Fried Lavash Triangles

Lavash, like anything else these days, can often be purchased in the Deli Department of your local supermarket without having to make it at home. Lavash slightly resembles pita bread or flatbread, but much thinner. Different varieties are available including flax, oat bran, and whole wheat. The package I bought contained 4 sheets. Obviously, you can make triangular snack chips or square crispy crackers. Once you try it, you’ll see how versatile lavash really is. Crunch-time is back to Munch-time. 

FRIED LAVASH TRIANGLES

Ingredients:

2 sheets of lavash bread

1-2 tablespoons vegetable oil 

2 tablespoons olive oil

1 teaspoon tajin seasoning

1/2 teaspoon sea salt

1/8 teaspoon cayenne pepper powder

Instructions:

Preheat oven to 200°. Set aside a baking sheet. Warm vegetable oil in an iron skillet over medium-low heat. Brush the top of each sheet of lavash bread with olive oil. Sprinkle with tajin seasoning and sea salt. Sprinkle with cayenne pepper powder, to taste. Using a kitchen shears, cut lavash bread into triangles of desired size for snack chips. Place a single layer of triangles in the iron skillet. Watch closely. Using a tongs, flip over to fry both sides. When slightly golden, transfer the fried lavash triangles to the baking sheet, still forming a single layer. Repeat frying process until all chips are fried. Place baking sheet in the oven for about 5-6 minutes. Remove and let cool. This turns the chips crispier and adds more crunch. Serve with tzatziki dip.

Icy Watermelon Margarita

A friend once told me, “Every good gathering begins with a cocktail, presented by the host.” Not only does it bring people together, which usually happens in the kitchen, but it sets the tone for an entertaining evening. Conversation begins to flow as people mingle with real-life stories and silly jokes. I once asked all my guests to write down something about themselves that no one else knew, but wouldn’t mind finding out about. We had a hilarious time matching those statements with people in the room. I’m sure you could imagine.

ICY WATERMELON MARGARITA

Ingredients:

6 ounces watermelon juice

1 1/2 ounces tequila

1 1/2 ounces triple sec

1 ounce natural orange juice

1 tablespoon fresh lime juice

Tajín chili-lime seasoning, for the rim

Lime slices, for garnish

Instructions:

Chill the glasses in the freezer for 15 minutes. Place the tajín seasoning in a shallow dish. Wet the rim of the glass with a lime wedge. Dip the glass into the tajín seasoning, coating the rim. In a cocktail shaker filled with ice, add the watermelon juice, tequila, triple sec, orange juice, and lime juice. Shake until frothy and well chilled, about 25 times or one minute. Add crushed ice to the prepared glasses. Strain the margarita into the prepared glasses. Garnish with a lime slice.

LIME WATERMELON STICKS

Ingredients:

1/2 small watermelon, cut into sticks

1/2 teaspoon chili-lime seasoning

1/4 cup Greek yogurt

1 tablespoon lime juice

2 teaspoons natural raw honey

1/8 teaspoon tajin seasoning

Zest of lime, for garnish

Instructions:

Arrange water melon sticks on a plate. Sprinkle with chili-lime seasoning. To make a dipping sauce, combine Greek yogurt, lime juice, raw honey, and tajin seasoning. Mix well. Spoon into a small dish. Sprinkle with lime zest. Serve watermelon sticks with the yogurt sauce on the side for dipping.

I’m a tequila-girl; not a crazy one, but one who has a zest for life. I like chili peppers, too. As you read through the recipe, let me offer alternative ways to “tone down” the cocktail. Because the non-alcoholic margarita mix is frozen into cubes, they can be dropped into a blender and made into a tasty frozen margarita. Simply adjust the amount of spicy tequila (or not) to suit your taste. A slushy is also very tasty, using the non-alcoholic margarita mix ice cubes and adding sparkling water. Now you see, everyone can be happy with this tasty margarita.

