SWEET POTATO WEDGES

Ingredients:

2 sweet potatoes, skin on and cut into wedges

1 1/2 tablespoons olive oil

1/2 teaspoon chili powder

1/2 teaspoon coarse sea salt

1/8 teaspoon black pepper

2 teaspoons agave nectar

Green onion, snipped, for garnish

Instructions:

In a microwave-safe bowl, combine sweet potato wedges and olive oil. Toss to coat. Cover. Microwave on HIGH for 6 minutes or until tender when pierced with a knife, tossing and replacing lid after 3 minutes. Allow to cool 10 minutes. Add chili powder, coarse sea salt, and black pepper. Toss to coat. Preheat grill pan over medium-high heat. Brush with olive oil. Place sweet potato wedges on oiled grill pan. Cook 3 minutes per side until charred and tender. Remove from heat. Drizzle with agave nectar. Garnish with green onion snips. Serve immediately.

Nowadays the courteous thing to do is omit the crust in case someone needs a low-carb gluten-free option. You can always serve the frittata with a crusty artisan piece of buttered toast for those who like bread with their meal. Using light cream will result in more of a creamy egg custard, but can certainly be omitted. Because I had already packed my iron skillet, I had to make due with a baking dish. Baking the frittata in an iron skillet gives the edges a “fried” appearance, which always gets the mouth drooling.

NEW DAY RED PEPPER FRITTATA

Ingredients:

8 large eggs

1/4 cup light cream

1/2 teaspoon seasoned salt

1/4 teaspoon black pepper

1/3 cup fresh basil, minced

1/2 cup mozzarella cheese, shredded

6 green onions, chopped

1 cup sweet red peppers, chopped

2 green onions, for garnish

Instructions:

Preheat oven to 350°. Spray a baking dish with nonstick oil. Set aside. In a mixing bowl, whisk together eggs, light cream, seasoned salt, and black pepper. Fold in fresh basil, mozzarella cheese, chopped green onions, and sweet red peppers. Mix well. Pour mixture into prepared dish. Too with 2 green onions. Bake, uncovered, for 25 minutes or until eggs are completely set. Remove from oven. Let stand 5 minutes. Serve warm.

If you’re preparing it at home in a state that is landlocked, a lot of resources are at your fingertips. Did you know you can order it from Maine and have it delivered in 24 hours? That’s golden. There are numerous websites that offer delicious lobster choices to conveniently keep on hand in the freezer. I buy lobster meat and lobster tails only. Forget the labor-intensive task of twisting the head, legs, and claws apart from the tail. Then again, I’ve been called “high maintenance”. To each his own.

ROLLIN’ IN LOBSTAH

Ingredients:

4 cups cooked lobster meat, cut into chunks

1/4 cup mayonnaise

1 1/2 tablespoons lemon juice

1/8 teaspoon sea salt

1/8 teaspoon white pepper

4 split-top brioche hot dog buns

4 tablespoons butter, melted and divided

1 tablespoon chives, thinly sliced for garnish

Fresh lemon wedges, for garnish

Instructions:

In a bowl, combine lobster meat, mayonnaise, lemon juice, sea salt, and black pepper. Gently toss to coat. Spread butter on the outer sides of each bun. Place the buns on a griddle over medium heat. Cook 2-3 minutes per side until golden brown. Divide the lobster mixture among the buns. Garnish with fresh chives and lemon wedges. Serve immediately with remaining butter.

Whether you have leftover mashed potatoes from another meal or purchase your favorite prepared brand at the grocery store, this recipe offers a flavorful experience that is unforgettable. Is it the gooey combination of cheeses? The crisp potato cake with the fluffy center? Or perhaps it’s the zing of spice that piques the taste buds. For me it’s all about nostalgia. My mother made them for supper when I was a child.

