What’s Cooking in Gail’s Kitchen? Sunshine Eats: X-tra Virgin Olive Oil Dipping Sauce! It’s no secret I’m a bread-lover. Just like chocolate, wine, and cheese….the key is moderation. I look to the French culture for validation. Their motto seems to be “use quality ingredients and fresh foods” for the best flavor. And I believe it. During my visit to Paris and the south of France, I noticed open markets everywhere and held often. Preservatives are pretty much absent. Nutrition rules. Grow an herb garden. Crush dried herbs to release flavor. That being said, go ahead and reach for the bread basket, just don’t eat the whole thing!
X-TRA VIRGIN OLIVE OIL DIPPING SAUCE
1/2 cup extra virgin olive oil

1/8 teaspoon garlic powder

1/8 teaspoon ground black pepper 

1/4 teaspoon parsley

1/4 teaspoon oregano 

1/4 teaspoon marjoram 

1/4 teaspoon basil 

1/2 teaspoon kosher salt

1 tablespoon parmesan cheese, grated

1 tablespoon red wine or balsamic vinegar 

Bakery baguette, sliced
Instructions:

Pour olive oil into a measuring cup. Add garlic powder, black pepper, parsley, oregano, marjoram, basil, and kosher salt. Whisk to blend flavors. Add parmesan cheese. Stir. Marinate at room temperature for one hour to enhance flavors. Stir and pour onto a plate or shallow bowl. “Dot” oil with balsamic vinegar. Serve with baguette bread.

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Jumping Chicken Noodle Bowl! I love it when I can go to the kitchen and use ingredients I already have on hand. The “make ahead” Vietnamese Dipping Sauce* (nuoc cham) is a multi-purpose staple that livens up Asian cuisine nicely. By making supper a noodle bowl with prepackaged veggies and spicy chicken, the blend of flavors quickly satisfy hunger pangs while providing comfort at the same time. 
JUMPING CHICKEN NOODLE BOWL 
Ingredients: 

8 ounces boneless chicken breasts, cut into 1-inch strips

1 tablespoon olive oil

1/4 cup soybean sauce

1 teaspoon red pepper flakes

1 bunch broccoli florets, cooked and drained

1 cup blend of shredded cabbage and carrots

1 green onion, chopped

1/3 cup cashew pieces

1 cup Vietnamese Dipping Sauce*
Instructions:

Heat a skillet over medium temperature. Add olive oil and chicken strips, single layer. Cook 3 minutes per side until golden brown and cooked through. Reduce heat to low. Add soybean sauce and red pepper flakes. Cook 10 minutes longer until meat is tender and liquid is absorbed. Arrange chicken strips, rice noodles, broccoli florets, and cabbage-carrot blend in a shallow bowl. Top with chopped green onions and cashew pieces. Cover with Vietnamese Dipping Sauce*, to taste. Serve immediately.

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Island Coconut Shrimp! After making this popular seafood appetizer at home, I realized what a bargain it was to do it myself. No more puny orders of 4 or 5 shrimp to share like when we go to a restaurant. lol. I’m sure my husband appreciates that little detail. Every ingredient was already on hand in my kitchen, making it a breeze. If you’re a shrimp-lover, like I am, put this recipe in your file entitled, “My Favorites!” 
ISLAND COCONUT SHRIMP 
Ingredients:

1 pound frozen shrimp, thawed with tails on

1/3 cup coconut flour

1/2 teaspoon sea salt

1/2 teaspoon cracked black pepper

2 eggs, beaten

1/2 cup Panko bread crumbs

1/2 cup shredded coconut, sweetened

Vegetable oil for frying

Jezebel Sauce for dipping*

Fresh Pineapple chunks
Instructions:

Combine coconut flour, sea salt, and cracked black pepper on a sheet of waxed paper. Set aside. In a shallow dish, beat the eggs until blended. Set aside. In a bowl, mix together Panko bread crumbs and shredded coconut. Set aside. Working one at a time, dust the shrimp with the flour mixture. Dip the flour-coated shrimp in the egg batter, then dredge it in the coconut mixture. Coat well. Place the shrimp on a platter. Repeat until all shrimp have been breaded. Using an iron skillet, add enough vegetable oil to cover the entire bottom of the pan. Heat oil on medium heat. Working in batches if 5-6 shrimp, fry the coconut shrimp 2 minutes per side until golden brown. Watch carefully. Remove shrimp and place on a paper towel-lined platter. Repeat until all shrimp have been fried. Serve on skewers with Jezebel Sauce* and pineapple chunks.

What’s Cooking in Gail’s Kitchen? Something to Savor: Wonton Cheese Bites! Whenever I visit a Chinese Buffet, I practically make a pig of myself nibbling on those wonderful cream cheese-filled wontons. So, I picked up a package of wonton wrappers at the grocery store and decided it was time to make a batch at home. It’s so easy, my grandkids could do it, supervised of course. The results were delicious! 
WONTON CHEESE BITES
Ingredients:

8 ounces Neufchâtel cheese

2 green onions, chopped

1 tablespoon sriracha hot sauce

1 egg

1/2 cup water

24 wonton wrappers 

Vegetable oil for frying
Instructions:

Combine softened Neufchâtel cheese, sriracha hot sauce, and green onion pieces. Mix well. Set aside. In another bowl combine the egg and water. Mix well. Set aside. One at a time, assemble the wontons. Scoop 1 teaspoon of cream cheese mixture near one corner of a wonton wrapper. Line the edges with egg wash by dipping your finger into it and “painting” the egg wash around the wrapper. Fold the wrapper on a diagonal and gently finger press the seams together. If necessary, dip your finger back in the egg wash to moisten the wrapper so it seals completely, eliminating any air pockets. (This could cause it to burst.) Bring the 2 opposite points of the triangle together to form a bishop’s hat. Apply more egg wash onto a tip, and press to seal. Curl back the top point to resemble a peaked cap. Keep the filled wontons under plastic wrap on a baking sheet to avoid drying out before frying. Heat oil for frying to 350°. Carefully fry a few wontons at a time, until golden brown and crispy. Serve with a sauce for dipping.

