What’s Cooking in Gail’s Kitchen? Eat More: Iceberg Lettuce 7-Layer Salad in a Jar! I don’t know about you, but I think this is a perfect idea for taking a salad-on-the-go. Use whatever jars you have on hand, such as quart or pint canning jars or even jelly jars. You decide the portion size. As a “do-ahead” recipe, it’s also a time-saver. Simply layer all the ingredients, top them off with the yummy homemade dressing, and then pack a couple jars in your lunchbox or picnic basket. It’s ideal for sharing. Choose healthy!
ICEBERG LETTUCE 7-LAYER SALAD IN A JAR
Ingredients:

1 head lettuce, shredded

2-3 green onions, snipped

5 eggs, hard-boiled and chopped

3 tomatoes, chopped

1 pound thick bacon, pan-fried and crumbled

1 cup cheddar cheese, shredded

3/4 cup frozen baby sweet peas, thawed and uncooked
Dressing:

2 cups mayonnaise 

2 tablespoons sugar
Instructions:

Prepare each ingredient, as indicated. Set aside. This is the order the jars will be assembled beginning at the bottom: Lettuce, green onion, hard-boiled eggs, tomatoes, bacon, cheddar cheese, and peas. To keep the layers even in the jar, use the handle of a wooden spoon to gently press the salad as you complete each layer. Mix together the mayonnaise and sugar. Divide evenly between the jars. Garnish with a few sprinkles of shredded cheese and crumbled bacon bits. Place a lid on each jar to secure. Refrigerate 8 hours or overnight. To serve, empty the jar onto a plate; mix in the dressing to moisten. Enjoy!

VERMICELLI PASTA SALAD
Ingredients:

1 pound vermicelli 

1 1/2 tablespoons Accent seasoning

2 tablespoons seasoned salt

1/2 cup lemon juice

1/3 cup vegetable oil

3/4 cup green pepper, chopped

3/4 cup onion, chopped

1 1/2 cups broccoli/carrot/red cabbage slaw

1 cup black olives, sliced

1 tablespoon poppy seeds

1 cup mayonnaise 
Instructions:

Cook vermicelli as directed on package. Rinse in cold water. Drain. Place in large bowl. Make a marinade of Accent seasoning, seasoned salt, lemon juice, and vegetable oil. Pour over vermicelli; mix well. Cover and marinate for two days, stirring once or twice. Add green pepper, onion, cut-up broccoli/carrot/cabbage slaw, black olives, poppy seeds, and mayonnaise. Mix well. Marinate overnight. Serve chilled.

With the double crunch of water chestnuts and potato chips, it almost seems like a party dip. Wrap it in foil and you’re good-to-go. Kids love the salty chips and adults appreciate the herbed chicken chunks. 
POTATO CHIP POTLUCK 
Ingredients:

3 cups chicken, cooked and cubed

1/2 cup mayonnaise 

3 green onions, snipped

8-ounce can water chestnuts, drained and chopped

1 tablespoon lemon juice

1/4 teaspoon celery seeds

2 tablespoons chopped tarragon leaves

Sea salt to taste

Dash of pepper

1 cup extra sharp cheese, sliced or shredded

1-2 tomatoes, sliced

1 cup potato chips, crushed
Instructions:

Preheat oven to 350°. Combine chicken, mayonnaise, onions, water chestnuts, lemon juice, celery seed, tarragon leaves, salt, pepper, and half the cheese. Mix lightly. Spoon into a casserole dish. Layer with sliced tomatoes. Bake for 20 minutes. Top with remaining cheese and potato chips. Bake another 5 minutes or until cheese is melted.

KIDNEY BEAN SALAD
Ingredients:
1/3 cup mayonnaise 

1 tablespoon olive oil

2 teaspoons red wine vinegar 

1 smidgen sugar

Salt and pepper, to taste

1/3 cup onion, chopped

1/3 cup celery, chopped

1 can red kidney beans, drained

2 tablespoons sweet pickle relish
Instructions:
Mix mayonnaise, olive oil, red wine vinegar, sugar, salt, and pepper. Blend in onions. Add celery, beans, and relish. Chill two hours before serving.

Summer brings visions of baseball games, afternoons at the pool, picnics in the park, roasting marshmallows over the fire pit, and hot dogs any way you like them. Some people prefer premium Angus franks, others want fat-free turkey, German brats, or Italian sausage. Hold the ketchup? Maybe. Mustard only? Sometimes. Sweet relish? Extra onion? No bun? There have to be a bazillion ways to serve up a hot dog. For your back yard cookout, save yourself the agony of being a people-pleaser. Bring out the kid in everyone. Offer a condiment bar where the guests can congregate and “build-your-own” version of bliss. 
HOT DOG HEAVEN
Ingredients:

1 pound wieners, standard beef

Condiments of your choosing

Hot Dog Buns
Instructions:

Heat the grill to medium temperature. Grill franks 5-7 minutes, turning occasionally, until heated through and slightly charred. Remove with grill tongs and let sit for a minute or two to retain juices. For a toasted bun, toss the buns, cut side down, onto the grill for about 15-20 seconds; longer if you want them slightly charred. Watch carefully.

What’s Cooking in Gail’s Kitchen? A Second Helping of Veggie Pizza! Now don’t get this confused with your typical pizza parlor favorite. This particular dish is served cold as an appetizer or a side dish. And it’s easy to bake-and-take for cookouts and picnics. One recipe serves 24 easily, giving you enough for that second helping. 
VEGGIE PIZZA 
Ingredients:

2 8-ounce cans of Crescent rolls

2 8-ounce blocks of Neufchâtel cheese

1 cup mayonnaise 

1 package dry Ranch dressing mix

1 cucumber, peeled, cut-up, and seeds removed

1 small head of broccoli florets

3 carrots, peeled and chopped

1 cup finely shredded sharp cheddar cheese
Instructions:

Preheat oven to 375°. Unroll dough and press out onto an ungreased 11 1/2″ x 17″ baking sheet to form a crust. Bake 10 minutes or until golden brown. Cool completely. In a small bowl, mix Neufchâtel cheese, mayonnaise, and dry Ranch mix until smooth. Spread evenly on cooled crust. Layer cheese mixture with cucumber, broccoli, and carrots. Press lightly. Top with cheddar cheese. Cover and refrigerate 2 hours or overnight. Cut into small bars or triangles.
