Linguine Chicken Salami

What’s Cooking in Gail’s Kitchen? Simple Sensations: Linguine Chicken Salami! Sometimes it’s just not possible for me to get to a restaurant for one of my favorite dishes. That’s when I prepare the dish at home. A good friend of mine shared tips on putting together a great Italian marinara sauce. It’s all about taste buds and choosing the quality of herbs.  If you don’t have the extra time, simply choose a store-bought alternative until you can perfect the right combination for you. 

LINGUINE CHICKEN SALAMI

Ingredients:

6-8 chicken fillets 

2 tablespoons lemon olive oil

1/4 teaspoon cracked black pepper 

1/4 teaspoon seasoned salt

1/8 teaspoon garlic powder

1/2 Vidalia onion, sliced

28-ounce can peeled tomatoes in basil sauce

1/2 teaspoon oregano

1/2 teaspoon marjoram 

1/2 teaspoon basil

2 cloves garlic, crushed

1 teaspoon sugar

1/8 teaspoon cracked black pepper 

1/2 teaspoon sea salt

1/4 pound Italian salami*

6-ounces of spinach linguini 

6-ounces of angel hair pasta

1 cup mozzarella cheese, shredded 

1/2 cup Parmesan cheese, grated

*Sliced pepperoni can be substituted for the Italian salami. 

Instructions:

Preheat oven to 350°. Pour lemon olive oil into a shallow skillet over medium high heat.  Add chicken fillets seasoned with salt, pepper, and garlic powder. Lower heat to medium. Sauté chicken until browned, about three minutes per side. Add sliced onions, cover, and cook on low setting until liquid is absorbed, about 5 minutes longer. Set aside. 

For sauce combine cut-up tomatoes with sauce, oregano, marjoram, basil, garlic cloves, sugar, sea salt, and cracked pepper. (At this time, I add the cooked onions to the sauce.)

Spoon 1/3 of sauce into a casserole dish. In single layer, arrange chicken fillets. Slice salami into strips, using kitchen shears, covering chicken. Pour remaining sauce over all. Sprinkle with mozzarella cheese. Cover and bake for 20 minutes. Remove lid and bake 10 minutes longer until cheese turns golden brown. 

Cook pasta according to package directions. Drain. Spoon pasta into single servings. Carefully place one fillet over pasta, making sure to add extra sauce. Sprinkle with grated Parmesan cheese and serve. 

Italian Pasta Mediterranean

What’s Cooking in Gail’s Kitchen?  Italian Pasta Mediterranean!  This exotic colorful pasta dish will have you rolling your eyes in satisfaction over the hearty gourmet intensity. Its blend of gastronomic flavor tempts the taste buds to have a second helping of this culinary delight. 

ITALIAN PASTA MEDITERRANEAN 

Ingredients:

8 ounces penne pasta

Salt to taste

1/2 pound Italian salami, thinly sliced

1/2 pound asparagus spears

1/2 cup diced sun-dried tomatoes 

3 tablespoons olive oil

1 teaspoon oregano

1 teaspoon basil

1 teaspoon marjoram 

1/8 teaspoon garlic powder

1/2 teaspoon crushed red pepper flakes 

1/4 cup pine nuts, toasted

Parsley Sprig for garnish 

Instructions:

Bring a large pot of water to a boil. Add salt. Add penne pasta and cook until al dente. Drain the pasta and transfer it to a large pasta bowl. 

Next to steam asparagus, place water in the bottom half of a steamer pan set. Bring to boil. Trim ends off the asparagus. Cut into quarters. Place in top half of steamer pan set. Steam for 5 minutes until tender. 

For dressing, mix olive oil, oregano, basil, marjoram, garlic powder, and red pepper flakes in small bowl. 

Combine penne pasta, asparagus pieces, diced sun-dried tomatoes, and salami rounds. Pour olive oil dressing over all. Gently mix. Add pine nuts. Garnish with fresh parsley sprig. Serve warm with garlic toast. This is an excellent side dish to Chicken Cacciatore. 

