Rusty’s Raw Bar & Grill in Estero, Florida

Dining Outside the Home: Rusty’s Raw Bar & Grill in Estero, Florida! Just because a restaurant tells you they offer raw seafood doesn’t necessarily mean you have to order it. They do offer American fare that satisfies the burger-and-fries crowd. This cozy sports bar hangout seems to attract the “regulars” for their favorite brew as well as social connections for casual encounters. Face it, people enjoy small talk while viewing a game. It’s relaxing and comfortable. It’s actually fun to watch the bartender create drinks or talk about her current sunburn or newest tattoo. Alcohol can be a perk, and the comfort food is a bonus. Plus, a pause in the day has advantages. Attitude adjustments come free. If you drive by a place and see a row of cars and trucks in the parking lot, odds are it’s probably a pretty decent place and worth checking out. I did.

Mr. Big Fish Seafood Grill in Naples, Florida

Dining Outside the Home: Mr. Big Fish Seafood Grill in Naples, Florida! When a city thrives bordering on the Gulf of Mexico, seafood restaurants are a natural choice. One glance at the menu brings assurance that the fish is either freshly caught by local fishermen or flown-in daily. The casual vibe invites patrons to gather around the bar, choose a table for two, or dine alfresco surrounded by activity. Either way, the wait staff is attentive. Specialty cocktails, like the Ultimate Bloody Mary, include fresh garnishes for snacking. Tasty. As for the menu selections…raw, seared, grilled, or smoked, each entrée is prepared to perfection. The Chilean Sea Bass is critically acclaimed and reasonably priced. You should try it. And before you leave, snap a photo of the big fish in the waiting area. It’s postcard-worthy.

Zestful Ahi Poke

What’s Cooking in Gail’s Kitchen? The Next Step: Zestful Ahi Poke! Have you noticed all the rage about eating raw tuna? Whether it’s an appetizer or poke bowl, ahi seems to be the star attraction. If you’ve never tried it, perhaps it takes some getting used to. After all, the texture is totally different from cooked fish. When saturated in a spicy sesame soy marinade, I found it absolutely irresistible. Then served with crunchy wonton crisps, taro chips (my fav), or corn tortilla chips it evolves from a curiosity to a craving. Just so you know, premium ahi tuna steaks are now available in the freezer aisle for those, like me, who are landlocked part of the year.

ZESTFUL AHI POKE

Ingredients:

2 ahi tuna steaks, premium grade

3 tablespoons soy sauce

1 teaspoon sesame oil

1 teaspoon chili garlic sauce

1 tablespoon toasted sesame seeds

1/2 cup green onion, chopped

Wonton Crisps, Taro Chips, or Corn Tortilla Chips

Instructions:

Pat ahi tuna steaks dry with a paper towel. Cut into 1/2” cubes. Transfer to a bowl. Add soy sauce, sesame oil, chili garlic sauce, toasted sesame seeds, and chopped green onions. Gently toss to coat. Cover and refrigerate one hour. Serve as an appetizer with choice of chips.

Raw Honey Peanut Butter Cookies

What’s Cooking in Gail’s Kitchen? Splurge-Worthy Goodness: Raw Honey Peanut Butter Cookies! No baking required. Wait, whaaat? These bite-size morsels are not only healthy as an energy snack, they can be made in a matter of minutes with ingredients you probably already have on hand in your pantry. So, what exactly is raw honey, you wonder. Most beekeepers will tell you it simply means the honey is strained right before it is bottled. That translates to nature’s sweetness with all its beneficial nutrients and antioxidants. By eliminating the intense processing stage of heat filtration, what you get instead is honey that comes from the bee hive to your home. No extra sugar is added either. To make sure you are getting raw honey, always check the label.

RAW HONEY PEANUT BUTTER COOKIES

Ingredients:

1/3 cup raw honey

1/2 cup plus 2 tablespoons natural peanut butter, creamy

1 tablespoon vegetable oil

2 teaspoons vanilla extract

2 1/2 cups whole grain oats

Sprinkles, for garnish

Instructions:

Line a baking sheet with waxed paper. Pour sprinkles into a dish. Set aside. In a microwave-safe bowl, combine raw honey, creamy peanut butter, and vegetable oil. Microwave on High for 30 seconds. Stir. Repeat. Add vanilla extract. Mix well. Add whole grain oats. Stir to incorporate until cookie dough forms a large ball. Using a cookie scoop, press dough to make bite-size uniform cookies. Dip into sprinkles. Place on prepared baking sheet. Cookies will “set up” on their own. Transfer to a covered container for storage.
