What’s Cooking in Gail’s Kitchen? The Next Step: Nature’s Tomato Naan. Who likes ooey gooey melted mozzarella cheese? I do, I do! Now add nature’s juicy ripened tomatoes for fresh garden flavor that will have you wiping your chin after the first bite. Be careful of those cheese pulls, though. Steam may be trapped between the naan crust and the pizza stone. Besides, there’s nothing worse than burning the roof of your mouth from lack of patience. Let your eyes create desire. After all, everyone wants eating to be an enjoyable experience.

NATURE’S TOMATO NAAN

Ingredients:

One prepared naan crust

1-2 tablespoons olive oil

1 tablespoon cornmeal

1/4 teaspoon garlic powder

3 Campari tomatoes, sliced

5 grape tomatoes, sliced

1/2 teaspoon sea salt

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

8 ounces fresh mozzarella, sliced

1/8 teaspoon red pepper flakes

1/4 cup parmesan cheese, shaved

Instructions:

Preheat oven to 400°. Spread olive oil on both sides of naan bread. Sprinkle cornmeal over bottom crust. Sprinkle garlic powder over top crust. Place cornmeal side down on a pizza stone. Bake for 5 minutes. Meanwhile, slice tomatoes on a cutting board. Sprinkle tomatoes with sea salt, oregano, basil, and marjoram. Remove naan from oven. Carefully layer mozzarella cheese over crust. Then arrange sliced tomatoes. Sprinkle with red pepper flakes. Bake 15 minutes longer or until cheese is melted and bubbly. Top with parmesan cheese before serving.

Whitewashed Egg Pizza

What’s Cooking in Gail’s Kitchen? All the Buzz: Whitewashed Egg Pizza! Putting an egg on pizza? Seriously? I know this might sound a little weird, but take a baby step out of your comfort zone. The first time I saw fried egg on a pizza, I was visiting the south of France. It’s really quite common there. In fact, you’re the fortunate one if you get the egg on your slice at a takeaway stand. You really must give it a whirl. I find as long as I bake in stages, the end result is a crispy crust with an egg over easy. Just imagine how fun it will be to pop the egg yolk and spread it around so everyone gets a taste.

WHITEWASHED EGG PIZZA

Ingredients:

1 naan

2 tablespoons olive oil

1/8 teaspoon garlic powder

4 tablespoons chunky pasta sauce

1 tablespoon fresh basil, chopped

3/4 cup gruyere cheese, shredded

2 onion rings, nested

1 egg

1/3 cup mozzarella cheese

2-3 tablespoons Greek yogurt

1/8 teaspoon sea salt

Dash of pepper

2 tablespoons fresh basil, for garnish

Instructions:

Preheat oven to 425°. Set oven rack on middle setting. (For the last step you will raise it up one setting.) Rub olive oil over surface of naan. Sprinkle with garlic powder. Bake 5 minutes. Remove from oven. Spoon chunky pasta sauce evenly over naan. Use 1 tablespoon fresh basil over sauce. Sprinkle with gruyere cheese. Bake 5 minutes until slightly melted. Remove from oven. Raise the oven rack up one setting. Place the nested onions on a flat portion of the crust. Gently crack an egg into the center of the onion rings. Distribute the mozzarella cheese over the pizza, excluding the egg area. Dollop the Greek yogurt over the cheese. Season with salt and pepper. Bake 5 minutes longer or until egg is set. If the crust becomes too brown, cover it with foil, leaving the egg portion uncovered. When cheese is gooey and egg is cooked, remove from oven. Garnish with fresh basil.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Naan Margherita Flatbread! Naan is an exotic oven-baked bread that makes the perfect personal size pizza. It can be made from scratch, but today’s version was available at my local supermarket bakery. I was looking for a quick and easy weeknight meal that wouldn’t weigh me down. Add fresh ingredients and you have a healthy choice for dinner. Basil was in abundance in my herb garden, so I decided to utilize it. Yum!

NAAN MARGHERITA FLATBREAD

Ingredients:

One slice of naan bread

1-2 tablespoons olive oil

1 cup mozzarella cheese, shredded

2 tablespoons parmesan cheese, grated

8 cherry tomatoes, halved

8-10 basil leaves, whole and cut

1/8 teaspoon oregano

Sea salt to taste

Cracked black pepper to taste

Instructions:

Preheat oven to 400°. Spread olive oil on naan flatbread. Layer mozzarella cheese, parmesan cheese, tomato halves, and basil leaves. Sprinkle with oregano, salt, and pepper to taste. Bake on a pizza stone sprinkled with corn meal for 15-20 minutes, until cheese is melted.

Tomato Burrata Crostini

What’s Cooking in Gail’s Kitchen? The Clean Plate Club: Tomato Burrata Crostini! One look, one whiff, and one bite is all you need to be satisfied with this gastronomic appetizer. The intensity of slow-roasted tomatoes releases a tangy sweetness that marries well with the luscious creaminess of burrata cheese. Now balance that out with the subtle smokiness of paper-thin hard salami intermingling with aromatic basil leaves. You have just been transported to seventh heaven, inspired by the taste of Italy. Need I say more?