ZAPATA TEQUILA SHOTS

Ingredients:

Chili-lime seasoning blend

1 cube of frozen margarita mix*

1 1/2 ounces pepper-infused tequila**

Jalapeño slice, for garnish

Lime wedge, for garnish

Instructions:

Sprinkle the chili-lime seasoning onto a saucer. Circle the rim of a stemmed cocktail shot glass with a fresh cut lime. Dip the glass onto the saucer of chili-lime seasoning to create a flavorful rim. Add one cube of frozen margarita mix. Pour the pepper-infused tequila over the ice cube. Add a jalapeño slice and lime wedge for garnish. Serve.

Advanced Instructions for Frozen Margarita Mix Ice Cubes:

*Using small 15-count square silicone ice cube trays, fill each tray with your favorite margarita mix. Freeze overnight. Remove cocktail ice cubes and store in zipper freezer bags. Repeat until all the margarita mix is frozen into ice cubes.

Advanced Instructions for Pepper-Infused Tequila:

**To make your own version of pepper-infused tequila, begin with 750 mL of blue agave tequila gold. Using gloves, slice 2-3 chili peppers. Remove stems and partial seeds to control heat; discard. Add the sliced chili peppers to bottle of tequila. Reseal; shake bottle. Store in a cool, dry area for one week. Then pour the tequila through a fine mesh sieve into a large measuring cup. Transfer the pepper-infused tequila back into the bottle. Seal and store in the refrigerator.

I’m not saying I want to burn the roof of my mouth, but I do appreciate the capsaicin-released adrenaline rush from time to time. I might even sneeze if I get a little too ambitious. The tangy flavor of chile peppers seem to be a natural substitute for using table salt, which I make an effort to limit in the daily diet. In case you’re wondering, if a hot pepper becomes too hot for you, reach for cheese instead of water. Cheese and dairy products actually neutralize the intensity and cool things down a bit. Then let the tug-of-war continue, because you know you want more.

JALAPEÑO CRISPS AND CURLS

Ingredients:

8 ounces sharp cheddar cheese, finely shredded

1/4 cup parmesan cheese, grated

1 smidgen garlic powder

1/4 teaspoon tajin seasoning

1/4 teaspoon red pepper flakes

1 jalapeño pepper, seeded and chopped

Instructions:

In a bowl, combine parmesan cheese, garlic powder, tajin seasoning, and red pepper flakes. Toss to mix; set aside. Trim a piece of parchment paper to fit a microwave-safe plate. Scoop 1-2 tablespoons of sharp cheddar cheese onto the parchment paper, forming a pile. Sprinkle parmesan cheese mixture on top. Arrange jalapeño pieces on each pile. Microwave for 1 minute on High power. If needed, microwave an additional 30 seconds longer until the cheese is crisp and golden. Remove plate from microwave and allow cheese crisp to cool to the touch. Carefully transfer cheese crisps to a wire rack. For curls, quickly wrap a cheese crisp around the handle of a wooden spoon until molded. Reuse parchment paper. Repeat process until all the cheese ingredients are used. Store at room temperature.

Radish Corn Salad

What’s in there, you wonder. Look and see. Fresh kernel corn shucked off the cob, garden fresh radishes sliced as thin as a close shave, and jalapeño peppers to add a nice touch of spice. It’s as mouthwatering in appearance as well as in aroma. The unbelievably fresh lime infused olive oil gives it a burst of citrus that only growers can describe. Partner it with a squeeze of lime juice for a punch that targets the taste buds. But just a little. No bruising involved.

RADISH CORN SALAD

Ingredients:

1 1/2 cups fresh corn kernels, equal to 2 ears of corn

3 radishes, thinly sliced

1 tablespoon jalapeño, finely chopped

1 tablespoon lime olive oil

1 teaspoon lime juice

1/2 teaspoon tajin seasoning

Fresh cilantro, for garnish

Instructions:

In a bowl, combine fresh corn kernels, thinly sliced radishes, and chopped jalapeños. Gently toss. Drizzle with lime olive oil and lime juice. Sprinkle tajin seasoning over all. Garnish with chopped cilantro. Serve chilled.

Mango Avocado Radish Salad

What’s Cooking in Gail’s Kitchen? Clean Eating: Mango Avocado Radish Salad! You’ve heard the expression, “You are what you eat”. In essence, food becomes a source of energy or sluggishness. Personally, I want fuel for my body that benefits brain function, metabolism, eliminates anxiety, and extinguishes inflammation. It’s a no-brainer. Too often junk food includes processed foods and artificial sweeteners. Sure, it may be easy and convenient. But by eating whole foods that look and smell amazing, you’re sending a great message to your body that says, “Honey, you’re worth it.”

