What’s Cooking in Gail’s Kitchen? Food for Sharing: Leeks and Wild Mushroom Stuffing! With the holiday season on the horizon, here’s a tasty side dish that is sure to please. If you have the time, I suggest substituting homemade breadcrumbs (which is about one loaf of day-old bread) for the stuffing mix. I split the difference and added homemade croutons on top of the casserole. 
LEEKS AND WILD MUSHROOM STUFFING 
Ingredients:

2 tablespoons olive oil

5 ounces shiitake wild 

mushrooms, sliced

1 tablespoon olive oil

2 large leeks, sliced

2 celery stalks, chopped

1 1/2 cups chicken broth

1/4 cup butter

1 teaspoon parsley flakes

6 ounce box chicken stuffing 
Instructions:

Preheat oven to 350°. Butter a covered casserole dish. In a large skillet over medium-high heat, warm 2 tablespoons olive oil. Add the wild mushrooms and sauté until browned, approximately 5 minutes. Transfer to a bowl; set aside. Using the same pan, add one tablespoon olive oil. Sauté leeks and celery until translucent, approximately 7-8 minutes. Set aside. In a medium saucepan, heat chicken broth, butter, and parsley flakes. Bring to a boil. Stir in contents of stuffing mix. Remove from heat; cover and let stand for 5 minutes. Fluff with fork. Fold in wild mushrooms, leeks, and celery. Stir until well combined. Transfer stuffing mixture to the prepared casserole dish. Bake covered for 20 minutes; remove lid and bake 20 minutes longer. Serve warm.

What’s Cooking in Gail’s Kitchen? Food for Sharing: Hamburger Strudel! Dress up a classic meatloaf recipe with this super simple crust to create an elegant wrap for a main course. No, it’s not Beef Wellington, but it’s a tasty alternative at a fraction of the cost. I highly recommend an all-natural organic lean beef for fabulous results. It’s dinner-party worthy!
HAMBURGER STRUDEL 
Ingredients:

4 tablespoons butter, melted

1 onion, chopped

1/4 pound mushrooms, sliced

2 pounds ground beef

1 1/2 teaspoon sea salt

1/4 teaspoon black pepper 

1/2 teaspoon oregano 

1/4 teaspoon garlic powder 

3 eggs, beaten

1 1/2 cups cheddar cheese, shredded

1/4 cup parsley 

1 tube 8-count crescent rolls

1 tablespoon sesame seeds, toasted

Pinch of parsley

1 cup sour cream

2 green onions, snipped
Instructions:

Preheat oven to 375°. Spray a baking pan with nonstick oil. In a large skillet, sauté onions and mushrooms in butter. Add ground beef. Cook until crumbly and brown. Drain excess liquid. In a large bowl, combine meat mixture, sea salt, black pepper, oregano, and garlic powder. Let cool slightly before folding in beaten eggs. Add cheddar cheese and parsley. Form into a loaf pan and freeze for one hour. Carefully remove chilled loaf from pan. Unroll tube of crescent rolls. Pinch seams to seal. Wrap dough around meatloaf; seal. Transfer to the prepared baking pan. Brush with butter; sprinkle with toasted sesame seeds and pinch of parsley. Bake 30-35 minutes. Cut into 1″ slices. Serve with a dollop of sour cream and green onion snips.

What’s Cooking in Gail’s Kitchen? Timeless Classics: Elegant Chicken! Rummage through your collection of “fundraiser cookbooks” and you’re sure to find this hidden gem. By baking it ahead, you save hours preparing the meal. It transforms an ordinary chicken dinner into a crowd-pleaser, especially with its thick creamy sauce and hint of hickory-smoked bacon. Serve Elegant Chicken over wild rice or buttered noodles. Either way, you’ll wonder how you lived without this classic dish so long. 
ELEGANT CHICKEN
Ingredients:

8 5-ounce chicken breasts, boneless and skinless

8 slices bacon, uncooked

4 ounces dried beef, chopped

10-ounce can cream of mushroom soup, undiluted

8 ounces Greek yogurt

Paprika to garnish
Instructions:

Preheat oven to 275°. Grease a 9″x13″ casserole dish. Layer the bottom of the casserole dish with dried beef. Wrap each chicken breast with one strip of bacon. Arrange chicken over dried beef. Blend cream of mushroom soup with Greek yogurt. Spoon over chicken breasts. Sprinkle lightly with paprika. Bake uncovered for 3 hours until chicken is cooked.

What’s Cooking in Gail’s Kitchen? Eat More: Beef and Noodles! I decided to take the day off from cooking so I tag-teamed with Le Creuset. All the ingredients went into the enameled cast iron French oven pretty much all day. This reliable way of slow-cooking gave me the opportunity to spend time ironing tea towels and perusing my towering stack of current magazines. As the day wound down, the mouth-watering aromas filled the air and before I knew it, dinner was ready. The roast had basted in its own juices to blend with the herbs, wine, and vegetables for delicious results. Now leftover recipes will be a breeze. Well done! 
BEEF AND NOODLES 
Ingredients:

3 pound sirloin tip roast, frozen

1 can beef consommé 

1/2 cup ginger beer

1 tablespoon Hawaiian Rub*

8 ounces homestyle noodles

1/2 cup mushrooms, sliced

1/2 cup red wine

1/4 cup cornstarch 

Parsley sprigs
Instructions:

