What’s Cooking in Gail’s Kitchen? Eat More: Jasmine Rice Pilaf! If you can boil water, you can master the art of restaurant-style rice pilaf. It’s that simple. By using your favorite herbs and spices, the air is filled with an aromatic essence that draws everyone to the kitchen. Keep in mind, Patience is key. Follow this step-by-step recipe for a be-all and end-all gourmet fluffy rice pilaf that can be eaten as a main meal or partnered with a meat portion. I served it with Nugget Sesame Chicken, which you’ll be seeing a little later on. Stay tuned. 
JASMINE RICE PILAF
Ingredients:

2 tablespoons olive oil

1 small onion, chopped

2 cloves garlic, finely chopped

1/2 teaspoon seasoned salt

1/8 teaspoon black pepper

1/2 teaspoon cumin powder

1 cup long-grain jasmine rice

1 1/4 cup low-sodium chicken broth

1/4 cup white wine

1-2 tablespoons butter

4 ounces prosciutto, cubed

1/2 cup sweet baby peas

1 egg, beaten

1-2 tablespoons soy sauce

Fresh chives, snipped
Instructions:

In a medium saucepan over medium-high heat, combine olive oil, onion, garlic cloves, seasoned salt, and pepper. Cook until onion is translucent, stirring often, approximately 45 seconds. Sprinkle in cumin powder. Add jasmine rice; stir to coat. Cook 3 minutes until grains turn toasty. This prevents clumping later on. Add low-sodium chicken broth and wine. Bring to boil then reduce to simmer. Cover and cook until the liquid is absorbed, approximately 15 minutes. Remove from heat and fluff with fork. Take a cotton tea towel and cover the pan. Place the lid over the towel to absorb the steam; let rice rest for 10 minutes. Meanwhile, in a small skillet, heat butter on low. Add cubed prosciutto, peas, and beaten egg. Stir while cooking until egg is scrambled. Add soy sauce to taste. Before serving the rice, fold in the prosciutto mixture. To complete the pilaf, garnish with fresh chive snips.

What’s Cooking in Gail’s Kitchen? All the Buzz: Thai Peanut Noodles! Take advantage of that extra serving, or two, of leftover spaghetti noodles in the fridge right now. As long as you kept them separate from the sauce, you have the option to eliminate one step in making Thai Peanut Noodles to eat with a sandwich for lunch. If not, then boil up a batch of spaghetti first and let it cool a bit. Meanwhile, prepare the sauce. I like the spicy kick of red pepper flakes blended with the smooth creaminess of chunky peanut butter. The fresh green onion bits give it an added crunch. Have I piqued your taste buds? 
THAI PEANUT NOODLES 
Ingredients:

2 servings of plain spaghetti, cooked and drained

1/3 cup chunky peanut butter

4 tablespoons soy sauce

2 tablespoons honey

2 teaspoons vinegar

1/8 teaspoon garlic powder 

1/8 teaspoon ginger powder

2 teaspoons sesame oil

1-2 teaspoons red pepper flakes

6 tablespoons green onions, sliced
Instructions:

Make spaghetti according to package directions. Drain and cool. Set aside. In a medium bowl combine chunky peanut butter, soy sauce, honey, and vinegar. Stir with a whisk until smooth. Add garlic powder, ginger, sesame oil, and red pepper flakes. Blend well. Add noodles and toss gently to coat. Sprinkle with green onion bits and serve.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Frijoles Negros Stew! The popular dish of Cuba and Latin America translates to “black beans”. This highly nutritious legume is catching on around my household, especially following a day of slow-cooker roast pork. I like the smoky flavor to balance out the onions, peppers, and spices. Read on to see how simple it is to indulge in a thick, hearty stew for your next nutritious meal. 
FRIJOLES NEGROS STEW
Ingredients:

2-15 ounce cans of black beans, with sauce

1 can beef consommé 

1 cup onion, chopped 

1 1/2 cups shredded pork

1 teaspoon Liquid Smoke

1 teaspoon cumin powder

1/8 teaspoon red pepper flakes 

1/8 teaspoon garlic powder 
Instructions:

In a 2-quart saucepan, pour one can of black beans with liquid. Mash beans to a thick paste. Add the other can of black beans with liquid plus the beef consommé. Blend well. Microwave the chopped onion 2 minutes on high. Add to the stew. Add shredded pork, liquid smoke, cumin powder, red pepper flakes, and garlic powder. Stir until combined. Bring to a boil; reduce heat. Cover and simmer 15 minutes. Garnish with cheddar cheese, green onions, and salsa. Serve piping hot.

