Personally, I prefer a bed of romaine lettuce, cherry tomatoes, and green onions simply because it intensifies the sweet lump crabmeat filling that much more. CRUNCHY CRAB CAKES

Ingredients:

1 large egg, beaten

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1/4 cup mayonnaise

1 teaspoon soy sauce

1/2 teaspoon sriracha

1/2 teaspoon Cajun seasoning

1 cup red bell pepper, chopped

1/4 cup green onions, finely chopped

16-ounce can lump crabmeat, rinsed and drained

1 cup panko breadcrumbs

1/4 teaspoon sea salt

1/8 teaspoon black pepper

Instructions:

Preheat oven to 425°. Spray a baking sheet with nonstick oil. Set aside. In a large bowl, whisk together beaten egg, lemon juice, Dijon mustard, mayonnaise, soy sauce, sriracha, and Cajun seasoning. Add chopped red pepper and green onions. Fold in crabmeat and 1/4 cup panko breadcrumbs. Place remaining breadcrumbs on a sheet of waxed paper. Sprinkle with sea salt and black pepper. Divide crab mixture into fourths. Shape each portion into a patty. Coats both sides in the panko bread crumbs. Place crab cake on the prepared baking sheet. Repeat process with the remaining mixture. Bake 10-12 minutes, or until crab cakes are crispy on the bottom. Flip over and bake 10-12 minutes longer or until golden brown and crispy. Serve immediately.

Look no further for a tasty condiment that can be smeared, dunked, or drizzled all over fried chicken, grilled shrimp, or even steamed broccoli if the mood strikes you. It’s smooth and creamy, a little bit spicy, honey sweet, and tingles your tongue. You absolutely must share with everyone else at the table. After all, garlic tastes delicious in food, but it leaves behind a slightly pungent odor that can find some people feeling offended or jealous. And we wouldn’t want that.

BANG BANG SAUCE

Ingredients:

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha

1 teaspoon natural honey

1/2 teaspoon rice vinegar

1 clove garlic, minced

Green onions, for garnish

Red pepper flakes, for garnish

Instructions:

In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, natural honey, rice vinegar, and minced garlic. Whisk until everything is combined. Pour into a serving dish. Garnish with green onion snips and red pepper flakes. Serve as a dipping sauce with seafood.

What’s Cooking in Gail’s Kitchen? Bright Ideas: White Chicken Flatbread! Nowadays I look for any excuse to have pizza, or a close second. All I have to do is go to my freezer to decide what ingredients to use. In there is often naan flatbread, precooked grilled chicken strips, and previously oven-baked bacon. In lieu of marinara sauce, creamy ranch dressing makes a tasty sauce. People know cheese is always my friend, along with fresh veggies, herbs, and spices. Throw it all together and boom; 20 minutes later it’s ready to eat. I think I deserve a star for that.

WHITE CHICKEN FLATBREAD

Ingredients:

1 Naan flatbread

1 tablespoon olive oil

1 tablespoon cornmeal

1/2 cup prepared ranch dressing

4 ounces fresh mozzarella, sliced

1 cup precooked, grilled chicken chunks

1/4 cup precooked bacon, crumbled

2 tablespoons sweet onions, chopped

1/8 teaspoon red pepper flakes

1/2 teaspoon Italian seasoning

4 ounces mozzarella cheese, shredded

Instructions:

Preheat oven to 400°. Brush the bottom side of the naan flatbread with olive oil; dust with cornmeal. Transfer to a pizza stone. Bake 5 minutes. Remove from oven and assemble the ingredients. Spread the ranch dressing onto the top crust. Layer, in order, the fresh mozzarella slices, grilled chicken chunks, bacon crumbles, and sweet onions. Sprinkle with red pepper flakes and Italian seasoning. Top with shredded mozzarella cheese. Bake 10-15 minutes, or until cheese is melted and golden. Serve immediately.

Before you sit down to watch your favorite sports team or series on Netflix, throw together a sheet pan of nachos to snack on. It’s the perfect food for grazing because everyone seems to like them. First of all, nachos are finger food. They’re also snackable ( is that a made-up word?) They feel like a treat or a party’s going on. And there’s enough for everyone. Add some sour cream, guacamole, and sliced jalapeños, if you choose. On second thought, better double the recipe if you’re expecting more than two or four. Be forewarned.

