What’s Cooking in Gail’s Kitchen? All the Buzz: Sweet Strawberry Salad! Whenever you feel the need to change things up a bit from your ordinary salad, think strawberries! Did you know the strawberry is actually a cousin to the rose family? Truth. In history, they represent love, purity, and perfection. Hmmm. And of course, everyone knows how deliciously sweet they are. Okay, I’m in. Serve a strawberry salad and watch everyone’s face break into a smile. Think strawberries! 🍓
SWEET STRAWBERRY SALAD
Ingredients:

1 pound Spring Mix, gently torn

1 quart strawberries, caps removed and halved

4 green onions, snipped

1 cup harvarti cheese, grated

1/2 cup sugared pecans, chopped

1/3 cup bacon pieces

1/2 cup lemon olive oil

1/4 cup balsamic reduction 
Instructions:

Combine Spring Mix salad greens, strawberries, and green onion snips in a large bowl. Gently add cheese to mix. Top with sugared pecans and bacon. Toss with lemon olive oil to coat. Drizzle balsamic reduction over all.

What’s Cooking in Gail’s Kitchen? All the Buzz: Norwegian Jarlsberg Cheese Spread! Sometimes you feel like a nut, sometimes you don’t. Jarlsberg cheese originated in Norway as a buttery mild cow’s milk cheese with a sweet nutty flavor. In some photos it may appear similar to Swiss cheese, full of holes, but in essence it is much smoother and richer. Don’t believe me? Order a grilled cheese sandwich made with semi-soft imported Jarlsberg cheese sometime and try not to faint when you are asked to pay a much higher price for this gooey better-than-generic extravagance. 
NORWEGIAN JARLSBERG CHEESE SPREAD 
Ingredients:

4 ounces Neufchâtel cheese

4 ounces Jarlsberg cheese, shredded

2 tablespoons mayonnaise

2 tablespoons red onion, chopped

1 can (4 ounce size) stuffed green olives, sliced

Sea salt, to taste

Cracked black pepper, to taste

1/4 cup chives, chopped

1/4 cup pecans, finely chopped
Instructions:

Mix together Neufchâtel cheese, Jarlsberg cheese, and mayonnaise until well blended. Stir in red onion and green olives. Add sea salt and cracked black pepper to taste. Form into a log. Wrap in plastic wrap. Refrigerate 1 hour. Roll cheese ball in chopped chives and pecans bits before serving. Spread into crackers or bagel chips.

What’s Cooking in Gail’s Kitchen? All the Buzz: Mandarin Orange Side Salad! Whenever I serve this colorful side salad to my guests, they rave about the dressing. I create my own version of infused garlic oil, but it can be purchased at your local grocery. Dark, leafy watercress can also be found at the area Farmers Market this time of year. A little bit goes a long way in adding a surprisingly light peppery taste. When partnered with oranges and tomatoes, it refreshes the palate for the next course. If you like a tastier and fresher alternative to an ordinary garden salad, give this one a whirl. 
MANDARIN ORANGE SIDE SALAD
Ingredients:

1/2 head romaine lettuce, torn into bite-size pieces

1/2 cup watercress

8 cherry tomatoes, halved

18 mandarin orange segments 

1/4 cup bacon pieces

1/4 cup almonds, sliced

1/2 cup Parmesan cheese, shaved
Instructions:

Divide the romaine lettuce, watercress, cherry tomatoes, mandarin oranges, bacon, almonds, and cheese evenly between 6 salad bowls. Serve chilled with dressing. (See dressing recipe below.)
Dressing Ingredients:

1/2 cup garlic vegetable oil

3 tablespoons wine vinegar 

1 tablespoon lemon juice

2 tablespoons sugar

1/2 teaspoon sea salt

1/2 teaspoon dry mustard 

1/4 cup red onion, chopped
Instructions:

Combine garlic vegetable oil, wine vinegar, lemon juice, sugar, sea salt, dry mustard, and onion. Whisk well until blended. Refrigerate one hour before serving.