Eating My Way Through the Holidays! What’s cooking in Gail’s Kitchen? Home for the Holidays: Festive Ham Egg Cups! While everyone is still sleeping and the coffee is brewing, these tasty little breakfast cups can be assembled in minutes. By the time the aromas wafting from the kitchen arouse the senses, it will appear as though you’ve been baking for hours. Not so! Good morning. I’m so glad you could join me for breakfast!
FESTIVE HAM EGG CUPS
Ingredients:
Nonstick Cooking Spray

6 slices Smoked Virginia Ham

6 large eggs

6 teaspoons Gouda cheese, shredded 

1 green onion

Seasoned salt and cracked pepper to taste

1 tablespoon chia seeds, optional
Instructions:

Preheat oven to 400°. Lightly coat six muffin cups with nonstick cooking spray. Place one slice of ham into each cup forming a bowl. Layer one teaspoon of cheese on top of ham. Sprinkle with seasoned salt and pepper. Divide the green onion by slicing it between all six cups. This is easily done with a kitchen shears. Next crack one egg into each cup, being careful not to break the yolk. Bake in the oven for 15 minutes and broil on High for one minute. The whites should be cooked, but the yolks a little runny. Watch! Remove egg cups onto serving platter and sprinkle chia seeds on top before serving. Enjoy!
*TIP: Make ahead and gently reheat in the microwave on 20% power for those mornings-on-the-run.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Your Classic Green Bean Casserole! Can we ever get enough of this all-time favorite side dish? I think not! It seems there are all sorts of variations on this classic holiday casserole. Some of my friends only use French-style green beans while others prefer freshly snapped. And the seasonings are all over the map from Hawaiian sea salt medleys to crushed Midwest garden herbs. I keep it simple because, honestly, once you add the French fried onion rings, everything else takes a back seat. 
YOUR CLASSIC GREEN BEAN CASSEROLE 
Ingredients:

2 cans whole green beans, drained and cut-up

1 can cream of mushroom soup, undiluted 

1/2 cup light cream

1/8 teaspoon Mrs. Dash herb and garlic seasoning

1/8 teaspoon seasoned salt

1 1/2 cups French fried onions
Instructions:

Preheat oven to 325°. Spray a medium casserole dish with nonstick spray. Combine green beans, cream of mushroom soup, light cream, herb seasoning, and salt. Mix well. Fold in 1/2 cup of French fried onion pieces. Place in casserole dish. Spread evenly. Arrange remaining French fried onion rings over top around the edges leaving the center open. Bake 30-35 minutes.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Paleo Pepper Steak! Before you delete this post, hear me out for sec. Paleo does not mean blah, boring, and tasteless. In fact, this recipe gives you permission to only eat the stuff you crave. No hidden sauces or funky herbs. Basically, what you see is what you get. (Disclaimer: Pay no attention to that slice of garlic bread. It was put in the photo by my alter ego who loves carbs.) The green and red peppers are so fresh you may feel like nibbling on one or two as you slice them into strips. And the caramelized onions compliment the taste of steak, in my opinion.  
PALEO PEPPER STEAK
Ingredients:

1 large green bell pepper, sliced and seeds removed 

1 large sweet red pepper, sliced and seeds removed

1 large yellow onion, skin removed and sliced

2-3 tablespoons olive oil

1/2 teaspoon seasoned salt

1/8 teaspoon garlic powder 

1/8 teaspoon cracked black pepper
2-6 ounce filet mignon steaks

Sea salt, black pepper, and garlic powder steak to taste

1 pat of butter
Instructions:

Salt and pepper both sides of the steak while the gas grill is preheating from 450°-500°. At this time sprinkle the steak with garlic powder as well. The salt begins to draw out a little bit of moisture which makes the steak sizzle when it hits the grill grate, sealing in the flavor. For accuracy in grilling, my husband sets the timer on his cell phone, which is quite handy. Grill the steak for 2 1/2 minutes on one side before flipping over for the remaining 2 1/2 minutes. The finished steak will be medium-rare. Now this is the most difficult part. Let it rest for about 5 minutes before serving. The juice will reabsorb back into the steak to give you that moist and meaty taste. 
Meanwhile, sauté pepper and onion slices in olive oil and seasonings in a large skillet on medium heat. Turn often to gradually brown the vegetables and avoid burning. They will be tender in about 20 minutes. Reduce heat to low simmer to keep warm. Before serving, surround the steak with peppers and onions. Finish with a pat of butter.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Chunky Clam Chowder! As the days grow shorter, take the damp chill off with a bowl of warm, creamy clam chowder. This made-from-scratch one-pot meal can be served now or later. The longer it sits, the more savory it becomes. Turn a simple classic into a filling favorite. 
CHUNKY CLAM CHOWDER 
Ingredients:

