Red Pepper Shrimp Guac-Tail

What’s Cooking in Gail’s Kitchen? A Cut Above: Red Pepper Shrimp Guac-Tail! Ohmygosh, I had so much fun making this shrimp appetizer for my last social gathering. You know that set of Chinese soup spoons you have tucked away in the buffet drawer? Well, dust them off because this shrimp cocktail recipe may very well be the star attraction when it’s your turn to host the next party. It’s incredibly easy to pull together such an extraordinary presentation. When everyone is raving about it, simply smile and offer them a crafted cocktail as well. Party-On.

RED PEPPER SHRIMP GUAC-TAIL

I pound frozen cooked shrimp, jumbo size with tail on

Fresh lemon juice

1/4 teaspoon dill weed

1 teaspoon lime juice

1/8 teaspoon garlic powder

1/2 teaspoon sea salt

1 mini red pepper, diced

Place the frozen shrimp in a bowl; cover with tap water to defrost. Change out the water every 10 minutes until shrimp is thawed. Transfer shrimp to a paper towel; pat dry. Mix well. Place a spoonful of guacamole on each Chinese soup spoon. Place shrimp on top. Sprinkle diced red pepper and garnish with broccoli micro greens. Arrange spoons on a serving tray. Serve chilled.

Ina Garten’s Crispy Potatoes

What’s Cooking in Gail’s Kitchen? A Cut Above: Ina Garten’s Crispy Potatoes! One chef’s secret to crispy roasted potatoes begins with boiling them on the stove beforehand. The results create tender and fluffy potatoes on the inside while crispy and crunchy on the outside. The herbs and seasonings enhance layers of flavor, making it a comforting delight to the senses. Serve with a side of ranch dressing or natural ketchup. Oh……remember to share. These aren’t meant for the baker to finish off the entire batch, no matter how tempting that may be.

INA GARTEN’S CRISPY POTATOES

Ingredients:

1 1/2 pounds baby gold potatoes, halved, skin on

1/2 cup olive oil

1 teaspoon kosher salt

1/8 teaspoon black pepper

1/4 teaspoon dried oregano

1/8 teaspoon dried parsley

Instructions:

Place baby gold potatoes in a saucepan; cover with an inch of water; bring to boil; simmer for 10 minutes. Drain completely. Return potatoes to the pan. Cover the saucepan tightly with a lid. Shake the pan for a few seconds. This makes the edges rough and craggy, allowing them to crisp up nicely when roasted. Preheat oven to 400°. Combine olive oil, kosher salt, black pepper, dried oregano, and dried parsley. Mix well. Pour over the potatoes, coating all sides. Transfer potatoes to a nonstick baking sheet, beginning with cut side down in a single layer. Bake for 45 minutes, tossing occasionally to brown the sides. Serve immediately.

Herbs Over Burrata

What’s Cooking in Gail’s Kitchen? A Cut Above: Herbs Over Burrata! A fresh mozzarella ball and a fresh burrata ball may appear to be the same thing, but actually they are quite different, kind of. Burrata has an outer skin of mozzarella, but the secret lies in the inner pouch filled with fresh cheese curds and cream. This makes it more flavorful, rich-tasting, and buttery. By adding chopped herbs and seasoning, burrata transforms into an elegant appetizer that will impress even the fussiest palate. Don’t believe me? What have you got to lose? Worst case scenario, you get it all to yourself.

HERBS OVER BURRATA

Ingredients:

2 small burrata balls, room temperature

1 tablespoon fresh parsley, chopped

1 tablespoon fresh basil, chopped

1 tablespoon fresh chives, chopped

1 teaspoon toasted sesame seeds

1/4 teaspoon red pepper flakes

2 tablespoons olive oil

1 teaspoon champagne vinegar

1 package garlic bagel chips

Instructions:

Place the burrata balls in a shallow dish. Combine chopped parsley, chopped basil, chopped chives, sesame seeds, and cayenne pepper in a bowl. Mix well. Add olive oil and champagne vinegar. Stir until thoroughly mixed. Make a cut across the tops of the burrata to release the luscious center inside. Spoon the herb mixture over the top and dredge eat bite onto garlic bagel chips.

Green Pepper Dip

What’s Cooking in Gail’s Kitchen? Home Cooking: Green Pepper Dip!  Nothing says “presentation” like a vegetable dip served in a green pepper. If you don’t believe me, try this for your next gathering. People practically “oooh” and “aaah” when you enter the room with it. The best part is a subtle flavor of the pepper blends into the dip. Hint: Do your homework at the produce aisle. Make sure you buy a pepper that will sit straight on the serving dish.

GREEN PEPPER DIP

1 Large Green Bell Pepper

1 cup mayonnaise

1 cup Greek yogurt

1/8 teaspoon garlic powder

1/2 teaspoon basil

1/2 teaspoon chili powder

1/2 teaspoon thyme

Gently fill the pepper with dip, cover with plastic wrap, and refrigerate at least one hour. Garnish with shredded cheddar cheese and bacon bits. Serve with crudités and crackers.

