Palatable Possibilities

Many areas of the country offer walking tours to get acquainted with history as well as attractions, restaurants, and shopping. Culinary tours have become a popular thing, too. Think about it. Cities have always been multicultural. People move in and bring with them family customs, lifestyle traditions, and amazing comfort food. Before long festivals celebrating ethic heritage are long-established and popular. People share recipes, our sense of taste is enhanced, and cravings set in with mental appreciation. Perhaps this is why some of us eat to live and live to eat. Amirite? So many foods and ingredients can be substituted to appeal to each lifestyle and palate. It’s all about the possibilities, ideas, and balance. I encourage you to make substitutions in the recipes I offer without sacrificing taste. I do it all the time; you can, too.

Ever wonder why restaurants feature photos on the menu? It’s pretty simple, actually. People respond to the color of food. Our sense of sight connects to our sense of taste in a way that creates an expectation causing a positive physical response. It’s no secret our taste buds are ruled by the appearance of food before one morsel ever reaches our mouth. Think about it. Cravings conjure up memories of satisfaction. Mealtime then becomes an emotional all-star event tapping into our senses. Dining Outside the Home: Kickshaws Food Truck in Lawai, Kauai. Here’s something you don’t see everyday. It’s a gastronomic kitchen on wheels steered by owner, Seth Peterson. Like a mad scientist at home in a laboratory, Seth produces extraordinary food combinations paired with unusual techniques. The results are strangely delicious. The top-seller, hands down, speaks for itself. 100% Awesome Burger is made with 80% fresh ground chuck steak and 20% ground bacon. Then it’s topped with crispy bacon, a pineapple-black pepper-onion marmalade, cheddar cheese, fresh arugula, and garden tomato. Are you getting the picture? The finishing touch is a torta roll slathered with mayonnaise. Definitely a two-handed burger! One night recently, I ordered it while enjoying a high-quality craft brew at the Kauai Beer Company. Try not to stare.