2 red potatoes, peeled and diced

2 tablespoons butter

1/2 teaspoon sea salt 

1/8 teaspoon cracked black pepper 

1/8 teaspoon red pepper flakes

2 tablespoons onion, diced

1 1/2 cups water

1 stalk celery, chopped

10-ounce can fancy whole baby clams in juice

1 cup heavy cream

1/2 cup instant potatoes 

1 teaspoon dill (optional)

Green onion snips
Instructions:

In a 2-quart pan over medium-high heat, combine water, potatoes, butter, salt, pepper, red pepper flakes, onion, and celery. Cook 20 minutes until tender. Add clams in juice and heavy cream. Bring to low boil, stirring occasionally, about 2 minutes. Slowly add instant potatoes and mix well. Reduce heat to low. Stir to thicken. Add dill to blend. Ladle into cups or bowls. Garnish with green onion snips.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Enchilada Cheesy Hash Browns! This time-honored recipe came to me from a friend who had perfected the art of authentic Mexican food. Monica shared some of her trade secrets on more than one occasion, but warned me about one unwary pitfall. “Once you perfect these traditional recipes, your husband may be less willing to take you out to dinner as often.” So be forewarned. Choose this perfect alternative for those nights you need a “meatless” meal. 
ENCHILADA CHEESY HASH BROWNS
Ingredients:

4 baked potatoes, peeled and shredded into hash browns*

2 tablespoons olive oil

1/8 teaspoon garlic powder

1/2 teaspoon sea salt

1/8 teaspoon cracked black pepper

3/4 cup Spanish onion, chopped

10 ounces baby peas

1 1/2 cups Monterey Jack cheese, shredded

1 1/2 cups extra-sharp cheddar cheese, shredded

10-count package corn tortillas

15 ounces tomatillo salsa

Green onions for garnish
Instructions:

Preheat oven to 350°. Spray a 9″x13″ glass baking dish with nonstick oil. Pour tomatillo salsa into a pie plate. Set aside. Place the corn tortillas on a plate nearby. In a large skillet, sauté onions in olive oil. Add hash brown potatoes, garlic powder, sea salt, and black pepper. Cook until slightly crisp. Add peas and mix well. To assemble enchiladas, dip one tortilla into tomatillo salsa on both sides. Transfer to a dinner plate and fill with potato mixture. Add 1 tablespoon of each cheese. Gently roll enchilada and place seam side down in glass dish. Repeat with remaining tortillas. Drizzle remaining salsa over all. Spread cheese over top of enchiladas. Cover with foil and bake for 45 minutes. Remove foil and brown cheese 5 minutes longer. Remove from oven. Garnish with green onion snips. Olé!
*If time is of the essence, you may substitute with frozen shredded hash browns.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: ZZ “Zucchini” Topped Potatoes! This recipe is going to be rock music to your ears. (If you pre-bake several potatoes on the weekend, it’ll eliminate one step during the week.) Create a fast meal by loading baked potatoes with yummy ingredients. Then top them off with sautéed zucchini, sweet onions, and hickory-smoked bacon. Can you feel the beat? Put this toe-tapping favorite in your recipe box…….and Rock On!

ZZ “ZUCCHINI” TOPPED POTATOES
Ingredients:

4 large potatoes, baked

Sea Salt

1 cup Greek yogurt

1/4 cup milk

2 green onions, snipped

1/4 cup butter

1 cup cheddar cheese, finely shredded

1 medium zucchini, chopped

1/2 sweet onion, chopped

2 tablespoons olive oil

4 slices bacon, fried crisp and crumbled
Instructions:

Preheat oven to 350°. Wash potatoes, pat dry. Pierce each one on top. Spray with nonstick oil and sprinkle sea salt on skins. Bake for one hour. When done, let cool for ten minutes. Meanwhile, cook bacon. Drain on paper towels and crumble. Sauté onions and zucchini in olive oil. Slice potatoes in half lengthwise. Remove the flesh into a bowl leaving enough skin to form a shell. Place skins in a shallow baking dish. To the flesh, add yogurt, milk, green onions, butter, and 1/3 cup cheddar cheese. Blend until creamy. Spoon the filling into the potato skins. Top with remaining cheese, sautéed zucchini, onions, and crumbled bacon. Bake 15 minutes longer or until cheese is melted and bubbly.
