Ingredients:

1 tablespoon olive oil

1 tablespoon butter

2 sweet onions, chopped

1/2 teaspoon sea salt

1/2 teaspoon black pepper

2 tablespoons agave nectar

1/4 teaspoon garlic powder

1/2 teaspoon Worcestershire sauce

4 ounces Neufchâtel cheese, room temperature

1/2 cup Greek yogurt

1 green onion, chopped

Instructions:

In a large skillet over medium heat, warm olive oil and butter. Stir in chopped onions, sea salt, and black pepper. Stir to coat. Cover and cook until onions are deep golden, about 30 minutes. TORTELLINI SOUP

Ingredients:

1 pound chorizo sausage, ground

1 tablespoon olive oil

1/2 cup sweet onion, chopped

1/3 cup green pepper, diced

28-ounce can Roma tomatoes, crushed

1/2 teaspoon garlic powder

1 teaspoon sea salt

1/8 teaspoon black pepper

1/4 teaspoon oregano

1/4 teaspoon basil

1/4 teaspoon marjoram

14 ounces vegetable broth

8.8 ounce package porcini mushroom tortellini

1 cup fresh spinach leaves, torn

Parmesan cheese for garnish

Instructions:

Brown chorizo sausage until fully cooked. Meat will be crumbly. Drain well. Set aside. In a large skillet over medium-high heat, combine olive oil, chopped onions, and diced green peppers. Cook until soft. Add crumbled chorizo. Stir. Add Roma tomatoes, garlic powder, sea salt, black pepper, oregano, basil, and marjoram. Stir well to mix ingredients. Add vegetable broth and bring to a boil. Reduce heat, cover, and simmer 30 minutes. Gently fold in tortellini and spinach. Cover and simmer 10 minutes longer until tortellini is tender. Ladle into bowls. Garnish with shredded parmesan cheese. Serve with crostini.

Korean Pork Tacos

Be creative. I like corn tortillas so I transformed an ordinary pork loin into slightly hot Korean tacos. Forego the kimchi and traditional greens by substituting with crispy broccoli strips and shredded carrots. Fresh cilantro and green onions add zest, not heat. Trust me, this recipe is not “burn your lips off” hot, it’s just more balanced between flavor and spice.

KOREAN PORK TACOS

Ingredients:

1 pound pork loin, cut into chunks

2 tablespoons vegetable oil

2 tablespoons rice wine vinegar

1 tablespoon soy sauce

1/4 cup ground fresh chili paste

1 tablespoon dried garlic

1/2 teaspoon ginger

1 tablespoon red pepper flakes

1/4 teaspoon black pepper

1 tablespoon sugar

2 green onions, snipped

1/4 yellow onion, chopped

Corn tortillas, warmed

10-ounce bag broccoli and carrot slaw

3 tablespoons mayonnaise

Fresh cilantro

Instructions:

Combine rice wine vinegar, soy sauce, chili paste, dried garlic, ginger, red pepper flakes, black pepper, sugar, green onions, and yellow onions in a bowl. Add pork chunks, mixing well to coat. Transfer to a ziplock bag, seal, and marinate for 2-4 hours. Heat vegetable oil in an iron skillet over medium-high heat. Cook pork 5 minutes, or until lightly browned. Be sure the meat is no longer pink in the center. Lower heat and shred pork with two forks. Simmer to absorb liquid to enhance flavor. For coleslaw, mix broccoli and carrot blend with mayonnaise. Refrigerate for 20 minutes. Fill bottom half of corn tortillas with coleslaw. Top with shredded pork. Garnish with fresh cilantro.