What’s Cooking in Gail’s Kitchen? All the Buzz: Gluten-Free Chocolate Cake! You know you love chocolate. Who doesn’t? If you find yourself avoiding baked goods due to its wheat content, worry no more. This cake is completely flourless. The results are rich, chocolaty, and extremely satisfying for any sweet tooth craving. Dust it with powdered sugar and garnish each slice with fresh strawberries for a gourmet finish. Hurray for Chocolate!
GLUTEN-FREE CHOCOLATE CAKE
Ingredients:

1 1/2 cups semi-sweet chocolate chips

15-ounce can organic garbanzo beans, rinsed and drained

4 eggs

3/4 cup sugar

1/2 teaspoon baking powder 

1 tablespoon almond extract

1 tablespoon powdered sugar, for dusting

1/4 cup almond slices (optional)

Whipped cream

Fresh strawberries, garnish
Instructions:

Preheat oven to 350°. Grease a 9″ round cake pan. Melt the chocolate chips in a microwave-safe bowl for 2 minutes on high. Stir after 1 minute. Repeat until chocolate is melted and smooth. In a food processor, combine garbanzo beans and eggs. Blend until smooth, about 4 minutes. Add sugar and baking powder. Pulse to mix. Pour in melted chocolate and almond extract. Blend until smooth, scraping sides as needed. Transfer batter to the cake pan. Bake 40 minutes or until a cake tester comes out clean. Cool on a wire rack for 10 minutes. Invert onto a serving plate. Dust with powdered sugar. Sprinkle with almond slices. Garnish with whipped cream and strawberries.

What’s Cooking in Gail’s Kitchen? All the Buzz: Blueberry-Almond Coffeecake! The battle begins. Will you choose to eat this incredible coffee cake first thing in the morning for breakfast or the last thing at night for dessert? The brown sugary crumbled topping seems like candy, but the fluffy moist cake filled with blueberries seems more like a last course to the meal. Whatever is one to do??? My choice? I’ll never tell. Enjoy!
BLUEBERRY-ALMOND COFFEECAKE 
Ingredients:

2 cups fresh blueberries 

2 tablespoons corn starch

3/4 cup sugar

1/3 cup butter, softened 

1 1/4 cup flour

1/2 teaspoon sea salt

2 teaspoons baking powder 

1/2 teaspoon cinnamon 

1/4 cup milk

1/4 cup Greek yogurt

1 teaspoon almond extract

1 egg
CRUNCHY TOPPING

Ingredients:

1/2 cup brown sugar

2 tablespoons flour

2 tablespoons butter, softened 

1/4 cup almonds, chopped
Instructions:

Preheat oven to 375°. Grease and flour a 10″ round baking dish. In a bowl, gently toss blueberries and cornstarch to coat. Set aside. Cream together sugar and butter. Add flour, salt, baking powder, and cinnamon. While mixing gradually add milk, yogurt, almond extract, and egg. Blend well. Gently fold in blueberries. Pour batter into baking dish. To make topping, combine brown sugar and flour. Cut butter into topping until it resembles pea-size crumbs. Spread over cake batter. Sprinkle almonds over all. Bake for 20-25 minutes, or until a cake tester comes out clean. Serve warm.

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Unrivaled Chocolate Caramel Treats! Do you get weak in the knees over chocolate? You may be tempted once you taste this salty sweet confection. One little piece will have you rolling your eyes in delirium. The crust keeps this bar crunchy, kinda like a shortbread cookie. And the sea salt crystals form a balance that is unrivaled! This recipe has a few shortcuts, so it can be thrown together in a matter of minutes. No baking is required. Don’t hate me!
UNRIVALED CHOCOLATE CARAMEL TREATS
Ingredients:

Club crackers, whole

1 cup crushed Club crackers

1 cup brown sugar

1 cup coconut, flaked

1/2 cup milk

1/2 cup butter, melted

16-ounce can of Chocolate Fudge Frosting

1/4 cup pecans, chopped

1 teaspoon sea salt crystals
Instructions:

Put one layer of whole Club crackers on the bottom of a 7″X11″ pan. In a saucepan over medium heat, combine brown sugar, coconut, milk, and melted butter. Boil ingredients for 8-10 minutes, stirring occasionally. Remove from heat; let cool. Form a layer of caramel mixture over crackers. Put another layer of Club crackers on top. Frost with canned frosting, sprinkle with pecans and sea salt crystals. Store in the refrigerator.