MANGO AVOCADO RADISH SALAD

Ingredients:

1 cup organic frozen mango chunks, thawed

1 ripe avocado, pitted and skin discarded

1 tablespoon lime juice

1/2 teaspoon tajin seasoning

2 radishes, sliced very thin

2 tablespoons feta cheese, crumbled

2 tablespoons lime olive oil

Fresh cilantro, for garnish

Instructions:

Chop the mango chunks into bite-sized pieces. Arrange on a platter. Chop the peeled avocado into bite-sized pieces. Transfer to a shallow dish. Drizzle with lime juice. Sprinkle with tajin seasoning. Arrange avocado around the mango on the platter. Trim the radishes; slice very thin. Insert among the mango and avocado chunks. Crumble the feta cheese over all. Sprinkle on more tajin seasoning, if desired. Drizzle lime olive oil over all. Garnish with cilantro leaves. Serve chilled.

Lime-Seasoned Roasted Carrots

What’s Cooking in Gail’s Kitchen? Clean Eating: Lime-Seasoned Roasted Carrots! My favorite new seasoning is Tajin Classico*. The first time I tasted it, it was on the rim of a frosted margarita glass. That’s because it is a popular Mexican spice blend of chili peppers, sea salt, and lime juice. The sweet and salty tones awakened my taste buds, with a snap of citrus. It adds a layer of zing I can hardly describe. What I can say, though, is you may find yourself sprinkling it on everything from meat and vegetables to popcorn and beverages.

LIME-SEASONED ROASTED CARROTS

Ingredients:

1 pound carrots

2 teaspoons adobo sauce

2 tablespoons olive oil

4 tablespoons orange juice

1/2 teaspoon tajin seasoning

1/2 teaspoon cumin powder

1 orange, sliced and halved

Instructions:

Preheat oven to 400°. Cut the top off the carrots and discard. Cut the carrots in half lengthwise; then into quarters. Transfer to a shallow dish. In a bowl, whisk together adobo sauce, olive oil, orange juice, tajin seasoning, and cumin powder. Pour over the sliced carrots; toss to coat. Spread in a single layer on a baking sheet that has been sprayed with nonstick oil. Arrange orange slices. Roast carrots for 30 minutes, or until tender. Serve warm.

Jicama Avocado Salad

What’s Cooking in Gail’s Kitchen? Fab Foodstuff: Jicama Avocado Salad! Allow me to introduce you to the legume family. Jicama is a cousin to beans, peas, and lentils. It provides protein, which is important to everyone, whether you’re a vegetarian or not. Choosing foods that are beneficial to a healthy diet can keep a weekly menu from turning hum-drum and boring. Jicama can be prepared in any number of ways. Eating it raw is just one of them. Its taste slightly resembles a crispy red apple. Only recently I slathered peanut butter all over a slice as a variation from a celery stick. Jicama is also low-carb, if that’s important to you. Not a raw-veggie-kind-of-person? Slice ‘em up and make a batch of french fries. It works.

JICAMA AVOCADO SALAD

Ingredients:

I large jicama

1 avocado, pitted and chopped

Zest of 2 limes

1 teaspoon Tajin seasoning

1/4 teaspoon smoky paprika

1/8 teaspoon garlic powder

Juice of 2 limes

Fresh cilantro

Instructions:

Using a chef’s knife, slowly peel the thick skin of the jicama. Cut a thin slice at the top and bottom so the vegetable can keep from rolling. Working from top to bottom, slide the knife under the skin to remove the tough, fibrous outer covering. Rinse jicama and slice into matchsticks. Transfer to a bowl. Halve the avocado and remove pit. Scoop the flesh away from the skin. Chop avocado into bite-sized pieces. Add to the jicama sticks. Sprinkle with lime zest, Tajin seasoning, smoky paprika, and garlic powder. Squeeze lime juice over all. Add chopped cilantro leaves. Gently toss and serve.