TUSCAN TOMATO BISQUE

Ingredients:

6-8 Roma tomatoes, halved lengthwise

1 tablespoon kosher salt

1 teaspoon olive oil

1 sweet onion, chopped

1 garlic clove, minced

1/4 teaspoon paprika

1/4 teaspoon oregano

1/4 teaspoon marjoram

1/4 teaspoon basil

1 cup water

Fresh basil leaves

Instructions:

Preheat oven to 425°. Line baking sheet with foil. Arrange tomatoes, cut side up. Sprinkle with kosher salt. Roast tomatoes until they are soft, approximately 30 minutes. In a large saucepan over medium-high heat, warm olive oil. Sauté onion and garlic until fragrant and soft, about 3 minutes. Reduce heat to low, cover, and cook 8 minutes longer. Add paprika, oregano, marjoram, and basil. Increase heat to medium-high and add roasted tomatoes. Add water. Stir. Reduce heat slightly to medium, cover, and simmer for another 20-25 minutes. Remove from heat. Carefully transfer portions to a food processor. Pulse tomatoes until somewhat smooth. Repeat. Transfer soup back into the pan to reheat. Divide tomato bisque into soup bowls. Slow-cooked and simmered to perfection, stewed tomatoes are the secret ingredient for tailgating chili, flavorful stews, and Italian pasta dishes. Go ahead, score big with the best-tasting slightly sweet firm texture of harvest stewed tomatoes.

ITALIAN STEWED TOMATOES

Ingredients:

19-20 Roma tomatoes

1 tablespoon kosher salt

1 tablespoon agave nectar

1/2 teaspoon parsley

1/2 teaspoon oregano

1/2 teaspoon basil

1/2 teaspoon marjoram

1/2 teaspoon garlic powder

1 green pepper, chopped

Instructions:

Make a small X in the stem end of each Roma tomato. Bring a large pot of water to boil. Drop the tomatoes into the boiling water for one minute. Using a slotted spoon, transfer the tomatoes to a bowl of ice water for an ice bath. When the tomatoes are cool enough to handle, remove the skins and discard. Chop the tomatoes, removing the core, and place tomatoes in a large skillet. Add kosher salt, agave nectar, parsley, oregano, basil, marjoram, garlic powder, and green pepper. Simmer for 30 minutes. Serve fresh or freeze for later.

By forming an irregular pie crust, it conjures images of the bucolic countryside we often yearn for in an unpolished way. This is how plain country kitchens capture that homey feeling. You can, too. Indeed, the Buttered Plum Galette is as delicious as it sounds.

BUTTERED PLUM GALETTE

Ingredients for Crust:

1/3 cup plus 1 tablespoon butter, cold

1 cup flour

1/2 teaspoon sea salt

2 tablespoons ice water

Ingredients for Plum Filling:

4 medium-size plums, stone removed and sliced thin

1/3-1/2 cup mulberries, or blackberries

Scant lemon juice

1/4 cup sugar

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon

1/8 teaspoon cardamom

1/3 cup plum jam, slightly warmed

3 tablespoons butter

1 egg yolk

Instructions:

Recipe makes two individual galettes. Preheat oven to 425°. Using a food processor, pulse cold butter, flour, and salt to the size of small peas. Sprinkle in ice water one tablespoon at a time until dough forms a ball. Wrap the dough in plastic wrap and refrigerate for 1/2 hour. Remove wrap and place dough on a lightly floured surface. Cut in half. Roll each half into an 8” circle. Place on a parchment-lined baking sheet. Beginning in the center, spiral plums like a fan. Be sure to leave a border. Top with berries. Fold edges of dough toward the center, creating a rustic crust. Press gently to seal. Repeat for second galette. Sprinkle fruit with lemon juice. Cover fruit with sugar, nutmeg, cinnamon, and cardamom. Spread plum jam over fruit. Dot with butter. Whisk together egg yolk and a little water. Brush the egg wash along the edges of the dough. Bake 10 minutes. Reduce oven temperature to 350° but do not remove galettes. Bake an additional 45 minutes until lightly browned. Transfer the buttered plum galettes from the baking sheet by lifting with the parchment paper. Cool on wire rack to keep the bottoms from getting soggy. Serve warm with ice cream or whipped cream.