TOMATO BURRATA CROSTINI

Ingredients:

1 pint grape tomatoes

1 tablespoon olive oil

1/2 teaspoon sea salt

1/8 teaspoon black pepper

1 bakery flatbread, plain

1 tablespoon olive oil

1/8 teaspoon oregano

1/8 teaspoon marjoram

1/8 teaspoon basil

1/8 teaspoon garlic powder

8 ounces burrata cheese

8 thin slices of hard salami

Fresh basil

Instructions:

Preheat oven to 400°. Toss tomatoes in olive oil, sea salt, and black pepper. Warm an iron skillet over medium-high heat. Add seasoned tomatoes. Roast tomatoes 15-20 minutes until they blacken slightly and begin to burst. Brush both sides of flatbread with olive oil. Cut flatbread into 8 pieces and place on a pizza pan. Sprinkle with oregano, marjoram, basil, and garlic powder. Bake in the preheated oven for 5 minutes. Remove. Place burrata in a shallow dish. Divide it into 8 portions, cutting slowly to keep the creamy filling in the mozzarella shell. Transfer each portion to the flatbread, spreading burrata cheese as needed. Layer thin salami over burrata. Tear or fold to fit the shape of the flatbread. Add roasted tomatoes. Bake 5-8 minutes until edges begin to char. Remove crostini from oven. Garnish with fresh basil leaves. Serve warm.

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Red Onion Chorizo Flatbread! Get your spice on as we crank up the taste buds a notch or two for a Spanish twist on an old European favorite. Chorizo is a type of pork sausage that made its way to Mexico and South America years ago. Cured in vinegar and chili powder before it reaches the supermarket makes it a spicy favorite from the first bite. Now add cheese and red onions for a complete taste explosion. 
RED ONION CHORIZO FLATBREAD 
Ingredients:

1 tablespoon olive oil

1 tablespoon cornmeal 

1 prepared flatbread 

8 ounces chorizo sausage

1 medium red onion, sliced and divided

1/4 cup salsa or pico de gallo 

6 ounces Mexican cheese blend, shredded

6 Ciliegine mozzarella balls (cherry size)

Fresh cilantro and oregano leaves for garnish
Instructions:

Preheat oven to 400°. Brush olive oil on the bottom of flatbread. Sprinkle with cornmeal. Bake 5 minutes, then remove flatbread from oven and set aside. In an iron skillet over medium heat, cook chorizo sausage until browned, about 5 minutes. Add red onion pieces, reserving a few raw onion rings for topping. Cook, stirring often, until onions are softened, about 4 minutes. If using pico de gallo, Pulse in a mini chopper to create a sauce consistency. Spread salsa or pico de gallo over flatbread, stopping 1/2″ from the edge. Sprinkle Mexican cheese blend over sauce. Layer next with chorizo/onion mixture. Press Ciliegine mozzarella balls on top. Finish with the red onion rings. Bake 12-15 minutes until cheese is bubbly and crust is golden brown. Garnish with fresh cilantro and oregano leaves.

What’s Cooking in Gail’s Kitchen? Something to Savor: Fig and Pig Flatbread! Make life easy tonight with an amazing twist on this sweet and salty sensation. Everyone loves bacon. I get it. And the fig preserves provide a sweet after taste that mingles with the natural crunch of crispy crust and salty meat. The gooey cheese is like the icing on a cake. With only a few ingredients, preparation is a snap leaving more time for settling in front of the television with a glass of wine and your favorite program. You can thank me later. 
FIG AND PIG FLATBREAD 
Ingredients:

1 prepared flatbread

1 tablespoon olive oil

1 tablespoon corn meal

1/2 cup fig and muscat wine preserves 

4 slices applewood smoked bacon, cooked crisp and crumbled

1/3 cup mozzarella cheese, shredded 

2 tablespoons feta cheese, crumbled
Instructions:

Preheat oven to 400°. Brush both sides of flatbread with olive oil. Sprinkle corn meal on the bottom side of the flatbread. Place onto a baking sheet that has been sprayed with nonstick oil. Bake 5 minutes; remove from oven. Spread fig and muscat wine preserves evenly over flatbread, leaving a crust edge. Arrange crumbled bacon as next layer. Scatter mozzarella and feta cheese over top. Bake 10 minutes longer until crust is golden and cheese is bubbly. Remove from oven. Cool slightly. Cut into wedges and serve with a side salad.

What’s Cooking in Gail’s Kitchen? Food for Sharing: Pear Camembert Flatbread! It’s seldom I get the cart before the horse, but I had to share this phenomenal flatbread with you, simply because I couldn’t wait any longer. Let’s refer to today’s recipe as a Prequel, shall we? Perhaps it will whet your appetite in anticipation of what lies ahead. As promised, the Tomato Jam recipe will be featured in the upcoming post entitled, Eating My Way Through the Alphabet; Letter T. Some things are simply worth the wait. 
PEAR CAMEMBERT FLATBREAD 
Ingredients:

1 tablespoon corn meal

1 prepared-dough naan round

1 tablespoon olive oil

1/4 cup tomato jam*

1 pear, peeled, stem and seeds removed, thinly sliced

2 ounces Camembert cheese, diced

1/4 cup mozzarella cheese, shredded
Instructions:

Preheat oven to 400°. Sprinkle corn meal onto a baking sheet that has been sprayed with nonstick oil. Brush both sides of naan with olive oil. Place on top of corn meal. Bake 5 minutes; set aside. Spread tomato jam evenly over naan, leaving a crust edge. Arrange pear slices over crust. Scatter Camembert and mozzarella cheeses over top. Bake 10 minutes until pears are soft, cheese is bubbly, and crust is golden. Remove from oven. Cool slightly; then cut into wedges.
