What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Naan Margherita Flatbread! Naan is an exotic oven-baked bread that makes the perfect personal size pizza. It can be made from scratch, but today’s version was available at my local supermarket bakery. I was looking for a quick and easy weeknight meal that wouldn’t weigh me down. Add fresh ingredients and you have a healthy choice for dinner. Basil was in abundance in my herb garden, so I decided to utilize it. Yum!

Indian Couscous with Saffron

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Indian Couscous with Saffron! This side dish is wonderful to have with poultry instead of potatoes or stuffing.  I like its versatility because it doesn’t weigh me down, but offers appealing flavor. You can add or subtract herbs and vegetables to your heart’s delight, choosing what you have on hand. I tend to serve it warm rather than cold. Others make a meal out it. Either way, it’s very economical as well as exotic.

INDIAN COUSCOUS WITH SAFFRON

Ingredients:

1 cup couscous

2 cups chicken broth

2 tablespoons olive oil

1 teaspoon parsley flakes

1/8 teaspoon turmeric

1/8 teaspoon paprika

1/8 teaspoon onion powder

1/8 teaspoon garlic powder

1 stalk celery, diced

1 carrot, diced

1 tablespoon chives, snipped

1/4 cup pine nuts

2 tablespoons hot water

4 threads saffron

Instructions:

Dissolve saffron in hot water. Set aside. In a 2-quart pan, combine chicken broth, olive oil, parsley, turmeric, paprika, onion powder, garlic powder, celery, and carrots. Add saffron mixture. Bring to boil. Remove from heat. Stir in couscous. Cover and let stand until liquid is absorbed, about 10 minutes. Couscous will be tender. Fluff with fork. Add the snipped chives and pine nuts. Season to taste with sea salt and cracked black pepper. Serve warm.

Vidalia Grilled Onions

What’s Cooking in Gail’s Kitchen? Food Plating: Vidalia Grilled Onions! Even if you don’t appreciate the taste of raw onions, by grilling them they turn into a totally different animal, so to speak. In raw form, onions can have a bite that is as raw, sharp, and bitter as a gator’s mouth. Grilling them releases the natural sugars to magically transform these bulbs into a sweeter, savory, delicious side dish that goes well with other grilled foods. Once you’ve tasted grilled onions at home, think variety for your next cookout. Combine potatoes, green peppers, and vidalia onions together in the foil packet and expect another flavorful explosion.

VIDALIA GRILLED ONIONS

Ingredients:

4 Vidalia onions, skins discarded,  slice onions thick

1/4 cup olive oil

1/4 cup garlic red wine vinegar

1/2 teaspoon oregano, dried

Instructions:

Place the sliced Vidalia onion in a bowl. Whisk together the olive oil, garlic red wine vinegar, and dried oregano. Pour the mixture over the onions; toss to coat well. Marinate the onion mixture for half an hour. Preheat the grill to medium-high. Line a grill pan with foil, overlapping the sides enough to make a tent. Place the marinated onions on the foil and form a seal. Grill the foil packet for 15-20 minutes. Remove pan from grill and set aside. Carefully open the tent and transfer the onions to a serving platter. Serve immediately.

Fried Lavash Triangles

What’s Cooking in Gail’s Kitchen? Food Plating: Fried Lavash Triangles! Lavash, like anything else these days, can often be purchased in the Deli Department of your local supermarket without having to make it at home. Lavash slightly resembles pita bread or flatbread, but much thinner. Different varieties are available including flax, oat bran, and whole wheat. The package I bought contained 4 sheets. Obviously, you can make triangular snack chips or square crispy crackers. Once you try it, you’ll see how versatile lavash really is. Crunch-time is back to Munch-time.

FRIED LAVASH TRIANGLES

Ingredients:

2 sheets of lavash bread

1-2 tablespoons vegetable oil

2 tablespoons olive oil

1 teaspoon tajin seasoning

1/2 teaspoon sea salt

1/8 teaspoon cayenne pepper powder

Instructions:

Preheat oven to 200°. Set aside a baking sheet. Warm vegetable oil in an iron skillet over medium-low heat. Brush the top of each sheet of lavash bread with olive oil. Sprinkle with tajin seasoning and sea salt. Sprinkle with cayenne pepper powder, to taste. Using a kitchen shears, cut lavash bread into triangles of desired size for snack chips. Place a single layer of triangles in the iron skillet. Watch closely. Using a tongs, flip over to fry both sides. When slightly golden, transfer the fried lavash triangles to the baking sheet, still forming a single layer. Repeat frying process until all chips are fried. Place baking sheet in the oven for about 5-6 minutes. Remove and let cool. This turns the chips crispier and adds more crunch. Serve with tzatziki dip.

