What’s Cooking in Gail’s Kitchen?  Panchovillas!  Olé!  Who Doesn’t Love Mexican Food?  I’ve collected the best recipes from my friends’ kitchens where family secrets are passed down from generation to generation; where added spices become second nature.  And measurements are made by instinct and taste preference.  Proving that point, here’s a tasty meal thrown together from leftover pork roast.

PANCHOVILLAS

Ingredients:

1 pound pork roast, shredded

1 medium yellow onion, chopped

1 teaspoon chili powder 

1 teaspoon cumin powder

1 teaspoon red pepper flakes 

1 garlic clove

1/4 cup chopped jalapeños 

1/4 cup diced tomatoes 

2 cups tomato sauce 

2 cups refried beans

2 tablespoons butter, melted 

6-8 flour tortillas 

2 cups cheddar cheese 

Directions:

Simmer first ten ingredients, smashing a portion of the beans to keep the consistency thick.  Add more tomato sauce if necessary.  Brush the tortillas lightly with melted butter. Fill with pork and bean mixture. At this point I fold them into a burrito-style portion, seam side down.   Place in a 9×13 casserole dish. Cover tortillas with extra topping and cheddar cheese. Bake at 350° until the cheese is melted, usually about 30 minutes.  Top with sour cream and black olives to garnish.  Serve with mixed greens salad, guacamole, and crispy chips.  Add salsa for more spice.  And don’t forget the Classic Margarita!

Sheet Pan Pork Taquitos

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Sheet Pan Pork Taquitos! To season or not to season. Everyone has a basic slow cooker recipe for preparing roast pork. I like to keep mine fairly simple so, when finished, I have several options for the recipes I have in mind later on. If you’re thinking these taquitos sound too bland for your palate, simply add spices like chili powder, garlic, cumin, onion, and kosher salt during the cooking process. (Some of my friends use a prepackaged taco seasoning mix, for convenience.) You’re the chef, so you’re in charge. Make sense? Then carry on. 

SHEET PAN PORK TAQUITOS

Ingredients: 

12 corn tortillas 

3 cups pulled pork, precooked 

1 cup Mexican blend cheeses,  finely shredded

3-4 tablespoons butter, melted

Ranch dressing, for drizzling

Instructions:

Preheat oven to 400°. Spray a sheet pan with nonstick oil. Set aside. In a bowl, combine pulled pork and Mexican blend cheeses. Mix well. Warm corn tortilla shells in the microwave until malleable. Place one tortilla down on a flat surface. Fill it with pork and cheese mixture just below the center of the tortilla. Roll up the tortilla tightly and transfer it, seam side down, to the sheet pan. Repeat with remaining ingredients. Using a silicone brush, lightly oil the tops of the tortillas with melted butter. Bake 15-20 minutes, or until tortillas are crispy. Drizzle with ranch dressing. Serve with shredded lettuce, red onion, salsa, cilantro, and lime. 

Korean Pork Tacos

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Korean Pork Tacos! Chile paste is a unique condiment that gives food a fiery kick of flavor whether you’re spicing up soups and dips, or veggies and meat. Keep in mind, Gochujang has a pungent flavor a notch hotter than sriracha, without the sweetness. Personally, I like the feel of the lingering heat on the roof of my mouth. Slow cooking makes it taste marvelous when mixed with the other ingredients. Gochujang is usually found near the barbecue sauces in the grocery aisle. In case you need to find a substitute, Sriracha gets my vote. Friendly Footnote: remember to use sriracha IN the sauce rather than splashing it on top afterwards. 

KOREAN PORK TACOS 

Ingredients:

1/4 cup rice wine vinegar 

2 tablespoons soy sauce

1/2 cup gochujang 

3 tablespoons garlic, minced

3 tablespoons fresh ginger root, minced

2 tablespoons red pepper flakes 

1/2 teaspoon black pepper 

3 tablespoons sugar

3 green onions, chopped

1/2 yellow onion, chopped 

2 pounds pork loin

Instructions:

In a large bowl, combine rice wine vinegar, soy sauce, gochujang, minced garlic, minced ginger, red pepper flakes, black pepper, sugar, green onions, and yellow onions. In a slow cooker, place pork loin. Pour prepared sauce over meat. Cover. Heat on High setting for 4 hours; reduce to Low setting and cook 4 hours longer. Using two forks, shred the pork loin to mix well with the sauce. (Don’t let that yummy sauce go to waste.) Keep warm until ready to serve. Use your favorite taco shells, cheese, and fillings to make a meal. 

Jalapeño Honey Hummus

What’s Cooking in Gail’s Kitchen? Fabulous Fixings: Jalapeño Honey Hummus! I like hummus. You like hummus. We all like hummus….don’t we, generally speaking? Some say it can be a little bland; others say bone dry. I say add smooth creamy natural honey for a hot kick and spicy finish that will make it unforgettable. Before you know it, you’ll be scooping that silky texture onto all kinds of foods. Hmmm….(thinking out loud)…better make more. 

