Turnips & Roasted Sweet Potatoes

What’s Cooking in Gail’s Kitchen? Turnips and Roasted Sweet Potatoes! Here’s a little twist on adding turnips to your menu. When seasoned and mixed with other root vegetables, like sweet potatoes, the somewhat bland flavor of the turnip becomes robust and savory. You’ll find yourself serving them more often. 

TURNIPS & ROASTED SWEET POTATOES 

Ingredients:

3 medium sweet potatoes, peeled and cut into wedges 

4 medium turnips, peeled and cut into chunks

1/4 cup extra virgin olive oil

1/2 teaspoon seasoned salt

1/4 teaspoon white pepper

1/4 teaspoon cayenne pepper

1/8 teaspoon garlic powder

Instructions:

Preheat oven to 425°. In a large bowl, combine all ingredients. Mix well until vegetables are evenly coated. Marinate in the refrigerator for one hour. Spray a baking sheet with non-stick spray. Spread vegetables into single layer. Avoid contact. Bake about 40 minutes or until tender and slightly browned. 

Serving suggestion:  For a creamy dip, mix Greek yogurt with fresh onion chives.  It will seem like a mild onion dip, but with a much lighter flavor. 

Ginger Liqueur

What’s Cooking in Gail’s Kitchen? Start Smart: Ginger Liqueur! There’s nothing worse than enjoying a specialty crafted cocktail on a remote tropical island and then returning home with a craving to have it again. That happened to me about 4,500 miles ago. What’s a girl to do? “Why not make it yourself?” my husband quipped. “Sure…easy for you to say”, I responded. Well, long story short, as long as he agreed to help me as the “taste tester”, it was worth a shot. Between the two of us, I’m pretty sure we came up with a winning combination for my new fav, Ginger Liqueur Martini. Cheers!

GINGER LIQUEUR

Ingredients:

2 cups vodka

1/2 cup sugar

1/4 cup ginger root, diced

1/2 vanilla bean, sliced horizontally and seeds scraped

Orange peel

Instructions:

Take a quart-size jar. Combine vodka, sugar, ginger root, vanilla bean, and orange peel. Stir well to dissolve sugar. Place jar, away from sunlight, in a kitchen cabinet. Swirl the jar to stir the contents every morning and night for one week. Remove the vanilla bean. Repeat swirling twice a day for 3 more days. Strain solids through a fine wire mesh strainer. Filter remaining liquid again through two coffee filters until no solids remain. Bottle the ginger liqueur. Allow it to “mellow” for another day. Store away from sunlight.

Ginger Liqueur Martini:

4 ounces vodka, chilled

1 ounce ginger liqueur

Garnish with crystallized ginger

Instructions:

Place martini glass in the freezer to chill. Remove glass and add chilled vodka. Set aside. Fill a shaker with ice cubes. Pour in ginger liqueur. Allow it to chill for one minute. Shake. Strain the ginger liqueur over vodka into the martini glass. Garnish with crystallized ginger.

Yucca Crispy Sticks

What’s Cooking in Gail’s Kitchen? All the Buzz: Yucca Crispy Sticks! From time to time I get a little help from my friends. Recently The Dancing Herbalist* suggested I share a post on the yucca root with my readers. To be honest, I have yucca plants growing all over my yard, and while I enjoy their hardy green foliage year round, and their beautiful white fan of blossoms every summer, I never gave them a second thought as a food source. Apparently they contain dietary fiber advantageous in controlling blood sugar and cholesterol levels in subtropical regions. Tasting very much like a potato, with roots that simulate a sweet potato, the yucca root is an healthy option loaded with antioxidants. I admit, I learn something new every day.

YUCCA CRISPY STICKS

Ingredients:

1 large yucca, peeled and cut into sticks

1-2 tablespoons olive oil

1/2 teaspoon chili powder

1 teaspoon seasoned salt

1/8 teaspoon cracked black pepper

1/2 cup Panko seasoned bread crumbs

1/3 cup Italian seasoned bread crumbs, finely ground

1/4 cup Parmesan cheese, grated

Instructions:

Preheat oven to 425°. Peel yucca with vegetable peeler to remove waxy skin. Cut into sticks, as uniform in thickness as possible. Do not make too thin. Place in a 2-quart pan with enough water to cover. Bring to boil. Cook 5-7 minutes. Remove and drain immediately. Submerge in an ice bath. Transfer drained sticks to a large bowl. Coat with olive oil and chili pepper, seasoned salt, and cracked black pepper. Mix together panko crumbs, Italian seasoned bread crumbs, and Parmesan cheese. Spread on waxed paper. Roll each seasoned yucca stick in the crust mixture to coat and line in a single layer on a wire rack nested on a baking sheet. Bake 10 minutes, turn and bake 5 minutes longer until golden brown. Serve warm with spicy mayo.

Ingredients for Spicy Mayo:

3 tablespoons mayonnaise

1-2 tablespoons sriracha sauce

1 teaspoon lemon juice

1 teaspoon soy sauce

1 teaspoon chili pepper rings

Instructions:

Combine mayonnaise, sriracha sauce, lemon juice, and soy sauce in a bowl. Mix well until smooth. Garnish with chili pepper rings.
