What’s Cooking in Gail’s Kitchen? Elevated Edibles: Individual Lasagna Roll-Ups! Lasagna can be a tedious process from start to finish. Don’t get me wrong, some days it is definitely worth the effort. When I want to simplify my life, I take advantage of the effortless idea of creating a roll-up from each noodle. Not only does it make each portion compact, but it also guarantees that every helping has all the goodies tucked neatly inside. And that’s basically what lasagna is all about, isn’t it? Think about how easy it would be for transporting to family gatherings or seasonal parties, should you choose to share. Everyone wins.

INDIVIDUAL LASAGNA ROLL-UPS

Ingredients:

6 lasagna noodles

1 pound Italian sausage, ground

1/2 teaspoon fennel

1 teaspoon sea salt

1/8 teaspoon black pepper

1/8 teaspoon garlic powder

1/4 cup onion, chopped

2 tablespoons green pepper, diced

1/4 cup mushrooms, sliced

12 ounces marinara sauce

1 cup ricotta cheese

1 egg

2 tablespoons parmesan cheese, shredded

1 1/2 cups mozzarella cheese, shredded and divided

2 tablespoons parsley, chopped

Instructions:

Preheat oven to 375°. Spray a casserole dish with nonstick oil. Set aside. Cook lasagna noodles according to package directions. Drain. Refill pot with cold water to keep the noodles from sticking together. Set aside. In a large skillet, cook Italian sausage over medium-high heat. Add fennel, sea salt, black pepper, and garlic powder. Crumble meat as it cooks. Add chopped onions, diced green peppers, and sliced mushrooms. Pour marinara over all. Stir thoroughly; reduce heat to a simmer for 5 minutes, then turn off heat. Spread the bottom of the prepared casserole dish with 1/4 cup meat mixture. In a bowl, combine ricotta cheese, egg, parmesan cheese, 1 cup mozzarella cheese, and chopped parsley. Transfer lasagna noodles to a baking sheet. Spread cheese mixture over the top of each noodle. Add a strip of meat mixture over the cheese layer. Roll up noodles and transfer to the prepared casserole dish. Spread remaining meat mixture over lasagna rolls. Sprinkle with 1/2 cup mozzarella cheese. Cover casserole with a lid or foil. Bake covered for 40 minutes. Remove lid and broil 2-3 minutes until cheese is lightly golden. Garnish with fresh parsley. Serve immediately.

Leeks and Wild Mushroom Stuffing

What’s Cooking in Gail’s Kitchen? Food for Sharing: Leeks and Wild Mushroom Stuffing! With the holiday season on the horizon, here’s a tasty side dish that is sure to please. If you have the time, I suggest substituting homemade breadcrumbs (which is about one loaf of day-old bread) for the stuffing mix. I split the difference and added homemade croutons on top of the casserole.

LEEKS AND WILD MUSHROOM STUFFING

Ingredients:

2 tablespoons olive oil

5 ounces shiitake wild

mushrooms, sliced

1 tablespoon olive oil

2 large leeks, sliced

2 celery stalks, chopped

1 1/2 cups chicken broth

1/4 cup butter

1 teaspoon parsley flakes

6 ounce box chicken stuffing

Instructions:

Preheat oven to 350°. Butter a covered casserole dish. In a large skillet over medium-high heat, warm 2 tablespoons olive oil. Add the wild mushrooms and sauté until browned, approximately 5 minutes. Transfer to a bowl; set aside. Using the same pan, add one tablespoon olive oil. Sauté leeks and celery until translucent, approximately 7-8 minutes. Set aside. In a medium saucepan, heat chicken broth, butter, and parsley flakes. Bring to a boil. Stir in contents of stuffing mix. Remove from heat; cover and let stand for 5 minutes. Fluff with fork. Fold in wild mushrooms, leeks, and celery. Stir until well combined. Transfer stuffing mixture to the prepared casserole dish. Bake covered for 20 minutes; remove lid and bake 20 minutes longer. Serve warm.

No, it’s not Beef Wellington, but it’s a tasty alternative at a fraction of the cost. I highly recommend an all-natural organic lean beef for fabulous results. It’s dinner-party worthy!

HAMBURGER STRUDEL

Ingredients:

4 tablespoons butter, melted

1 onion, chopped

1/4 pound mushrooms, sliced

2 pounds ground beef

1 1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/2 teaspoon oregano

1/4 teaspoon garlic powder

3 eggs, beaten

1 1/2 cups cheddar cheese, shredded

1/4 cup parsley

1 tube 8-count crescent rolls

1 tablespoon sesame seeds, toasted

Pinch of parsley

1 cup sour cream

2 green onions, snipped

Instructions:

Preheat oven to 375°. Spray a baking pan with nonstick oil. In a large skillet, sauté onions and mushrooms in butter. Add ground beef. Cook until crumbly and brown. Drain excess liquid. In a large bowl, combine meat mixture, sea salt, black pepper, oregano, and garlic powder. Let cool slightly before folding in beaten eggs. Add cheddar cheese and parsley. Form into a loaf pan and freeze for one hour. Carefully remove chilled loaf from pan. Unroll tube of crescent rolls. Pinch seams to seal. Wrap dough around meatloaf; seal. Transfer to the prepared baking pan. Brush with butter; sprinkle with toasted sesame seeds and pinch of parsley. Bake 30-35 minutes. Cut into 1″ slices. Serve with a dollop of sour cream and green onion snips.