JALAPEÑO HONEY HUMMUS 

Ingredients:

2 jalapeño peppers, roasted and seeds removed 

15.5 ounce can chickpeas, drained and rinsed

2 tablespoons raw honey

1/3 cup olive oil 

Sea salt and pepper, to taste

3 tablespoons water, for consistency 

Herbs de Province, for garnish

Instructions:

Broil jalapeños until blackened and blistered on the outside, approximately 6-7 minutes. Seal the jalapeños in a plastic bag until room temperature; remove skin. In a food processor, combine jalapeños, chickpeas, and honey until puréed. Scrape down sides, as needed. As the processor is running, slowly pour in olive oil. Continue to blend until hummus is smooth. Season with sea salt and pepper using water to thin until hummus is desired consistency. Garnish with a pinch of Herbs de Provence. Serve with bbq pork, radish slices, celery spears, and pita bread.

DIY Outdoor Kitchen Meal

What’s Cooking in Gail’s Kitchen? Fabulous Fixings: DIY Outdoor Kitchen Meal! Leftovers make great meals, simply by preparing them another way. Using the outdoor kitchen makes that possible, no matter the weather. Imagine the incredible aromas filling the air with smoky curlicues. Try not to drool. The vegetables will be done shortly, retaining moisture and nutritional value, if that’s important to you. I’m all about the taste. Sometimes there’s a slight caramelization, which is actually a bonus. Are we good? Then let’s get started. 

DIY OUTDOOR KITCHEN MEAL

Ingredients: 

2 ears corn on the cob, cut in half

1 bunch asparagus spears, stalk ends snipped

1/2 pint cherry tomatoes, halved 

1 cup cooked pork tenderloin, shredded

1 tablespoon olive oil

1 tablespoon butter, room temperature 

1 teaspoon seasoning salt

Instructions:

Preheat gas grill to 400°. Drizzle olive oil over fresh asparagus spears. Place in a grill pan; sprinkle with half the seasoning salt; set aside. Rub softened butter over the corn on the cob. Sprinkle with remaining seasoning salt. Place corn on preheated grill grates. Close lid. Allow corn to char; using tongs, turning every 4 minutes to char. Kernels will be tender and juicy when pierced with a paring knife. Warm shredded pork in foil on the grill while cooking the asparagus spears in the grill pan for 5 minutes. Turn as necessary to prevent burning. Transfer all food to a platter. Serve immediately with halved cherry tomatoes. 

Pork Tenderloin Chimichanga

What’s Cooking in Gail’s Kitchen? Food With Soul: Pork Tenderloin Chimichanga! If you want to step up your game from an ordinary burrito, but really prefer the flavor of crispy fried foods, there are healthier ways to accomplish it without a deep fryer. Anyone who owns an air fryer will attest to that. I haven’t purchased this countertop convection yet, although my new kitchen does have the option on the built-in wall unit. The one time I tested it produced a charred burn mark on the wooden cutting board afterwards. The jury is still out if I’ll make another attempt at it. These chimichangas are baked in the oven and deliver golden brown crunchy results. Tried-and-True techniques go a long way in my book.

PORK TENDERLOIN CHIMICHANGA

Ingredients:

2 1/2 cups pork tenderloin, cooked and shredded

2/3 cup medium picante sauce, prepared

1/3 cup green onions

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon sea salt

8 flour tortillas

1/4 cup melted butter

1 cup Mexican blend cheeses, shredded

Lettuce, tomatoes, onions

Ranch dressing, prepared

Fresh lime wedges, for garnish

Instructions:

Preheat oven to 425°. Spray a 9”x13” baking dish with nonstick oil. Set aside. In a large skillet, combine shredded pork tenderloin, picante sauce, green onion, ground cumin, dried oregano, and sea salt. Simmer 5 minutes to heat through and allow most of the liquid to evaporate. Remove from heat. Brush both sides of a flour tortilla with melted butter. Spoon 1/3 cup meat mixture into the center; top with 2 tablespoons Mexican blend cheese. Fold 2 sides over filling; fold ends down. Place seam side down in prepared baking dish. Repeat with remaining ingredients. Bake 15 minutes or until crisp and golden brown. Serve lettuce fixings drizzled with ranch dressing. Garnish with lime wedges.

Chorizo Beef Burger

What’s Cooking in Gail’s Kitchen? Bright Ideas: Chorizo Beef Burger! It’s crazy the foods we try, simply because we have a craving that refuses to compromise. During Covid-19, many restaurants and fast-food eateries would either not open, limit drive-through options, or simply close due to illness and labor shortages. Late one night, the hubs wanted a burger for dinner. We tried 3 different places without success. The only one open was a Mexican Cantina. We masked up, entered, and were seated in the bar at an isolated table for two. That’s when he saw it……a chorizo burger was listed on the menu. I think you know the rest of the story. Once we got home, you can guess what grocery items I added to the list on the refrigerator.