Place frozen sirloin roast in a Dutch oven with a lid. Add the can of beef consommé and ginger beer. Sprinkle Hawaiian Rub over roast. Cover. Put in oven and set the temperature to 225°. After six hours, add noodles and mushrooms. Bake covered 45 minutes longer. Remove pan from oven and ladle the roast drippings into a saucepan. It should be about 2 cups of liquid. Bring to a boil. Mix the red wine and cornstarch, stirring until smooth. Slowly stir into the roast drippings, stirring occasionally to prevent lumps. As gravy thickens, reduce heat to simmer. If necessary add water if it becomes too thick. Remove beef to a platter and shred, as needed. Return shredded beef to the noodle/mushroom mixture. Cover with gravy. Transfer to serving portions. Garnish each dish with parsley sprig.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Salisbury Steak! Everyone knows it’s not really steak, but instead hamburger patties smothered in thick brown gravy. I like to think of it as savory meatloaf patties that are more economical than certified Angus sirloin steak. And honestly, I’ve never heard a single complaint when serving this American favorite. Add mashed potatoes and your choice of vegetable. It takes less than hour to prepare from start to finish. 
SALISBURY STEAK
Ingredients:

1 pound ground beef, lean

1/3 cup onion, chopped 

1/3 dry bread crumbs

1 tablespoon Lea and Perrins sauce

1 egg, beaten

1 teaspoon parsley flakes

1 tablespoon olive oil

For Gravy:

2 cups beef broth

1 1/2 tablespoons olive oil

1/4 cup flour

1/8 teaspoon seasoned salt

1/8 teaspoon black pepper 

1 cup fresh mushrooms, sliced
Instructions:

Combine ground beef, onion, bread crumbs, Lea and Perrins sauce, egg, and parsley in a medium bowl. Mix well and form into meat patties. Heat olive oil in a large skillet. Brown the patties 4-5 minutes, then flip and brown 4 minutes longer. Remove from skillet. Add olive oil and mushrooms to the skillet over medium heat. Cook until soft. Sprinkle flour over all. Gradually add beef broth. Using a whisk, stir to prevent lumps. Bring to a boil. As the sauce thickens, reduce heat and cook for 1 minute longer. Return Salisbury steaks to pan. Coat with gravy. Cover and simmer for 10 minutes to blend flavors. Serve over mashed potatoes.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Your Classic Green Bean Casserole! Can we ever get enough of this all-time favorite side dish? I think not! It seems there are all sorts of variations on this classic holiday casserole. Some of my friends only use French-style green beans while others prefer freshly snapped. And the seasonings are all over the map from Hawaiian sea salt medleys to crushed Midwest garden herbs. I keep it simple because, honestly, once you add the French fried onion rings, everything else takes a back seat. 
YOUR CLASSIC GREEN BEAN CASSEROLE 
Ingredients:

2 cans whole green beans, drained and cut-up

1 can cream of mushroom soup, undiluted 

1/2 cup light cream

1/8 teaspoon Mrs. Dash herb and garlic seasoning

1/8 teaspoon seasoned salt

1 1/2 cups French fried onions
Instructions:

Preheat oven to 325°. Spray a medium casserole dish with nonstick spray. Combine green beans, cream of mushroom soup, light cream, herb seasoning, and salt. Mix well. Fold in 1/2 cup of French fried onion pieces. Place in casserole dish. Spread evenly. Arrange remaining French fried onion rings over top around the edges leaving the center open. Bake 30-35 minutes.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Timely Turkey Tetrazzini! Now here’s a great way to turn leftover turkey into a tantalizing meal. By adding a few ingredients, a magical transformation takes place. Simply add turkey to mixed vegetables for a creamy pasta dish with a buttery breadcrumb topping. Can anyone say YUM?!
TIMELY TURKEY TETRAZZINI 
Casserole Ingredients:

8 ounces spaghetti, cooked

4 ounces can mushroom caps, sliced

2 tablespoons butter

3 cups cooked turkey, cut up

1 can cream of chicken soup, undiluted 

1 cup Greek yogurt 

2 tablespoons sherry

1 teaspoon sriracha sauce

1/4 teaspoon celery seed

1/2 teaspoon sea salt

1/4 cup pimentos, diced

1 tablespoon diced onion
Topping Ingredients:

1/3 cup croutons, crushed*

1/3 cup Parmesan cheese, grated

2 tablespoons butter, melted 

*May be substituted for breadcrumbs. 
Instructions:

Preheat oven to. 325°. Grease a 9″x13″ casserole dish. Prepare spaghetti according to package directions. Drain. Sauté mushrooms in butter. Set aside. In a large bowl combine cream of chicken soup, yogurt, sherry, sriracha sauce, celery seed, and salt. Blend well. Fold in pimentos and onion. Add sautéed mushrooms and butter. Mix in spaghetti and turkey until completely combined. Spread evenly in the casserole dish. Top with crushed croutons and Parmesan cheese. Drizzle melted butter over all. Bake for 45 minutes. Serve immediately.

What’s Cooking in Gail’s Kitchen? Home Cooking: Mushroom Caps! It you like mushrooms, you’ll be happy to know this is a meal in itself. If you wish to be the star of the next gathering, fix a platter and it becomes a very impressive appetizer to share!
MUSHROOM CAPS 
Ingredients:

1 pound of fresh white mushroom caps, stems removed

1 box of Low-Sodium Stove Top Stuffing 

4 tablespoons butter

1 pinch parsley

1 pinch rosemary 

1 pinch thyme

1 pinch sage

1 stalk celery, chopped finely

1 10-ounce can chicken breast in water, drained
Instructions:

Preheat oven to 350°. Prepare stuffing mix according to directions on box but add extra herbs when preparing. Once the dressing is finished, gently add the celery and cut-up chicken breast pieces. Mix well. Spoon the filling into the mushroom cavities and arrange in a shallow baking dish, cavity side up. Bake 25 minutes or until the mushrooms are tender and the filling is heated through. The mushrooms should appear golden on top. Serve warm.