MASHED POTATO FRITTERS

Ingredients:

2 cups mashed potatoes

1 tablespoon yellow onion, diced

1/4 cup cheddar cheese, grated

2 tablespoons parmesan cheese, grated

1 egg, whisked

2 tablespoons flour

2 tablespoons cornmeal

1/8 teaspoon garlic powder

1/8 teaspoon cracked black pepper

3/4 cup vegetable oil

Green onion snips, for garnish

Instructions:

In a mixing bowl, combine mashed potatoes, yellow onion, cheddar cheese, parmesan cheese, beaten egg, flour, cornmeal, garlic powder, and cracked black pepper. Mixture should be stiff. By heaping spoonful, form a small disc with your hands, about 1/2”-inch thick. Set aside. Repeat with remaining mixture. In an iron skillet, warm vegetable oil over medium-high heat. Meanwhile, line a baking sheet with paper towels. Place potato cakes in the skillet without touching sides. Cook 2-3 minutes until deep brown. Flip and cook 2-3 minutes longer. Transfer potato cakes to the paper towel-lined baking sheet to absorb excess oil. Place on a platter and garnish with green onion snips. Serve with dipping sauce.

SRIRACHA MAYO

Ingredients:

1/4 cup mayonnaise

2 tablespoons Greek yogurt

1 tablespoon sriracha hot sauce

1 teaspoon lime juice

1 teaspoon soy sauce

1/8 teaspoon kosher salt

Red pepper flakes and green onion snips m, for garnish

Instructions:

In a bowl, combine mayonnaise, Greek yogurt, sriracha hot sauce, lime juice, soy sauce, and kosher salt. Stir until smooth. Garnish with red pepper flakes and green onion snips.

Butter Chicken

Sooo, what is the difference, you wonder. The secret is in the name. It’s made with butter! The tomatoes, coconut milk, and seasonings are cooked slow enough to transform the sauce into a gravy-like consistency with a nice kick of flavor. Also, by slow-cooking the chicken, it becomes fork tender and juicy. Ahhh, now I have your attention. Sounds like a grocery list is in order. Bravo. Your family will thank you.

BUTTER CHICKEN

Ingredients:

2 pounds chicken breasts, skinless and cut into chunks

1/2 sweet onion, chopped

1 jalapeño, seeds removed and diced

1/2 teaspoon garlic powder

2 tablespoons unsalted butter

1 tablespoon curry powder

2 teaspoons garam masala

1/2 teaspoon turmeric

1 teaspoon chili powder

1/2 teaspoon ground ginger

1/4 teaspoon cayenne pepper

14.5 ounce can coconut milk

6 ounce can tomato paste

Fresh cilantro, for garnish

Dollop of Greek yogurt, for garnish

Instructions:

In a slow cooker, add chicken chunks, chopped onion, diced jalapeño, and garlic powder. Stir to combine. Dot with cubes of butter. In a medium bowl, stir together curry powder, garam masala, turmeric, chili powder, ground ginger, and cayenne pepper. Add coconut milk and tomato paste. Whisk to combine. Pour over chicken mixture. Cover slow cooker; heat contents on LOW for 5 hours. Serve with cooked rice and naan bread. Garnish with cilantro and a dollop of Greek yogurt. Serve immediately.

What’s Cooking in Gail’s Kitchen? The Food Whisperer: Original Marinara Sauce! Marinara isn’t just a fancy name for spaghetti sauce, it actually lacks one key ingredient that sets it apart. You guessed it: MEAT. Basically, marinara is a tomato-based sauce infused with herbs and spices. It can be prepared very easily in less than half an hour. Personally, I find it perfect for a meatless meal. I like chunks of tomatoes, the hint of garlic, and a slight kick of red pepper spice. Look again at the snapshot. Perhaps it’s time to make marinara at your house.

ORIGINAL MARINARA SAUCE

Ingredients:

2 tablespoons olive oil

2 cloves garlic, minced

28-ounce can Italian Roma tomatoes, diced with sauce

2 tablespoons fresh oregano

1/4 cup basil, chopped

1 teaspoon sea salt

1/8 teaspoon marjoram

1 tablespoon agave nectar

1/2 teaspoon red pepper flakes

Instructions:

In a large skillet over medium-low heat, warm olive oil. Add minced garlic; sauté for one minute until slightly brown, stirring occasionally. Add diced Roma tomatoes with sauce, fresh oregano, chopped basil, sea salt, marjoram, agave nectar, and red pepper flakes. Simmer sauce until thickened, approximately 15 minutes, stirring occasionally. Marinara sauce will be chunky and thick. Serve with cooked pasta.