CHORIZO BEEF BURGER

Ingredients:

1/2 pound bulk chorizo sausage

1 pound lean ground beef

3/4 teaspoon sea salt

1/4 teaspoon black pepper

1 teaspoon cornmeal

4 ounces Monterey Jack cheese, shredded

4 brioche buns, split

Toppings: Lettuce, Tomato, Red Onion, Cilantro, and Salsa

Instructions:

In large bowl, combine chorizo sausage, lean ground beef, sea salt, black pepper, and cornmeal. Shape mixture into 4 patties, 1/2-inch thick. Place patties on preheated grill, over medium heat. Close grill cover. Cook 6-7 minutes, per side. Flip once. A meat thermometer inserted in the center needs to read 160°F. During last 2 minutes of cooking, top each chorizo patty with shredded cheese. Place buns, cut side down, on grill. Cook until cheese is melted and buns are toasted. Remove burgers and buns from grill. Serve immediately, topped with lettuce, tomatoes, onions, cilantro, and salsa to taste.

Your Favorite Crispy Pork Gyros

What’s Cooking in Gail’s Kitchen? Time To Eat: Your Favorite Crispy Pork Gyros! When you absolutely cannot find a Greek restaurant or food truck for those amazing handheld gyros, dig your heals in and simply make it at home instead. Sure, it’s not going to be that wonderful lamb and beef combination of meat traditionally cooked on a vertical rotisserie sliced before your eyes, but then again…..beggars can’t be choosers. This recipe is pretty good, even if I do say so myself.

YOUR FAVORITE CRISPY PORK GYROS

Ingredients:

2 pound pork loin

1/4 teaspoon celery salt

1/2 teaspoon cumin powder

1/4 teaspoon garlic powder

1 teaspoon ground coriander

1/2 teaspoon oregano

1/2 teaspoon thyme

1/2 teaspoon paprika

1 teaspoon kosher salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1 1/2 cups vegetable stock

4 Greek pita breads

1 cup shredded lettuce

1 tomato, chopped

1/2 red onion, thinly sliced

4 ounces feta cheese, crumbled

Tzatziki sauce, for serving

Dill weed, for garnish

Instructions:

Preheat oven to 350°. Combine celery salt, cumin powder, garlic powder, ground coriander, oregano, thyme, paprika, kosher salt, and black pepper. Sprinkle onto wax paper; roll the pork loin in the spice mix to cover all sides. Add olive oil to a Dutch oven; heat over medium-high temperature. Add the seasoned pork loin. Sear the meat on all sides. Add the vegetable broth. Bring to a boil. Remove Dutch oven and place in the oven for 3 hours, or until pork is tender and shreds easily with a fork. In an iron skillet, warm vegetable oil over medium heat. Add about a cup of shredded pork and 1/4 cup of the vegetable broth from the pan. Fry meat, turning as necessary until it is golden brown and the juice is absorbed into the meat. Repeat with remaining pork loin. Place pita breads on a baking sheet, wrap in foil, and bake 5 minutes, or just until they are warm and pliable. To assemble, place a pita bread on a dinner plate. Add lettuce, crispy pork, chopped tomatoes, red onion slices, feta cheese crumbles, and a dollop of tzatziki sauce. Sprinkle with dill weed and serve immediately.

Gochujang Glazed Pork

What’s Cooking in Gail’s Kitchen? Time To Eat: Gochujang Glazed Pork! I like it when fellow bloggers share success stories about recipes they’ve used. It’s the best kind of testimonial for good eating, in my opinion. Judy, of Cooking With Aunt Juju*, also knows the value of letting the slow cooker do most of the work. Plus, it makes the house smell ah-mazing! The only difference I made was substituting pork loin for the beef stew meat. But you know what they say, “Two heads are better than one.” Thanks Judy for another great home-cooked meal.

GOCHUJANG GLAZED PORK

Ingredients:

2 pounds pork loin, cubed

4 scallions, sliced and separated

4 garlic cloves, minced

1/2 cup cola

3 tablespoons gochujang

3 tablespoons soy sauce

2 tablespoons brown sugar

1 tablespoon toasted sesame oil

2 teaspoons rice vinegar

Green onions, for garnish

Instructions:

Combine cubed pork loin, scallions, and minced garlic in an 8-quart crockpot. Combine cola, gochujang, soy sauce, brown sugar, and sesame oil. Whisk well. Pour over meat; coat well. Cover the crockpot and cook on low heat for 8 hours. Stir well; remove pork loin cubes to a platter. Gently shred the chunks. Pour the remaining sauce into a skillet and simmer over medium heat. Cook, stirring occasionally, for 10 minutes, or until thickened. Add the rice vinegar and platter of shredded pork. Simmer for 5 minutes, stirring occasionally, until the meat is coated and sauce turns thick and glossy. Transfer to plates; garnish with green onion snips and toasted sesame seeds, as desired. Serve with steamed rice.
