Close your eyes and imagine me jumping for joy when I discovered my favorite source of natural honey infused with scotch bonnet and habanero peppers. Talk about fiery and sweet! The cheese actually acts as a coolant so no one goes running from the room with their mouth on fire. Trust me. Would I lead you down the orchard path to simply get stung?!?

HOT HONEY CHEESE SNACK

Ingredients:

8 ounces Brie cheese

2 ounces hot honey

Red pepper flakes, for garnish

Dried oregano, for garnish

Instructions:

Preheat oven to 350°. Unwrap Brie and place in a small ovenproof crock or baking dish. Bake for 15-20 minutes or until cheese is melted and gooey. Drizzle with hot honey, red pepper flakes, and dried oregano. Serve immediately with baguette slices and nut mixture. 

Pork Tenderloin Chimichanga

If you want to step up your game from an ordinary burrito, but really prefer the flavor of crispy fried foods, there are healthier ways to accomplish it without a deep fryer. Anyone who owns an air fryer will attest to that. I haven’t purchased this countertop convection yet, although my new kitchen does have the option on the built-in wall unit. The one time I tested it produced a charred burn mark on the wooden cutting board afterwards. The jury is still out if I’ll make another attempt at it. These chimichangas are baked in the oven and deliver golden brown crunchy results. Tried-and-True techniques go a long way in my book.

PORK TENDERLOIN CHIMICHANGA

Ingredients:

2 1/2 cups pork tenderloin, cooked and shredded

2/3 cup medium picante sauce, prepared

1/3 cup green onions

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon sea salt

8 flour tortillas

1/4 cup melted butter

1 cup Mexican blend cheeses, shredded

Lettuce, tomatoes, onions

Ranch dressing, prepared

Fresh lime wedges, for garnish

Instructions:

Preheat oven to 425°. Spray a 9”x13” baking dish with nonstick oil. Set aside. In a large skillet, combine shredded pork tenderloin, picante sauce, green onion, ground cumin, dried oregano, and sea salt. Simmer 5 minutes to heat through and allow most of the liquid to evaporate. Remove from heat. Brush both sides of a flour tortilla with melted butter. Spoon 1/3 cup meat mixture into the center; top with 2 tablespoons Mexican blend cheese. Fold 2 sides over filling; fold ends down. Place seam side down in prepared baking dish. Repeat with remaining ingredients. Bake 15 minutes or until crisp and golden brown. Serve lettuce fixings drizzled with ranch dressing. Garnish with lime wedges.

I’ll catch up with you later…….or you could simply substitute sun-dried tomatoes in this recipe. Just so you know, olives have heart-healthy fats. I’ve mentioned before how much I love bread. And in the World of Bread, there are so many options: whole wheat, multi-grain, sourdough, flax seed, rye, pumpernickel, focaccia, pretzel, and more. Focus today on the taste of Mediterranean culture where savory bread can be made without yeast. Talk about instant gratification for a weeknight treat. Don’t forget the bread dipping oil. It’s slurp-worthy.

KALAMATA OLIVE OREGANO LOAF

Ingredients:

2 cups flour

1 teaspoon baking soda

1/2 teaspoon sea salt

1 cup buttermilk

2 tablespoons butter, melted

2 egg whites, room temperature

1/4 cup Kalamata olive blend, pitted and chopped

1 teaspoon dried oregano

Instructions:

Preheat oven to 350°. Spray a loaf pan with nonstick oil. Line with parchment paper. Set aside. In a large bowl, combine flour, baking soda, and sea salt. Make a well in the center. In a separate bowl, whisk together buttermilk, melted butter, and egg whites. Add liquid mixture to the flour mixture, stirring just until moist. Fold in chopped olives and dried oregano. Spread batter into the prepared loaf pan. Bake for 45 minutes or until a wooden pick inserted in the center comes out clean. Cool 10 minutes on a wire rack. Remove loaf from pan. Serve slightly warm with seasoned olive oil.

I’ve discovered baking a frozen baguette actually improves the finished product. The outer crust turns crispy, leaving the center to be soft and chewy. Now we’re talking bakery fresh results. For the perfect balance in a tapas party, think warm cheese, cold meat, savory veggies, and crusty bread.