For those who truly appreciate knowing exactly what’s in the food they eat, here is a novel recipe for homemade ketchup without high fructose corn syrup and extra preservatives. It’s incredibly simple to make and can be prepared in about 30 minutes. The taste, you ask? OMG! I never thought I’d actually consider ketchup a veggie, but now I do. Enough said.

KETCHUP FROM SCRATCH

Ingredients:

1 tablespoon olive oil

1 medium onion, chopped

2 garlic cloves, chopped

1 teaspoon ginger, peeled and chopped

1/2 teaspoon crushed red pepper flakes

1/4 teaspoon ground allspice

2 tablespoons tomato paste

28-ounce can whole Italian Roma tomatoes in juice

1/3 cup brown sugar, packed

1/4 cup apple cider vinegar

Sea salt and ground black pepper, to taste

Instructions:

Warm olive oil in large skillet over medium heat. Add chopped onions. Cook until softened and lightly browned, about 8 minutes. Add chopped garlic, chopped ginger, red pepper flakes, and allspice. Cook, stirring often, for 2 minutes. Add tomato paste; stir for 2 minutes. Add the Italian Roma tomatoes in juice, brown sugar, apple cider vinegar, sea salt, and black pepper. Bring to a simmer, stirring occasionally, for 20 minutes. The ketchup will thicken and appear shiny. Remove from heat. Blend until smooth. Cool to room temperature and then store in the refrigerator.

Yellow Pepper Spaghetti

What’s Cooking in Gail’s Kitchen? Equal Measures: Yellow Pepper Spaghetti! You know how spaghetti always tastes better the second day? There’s something about those savory spices intensifying the sauce and melding it with the pasta. Some of it has to do with starch, I’m told, but I don’t want to get too scientific. I’ll trust my taste buds to go with the flow. Because my garden has a bounty of peppers right now, this seemed like a natural progression. Stuff ‘em. Not only did the leftover spaghetti taste amazing, but the yellow pepper added it’s own smoother mild flavoring. Not bitter. Not sweet. Just right. Maybe you’ll come to the same conclusion.

YELLOW PEPPER SPAGHETTI

Ingredients:

4 yellow peppers, whole

4 ounces mozzarella cheese, shredded

2 cups of leftover cooked spaghetti in marinara sauce

Chopped tomatoes, for garnish

Instructions:

Preheat the oven to 350°. Cut off the top of each yellow pepper and remove the insides. Rinse and drain. Stand peppers upright in a baking dish. Put a heaping tablespoon of mozzarella cheese in the bottom of each yellow pepper. Then stuff each pepper with the leftover cooked spaghetti in marinara sauce. Cover with foil and bake for 45 minutes. Remove foil, divide remaining cheese over the tops. Garnish with chopped tomatoes and bake 15 minutes longer. Serve immediately.

Veggie Burger

What’s Cooking in Gail’s Kitchen? Equal Measures: Veggie Burger! For a quarter-pounder without all the fat, substitute red meat for black beans instead. Sound crazy? Actually, I conducted a little taste test on my husband recently. By using mashed black beans, onion, green pepper, egg, and bread crumbs, it seemed more like a meatloaf than a burger. It kinda did. The texture was the same and they fried up real nice in the iron skillet. By the time we added lettuce, tomato, onion, and pickle, we practically did a double-take on the finished product. Go all out and slide it between a brioche bun. The veggie burger definitely crossed the finish line at the dinner table. Now that’s delicious.

VEGGIE BURGER

Ingredients:

16-ounce can organic black beans, drained and rinsed well

1/2 green pepper

1/2 yellow onion

2 cloves garlic, minced

1 egg

1 tablespoon chili powder

1 tablespoon cumin

3 drops sriracha sauce

1/2 cup Italian bread crumbs

Butter for frying

Brioche hamburger buns

Condiments, per taste

Instructions:

Using a food processor set on Pulse, mash black beans until thick and chunky. Transfer to a bowl. Next, combine green pepper, yellow onion, and minced garlic in the food processor. Chop into small pieces. Stir into the black beans. Add egg, chili powder, cumin, and sriracha sauce. Mix well. Add bread crumbs. Mix together with gloved hands until consistency is dense enough to form into patties. Melt butter in an iron skillet over medium heat. Place patties into skillet and cook about 7-8 minutes until a crispy outer edge is present. Flip and cook 7-8 minutes longer. Serve with condiments of choice on a brioche bun.