What’s Cooking in Gail’s Kitchen? Something to Savor: Vietnamese Dipping Sauce! Like any good dish, the sauce can make or break it. Some like it sweet and mild, others prefer hot and tangy. As you pull everything together, don’t be shy about taking a taste test. If you prefer less sweetness, adjust accordingly. Do the same to crank up the heat a notch or two. I took the advice from a friend of mine who puts this sauce on everything from spring rolls to noodles to salads to fish. It’s amazing!
VIETNAMESE DIPPING SAUCE
Ingredients:

1 cup water

1 cup rice vinegar 

1 cup fish sauce

2 cups sugar

10 red chili peppers, chopped fine

1 clove garlic, crushed
Instructions:

Combine water, rice vinegar, fish sauce, sugar, chili peppers, and garlic in a pan over medium-high heat. Stir to dissolve sugar. Bring to a boil; reduce heat and cook 5 minutes, stirring occasionally. Cool. Store in a covered container in the refrigerator.

What’s Cooking in Gail’s Kitchen? Something to Savor: Jellylike Jezebel Sauce! I first heard about this sassy southern sauce with a spicy kick from fellow blogger, Camellia.* She piqued my interest since I sometimes crave the heat of horseradish to liven up ordinary foods. Talk about eye-popping sizzle! Yes, Ma’am! Then recently my husband and I travelled to South Carolina where I had a first-hand opportunity to taste it at a waterfront restaurant there. One bite of Coconut Shrimp dipped in Jezebel Sauce aroused my taste buds and the rest was history. Bless your heart, Camellia!
JELLYLIKE JEZEBEL SAUCE
Ingredients:

18-ounce apple jelly

13-ounce jar apricot preserves 

8-ounce can crushed pineapple, drained

8-ounce jar creamy horseradish, double strength 

2 tablespoons dry mustard

2 teaspoons black cracked pepper
Instructions:

Warm apple jelly in microwave for 30 seconds. Combine apple juice, apricot preserves, crushed pineapple, Creamy horseradish, dry mustard, and cracked black pepper. Stir to blend well. Pour into jars. Chill one hour to enhance flavors. Store in the refrigerator.

Irish Soda Bread with Whiskey Sauce

 In honor of an Irish tradition, this classic staple is made with simple ingredients. The hard crust and dense center is very filling and meant to be eaten often with meals. The sign of the cross on top symbolized protection of the family. Since yeast is not used, preparation comes easily and on short notice for unexpected guests who pop in. Make this bread today and the aromas linger to keep your home smelling nice in the days ahead. 
IRISH SODA BREAD WITH WHISKEY GLAZE
Ingredients:

1 cup raisins 

1/2 cup Irish Whiskey, or water

1/4 teaspoon cinnamon 

2 1/2 cups flour

2 tablespoons sugar

1 teaspoon baking soda

1 teaspoon baking powder 

1/2 teaspoon salt

3 tablespoons butter, softened 

1/2 cup buttermilk 
Irish Whiskey Glaze:

1 1/2 cups powdered sugar

1 teaspoon butter, softened 

3 teaspoons Irish Whiskey*

*For nonalcoholic glaze, substitute with 1/4 teaspoon vanilla and 2 1/2 teaspoons milk. 
Instructions:

Preheat oven to 375°. Grease baking sheet. In a small saucepan, combine raisins, Irish whiskey or water, and cinnamon. Bring to a boil, stirring occasionally, and then reduce to a simmer until the raisins are plump and the liquid is almost evaporated. Remove from heat. Do not drain. In a mixing bowl, combine flour, sugar, baking soda, baking powder, and salt. Cut butter into flour mixture until it resembles fine crumbs. Add raisins plus liquid. Stir to blend. Gradually stir in buttermilk until the dough pulls away from the side of the bowl. Turn onto a lightly floured surface and knead 2 minutes until smooth. Shape into a round loaf. Transfer to baking sheet. Cut an “X” in the top before baking. Bake 35 minutes or until golden brown. While the bread is is in the oven, combine powdered sugar, butter, and Irish whiskey. Stir until creamy. When the bread is finished, brush with glaze. Serve warm.

Dining Outside the Home: Oasis on the Beach in Kapaa, Kauai!  Warm up to the spice in Fresh Fish Tacos. After all, you’re at the beach and the fish doesn’t get any fresher than this. Ask the waiter for the special condiment caddy. Among others, you’ll get a trio of Hawaiian Chili Pepper Sauces for a gratifying south-of-the-border taste extravaganza. These sauces are made locally by the Kauai Juice Company in the heart of Kapaa. Sample between the Chocolate Habanero, the Kiawe Smoked, and the Mango Garlic Ghost. Trust me, you’ll know. The grilled flour tortillas come with shredded cabbage and an avocado mousse to balance out the heat. Go strong…or go home!

What’s cooking in Gail’s Kitchen? Stay tuned and you’re about to find out. It’s as simple as A-B-C. One of my passions is being at home in my own country kitchen. I love to cook, and my husband loves that I do it often. Now more than ever, since I am retired, I relish the thought of creating something delicious from scratch. I adore time-honored traditions using tried-and-true recipes. Yet, I often never think twice about tweaking old favorites or modifying others to suit the inner craving of the moment. Most of the recipes serve 2-4 people, but can be altered in any direction. The leftovers are golden morsels to be eaten again later or shared with others. And I love to share.