Veggie Pot Pie

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Veggie Pot Pie! Do you like to make pie dough? What if it’s not flaky? Are you okay with that? How do you keep the bottom crust from being soggy? Is it necessary to have a top crust? All very good questions, I assure you. Forget them for now and come with me into the land of phyllo dough where tissue-thin layers of unleavened dough are brushed with melted butter creating a crispy golden crunch. Expert bakers took the time and skill to make our lives easier by rolling and stretching the dough multiple times so we don’t have to. The result is a product as close as our neighborhood grocer. With pre-made phyllo dough as your starting point, anyone can be a gourmet chef. No dough-making required.

VEGGIE POT PIE

Ingredients:

7-ounce box antioxidant blend frozen vegetables, thawed

1 cup pearl onions

1 cup frozen corn, thawed

1 cup frozen peas, thawed

1/2 cup frozen green beans, thawed

1 sweet potato, skin on

2 tablespoons olive oil

4 ounces fresh mushrooms, cut-up

1/4 teaspoon garlic powder

1/2 cup parmesan cheese, grated

1 egg, beaten

1 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes

12 sheets frozen phyllo dough, thawed in the refrigerator overnight

6 tablespoons butter, melted

2 ounces goat cheese, crumbled

Instructions:

Keep phyllo dough chilled until ready to use. Preheat oven to 350°. In a large bowl, combine antioxidant vegetable blend, pearl onions, corn, peas, and green beans. Gently toss to keep vegetables from mashing. Wash skin of sweet potato. Pierce with a knife. Microwave on High setting for 3 minutes. Let sweet potato cool enough to handle before cutting into cubes. Gently toss into vegetable mixture. Warm olive oil in a skillet over medium-high heat. Add mushroom pieces. Sprinkle with garlic powder. Cook, stirring occasionally until almost tender, about 5 minutes. Transfer to bowl of mixed vegetables. Add parmesan cheese. Mix beaten egg into vegetables. Sprinkle with kosher salt, black pepper, and red pepper flakes. Butter a 9” iron skillet. Unroll the phyllo sheets and lay them on a flat surface. Immediately cover with plastic wrap and a damp towel. This prevents the dough from drying out. Keep phyllo covered after removing each sheet. Fit one phyllo sheet into the skillet, allowing the edges to hang over the sides. Brush lightly with melted butter. Continue working quickly by placing one phyllo sheet in the skillet at a time. Turn skillet a quarter-turn, then top with a second sheet; brush lightly with butter. Repeat with remaining sheets and butter. When finished there should be about a tablespoon of butter left. Spoon vegetable mixture evenly over phyllo layers. Sprinkle goat cheese over top. Fold edges of phyllo dough up and over the filling toward the center, overlapping slightly. Center will be exposed. Brush the top of the phyllo with remaining butter. Bake for 40 minutes until golden brown. Transfer iron skillet to a wire rack. Allow to cool for 15 minutes. The flavor of roasted vegetables intensifies at room temperature. Serve warm. (Leftovers may be reheated in the iron skillet with the crust remaining crisp.)

Beef and Noodles

What’s Cooking in Gail’s Kitchen? Eat More: Beef and Noodles! I decided to take the day off from cooking so I tag-teamed with Le Creuset. All the ingredients went into the enameled cast iron French oven pretty much all day. This reliable way of slow-cooking gave me the opportunity to spend time ironing tea towels and perusing my towering stack of current magazines. As the day wound down, the mouth-watering aromas filled the air and before I knew it, dinner was ready. The roast had basted in its own juices to blend with the herbs, wine, and vegetables for delicious results. Now leftover recipes will be a breeze. Well done!

BEEF AND NOODLES

Ingredients:

3 pound sirloin tip roast, frozen

1 can beef consommé

1/2 cup ginger beer

1 tablespoon Hawaiian Rub*

8 ounces homestyle noodles

1/2 cup mushrooms, sliced

1/2 cup red wine

1/4 cup cornstarch

Parsley sprigs

Instructions:

Place frozen sirloin roast in a Dutch oven with a lid. Add the can of beef consommé and ginger beer. Sprinkle Hawaiian Rub over roast. Cover. Put in oven and set the temperature to 225°. After six hours, add noodles and mushrooms. Bake covered 45 minutes longer. Remove pan from oven and ladle the roast drippings into a saucepan. It should be about 2 cups of liquid. Bring to a boil. Mix the red wine and cornstarch, stirring until smooth. Slowly stir into the roast drippings, stirring occasionally to prevent lumps. As gravy thickens, reduce heat to simmer. If necessary add water if it becomes too thick. Remove beef to a platter and shred, as needed. Return shredded beef to the noodle/mushroom mixture. Cover with gravy. Transfer to serving portions. Garnish each dish with parsley sprig.