Basil Tomato Pesto

What’s Cooking in Gail’s Kitchen? Food Plating: Basil Tomato Pesto! With a vibrant basil plant that thrives in the Florida sunshine, I get to reap the benefit of having this fresh herb as often as I crave it. The hubs doesn’t care for the taste or aroma of basil, but when I add a heaping tablespoon of pesto to spaghetti sauce, he knows he likes the taste. He just can’t figure out why it seems better than usual. True confessions? I think not! My lips are sealed. I simply respond, “I’ve got the magic touch.” And leave it at that.

BASIL TOMATO PESTO

Ingredients:

1 cup cherry tomatoes

10-15 basil leaves

1/3 cup roasted pistachios, slightly chopped

1/4 teaspoon garlic powder

1/2 teaspoon kosher salt

1/4 cup olive oil

Fresh basil, for garnish

Instructions:

Combine cherry tomatoes, basil leaves, roasted pistachios, garlic powder, and kosher salt in a food processor. Pulse to blend into a fine purée. Scrape the sides down and turn the processor to Low setting. As it is running, pour the olive oil into the mixture in a continuous stream. The tomato pesto will thicken nicely. Transfer to a serving bowl; garnish with fresh basil leaves.

Rustic Romaine Parmigiana-Reggiano

What’s Cooking in Gail’s Kitchen? The Daily Special: Rustic Romaine Parmigiana-Reggiano! Fire up the grill, you’re about to experience an explosion of flavor! The first time I heard of grilled romaine, I couldn’t wrap my mind around anyone actually agreeing to eat warm lettuce. Once I tried it, I knew I was in heaven. The secret is high heat to char the edges. That gives it a smoky crisp taste that lingers on the tip of your tongue.

RUSTIC ROMAINE PARMIGIANA-REGGIANO

Ingredients:

1 head of romaine lettuce

3 tablespoons olive oil

1/4 teaspoon oregano

1/4 teaspoon basil

1/4 teaspoon marjoram

1/8 teaspoon garlic powder

1/8 teaspoon sea salt

Crushed red pepper flakes to taste

1/4 cup parmigiana-reggiano cheese, grated

Instructions:

Wash romaine and drip dry. Remove the browned root end, leaving a partial stem to hold the leaves together. Slice romaine lengthwise and place on a plate. Lightly coat with non-stick oil. Sprinkle sea salt and red pepper flakes. Preheat grill to high. In a small bowl, whisk together olive oil, oregano, basil, marjoram, and garlic powder. Set aside. Grill the romaine until lightly brown on all sides, turning with tongs every minute or so. Remove to a platter. Drizzle olive oil over each half. Sprinkle with cheese. Serve immediately.

Alex’s Porgy Fish Favorite

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Alex’s Porgy Fish Favorite! Just because a fish species is plentiful and easy to catch by local fishermen is no reason to ignore its flaky sweet flavor when cooked. In fact, you can herald porgy’s role in sustainable seafood. The more porgy that is caught, the better chance other wild-caught fish can multiply. Porgy is smaller, too, so one person can often eat an entire serving. Leave the fillet method to the skilled cutters. They can clean, skin, and fillet porgy to eliminate all those tiny bones. Alex is a member of a crew of local fishermen who work together to make each their fresh catch affordable and ready-to-cook when purchased. What more could anyone ask?

ALEX’S PORGY FISH FAVORITE

Ingredients:

2-6 ounce porgy fillets, skinned and deboned

1 tablespoon olive oil

1 tablespoon butter

1/4 teaspoon sea salt

1/8 teaspoon black pepper

Melted butter, for garnish

Fresh Lemon, for garnish

Instructions:

Spray an enameled cast iron grill pan with nonstick oil. Warm olive oil and butter in the grill pan over medium high heat. Add porgy fillets to prepared cookware. Sprinkle with sea salt and black pepper. Cook two minutes; flip over and cook two minutes longer. Transfer to a platter. Serve with grilled asparagus and fresh tomatoes. Drizzle melted butter over all. Garnish with lemon slices.

I mean, just look at that gorgeous grassy green color! You can almost taste the smoky crunch of the charred asparagus before sinking your teeth into the luscious buttery goodness of the filet mignon. The toasted saltiness of the crispy fried onions may create a magical finish that could lead to an increased libido for later on. Hey, I’m a hopeful romantic.

Wash asparagus in cold water. Remove woody ends. Place asparagus in a ziplock bag. Add one tablespoon olive oil. Sprinkle with herb and garlic seasoning. Zip bag; mix well. Arrange filet mignon pieces over grilled asparagus. Top with fried onion rings. Serve immediately.