TAPAS TEMPTATIONS

Ingredients:

7-ounce wheel of Brie cheese

1 tablespoon Tupelo honey

1 tablespoon blueberry jam

1/4 cup fresh blackberries

6-ounce demi baguette, frozen

2 tablespoons sea salt butter

1 teaspoon dried oregano

2 Roma tomatoes, chopped

1/4 cup mozzarella cheese, finely shredded

2 tablespoons olive oil

1/8 teaspoon basil

1/8 teaspoon marjoram

1/8 teaspoon garlic powder

2.5 ounces mild Genoa salami, sliced

Fresh sprigs of thyme, for garnish

Instructions:

Preheat oven to 350°. Cut the rind off the top of the wheel of Brie. Place cheese wheel in a baking dish. Drizzle Tupelo honey over the top. Add the blueberry jam. Place fresh blackberries over jam. Bake for 10-12 minutes, or until the cheese has completely melted. Remove from oven. Place on a serving tray. Increase oven temperature to 400°. Place the frozen demi baguette on a baking sheet lined with aluminum foil. Bake 10 minutes. Remove from oven and slice into servings. Spread sea salt butter over the slices; top with dried oregano. Arrange on a plate. For the tomato relish, combine chopped tomatoes and mozzarella cheese. Drizzle with olive oil; sprinkle with basil, marjoram, and garlic powder. Gently mix to combine ingredients. Transfer to a serving dish. Arrange Genoa salami on another plate. Garnish tapas platter with fresh thyme. Serve.

Within 15 minutes, I had several frantic texts asking me to clarify the type of tomatoes I needed him to buy. Perhaps you can understand his quandary. Years ago, a shopper had their choice of garden tomatoes or cherry tomatoes. Nowadays, you practically need an Old Farmer’s Almanac to clarify all the different varieties like Cherry, Grape, Green, Roma, Beefsteak, Campari, Cocktail, San Marzano, and Vine-Ripened tomatoes. Sheesh! All I really wanted were fresh tomatoes.

TOMATO HERB CHEESE NAAN

Ingredients:

1 prepared naan, store bought

1 tablespoon olive oil

1 tablespoon cornmeal

6-8 cocktail tomatoes, sliced

1 teaspoon kosher salt

8 ounces fresh mozzarella, sliced

1/4 teaspoon garlic powder

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

Fresh oregano leaves, for garnish

Instructions:

Preheat oven 400°. Spray a baking sheet with nonstick oil. Set aside. Brush the bottom of the naan. Sprinkle with cornmeal. Transfer naan to the baking sheet, bottom side down. Bake 5 minutes. Remove pan and set aside. Meanwhile, to prepare tomatoes, arrange sliced cocktail tomatoes on a cutting board; sprinkle with kosher sea salt. Allow to rest for 5 minutes. Arrange sliced fresh mozzarella over naan. Layer with cocktail tomatoes. Sprinkle with garlic powder, oregano, basil, and marjoram. Bake 15 minutes longer, or until cheese is melted and golden. Cool slightly, cut into portions. Garnish with fresh oregano leaves. Serve warm.

Take a walk on the wild side by turning dumpling-style pasta dough into a flavorful, tart, and cheesy appetizer. Panko breadcrumbs provide a crunchier coating that taste more like a fried shell when baked. This is due to the fact that panko breadcrumbs are made from crustless bread, thereby making them have an airier texture. The results are amazing.

TOASTED CHEESE RAVIOLI

Ingredients:

8-ounces fresh cheese ravioli, found in the refrigerated section of the grocery store

1 egg

1 tablespoon milk

1/2 cup plain panko breadcrumbs

2 tablespoons grated parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon kosher salt

Marinara sauce, for dipping

Instructions:

Preheat oven to 425°. Spray a wire rack with nonstick oil. Place rack on a baking sheet. Set aside. In a shallow dish, whisk together egg and milk until fully incorporated. In another shallow dish, combine panko breadcrumbs, grated parmesan cheese, Italian seasoning, garlic powder, and kosher salt. Mix well. Working one at a time, dip ravioli in egg mixture. Allow excess to drip off before generously coating both sides with breadcrumb mixture. Place ravioli on prepared wired rack. Leave spaces between ravioli to allow even browning. Spray tops of ravioli with nonstick oil. Bake 10 minutes until ravioli is golden brown. Turn ravioli over and bake 10 minutes longer. Serve immediately with marinara sauce for dipping.

Diablo Verde Enchiladas

In reference to food, it translates to spicy or sometimes fiery ingredients that crank things up a level. In this case I used jalapeño peppers, but you are certainly welcome to increase the heat by substituting serrano peppers instead. Since I want to keep my husband around a little longer, I played it safe. You choose.

