Chorizo is one of those impulse items that make it into the cart. I often fry it up, crumble it for meals later on, label it, and then store it in the freezer for another day. It’s at times like this I pat myself on the back with congratulations for having such foresight.

FLATBREAD FIESTA

Ingredients:

1 naan flatbread

1-2 tablespoons olive oil

1 tablespoon cornmeal

1/8 teaspoon garlic powder

1/2 cup chunky salsa, prepared

1 cup Mexican cheeses, shredded

1/2 cup cooked chorizo, drained and crumbled

2 tablespoons yellow onion, chopped

2 tablespoons green chilies, chopped

2 tablespoons jalapeño peppers, chopped

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Set aside. Rub olive oil on bottom of flatbread. Spread with cornmeal, pressing into the dough. Sprinkle with garlic powder. Flip over and place this side down on prepared baking sheet. Brush top with remaining olive oil. Bake for 5 minutes. Remove flatbread from oven. Carefully spoon chunky salsa over flatbread, spreading to edges. Layer Mexican cheeses over top. Divide cooked and crumbled chorizo over salsa. Finish layering with chopped onions, green chilies, and jalapeño peppers. Bake 15 minutes longer to melt the cheeses for a nice crispy crust. Remove flatbread from oven. Cool slightly before using a pizza cutter. Serve with a tossed garden salad.

ZESTO PESTO BREAKFAST BURRITO

Ingredients:

3 eggs

1 teaspoon Everything But Bagel seasoning

1/4 teaspoon sea salt

1/8 teaspoon black pepper

1 1/2 tablespoons butter

1/2 cup cheddar cheese, shredded

1 cup baby spinach leaves

2 large flour tortillas

1/4 cup basil pesto

1/4 cup mozzarella cheese, shredded

1 small avocado, sliced

1 tomato, chopped

2 slices crispy bacon

1/2 cup precooked chicken, cut into chunks

2 slices applewood smoked ham

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Set aside. In a bowl, whisk together eggs, Everything But Bagel seasoning, sea salt, and black pepper. In a skillet over medium heat, warm the butter. Pour in the eggs and cook until the bottom is set, approximately 1-2 minutes. Sprinkle on the cheddar cheese. I’m not much of a canned tuna fan, but I do appreciate sushi-grade tuna, even if it’s found in the freezer section of the grocery store. Yellowfin and Ahi are two favorites than have delicious flavor. Being mild, yet firm, they work well raw, cubed, seared, or grilled. Be adventurous. Who knows? You may occasionally substitute a beef burger for a tuna burger. But that’s a recipe for another day. Don’t knock it till you try it.

YELLOWFIN TUNA NACHOS

Ingredients:

Corn tortilla chips

1 cup Mexican cheese blend, shredded

1 tomato, diced

1 avocado, pitted and cut into chunks

1/4 teaspoon red pepper flakes

1/4 teaspoon dried oregano

1 tablespoon olive oil

2 4-ounce yellowfin tuna steaks

2 tablespoons black sesame seeds

1/2 cup Ranch dressing, prepared

2 tablespoons wasabi paste

Instructions:

Preheat the oven to 400°. Spray a baking dish with nonstick oil. Layer with corn tortilla chips. Next, layer Mexican shredded cheese over tortilla chips. Divide diced tomatoes and avocado chunks over all. Sprinkle with red pepper flakes and dried oregano. Bake for 10 minutes. Meanwhile, preheat a grill pan on high heat. Brush with olive oil. Sprinkle both sides of the tuna steaks with black sesame seeds. Sear steaks on the grill for 3 minutes; flip and sear 2 minutes longer. Remove to a plate and tent with aluminum foil for 2 minutes. Then slice yellowfin tuna steaks against the grain. Remove nachos from oven. Arrange sliced yellowfin tuna over nachos. In a small bowl, combine ranch dressing and wasabi paste. Stir until smooth. Drizzle over nachos. Serve immediately.

Sooo, what is the difference, you wonder. The secret is in the name. It’s made with butter! The tomatoes, coconut milk, and seasonings are cooked slow enough to transform the sauce into a gravy-like consistency with a nice kick of flavor. Also, by slow-cooking the chicken, it becomes fork tender and juicy. Ahhh, now I have your attention. Sounds like a grocery list is in order. Bravo. Your family will thank you.