SCOOP CHILI CHEESE NACHOS

Ingredients:

9.25 ounce bag Scoops® corn chips*

15-ounce can chili, any brand

15-ounce can black beans, rinsed and drained

8 ounces sharp cheddar cheese, shredded

2-3 tomatoes, diced

2 green onions, snipped

1 teaspoon red pepper flakes

Sriracha sauce, for drizzling

Instructions:

Preheat the oven to 400°. Spray a baking sheet with nonstick oil. Set aside. In a glass mixing bowl, combine chili with black beans. Warm slightly in the microwave. Fill each corn chip with a tablespoon of filling. Place chili chip on the prepared baking sheet, forming a single layer. Repeat until the tray is full. Layer the shredded cheese over all. Place diced tomatoes onto cheese. Finish with green onion snips and red pepper flakes. Bake 15-20 minutes until cheese is melted. Serve with sriracha sauce for extra zing.

Sooo, what do you have for dinner when you plan on kabobs, but can’t find the skewers among all the kitchenware you’ve unpacked during the recent move? The answer: Improvise, by using a grill pan. After all, once the ingredients are cooked and presented for dinner, everyone grabs a fork to “shish” the food off the skewer onto the plate anyway. I see your eyes glazing over as you nod your head in agreement. Focus. The end result is still phenomenal. Now dig in. Your tummy will thank me.

GRILL PAN KABOBS

Ingredients:

1/2 cup olive oil

2 tablespoons red wine vinegar

2 tablespoons lemon juice

1 clove garlic, minced

1 teaspoon dry mustard

1/2 teaspoon thyme

1/2 teaspoon oregano

1 teaspoon sea salt

1/4 teaspoon black pepper

1/2 pound beef tenderloin, cut into chunks

1/2 pound chicken tenderloin, cut into cubes

1 red onion, cut into wedges

1 green bell pepper, seeded and cut into chunks

1 red bell pepper, seeded and cut into chunks

4 ounces fresh mushrooms, stems removed

4 ounces cherry tomatoes

Instructions:

In a measuring cup, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, dry mustard, thyme, oregano, sea salt, and black pepper. Place the beef tenderloin chunks and chicken tenderloin cubes in a large zip-lock plastic bag. Pour half the marinade mixture into the bag, seal, shake, and refrigerate for one hour. Set aside remaining marinade for basting sauce while grilling. Preheat gas grill to 500°. Remove beef and chicken pieces from bag; discard marinade. Allow beef and chicken to “rest” at room temperature for 15-20 minutes. Transfer beef chunks, chicken cubes, red onion, green pepper, red pepper, mushroom caps, and cherry tomatoes onto a large grill pan that has been sprayed with nonstick oil. Brush kabobs with reserved marinade. To cook medium-rare steak kabobs (charred exterior, pink center), place the grill pan on the hot grill. Chicken tenderloins will cook in the same amount of time, with edges turning white. Close the lid to retain heat temperature. Set timer for 5 minutes. Then using a long-handled tongs, flip, rotate, and move larger pieces of beef and chicken on the grill pan to be in the center of the flame. Vegetables will char faster than the meat. Watch carefully. Cook the kabobs an additional 5 minutes, with the lid closed. Once finished, remove grill pan and turn off the grill. Allow food to “rest” for 5 minutes. Serve immediately.

You can use a grill pan over a burner flame, a broiler for fast charring, or roast them in the oven. The results are amazing, compared to raw peppers sliced into a salad. The incredible flavor is so smoky and sweet you may wonder why you don’t take the time more often. Pay attention to your taste buds! This is how we add depth to any dish, I promise you that.

ZIA MARIANNA’S GRILLED PEPPERS

Ingredients:

10 mini sweet peppers, mix of red and orange

5 cloves garlic

1/2 cup vegetable oil

1/2 teaspoon seasoned salt

1/2 teaspoon cracked black pepper

Celery leaves

Instructions:

Heat a grill pan on high heat until hot. Rinse the mini sweet peppers and garlic cloves; pat dry. Place the whole peppers and garlic cloves onto the grill pan, charring the skin completely on all sides until black on the outside and soft on the inside, 5-8 minutes per side. Remove and discard charred skin of peppers, seeds, and stems. Cut the peppers into thin slices about 1/4” thick. Transfer the charred pepper slices and garlic cloves into a container with a lid. Slightly wilt celery leaves on grill pan. Add to pepper mixture. Drizzle with vegetable oil. Add the seasoned salt and cracked black pepper. Mix well. Cover and refrigerate overnight. Warm slightly before serving.

Mediterranean Chickpea Salad

What’s Cooking in Gail’s Kitchen? Cheerful Choices: Mediterranean Chickpea Salad! Either you can use a recipe or not. This salad is very forgiving if you wish to add or subtract ingredients. Some prefer to add crumbled feta cheese, others pass. Some prefer to remove the skins of the chickpeas, others eat them the way they come out of the can. If the skins rub off during the rinsing process, so be it. Either way, this no-cook meal can be ready in a few minutes giving you more time to sort through the day’s mail and play with the family dog.