Omelet 101

What’s Cooking in Gail’s Kitchen? The Next Step: Omelet 101. You’re having a get-together and need an effortless, but impressive, breakfast. While everyone is huddling in the kitchen, because this is what people do, pour them a cuppa joe and get started. Making the perfect omelet will have you feeling like a gourmet chef. It’s pretty basic. Use an 8-inch sauté pan with slanted edges and plenty of butter. Fresh veggies and shredded cheese are always a good idea. If you’re nervous about the “flip”, simply do what I do. Put a lid on it.

OMELET 101

Ingredients: (per omelet)

2 eggs

Pinch sea salt

Pinch black pepper

2 tablespoons water

2 tablespoons butter

2 tablespoons smokey Swiss cheese, shredded

Sautéed asparagus tips

Sautéed mushrooms

Instructions:

In a mini chopper, combine eggs, sea salt, black pepper, and water. Beat until light yellow in color. Warm butter in pan over medium-low heat. Do not scorch butter. Pour egg mixture into pan. Do not stir. Swirl the pan so eggs cover the edge. Cook until bottom begins to set, about one minute. Tilt the pan to allow liquid to flow underneath. Slide a rubber spatula around the surface to loosen omelet. Arrange shredded cheese, asparagus tips, and sliced mushrooms across the center of the egg, forming a vertical line. Reduce heat to low. Cover pan with a lid to absorb liquid, about 30-45 seconds. The center will remain creamy. Remove lid. Fold one-third of omelet onto itself. Gently transfer omelet to a plate. Serve immediately.

Mushroom Beef Tips

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Mushroom Beef Tips! The biggest challenge you’ll have today is deciding if you’re going to serve this over buttery egg noodles or garlic mashed potatoes! I know, right? Some days I take the way of least resistance and use a slow-cook method, but this recipe can certainly be pulled together in minutes as well. I really enjoy using my French Le Creuset cast-iron Dutch oven because it seals in the juices the way a crockpot enhances results. It just goes to show you how creative cooking can be.

MUSHROOM BEEF TIPS

Ingredients:

1 pound sirloin steak, boneless, cut into 1-inch pieces

10-ounce can beef consommé

1/4 cup red wine

1/4 cup Lea and Perrins sauce

1 tablespoon French Dijon mustard

1/8 teaspoon tarragon

1/8 teaspoon garlic powder

1/8 teaspoon seasoned salt

1/8 teaspoon black pepper

1 cup mushrooms, sliced

2 tablespoons flour

2 tablespoons water

Instructions:

Place beef tips in a covered roaster. Add beef consommé, wine, Lea and Perrins sauce, mustard, tarragon, garlic powder, salt, and pepper. Place sliced mushrooms over all. Cover and bake at 275° for 6-8 hours. Then To mix water and flour in a small bowl, to thicken sauce, and stir into beef mixture. Cover and cook another half hour until thickened. Serve over noodles or potatoes.

This dish is fast and easy to prepare, while managing portion-control at the same time. If you are looking for a meatless meal, simply adjust the recipe to suit your needs. The taste is unbelievable and leftovers will have you looking forward to a savory dinner later in the week. Mama Mia, that’s amazing!

LASAGNA LOVERS

Ingredients:

1 pound Italian sausage, bulk

1/4 cup onion, chopped

1 clove garlic, minced

1 teaspoon fennel

1/8 teaspoon basil

1/8 teaspoon oregano

1/8 teaspoon marjoram

4 ounces mushrooms, sliced

24 ounces pasta sauce

1 cup water

2 cups ricotta cheese

2 cups mozzarella cheese

1/2 cup Parmesan cheese

2 eggs

1 tablespoon parsley flakes

16 ounces lasagna noodles

Baby Kale Leaves, stems removed

Instructions:

Preheat oven to 350°. In a large skillet brown Italian sausage until crumbly. Drain. Add onion, garlic, fennel, basil, oregano, marjoram, and mushrooms. Mix well. Add pasta sauce and water to the browned meat mixture. Simmer 10 minutes. Set aside. In a medium bowl, stir together ricotta cheese, 1 1/2 cups mozzarella cheese, Parmesan cheese, eggs, and parsley. Prepare lasagna noodles per package directions. Drain. When cooked, place the noodles lengthwise in a single layer on two sheets of aluminum foil. This makes it very easy to fill and roll up. Grease a 9″x13″ baking dish. Spread one half of the meat mixture on the bottom of the dish. To assemble lasagna rolls, spread 2-3 heaping tablespoons of ricotta cheese filling along noodle. Top with baby kale leaves. Beginning at one end, roll the noodle up. Transfer to baking dish. Repeat until all ingredients are assembled and arranged. Finish by pouring the remaining pasta sauce over lasagna rolls. Sprinkle 1/2 cup of mozzarella cheese over top. Cover with foil. Bake 45 minutes. Remove foil and bake 10 minutes longer until hot and bubbly. Serve immediately.
