Ingredients:

3 cups baby cucumbers, skin on, sliced

1 cup radishes, thinly sliced

2 tablespoons fresh dill weed

2 tablespoons olive oil

2 tablespoons lemon juice

1/4 teaspoon sea salt

1/8 teaspoon black pepper

Instructions:

In a mixing bowl, combine sliced baby cucumbers and thinly sliced radishes. Gently toss. Add fresh dill. Set aside. Either way, this no-cook meal can be ready in a few minutes giving you more time to sort through the day’s mail and play with the family dog.

MEDITERRANEAN CHICKPEA SALAD

Ingredients:

2 tablespoons olive oil

2 tablespoons red wine vinegar

1/8 teaspoon garlic powder

1 teaspoon oregano

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 red onion, thinly sliced

1 cup celery tops with leaves, chopped

1 cup cherry tomatoes, halved

2 baby seedless cucumbers, sliced

3 mini yellow sweet peppers, sliced

1 15-ounce can cooked chickpeas, rinsed and drained, skins removed

Instructions:

To make the dressing, whisk together olive oil, red wine vinegar, garlic powder, oregano, sea salt, and black pepper. Set aside. At the time I served it with celery sticks, chicken-flavored crackers, and salty potato chips. I remember how awed my girlfriend was as she practically inhaled one scoop after another. She simply couldn’t believe egg salad was a finger food instead of a midday meal layered between two pieces of sandwich bread. It’s amazing what you can serve on a budget.

EGG SALAD CHIP DIP

Ingredients:

4 hard-boiled eggs, peeled and coarsely chopped

1/2 cup mayonnaise

2 green onions, snipped

1/4 teaspoon sea salt

1/8 teaspoon cracked black pepper

Paprika, for garnish

Instructions:

In a mixing bowl, mash the hard-boiled eggs, using a fork. Fold in mayonnaise, green onion snips, sea salt, and cracked black pepper. Stir until well blended. Transfer to a serving dish. Potato salad made with mayonnaise and served cold or potato salad made with vinegar and served warm? One is creamy with hard-boiled eggs, celery, and pickles while the other is tangy with bacon, mustard, and sugar. What a dilemma. I guess it depends on the craving that drives your appetite on any given day. Whatever you choose, in my opinion, potato salad is not just for summer anymore.

WARM POTATO SALAD

Ingredients:

2 pounds potatoes

1 teaspoon kosher salt

12 ounces applewood smoked bacon

1/3 cup apple cider vinegar

3 tablespoons sugar

1 tablespoon Dijon mustard

1 tablespoon onions, finely chopped

1/4 teaspoon celery seeds

Fresh parsley, for garnish

Instructions:

Scrub potatoes and cut into quarters. Place in a large pot. Cover potatoes with cold water and sprinkle with kosher salt. Bring to a boil; reduce heat to a simmer for 20 minutes, or until potatoes are fork tender. Drain the water. Allow potatoes to air dry for a few minutes. Cut potatoes into bite-size pieces. Set aside. In another skillet over medium heat, cut bacon into 1-inch pieces. Cook, stirring occasionally, until crispy. Transfer bacon, with a slotted spoon, to a paper towel-lined plate. Warm the reserve bacon drippings (about 1/4 cup) over Low heat. Slowly stir in apple cider vinegar, sugar, and Dijon mustard until combined. Add chopped onions and celery seeds. Cook for one minute longer. Remove the pan from heat and toss in the potatoes. Mix gently. Fold in the cooked bacon. Transfer the warm potato salad to a serving bowl. Garnish with chopped parsley.

It’s actually the only part of the fruit that can be eaten. The naturally sweet and slightly tart flavor of an aril almost tastes like a piece of candy. They look incredibly enticing when sprinkled on a leafy salad. Wouldn’t you agree?

POM POM SALAD

Ingredients:

1 lime, juice of

1 tablespoon olive oil

1 tablespoon raw honey

1/8 teaspoon kosher salt

1 smidgen cinnamon

1/8 teaspoon chili-lime seasoning

25 baby spinach leaves, chopped

6 navel oranges, peeled and sliced into rounds

1/4 cup pomegranate arils

Instructions:

To make the dressing, in a small bowl combine the lime juice, olive oil, raw honey, kosher salt, cinnamon, and chili-lime seasoning. Whisk until smooth. Set aside. To assemble salad, place baby spinach leaves on a large platter or individual salad plates. Arrange orange slices on spinach. Drop pomegranate arils on top. Drizzle the prepared dressing over salad. Serve slightly chilled.

I get crazy happy when I discover it, as someone who loves home-cooking. Not only are there a dozen variations on egg salad, but each seems to add a unique twist. This recipe is pretty basic so you can get creative from here. Think avocado, dill, bacon, or red pepper flakes. Looks like I need to buy more eggs. Happy Boiling!

X-CELLENT EGG SALAD SLIDERS

Ingredients:

8 eggs, hard boiled and peeled

1/4 cup mayonnaise

1/4 cup dill pickle relish

1 tablespoon red onion, diced

1 tablespoon yellow mustard

1/4 teaspoon sea salt

8 slider buns

4 romaine lettuce leaves

2 tomatoes, sliced

1 tablespoon Everything But Bagel seasoning

Instructions:

In a medium bowl, whisk together mayonnaise, dill pickle relish, red onion, yellow mustard, and sea salt. Chop the eggs and add to the bowl. Stir gently until well blended. Cover and chill in the refrigerator one hour. Assemble sliders using the buns, egg salad, romaine lettuce leaves, and tomato slices. Sprinkle with Everything But Bagel seasoning. Serve.