Deviled Eggs

What’s Cooking in Gail’s Kitchen? Home Cooking: Deviled Eggs!  People ask me all the time how I can eat everything I make and not weigh 100 pounds more than I do. Well, portion control has a lot to do with it……plus the fact that I truly DO share much of what I make. And then there are days when I know I’m going to pig out, so I eat a lunch that looks like this! Trust me, it works.

DEVILED EGGS

Ingredients:

6 hard-cooked eggs, peeled and halved

1/4 cup real mayonnaise

1 teaspoon Dijon mustard

1/4 teaspoon sea salt

Dash white pepper

Paprika

Instructions:

Separate egg whites from egg yolks. Smash egg yolks with a fork in a small bowl. Stir in mayonnaise, mustard, salt, and pepper. Spoon yolk filling into egg white halves. Garnish with paprika. Chill, if desired.

Mexican Spiced Brownies

What’s Cooking in Gail’s Kitchen?  Mexican Spiced Brownies!  Olé!  If you’re as crazy about adding a “kick” to your palate, look no further. (And if you’re not, the recipe can be modified.)  The wild ride adrenaline rush you get from chili peppers can be addictive.  I like the fact that your immune system can get a boost. The color of red chili peppers signals its high content of beta-carotene or pro-vitamin A. Combine the chili with dark chocolate and there you have it…..permission to eat brownies!

MEXICAN SPICED BROWNIES

Ingredients:

1/2 cup flour

1/3 cup cocoa powder

1/3 cup butter, melted

1 cup granulated sugar

2 eggs

1 teaspoon Mexican vanilla extract

1/2 teaspoon crushed red pepper flakes (or a smidgen of cayenne pepper)

1/8 teaspoon cinnamon powder

Preheat oven to 350°. Melt the butter and add to the sugar.  Stir until blended.  Add the eggs, vanilla, red pepper flakes, and cinnamon powder to the sugar mixture. Mix well. Slowly add the flour and cocoa powder.  Stir until smooth.  Pour into a greased 9 x 9 pan.  Bake for 20-25 minutes until toothpick comes out clean. Remove from oven and cool slightly.

***For regular brownies, omit crushed red pepper flakes, cayenne pepper, and cinnamon.

Chocolate Icing:

1 1/2 cups powdered sugar

1 heaping tablespoon cocoa powder

2 tablespoons butter, softened

1 teaspoon Mexican vanilla extract

2 tablespoons warm milk

Gently mix butter, powdered sugar, cocoa powder until smooth.  Stir in vanilla extract and milk until frosting is of spreading consistency. Spread evenly on cooled brownies. Sprinkle top with semi-sweet mini chocolate morsels.

Goat Cheese Baked in an Herb Crust

What’s Cooking in Gail’s Kitchen? Goat Cheese Baked in an Herb Crust! This elegant appetizer is the perfect compliment for an intimate gathering. The soft creamy cheese spreads nicely on bagel chips and water biscuits. I serve it together with shrimp cocktail and Sauvignon Blanc simply because of its aromatic uniqueness.

GOAT CHEESE BAKED in an HERB CRUST

Ingredients:

8 ounce Goat Cheese Log

1 tablespoon Olive Oil

Herbs:

1 tablespoon oregano

1 tablespoon basil

1 tablespoon marjoram

1/8 teaspoon garlic powder

1/4 teaspoon minced onion

1/8 teaspoon sea salt

1/8 teaspoon red pepper flakes

Preheat the oven to 350°. Combine herbs and sprinkle on a piece of waxed paper. Gently roll the cheese log in the herb mixture to coat it completely. ***Leftovers are a delicious substitute for mozzarella in the recipe for Letter C, Caprese Salad.

Oregano Garlic Salad Dressing

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Oregano Garlic Salad Dressing! If oregano and garlic were dance partners, they’d begin as a hip-hop two-step and quickly advance to the Argentine tango. Simmer lightly, highlighted with food and drink, for romance later on. Besides pairing well with the taste buds, they provide extraordinary health benefits to boost the body’s immune system. Some people even say this combo increases their energy level and metabolism. I know both spices take first place in my spice cabinet. Perhaps you agree.

OREGANO GARLIC SALAD DRESSING

Ingredients:

1/2 cup olive oil

2 tablespoons lemon juice

1-2 tablespoons white wine vinegar

1-2 tablespoons Worcestershire sauce

3 cloves garlic, minced

1 teaspoon dried oregano

1/4 teaspoon sea salt

1/8 teaspoon cracked black pepper

Instructions:

Quickly whisk together lemon juice, white wine vinegar, Worcestershire sauce, minced garlic, dried oregano, sea salt, and cracked black pepper. Slowly drizzle the olive oil into the mixture. Whisk together until the oil and vinegar are completely blended. After about two minutes, the dressing should appear to be uniform in texture.

Italian Compound Butter

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Italian Compound Butter! Compound butter tickles your taste buds in ways you can’t begin to imagine. Go one step further than ordinary butter by adding an Italian twist to it. The sun-dried tomatoes and yellow mini sweet pepper not only add color, they conjure up serving ideas that will make your head spin. Think pasta or potatoes, crusty artisan bread warm from the oven, seafood and fish, cheesy omelets, grilled veggies, and more. You’re only limited by your imagination. Plan ahead to make a batch to give as a hostess gift for that dinner party you’re attending next week. For everyone it’s a definite win-win.