DIABLO VERDE ENCHILADAS

Ingredients:

2 cups precooked turkey, shredded

1/2 teaspoon chili-lime seasoning

1/2 teaspoon dried oregano

1/8 teaspoon garlic powder

12 ounces queso blanco dip

10 flour tortillas

3 tablespoons butter

3 tablespoons flour

2 cups chicken broth

1 cup Greek yogurt

2 tablespoons pickled jalapeños, diced

1/4 cup taco sauce

1 cup mozzarella cheese, shredded

Salsa verde, to taste

Fresh cilantro, for garnish

Green onion snips, for garnish

Instructions:

Preheat the oven to 350°. Spray a 9”x13” pan with nonstick oil. Set aside. In a mixing bowl, combine shredded turkey, chili-lime seasoning, dried oregano, garlic powder, and queso blanco dip. Mix well. Divide the mixture between the 10 flour tortillas, spreading the meat across the center of each tortilla. Roll them up, placing each seam-side-down in the prepared baking dish. In a saucepan over medium heat, warm butter. Do not scorch. Whisk in flour; cook one minute to thicken, stirring constantly. Add chicken broth; whisk until smooth. Add Greek yogurt and diced jalapeños. Do not allow mixture to boil. Reduce heat if necessary. Remove sauce from heat. Carefully pour over enchiladas. Spoon taco sauce over all. Top with shredded mozzarella cheese. Bake 20-25 minutes. Remove from oven when cheese is slightly browned and bubbly. Garnish with salsa verde, fresh cilantro, and green onion snips to taste. Serve immediately.

Because today, this Paleo breakfast may leave you feeling like a superhero, “able to leap tall buildings in a single bound”. It not only gives you a nutrient-rich vegetable, it also provides protein in the animal form of bacon and eggs! That fact alone ups your intake of vitamins and minerals without leaving you feeling meh and bloated. Digestion improves as energy levels rise, which leaves me asking one final question: Which superhero are you?

EGG & SWEET POTATO BOATS

Ingredients:

1 large sweet potato, halved, washed and patted dry

1/2 teaspoon olive oil

1/4 teaspoon sea salt

2 large eggs

2 strips bacon, cooked and crumbled

Sriracha, to taste

Fresh oregano, for garnish

Instructions:

Preheat oven to 350°. Once the sweet potatoes have been washed and patted dry, rub skins with olive oil, sprinkle with sea salt, and place cut side down in a shallow pan that has been sprayed with nonstick oil. Bake for about one hour, or until tender. Remove sweet potatoes from oven. With tongs, flip sweet potatoes over so skin side is down. Using a spoon, carefully scoop out the center to form a well for one egg. Crack an egg into each sweet potato boat. Return pan to oven; bake 20 minutes, or until eggs are set. Remove from oven. Crumble bacon over top. Drizzle with sriracha sauce. Garnish with fresh oregano leaves. Serve warm.

I like the idea of something different and can often imagine the skilled cheesemakers concocting special blends with creamy textures, dried herbs, buttery hints, and natural aging. This cheese in particular has the qualities of cheddar and gruyère giving it a complex buttery nut flavor. Is it any wonder the earthy garden tomatoes pair so well with it. Some might say it’s on its way to becoming a time-honored tradition.

HEIRLOOM TOMATO CHEESE TART

Ingredients:

2 heirloom tomatoes, sliced

1 cup cherry tomatoes, halved

1 tablespoon kosher salt

I sheet frozen puff pastry, thawed

1/2 pound gourmet pesto cheese, grated

2 tablespoons fresh oregano, chopped

Olive oil, for drizzling

Instructions:

Arrange tomatoes in a single layer on a baking sheet lined with paper towels. Sprinkle with kosher salt. Allow to rest for 20 minutes to release juices. Pat dry. Preheat oven to 400°. On a lightly floured surface, roll out puff pastry into a 10”x13” rectangle. Transfer dough to a parchment paper-lined baking sheet. Using a paring knife, lightly trace a shallow border one inch from the edge. Do not cut through. Prick the inner rectangle all over with a fork. Refrigerate 15 minutes. Bake until lightly golden, 12-15 minutes. Remove from oven. Scatter cheese over dough, stopping at the perforated edge. Arrange large and small tomatoes over top. Scatter chopped oregano over tomatoes. Drizzle with olive oil. Bake 20-30 minutes. Serve immediately.