BUTTER CHICKEN

Ingredients:

2 pounds chicken breasts, skinless and cut into chunks

1/2 sweet onion, chopped

1 jalapeño, seeds removed and diced

1/2 teaspoon garlic powder

2 tablespoons unsalted butter

1 tablespoon curry powder

2 teaspoons garam masala

1/2 teaspoon turmeric

1 teaspoon chili powder

1/2 teaspoon ground ginger

1/4 teaspoon cayenne pepper

14.5 ounce can coconut milk

6 ounce can tomato paste

Fresh cilantro, for garnish

Dollop of Greek yogurt, for garnish

Instructions:

In a slow cooker, add chicken chunks, chopped onion, diced jalapeño, and garlic powder. Stir to combine. Dot with cubes of butter. In a medium bowl, stir together curry powder, garam masala, turmeric, chili powder, ground ginger, and cayenne pepper. Add coconut milk and tomato paste. Whisk to combine. Pour over chicken mixture. 1 cup cherry tomatoes, halved

1 tablespoon kosher salt

I sheet frozen puff pastry, thawed

1/2 pound gourmet pesto cheese, grated

2 tablespoons fresh oregano, chopped

Olive oil, for drizzling

Instructions:

Arrange tomatoes in a single layer on a baking sheet lined with paper towels. Sprinkle with kosher salt. Allow to rest for 20 minutes to release juices. Pat dry. Preheat oven to 400°. On a lightly floured surface, roll out puff pastry into a 10”x13” rectangle. Transfer dough to a parchment paper-lined baking sheet. Ingredients:

Cut mozzarella cheese slices in half and cover the tomatoes. Top with shredded provolone cheese. Sprinkle Italian herb blend over all. Bake 10 minutes longer, or until cheese is gooey and tomatoes have softened. Drizzle with more olive oil, if desired. Garnish flatbread with fresh basil.

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Egg in a Bagel! It seems I will go to many lengths to avoid frying an egg for breakfast. Let me introduce you to my latest obsession. Baked eggs. And before you ask, YES, you can adjust the baking time to have a luscious runny yolk with solid whites or a hard-set one. I’ve done both, actually. It’s all a matter of personal taste. Of course, any bagel variation will do, so make it fun by switching things up. I’ve also used cheddar cheese, smoky gouda, and parmesan reggiano, depending on what I have on hand. My husband likes to alternate breakfast meats, while I add a fresh fruit cup or side dish of Greek yogurt. As you can see, we keep things far from boring at mealtimes. You should, too.

EGG IN A BAGEL

Ingredients:

1 sesame seed bakery bagel, halved

2 tablespoons butter

1/2 teaspoon Everything But Bagel Seasoning

4 slices provolone cheese

2 eggs

Seasoning salt and Italian herbs, to taste

Avocado, Grape Tomatoes, and Cilantro for garnish

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil, then line it with parchment paper. Set aside. Cut out the hole in both sides of the bagel to enlarge it to 3/4” wide. Butter the cut side of each bagel. Sprinkle with Everything But Bagel Seasoning; set aside. On a paper plate, stack 2 slices of provolone cheese on top of each other. Microwave for 30 seconds on High setting. Allow melted cheese to cool slightly before transferring with a spatula to the prepared baking sheet. Place the buttered side down of a bagel half onto the cheese disc, pressing to form a seal. Repeat process for the remaining bagel portion. Crack one egg into each bagel hole, making sure the yolk remains intact. Sprinkle with seasoned salt and Italian herbs. Bake 10 minutes, or until the eggs are set. Serve immediately with avocado slices, halved grape tomatoes, and fresh cilantro sprigs.

Cucumber Cylinder Salad

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Cucumber Cylinder Salad! How do you turn a salad from Humdrum to Aha? Keep it interesting and appealing to the eye. Or, if you’re like me…..think portion control. My husband tells me all the time I cannot keep a salad small. If I begin with a larger bowl (so he can toss the ingredients once the dressing is applied), I inevitably add more “stuff” and end up with the same results: too much salad for the size of the bowl. Now I have the solution. The cucumber cylinder becomes the bowl, so to speak. Problem solved. I guess living with an engineer has its benefits.

CUCUMBER CYLINDER SALAD

Ingredients:

1 English cucumber

1 cup shredded lettuce

6 cherry tomatoes, cut in half

1 slice of red onion, chopped

1/4 cup parmesan cheese, hand grated

Pinch Italian herbs

Instructions:

Using a sharp knife, cut along the length of the cucumber using the middle elongated slices. Chop the reserved outer sections to add as filling on the salad. Place each elongated slice upright onto a salad plate; secure with a decorative pick. Fill each cylinder with shredded lettuce. Arrange cherry tomato halves and red onion pieces. Top with roughly grated parmesan cheese. Sprinkle with Italian seasonings. Serve with your choice of salad dressings.
