Take a trip down Memory Lane with this hip 1970s all-star party staple. “I called it!”, shouted my best friend when asked to bring an appetizer to share. Maybe it was the presentation of carrying an artisan bread bowl into the room, or perhaps it was the “healthy” alternative to potato chips and onion dip, or it could have been the standing ovation it got from everyone who tasted it. Think about it….how fun is that to tear off a piece of crusty bread and slather it in creamy spinach mingled with a spicy crunch of water chestnuts. “I called it!”

XENIAL SPINACH DIP

Ingredients:

1 pound artisan bread bowl

1 pint Greek yogurt

3 ounces Neufchâtel cheese

10 ounces mayonnaise 

8 ounce can of water chestnuts, drained and chopped

1 package Swiss vegetable dry soup mix

10 ounce package of frozen spinach, thawed, drained, and chopped

Instructions:

In a medium bowl, mix Greek yogurt, Neufchâtel cheese, and mayonnaise. Chill one hour. Add water chestnuts, package of Swiss vegetable dry soup mix, and uncooked spinach. Mix well. Chill one hour longer. Hollow out center of bread bowl. Fill with spinach dip. Serve with raw vegetables.

These miniature cheesecakes are super-easy and can be whipped up in a few minutes first thing in the morning. They refrigerate while you’re at work or the gym, so no worries there. Top with fresh fruit, seedless jam, chocolate bits, or candied ginger. Dust with powdered sugar for a professional finish. QUICK-SET PARTY CHEESECAKES

Ingredients:

24 mini cupcake liners

24 Nilla wafers

2 8-ounce packages Neufchâtel cheese

3/4 cup sugar

2 eggs

1 tablespoon lemon juice

1 teaspoon vanilla

Fresh Fruit, Chocolate Chips, or Candied Ginger

Instructions:

Preheat oven to 350°. Beat Neufchâtel cheese and sugar. Add eggs, beating well. Fold in lemon juice and vanilla extract. Beat until light and fluffy. Place cupcake liners in muffin tin. Put 1 Nilla wafer in each. Fill with 1 heaping tablespoon of cheese mixture. Bake 15 minutes. Cool. Refrigerate 3 hours. Garnish with assorted toppings.

Eating My Way Through the Holidays! Special Edition: Cross-Cross Party Loaf! Every buffet table should offer this yummy garlic cheese bread as a grande centerpiece. It commands attention by its savory aroma, golden crust, and strings of ooey-gooey cheese. Oh. My. Gosh. Choose any artisan bread: sesame, sourdough, rye, baguette, or round. No matter how many times you make it, you’ll be the hit of every gathering. Bread-lovers unite!

CRISS-CROSS PARTY LOAF

Ingredients:

1 loaf artisan bread

6 ounces Havarti cheese, sliced

1/2 cup olive oil

1/4 teaspoon garlic powder 

1/2 teaspoon sea salt

1/8 teaspoon oregano 

1/8 teaspoon marjoram 

1/8 teaspoon basil

1-2 tablespoons butter, melted

1/2 teaspoon dill weed

Instructions:

Preheat oven to 350°. Line a baking sheet with foil. Place the artisan bread on the baking sheet. Cut the bread diagonally in a crisscross design, stopping near the base without cutting through. Combine olive oil, garlic powder, sea salt, oregano, marjoram, and basil. Mix well. Cut each slice of Harvarti cheese into strips. Separate each segment and brush with olive oil mixture. Place a strip of cheese in each crack. Repeat until the bread is saturated. Wrap bread in foil. Bake for 15 minutes until cheese is melted. Unwrap foil. Drizzle with melted butter; sprinkle with dill weed.  Bake 5 minutes longer. Serve warm. Guests may pull apart crusty segments as needed.

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Xalapa Party Punch! Before you read further, I want you to know this is an adult beverage and not intended for those under the age of 21. It does contain alcohol, so drink responsibly. Big-batch cocktails, or party punch, are nice to have on hand for last minute gatherings or friends who drop by unannounced. I keep a pitcher in the refrigerator for just that reason. If you do the same, choose a container that has an airtight lid. There’s nothing worse than sipping on an icy cold cocktail that smells like garlic or grilled leftovers. With the subtle fruity notes of apple, orange, cherry, and apricot, Xalapa Party Punch will get everyone talking. Carry On.

XALAPA PARTY PUNCH

Ingredients:

1 cup hot black tea

1/2 cup Tupelo honey

1 orange rind, grated

2 cups dark rum

2 cups apple brandy

2 cups dry red wine

Crushed Ice

Basil or Mint, for garnish

Instructions:

In a saucepan over low heat, combine hot black tea, Tupelo honey, and grated orange rind. Heat for 5 minutes. Stir occasionally. Remove from heat; set aside to cool. Add dark rum, apple brandy, and dry red wine. Refrigerate until ready to serve. Pour into glasses filled with crushed ice. Garnish with fresh basil or mint.

It’s simple, delicious, takes minutes to prepare, and makes life easy for the host or hostess. Whether you’re making pizza from scratch or ordering it for delivery, this is a great appetizer to keep things festive. Just remember to make enough to share. You won’t regret it.

MEATBALL LOLLIPOPS

Ingredients:

10 precooked frozen Italian meatballs, thawed

15 ounces of prepared marina sauce

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

1/8 teaspoon garlic powder

1 cup mozzarella cheese, shredded

10 party picks

Instructions:

Cook meatballs in a microwave-safe dish, with lid, according to package directions. Drain. Add prepared marina sauce. Cook on 40% power in microwave-safe covered dish for 10 minutes. Pierce each meatball with a party pick and transfer to a platter, or 5 per serving. Spoon marinara sauce over meatballs. Sprinkle with oregano, basil, marjoram, and garlic powder. Divide the shredded mozzarella cheese between portions. Serve immediately.

Neufchâtel Nibblets

What’s Cooking in Gail’s Kitchen? Table Food: Neufchâtel Nibblets! Instead of serving the traditional large cheese ball at your next group gathering, think about individual portions. As a centerpiece on a buffet table, a cheeseball makes a great focal point until someone digs in. Then it immediately loses its form. On the other hand, nibblets remain appealing. Finger food is always a good idea, in my opinion. Not only are they fun to eat, they make things easier for walking around the edge of a party. Grab a few crackers and nibble away.

NEUFCHÂTEL NIBBLETS

Ingredients:

8 tablespoons Neufchâtel cheese, softened

4 tablespoons butter, softened

1/3 cup Swiss cheese, shredded

1/3 cup cheddar cheese, shredded

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

1/4 teaspoon sea salt

1/2 teaspoon smoked paprika

2 tablespoons fresh chives, chopped

1/4 cup pecans, finely chopped

Carrot sticks, cut 3 inches long

Celery sticks, cut 3 inches long

Instructions:

Line a baking sheet with wax paper. In a mixing bowl combine Neufchâtel cheese, softened butter, Swiss cheese, cheddar cheese, onion powder, garlic powder, sea salt, and smoked paprika. Mix well. Using a cookie scoop, form mixture into balls, transfer to prepared baking sheet, and refrigerate one hour or until balls are firm. In a shallow dish, combine fresh chives and chopped pecans. Gently press chilled cheeseballs in nut mixture. Insert vegetable stick into each cheeseball. Arrange a platter and serve.
