown. Remove from oven and serve warm with whipped cream.

Turtle Cheesecake Cupcakes

What’s Cooking in Gail’s Kitchen? Equal Measures: Turtle Cheesecake Cupcakes! Every so often I succumb to my sweet tooth. At those times I admit, I throw caution to the wind. If I’m going to splurge on something sweet, I pull out all the stops. Hence, today’s feature includes a caramel pecan cookie dough crust, a sensuously satisfying vanilla cheesecake center, and a spectacular topping of sea salt caramel, chocolate chips, and sugared pecans that says, “Go all the way, you’re worth it!” Now you can be pampered as well.

TURTLE CHEESECAKE CUPCAKES

Ingredients:

16-ounce package refrigerated Pecan Turtle Cookie Dough, room temperature

16 ounces Neufchâtel cheese, room temperature

14-ounce can sweetened condensed milk

2 eggs

2 teaspoons vanilla extract

1/4 teaspoon sea salt

1/4 cup semi-sweet mini chocolate morsels

1/2 cup sugared pecans, chopped

1/3 cup caramel butterscotch ice cream topping

Coarse sea salt, for garnish

Instructions:

Preheat oven to 325°. Line muffin tins with cupcake papers to make 24 cupcakes. Cut each square portion of cookie in half. Place one section of dough in the bottom of each paper-lined muffin cup. Bake 12 minutes. Meanwhile, using a hand mixer and a medium-sized bowl, beat the Neufchâtel cheese, sweetened condensed milk, eggs, vanilla extract, and sea salt for 3 minutes. Scrape down the sides as needed. Spoon 3 tablespoons of cheesecake mixture over each cookie crust. Bake 18 minutes longer. Cool cupcakes on a wire rack. Refrigerate Turtle Cheesecake Cupcakes for one hour. Before serving, top each with mini chocolate chips and sugared pecans. Drizzle caramel butterscotch sauce over all. Garnish with a sprinkling of coarse sea salt.