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Tropicana Bars! When you combine exotic fruits, flaky coconut, and macadamia nuts, you may feel as though you stepped off an airplane onto a tropical island in the Pacific. This mouthwatering dessert is perfect for summer. Go ahead, take a bite for a quick trip to a faraway destination. Let your mind wander to swaying palm trees, magical waterfalls, and sunshine that warms the body as well as the spirit. 
TROPICANA BARS
Ingredients:

3/4 cup butter

1 cup sugar

2 cups flour

1teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon cinnamon 

1 1/2 cups Zucchini Jam*

1/4 cup flaked coconut 

1/4 cup macadamia nuts, crushed 

1 tablespoon crystallized sugar
Instructions:

Preheat oven to 350°. Cream together sugar and butter. Set aside. Whisk flour, salt, and baking soda together until blended. Combine dry ingredients with sugar mixture until crumbly. Spread 3/4 of batter into a 9″x13″ greased dish to make a crust. Sprinkle with cinnamon. Layer with Zucchini Jam, coconut, and nuts. Crumble remaining batter over all. Sprinkle with crystallized sugar. Bake for 20-30 minutes. Cool slightly and cut into 24 squares.

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Quaker Oat Breakfast Companions! I must confess, some days a cup of Italian espresso and a crispy wafer roll is enough to get my engine up and running. But on those mornings when I wake up ravenous, I turn to a hearty bowl of Quaker Oats with all the trimmings: pomegranate arils, orange slices, almonds, cinnamon, and brown sugar. I appreciate the fiber, fruit, and nuts for healthy living. Topped with a bit of honey and milk in lieu of brown sugar, and I’m left feeling full for longer periods of time. Plus, it’s a good source of fiber and iron. Switch things up now and then by choosing a bowl of oatmeal for breakfast. 
QUAKER OATS BREAKFAST COMPANIONS
Ingredients:

1 cup milk

1 dash sea salt 

1 dash cinnamon

1/2 cup whole grain oats

1 mandarin orange, peeled

1 tablespoon almond slices

1 tablespoon pomegranate arils

1 teaspoon brown sugar or natural honey
Instructions:

Combine milk, salt, cinnamon, and oats in a microwave-safe bowl. Microwave on High 2 1/2-3 minutes. Remove and mix well. Top with oranges, almonds, arils, and honey.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Tilapia Macadamia Fillets! Tired of hum-drum meals? The crispy crunch of tropical nuts on the outside are a prelude to the moist flaky fish inside. Turning that taste into a healthy and delicious dinner option is spot on! The subtle hints of sesame, green seaweed, and Parmesan cheese add to the nutritional value making this a new favorite to try again and again. 
TILAPIA MACADAMIA FILLETS
Ingredients:

2 tilapia fillets, boneless and skinless

1/4 cup seasoned bread crumbs

1/4 cup flour

1/4 cup cornmeal 

1/4 cup Parmesan cheese, grated

1/2 cup macadamia nuts, chopped

1/4 teaspoon sea salt

1/8 teaspoon furikake seasoning (sesame seed and green seaweed)

1 egg, beaten

1 tablespoon milk
Instructions:

Preheat oven to 425°. Rinse tilapia fillets and pat dry. Mix together all dry ingredients and spread on a sheet of waxed paper. Using a wire whisk, combine egg and milk in a shallow bowl. Dip one fish fillet at a time into the egg bath, coating both sides. Once wet, dredge in bread crumb mixture to fully cover both sides. Set aside and repeat for the second fish fillet. (For a crisper crust, repeat process in egg bath using all coating mix.) Place fish fillets in a nonstick pan and place to oven. Bake 8 minutes, gently turn over and bake 4 minutes longer. Do not over cook. Garnish with cilantro, lemon slice, and whole macadamia nuts.
