What’s Cooking in Gail’s Kitchen? The Daily Special: Hot Dog Coney Island Sauce! Sometimes it’s a treat to dress up an ordinary grilled hot dog with a thick tangy coney sauce bursting with flavor. Now you can make your own secret sauce to keep on hand for that weekend picnic…or any time. 
HOT DOG CONEY ISLAND SAUCE
Ingredients:

1 small onion, chopped

2 garlic cloves, minced

2 teaspoons butter

2 pounds ground beef

2 cups water

1 1/2 cups catsup

1 teaspoon cloves

1 teaspoon turmeric

1 teaspoon dry mustard

1 teaspoon cinnamon 

2 teaspoons paprika

1 teaspoon chili powder

2 teaspoons sea salt

1 teaspoon cracked black pepper

1 teaspoon basil, crushed
Instructions:

In a large sauce pan, lightly brown the onion and garlic in butter. Remove from heat. Add all remaining ingredients and mix well. Return to heat and cook on medium until the beef is crumbled and cooked. Cover and simmer on low setting for one hour, stirring occasionally. Serve with grated cheese, green onion snips, and mustard.

Not only does it show off food attractively, it offers single-serving portion control. It’s the perfect touch to any meal and bakes in less time. Make your life simpler with any of the oven-to-table choices available. I did. 
DEEP DISH CHICKEN SALAD
Ingredients:

3 cups chicken, cooked

1 cup extra sharp cheese, finely shredded

1 tablespoon green onion

1/2 cup mayonnaise 

4 stalks celery, chopped

1 tablespoon lemon juice

1/4 teaspoon celery seeds

1/8 teaspoon red pepper flakes

Sea salt to taste

Dash of pepper

1 cup potato chips, crushed
Instructions:

Preheat oven to 350°. Combine chicken, celery, mayonnaise, salt, pepper, lemon juice, celery seed, red pepper flakes, and half the cheese. Mix lightly. Spoon casseroles into single serving pans. Bake for 20 minutes. Top with remaining cheese and potato chips. Bake another 5 minutes or until cheese is melted. Garnish with green onion snips.

What’s Cooking in Gail’s Kitchen? Home Cooking: Bacon Bites! Get ready for a smokey, salty, crunchy all-time favorite appetizer. As the bacon sizzles in the skillet, your will-power needs to shift into high gear to restrain you from taste-testing before it’s finished. Trust me, this is worth the wait. 
BACON BITES
Ingredients:

9 slices of bacon

1/2 pound chicken chunks, pre-cooked

1/4 cup soy sauce

1 tablespoon sugar

1/8 teaspoon ground ginger

1 8-ounce can water chestnuts, drained and sliced
Instructions:

Preheat oven to 450°. Partially cook bacon; drain on paper towels. Combine chicken, soy sauce, sugar, ginger, and water chestnuts. Marinate for 20 minutes. Drain. Wrap one piece of chicken and two water chestnuts in 1/3 slice of bacon. Secure with a wooden toothpick. Place on a baking sheet and bake in the oven 10-12 minutes or until the bacon is crisp.

And if you’ve been neglecting protein, this one is an excellent source to remember when dieting. I like the fact that it’s high in antioxidants. See what you think about spicing it up a bit. 
QUINOA MEDITERRANEAN 
Ingredients:

1/4 cup quinoa

1/4 cup long grain brown rice

1/8 teaspoon garlic powder 

1/8 teaspoon onion powder

1/8 teaspoon crushed red pepper flakes 

1/8 teaspoon sea salt

1/8 teaspoon cracked black pepper 

1 green onion, sliced

2 tablespoons cashews

1/4 cup bacon pieces, cooked
Instructions:

Bring 1 3/4 cups of water to a boil. Add quinoa, brown rice, garlic powder, onion powder, red pepper flakes, sea salt, and pepper. Stir to combine. Reduce heat to simmer and cover. Simmer 15 minutes until liquid is absorbed. Remove from heat. Let stand for 5 minutes. Add bacon, cashews, and green onion slices. Fluff with fork.