Mac ‘n Cheese Lobster-Style

What’s Cooking in Gail’s Kitchen? Fabulous Fixings: Mac ‘n Cheese Lobster-Style! I know this is a silly question, but do you ever have leftover lobster? You might want to hold back a tail the next time you serve it at home. Here’s why. Your family will thank you. Cut it into chunks, wrap it in foil, and hide it in the back of the fridge. Trust me, no one will look there. Just don’t forget about it. That would be a huge mistake. Lobster has a way of elevating an ordinary dish like macaroni and cheese. Mention it and watch people’s eyes practically glaze over. The creaminess of the cheeses actually spotlight the sweet briny flavor and firmness of the lobster meat. Once you pull everything together, expect the kitchen to be noticeably quiet while everyone is eating. Mission accomplished. 

MAC ‘N CHEESE LOBSTER-STYLE

Ingredients:

7 ounces elbow macaroni 

1/4 cup butter

1/2 teaspoon seasoned salt

1/4 cup flour

2 cups milk

1 cup sharp cheddar cheese, shredded

1 cup American cheese, shredded

1 cup cooked lobster, cut into chunks

Chives, for garnish

Instructions:

Cook macaroni according to package directions, drain. Set aside. In a sauté pan, warm butter over medium heat. Sprinkle with seasoned salt. Stir in the flour to blend. Gradually whisk in the milk. Bring to a boil, stirring often. Cook 1-2 minutes, or until thickened. Add the shredded cheeses. Stir with a wooden spoon until melted. Add cooked macaroni and 3/4 cup of the lobster chunks. Stir gently to coat and heat through. Divide into bowls. Top with remaining lobster chunks. Garnish with cut chives. Serve immediately. 

Three Bean Pasta Salad

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Three Bean Pasta Salad! Yippee for meal prep. This tasty salad is one you can make ahead on the weekend for a delicious lunch at work. The dressing gives it gourmet flavor similar to the corner café, without the cost of an Uber. Add a few gluten-free pretzels or pita crackers to satisfy that munchtime craving. The slightly sharp buttery flavor of provolone cheese works well with the pasta. I know what you’re thinking…..would a bottle of wine be appropriate? Probably. Just not at work. 

THREE BEAN PASTA SALAD

Ingredients: 

4 ounces uncooked shell pasta

15-ounce three bean salad, drained and chilled

1 tablespoon pimento, chopped

4 ounces provolone cheese, cubed

2 scallions, white part only, thinly sliced

3 tablespoons garlic wine vinegar 

1 tablespoon Dijon mustard

1 tablespoon natural honey

1/8 teaspoon cayenne pepper 

1/4 cup olive oil 

Instructions:

Cook shell pasta according to package directions. Rinse in cool water; drain well. Combine shell pasta, three bean mixture, chopped pimento, and provolone cheese cubes. Gently toss. Set aside. In a small bowl, combine scallions and garlic wine vinegar. Allow to rest for 5 minutes. Add Dijon mustard, natural honey, and cayenne pepper. Mix well. Gradually whisk in the olive oil until well combined. Pour dressing over pasta salad and serve slightly chilled. 

Red Pepper Bruschetta Pasta

What’s Cooking in Gail’s Kitchen? Food With Soul: Red Pepper Bruschetta Pasta! I truly enjoy perusing Italian gourmet markets. There’s something charming and romantic about choosing a jar of private-label olive oil, flavored balsamic vinegar, house roasted red pepper bruschetta, or four-fruit jam. An extensive collection of imported products can send my mind spinning as I begin to salivate with serving ideas. There are often aromas of freshly baked bread, smoked and cured meats, unique deli offerings, an antipasto bar, pizza nook, and fresh burrata station. San Marzano tomatoes always seem to make it into my cart as well as olive tapenades and basil pesto or marinated artichoke hearts. Before you leave, don’t forget a nice bottle of Chianti.

