What’s Cooking in Gail’s Kitchen? A Cut Above: Blistered Jalapeño Poppers! The next time you are in the grocery store, check the refrigerated section for Mexican ingredients. Oftentimes, this is where chorizo is found, as well as the popular Mexican cheeses. I stumbled on to this discovery one time and decided to try a bag of shredded chihuahua cheese. Its taste resembles a slight cheddar sharpness with a mild, buttery finish. And the best part is, it melts like a dream…which makes it perfect for creamy dips, dense fillings, and bubbly fondues. 

BLISTERED JALAPEÑO POPPERS

Ingredients: 

10-12 jalapeño peppers, washed and patted dry

1 tablespoon olive oil

12 ounces Mexican chihuahua cheese, shredded

Chile Lime seasoning, to taste 

Instructions: 

Slice the jalapeños in half lengthwise, removing and discarding veins and seeds. Place the peppers, cut side down, on a wire rack on a foil-lined baking sheet. Brush with olive oil. Broil on High setting for approximately 5 minutes to char. You will see them blister, so watch carefully. Remove the peppers from the oven and carefully flip them over. Fill each jalapeño pepper with Mexican chihuahua cheese. Mound the cheese since it will shrink down as it melts. Sprinkle with chile lime seasoning, to taste. Return the baking sheet to the oven. Broil for 3 minutes longer, or until the cheese is  blistered and bubbly. Watch closely. Transfer the stuffed jalapeños to a platter. Serve while warm. 

Old Mexico Street Poppers

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Old Mexico Street Poppers! As the garden brings forth a bounty of jalapeños, variety becomes the spice of life. Stuffed with cheese and veggies makes sinking your teeth into this spicy popper feel like eating from a Mexican cobblestone street vendor in Puerto Vallarta. Anything goes! Give your taste buds an “old town” vacation and then go shopping afterwards!

OLD MEXICO STREET POPPERS

Ingredients:

8 ounces Neufchâtel cheese, softened

1/2 teaspoon Mexican oregano, snipped

1/8 teaspoon garlic powder

1/8 teaspoon onion salt

1/4 teaspoon cumin powder

1/2 cup organic black beans, drained and rinsed

1/2 cup sweet corn, whole kernel

1/3 cup Monterey Jack cheese, shredded

1/2 cup panko bread crumbs

1/2 cup Mexican cheese blend cheese, shredded

2 tablespoons butter, melted

1/8 teaspoon taco seasoning

12 jalapeño peppers, cut lengthwise and seeded

1 tablespoon cilantro leaves, chopped

Instructions:

Preheat oven to 350°. Place a wire rack on a baking sheet. Spray with nonso like. Set aside. In a bowl, combine Neufchâtel cheese, Mexican oregano, garlic powder, onion salt, cumin powder, black beans, sweet corn, and Monterey Jack cheese. Mix well. Set aside. In another bowl, combine panko bread crumbs, Mexican cheese, melted butter, and taco seasoning. Mix well. Set aside. To prepare jalapeños, wear rubber gloves. Leaving the stem on, slice the upper third portion lengthwise. Discard top. Scoop out the seeds and discard. Divide filling evenly between jalapeños. Place on wire rack. Cover top of jalapeños with crumb topping. Press gently into cream cheese mixture. Bake 30-35 minutes or until tops are golden brown and jalapeños are tender. Garnish with cilantro. Serve warm.

Cheese-Stuffed Jalapeño Piggies

What’s Cooking in Gail’s Kitchen? Start Smart: Cheese-Stuffed Jalapeño Piggies! Sooo, when you’re looking at a bounty of jalapeños and you’ve already pickled several jars, what’s next? Jalapeño poppers, with a bacon twist! These fiery devils will awaken your taste buds, so it’s a good idea to cool things down a bit with dairy products. Hence the need for a melted cheese filling and a yogurt-ranch dipping sauce. My husband and I feasted on a plate of these one night, so you can too—-if you dare!

CHEESE-STUFFED JALAPEÑO PIGGIES

Ingredients:

12-14 jalapeño peppers, red or green

2 tablespoons olive oil

1/8 teaspoon garlic powder

1/8 teaspoon seasoned salt

1/2 cup cheddar cheese, shredded

3-4 mozzarella string cheese sticks

2 slices bacon, precooked and crumbled

Crushed tortilla chips

Cilantro for garnish

Instructions:

Preheat oven to 400°. Line a baking sheet with foil. Spray a wire rack with nonstick oil and place on the baking sheet. Set aside. Wash the jalapeño peppers. Pat dry. Wearing gloves, slice the top of each jalapeño vertically, removing a small section to create a well. Remove seeds and ribs. Discard. Brush each jalapeño pepper with olive oil. Sprinkle on seasonings. Place jalapeños on the wire rack with cut side down. Bake 10 minutes; then set broiler to High and broil 2-3 minutes until peppers are slightly charred. Remove from oven. Cool slightly. Using a tongs, flip them over. Divide the cheddar cheese between the jalapeño peppers. Using a kitchen shears, cut the string cheese into strips. Layer over cheddar cheese. Sprinkle the bacon crumbles over the cheese-filled jalapeños. Top with crushed tortilla chips. Broil stuffed “piggies” on High another 2-3 minutes or until the cheese is melted. Remove pan from oven and let cool slightly before transferring stuffed jalapeños to a platter. Serve with ranch salad dressing that has a dollop of Greek yogurt mixed in. Garnish with fresh cilantro.

Diablo Pepper Poppers

What’s Cooking in Gail’s Kitchen? All the Buzz: Diablo Pepper Poppers! Sometimes you need an appetizer that doesn’t come across as a flame thrower sending your guests to the nearest source of water to put out the fire. I have discovered mini sweet peppers are a great stand-in for their high intensity cousin, the jalapeño. These little jewels are a colorful sight and taste even better than they look, which is pretty appealing. The green, orange, red, and yellow “pops” of color are bursting with flavor as well. No fire extinguisher needed.

DIABLO PEPPER POPPERS

Ingredients:

12 mini sweet peppers

2 tablespoons garlic olive oil

1/8 teaspoon garlic and herb seasoning

1/8 teaspoon seasoning salt

3 green onions, snipped

7 Pepper Jack string cheese sticks

3 ounces prosciutto, deli sliced

Instructions:

Preheat oven to 400°. Line a baking sheet with foil. Spray a wire rack with nonstick spray and place on the pan. Set aside. Wash the sweet peppers. Pat dry. Slice the top of each pepper vertically, removing a small portion to create a well. Remove any seeds. Brush each pepper with the garlic olive oil. Sprinkle on seasonings. Place peppers on the wire rack with cut side down. Bake 10 minutes; then set the broiler to High and broil for 2-3 minutes until the peppers are slightly charred. Remove from oven. Cool slightly. Using a tongs, flip them over. Divide the green onion snips into the bottom of each pepper well. Using a kitchen shears, cut the string cheese to fit each pepper. Take each deli portion of prosciutto and slice it in half lengthwise. Carefully wrap the prosciutto around each filled sweet pepper and place upright on wire rack. Broil on High another 2-3 minutes or until the prosciutto gets crispy. Remove pan from oven and let cool slightly. Taking a cake tester, pierce each pepper from one side to another to make an opening. Insert a wooden pick in the opening. Now you have a finger food appetizer. Serve with herbed yogurt for dipping.