MEDITERRANEAN CHICKPEA SALAD

Ingredients:

2 tablespoons olive oil

2 tablespoons red wine vinegar

1/8 teaspoon garlic powder

1 teaspoon oregano

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 red onion, thinly sliced

1 cup celery tops with leaves, chopped

1 cup cherry tomatoes, halved

2 baby seedless cucumbers, sliced

3 mini yellow sweet peppers, sliced

1 15-ounce can cooked chickpeas, rinsed and drained, skins removed

Instructions:

To make the dressing, whisk together olive oil, red wine vinegar, garlic powder, oregano, sea salt, and black pepper. Set aside. In a serving bowl, combine sliced red onions, celery leaves and tops, cherry tomato halves, sliced cucumbers, yellow sweet peppers, and chickpeas. Mix well. Pour the dressing over all. Toss to combine. Refrigerate for half an hour before serving.

What’s Cooking in Gail’s Kitchen? Cheerful Choices: Flatbread Fiesta! Do you ever tire of the same old pizza choices? I get in a rut the same way everyone else does. About that time I stand in front of the freezer, door open, peering into its contents searching for ideas to try something extraordinary. Sure, I’m the one buying the groceries (and should know what’s in the house) but that’s when I surprise myself with unexpected specials. Chorizo is one of those impulse items that make it into the cart. I often fry it up, crumble it for meals later on, label it, and then store it in the freezer for another day. It’s at times like this I pat myself on the back with congratulations for having such foresight.

FLATBREAD FIESTA

Ingredients:

1 naan flatbread

1-2 tablespoons olive oil

1 tablespoon cornmeal

1/8 teaspoon garlic powder

1/2 cup chunky salsa, prepared

1 cup Mexican cheeses, shredded

1/2 cup cooked chorizo, drained and crumbled

2 tablespoons yellow onion, chopped

2 tablespoons green chilies, chopped

2 tablespoons jalapeño peppers, chopped

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Set aside. Rub olive oil on bottom of flatbread. Spread with cornmeal, pressing into the dough. Sprinkle with garlic powder. Flip over and place this side down on prepared baking sheet. Brush top with remaining olive oil. Bake for 5 minutes. Remove flatbread from oven. Carefully spoon chunky salsa over flatbread, spreading to edges. Layer Mexican cheeses over top. Divide cooked and crumbled chorizo over salsa. Finish layering with chopped onions, green chilies, and jalapeño peppers. Bake 15 minutes longer to melt the cheeses for a nice crispy crust. Remove flatbread from oven. Cool slightly before using a pizza cutter. Serve with a tossed garden salad.

Vegetarian Egg Bake

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: Vegetarian Egg Bake! As a child I remember not a day went by when my mother did not serve potatoes. Granted they were always part of the dinner menu, but nonetheless they were served. Baked potatoes, mashed potatoes, scalloped potatoes, boiled potatoes, or roasted potatoes. If there were leftover mashed potatoes, the next day they were transformed into crispy pan-fried potato pancakes. Leftover boiled potatoes became old-fashioned riced potatoes. Baked potatoes magically became twice-baked potatoes topped with crunchy bacon and melted cheese. You see, without the microwave as a kitchen staple, women had to be more creative as well as resourceful.

VEGETARIAN EGG BAKE

Ingredients:

1 pound red potatoes

1/2 yellow onion, chopped

3 tablespoons light cream

1/4 teaspoon garlic powder

1 tablespoon smoked paprika

1/2 teaspoon seasoned salt

1/4 teaspoon red pepper flakes

3-4 large eggs

1/2 cup sharp cheddar cheese, shredded

Chives, for garnish

Instructions:

Preheat oven to 400°. Spray a deep dish pie plate with nonstick oil. Set aside. Cut potatoes in half, lengthwise. Then cut in half lengthwise again. Cut onions into chunks. Place potatoes and onions in prepared pie plate. In a small bowl, mix light cream, garlic powder, smoked paprika, seasoned salt, and red pepper flakes. Pour over potatoes. Gently toss to coat everything evenly. Bake for 10 minutes; stir and bake 10-15 minutes longer, or until potatoes are tender. Remove from oven. Using a spoon, create a well in the center. Crack eggs in the middle; sprinkle with shredded cheddar cheese. Return to oven. Continue baking until eggs have set, 7-12 minutes depending on desired firmness of yolk. Remove from oven, sprinkle with chopped chives. Serve warm.