RED PEPPER BRUSCHETTA PASTA

Ingredients:

8 ounces spaghetti pasta

1 tablespoon kosher salt

1/3-1/2 cup red pepper bruschetta, prepared

Basil leaves, for garnish

Instructions:

Bring a large pot of water to boil. Cook pasta in salted water for 8-10 minutes or until al dente, stirring occasionally. Drain pasta in a colander. Transfer cooked pasta back to the pot. Add prepared red pepper bruschetta mixture. Gently toss; heat through. Using tongs, place spaghetti clusters into a serving bowl. Garnish with fresh basil leaves. Serve immediately.

Hard Salami Corkscrew Pasta

What’s Cooking in Gail’s Kitchen? Food With Soul: Hard Salami Corkscrew Pasta! Tricolor pasta always makes me feel like a special occasion. The burst of natural colors in spinach and tomato keep the dish from becoming humdrum, in my opinion. By adding veggies, cheese, or pickles, the salad becomes a meal-in-a-bowl. Mix things up by substituting artichokes, hard-boiled eggs, or cucumbers. It’s really up to your personal preference and cravings of the moment. Any leftovers can be stored in the refrigerator for up to five days. As if. (smile)

HARD SALAMI CORKSCREW PASTA

Ingredients for Pasta Salad:

1 1/2 cups rainbow rotini corkscrew pasta, uncooked

4 ounces hard salami, cut into strips

1/2 pint grape tomatoes, halved

1/4 cup green olives, halved

1/4 cup red onion, finely chopped

1/2 sweet bell pepper, chopped

Ingredients for Dressing:

3 tablespoons garlic wine vinegar

1/4 cup olive oil

1 tablespoon sugar

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/2 teaspoon oregano

1/2 teaspoon basil

1/2 teaspoon marjoram

1/4 teaspoon garlic powder

Instructions:

Cook pasta according to package directions. Drain. Rinse under cold water. In a serving bowl, combine cooked pasta, hard salami, grape tomatoes, green olives, red onion, and bell pepper. Gently toss. In a small bowl, whisk together garlic wine vinegar, olive oil, sugar, sea salt, black pepper, oregano, basil, marjoram, and garlic powder. Mix well. Pour the dressing over the pasta. Toss to coat. Refrigerate for one hour. Serve.

Hawaiian Mac Salad

What’s Cooking in Gail’s Kitchen? Bright Ideas: Hawaiian Mac Salad! Some things get a reputation for being “island food”. This is one of them. It was created out of economic necessity, just as SPAM® became a household staple. Both survived due to their lack of being perishable in a tropical climate as well as being tasty and affordable. The flavor of this Mac salad is so unique, it continues to remain a constant plate lunch for workers, surfers, schools, and just about anyone. Check out fish markets, food trucks, roadside stands, diners, and grocery store delis. Hawaiian Mac Salad pairs beautifully with fresh fish and a scoop of white rice. Now you can make it yourself without the cost of a plane ticket to the Hawaiian Islands.

HAWAIIAN MAC SALAD

Ingredients:

8 ounces macaroni pasta

1 cup mayonnaise

1/4 cup milk

1 tablespoon apple cider vinegar

1 teaspoon sugar

1 teaspoon sea salt

1/2 teaspoon black pepper

1 stalk celery, diced

1 large carrot, grated

1/4 cup sweet onion, diced

Green onion snips, for garnish

Instructions:

Boil the macaroni in lightly salted water. Cook al dente; one minute less than package directions. Drain the macaroni and rinse with cold water. Set aside. For the sauce, in a large bowl combine the mayonnaise, milk, apple cider vinegar, sugar, sea salt, and black pepper. Mix well. Add the cooked macaroni, diced celery, grated carrots, and diced onions. Gently stir to combine. Cover and refrigerate for at least 4 hours. Toss before serving. Garnish with green onion snips.