VEGAN BLACK BEAN STEW

Ingredients:

2 tablespoons olive oil

2 large carrots, chopped

2 stalks celery, sliced

1 sweet onion, diced

1 teaspoon seasoned salt

1/8 teaspoon black pepper

1/4 cup tomato paste

1/2 teaspoon garlic powder

1 1/2 teaspoon cumin

3 cups vegetable broth

45 ounces black beans, with liquid

1 cup sweet corn

Bell Pepper rings

Fresh Cilantro

Instructions:

In a large skillet over medium heat, warm olive oil. Add chopped carrots, sliced celery, and sweet onion. Sprinkle with seasoned salt and black pepper. Cook 8-10 minutes, stirring occasionally. Add tomato paste, garlic powder, and cumin. Cook 2 minutes longer until tomato paste turns brownish. Add 1/2 cup vegetable broth. Stir to combine. Transfer skillet mixture to a crockpot. Add black beans, sweet corn, and remaining vegetable broth. Stir well. Cover and cook on High for 4 hours or Low for 6 hours. Serve heaping bowls with bell pepper rings and cilantro to garnish.

By substituting today’s version of that classic French dish with shrimp, it appeals to a more conservative palate. Not only will it satisfy the shrimp-lover in your family, but it’s a little easier on the pocketbook as well. Face it, shrimp is readily available and pretty economical. Combine it with gooey melted cheese and it can make children finish their chores or hypnotize a husband into tackling that “Honey-Do List”. Hurray for shrimp!

SHRIMP-CARGOT

Ingredients:

12 frozen precooked shrimp, thawed

1 tablespoon olive oil

2 tablespoons butter

1/4 teaspoon garlic powder

1 teaspoon seafood spice blend

1/8 teaspoon red pepper flakes

Sea salt and pepper, to taste

1/4 cup dry white wine

1 cup Havarti cheese with dill, shaved

Garnish with fresh chives

Instructions:

Preheat oven to 350°. In a large skillet over medium heat, add olive oil and butter. Do not scorch. Transfer shrimp to skillet in a single layer. Sprinkle with garlic powder, seafood spice blend, red pepper flakes, sea salt, and pepper. Brown shrimp 1 minute, turn and brown 1 minute longer. Add white wine, scraping brown bits from the bottom of the pan. Remove from heat. Transfer mixture to a shallow ovenproof dish. Cover shrimp with shaved Havarti cheese. Bake 15-20 minutes until hot and cheese is melted. Remove from oven. Garnish with fresh chives. Serve with crusty bread or toast points.

Quinoa BLTE Sandwich

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Quinoa BLTE Sandwich! What exactly is quinoa; does anyone know for sure? I took a trip down Wikipedia Lane and discovered “it is an experimental crop in NASA’s Controlled Ecological Life Support System for long-duration human occupied space flights.” It’s also gluten-free and easy to digest. That’s pretty important stuff in my book. Oh yeah, it’s been around for human consumption for at least 3,000 years. Maybe it’s time to give it a whirl.

QUINOA BLTE SANDWICH

Ingredients:

2 slices organic quinoa multigrain bread, toasted

1-2 tablespoons mayonnaise

2 slices tomato

2 romaine lettuce leaves

2-4 slices thick bacon, cooked crisp

1 large egg, cooked over-easy

Pinch seasoned salt

Black pepper to taste

Garnish with parsley

Instructions:

Microwave bacon on paper-towel-lined plate for 5 minutes on High or until crisp. Set aside. In a small skillet sprayed with nonstick oil, crack an egg over medium-high heat. Sprinkle with seasoned salt and black pepper. Fry until set, then carefully flip over. Turn off heat. Continue cooking until white is set, but yolk is still runny. To assemble sandwich, slather both pieces of quinoa toast with mayonnaise. Layer ripe tomatoes, romaine lettuce leaves, and bacon strips on one slice. Slide the fried egg onto the bacon. Top the sandwich with the remaining slice of quinoa toast. Garnish with parsley. Serve immediately.