Fabulous Seafood Lasagna

What’s Cooking in Gail’s Kitchen? Bright Ideas: Fabulous Seafood Lasagna! Because I really like seafood, and for the first time in my life I have access to it, I decided to think “outside the box” for a new dinner idea. Combining pasta and seafood seemed like a nice transition. To keep the cost down, I did end up substituting imitation crabmeat, but of course you may use the real deal, especially if you have connections with a fisherman. I’m working on that.

FABULOUS SEAFOOD LASAGNA

Ingredients:

9 uncooked lasagna noodles

1/4 cup butter

1/2 cup sweet onion, chopped

2 cloves garlic, minced

1/4 cup flour

2 cups light cream

1 cup chicken broth

1/3 cup dry sherry

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 egg, slightly beaten

1/2 cup parmesan cheese, grated

15-ounce container ricotta cheese

1 tablespoon dried parsley

16 ounces imitation crabmeat, salad-style, drained, and chopped

8 ounces precooked salad shrimp, drained

3 cups mozzarella cheese, shredded

Freshly grated parmesan cheese, for garnish

Instructions:

Preheat oven to 350°. Spray a 9”x13” glass baking dish with nonstick oil. Cook lasagna noodles as directed on package. Set aside. In a 4-quart pan, warm butter over medium heat. Add chopped onion and minced garlic. Cook 3 minutes, stirring occasionally, until onions are tender. Gradually add flour, stirring constantly. Cook and stir until bubbly. Slowly stir in the light cream, chicken broth, dry sherry, sea salt, and black pepper. Heat to boiling, stirring constantly. Boil and stir for one minute longer. Do not scorch. Remove white sauce from heat and set aside. In a bowl, combine beaten egg, parmesan cheese, ricotta cheese, and dried parsley. Mix well; set aside. Drain lasagna noodles. Spread 3/4 cup white sauce in the bottom of the baking dish. Top with 3 lasagna noodles. Layer half the crabmeat and half the shrimp over the noodles. Add another 3/4 cup white sauce over seafood. Sprinkle one cup mozzarella cheese on top. Next, add a layer of 3 lasagna noodles. Spread ricotta mixture over noodles. Add 3/4 cup white sauce. Sprinkle with one cup mozzarella cheese; layer with 3 lasagna noodles. Spread the remaining seafood and sauce over all. Sprinkle with the last cup of mozzarella cheese. Bake 40-45 minutes, or until cheese is light golden brown. Let stand 15 minutes before cutting. Sprinkle with freshly grated parmesan cheese. Serve immediately.

Orecchiette Pea Asparagus

What’s Cooking in Gail’s Kitchen? Time To Eat: Orecchiette Pea Asparagus! Are you in a pasta rut? Do you always turn to spaghetti, rotini, ziti, or lasagna? Think outside the box with orecchiette pasta to add elegance and variety to ordinary meal-planning. It’s been nicknamed “little ears” for its unusual swirly shape. See how amusing that is already? Because the thicker pasta pairs better with earthy vegetables, its texture holds sauces and cheeses remarkably well. Turn mealtime into downtime any day of the week.

ORECCHIETTE PEA ASPARAGUS

Ingredients:

4 ounces orecchiette pasta

1 tablespoon olive oil

1/4 pound fresh asparagus, trimmed and cut into bite-sized pieces

1/4 cup baby peas, fresh or frozen

1 tablespoon lemon juice

1/4 cup Parmesan cheese, freshly grated

Instructions:

Bring a large pot of water to boiling. Add orecchiette pasta and cook according to package directions. In a large skillet, add olive oil. Sauté asparagus and baby peas until bright green, slightly cooked, and still crisp. Remove skillet from heat. Once the pasta is al dente, reserve 1/4 cup pasta water and drain the rest. Add the pasta to the skillet with the asparagus and peas. Add lemon juice and parmesan cheese. Return the skillet to the stove and heat on low setting. Stir to combine everything, adding pasta water to thin, as needed. Serve immediately.
