What’s Cooking in Gail’s Kitchen? Time To Eat: Eggplant Tacos! Nowadays, everyone’s ears perk up when they hear the word “tacos”. Yet many of us are still looking for low-carb alternatives to the regular corn or flour shells. It’s time to think eggplant. When sliced, eggplant is thick enough to hold toppings and sturdy enough to support a bed of melted cheese. Do you see what I’m laying down for you to pick up? Tacos just got healthier while creating another way to enjoy all those family favorites and textures.

EGGPLANT TACOS

Ingredients:

1 eggplant, washed and sliced 1/2- inch thick

2 tablespoons olive oil

1/2 teaspoon sea salt

1/8 teaspoon black pepper

1 cup Mexican cheese blend, shredded

1 ear of corn, kernels removed

1/4 cup green pepper, finely chopped

1/2 cup cherry tomatoes, chopped

1/2 cup pinto beans, drained and rinsed

Fresh cilantro, for garnish

Instructions:

Preheat a stovetop grill pan over medium-high heat. Brush both sides of the eggplant slices with olive oil. Season with sea salt and black pepper. Cook on the grill pan for 3 minutes per side. Top each eggplant round with a handful of Mexican cheese blend. Allow the cheese to melt. Cover, if necessary. Meanwhile in a small bowl, combine corn kernels, green pepper, chopped cherry tomatoes, and pinto beans. Toss well. Transfer eggplant tacos to a serving platter; top with a spoonful of tomato, green pepper, corn, bean salsa. Garnish with fresh cilantro. Serve.

Deconstructed BLT Bento Box

What’s Cooking in Gail’s Kitchen? Time To Eat: Deconstructed BLT Bento Box! Lunch just got more interesting. Toss out that brown paper bag for something a little more sophisticated. Presentation is everything, right? Since I seldom eat three squares a day, I find “grazing” youthful and more satisfying. By assembling a variety of my faves, I created a modern version of an old classic…..the BLT. Aha! Caught your attention. These fun foods have been transformed into a finger food convenience by making them packable and diverse. Sure, I tweaked the ingredients a tad, but therein lies the wholesomeness. Now you, too, can create healthy balanced colors and textures that taste great together.

DECONSTRUCTED BLT BENTO BOX

Ingredients:

6 slices thick bacon, cooked and crispy

12 mini Italian bruschetta toast slices, rosemary and olive oil variety

4 tablespoons sriracha mayonnaise

1/3 cup micro greens

1/2 pint grape tomatoes, whole

Instructions:

Arrange the prepared ingredients in a divided bento box travel container. Seal and refrigerate until ready to take with you for a meal-on-the-go.

Pork Tamales

What’s Cooking in Gail’s Kitchen? Cheerful Choices: Pork Tamales! I have high respect for the Mexican culture, especially when it comes to cooking. For years I have procrastinated about making tamales, probably because I love them and really don’t want that to change. Seriously though, for me the Mexican homemade version is labor intensive. Most little girls were taught the family traditions by their mothers and grannies. To them it comes easily as an art form after decades of making the traditional dish. Sauces from scratch can take an entire day if you begin with boiling the chilies and blending the spices. I left that labor of love for the pros. Now if you’re game, roll up your sleeves, tie on an apron, and let’s get started.

PORK TAMALES

Ingredient Toppings for Tamales:

Tomatoes, diced

Green onions, sliced

Lettuce, chopped

Lime wedge, for garnish

Ingredients for Corn Husks:

6-ounce package dried corn husks

Instructions:

Soak corn husks in hot water for one hour or until softened. Drain husks; pat dry. Set aside.

Ingredients for Cornmeal Dough:

1 1/4 cups solid shortening

4 cups corn masa mix

1 3/4 cups warm chicken broth

1 tablespoon salt

2 teaspoons paprika

Instructions for Cornmeal Dough:

In a large bowl, beat solid shortening on medium speed with an electric mixer until creamy, about 3 minutes. In another bowl, stir corn masa mix, chicken broth, salt, and paprika until combined. Gradually add corn masa mixture to shortening, beating on medium speed just until blended after each addition. Cover dough with plastic wrap until ready to use. Set aside.

Ingredients for Pork Filling:

2 cups fully cooked roast pork, shredded

10-ounce can mild diced tomatoes and green chiles, drained

3/4 cup barbecue sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder

1/2 teaspoon red pepper flakes

1/4 teaspoon salt

Instructions for Pork Filling:

In a bowl, combine shredded pork, diced tomatoes and green chilies, barbecue sauce, garlic powder, onion powder, chili powder, red pepper flakes, and salt. Stir until well blended. Set aside.

Ingredients for Tamale Sauce:

2 tablespoons unsalted butter

3 tablespoons flour

2 cups unsalted beef broth

2 tablespoons adobo sauce from chipotles in adobo

2 teaspoons taco seasoning

Instructions for Tamale Sauce:

In a skillet over medium heat, warm unsalted butter. Do not scorch. Sprinkle in flour, whisking until a paste is formed. Stir 2 minutes longer. Gradually add beef broth, stirring constantly. Allow mixture to slightly thicken, about 5 minutes. Add adobo sauce and taco seasoning. Stir until combined. Set aside. Serve warm over tamales.

Instructions for Assembling Tamales:

Spread about 3 tablespoons of Cornmeal Dough into a 3”x3 1/2” rectangle in center of one corn husk. Spoon one heaping tablespoon of meat filling down the center of the Cornmeal Dough rectangle. Fold long side of husk over, enclosing meat filling with Cornmeal Dough. Fold bottom of husk over folded sides, leaving top end open. Tie with strips of corn husk or bakery twine. Transfer to a platter. Repeat with remaining ingredients. In a 16-quart tamale steamer pot, fill water to about 1/2” from the bottom of the rack. Stand tamales above the water level, closed end down, on rack in steamer.* Cover the tamales with leftover husks and a clean cloth before placing the lid on the pot. Bring to a boil, reduce heat and steam over medium heat for two hours until masa is no longer doughy. Add water as necessary. Take one tamale from the middle to check it is done before turning pot off. When done, allow tamales to cool for 10 minutes to set properly. To serve, transfer tamales to a platter. Unwrap a tamale, ladle on the sauce, and top with diced tomatoes, green onion slices, and chopped lettuce. Garnish with lime wedge. Serve immediately.

*In order to keep the tamales upright, put a heat-proof cup, bottom up, in the middle of the rack. It will help the tamales to balance upright.

Mediterranean Chickpea Salad

What’s Cooking in Gail’s Kitchen? Cheerful Choices: Mediterranean Chickpea Salad! Either you can use a recipe or not. This salad is very forgiving if you wish to add or subtract ingredients. Some prefer to add crumbled feta cheese, others pass. Some prefer to remove the skins of the chickpeas, others eat them the way they come out of the can. If the skins rub off during the rinsing process, so be it. Either way, this no-cook meal can be ready in a few minutes giving you more time to sort through the day’s mail and play with the family dog.

MEDITERRANEAN CHICKPEA SALAD

Ingredients:

2 tablespoons olive oil

2 tablespoons red wine vinegar

1/8 teaspoon garlic powder

1 teaspoon oregano

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 red onion, thinly sliced

1 cup celery tops with leaves, chopped

1 cup cherry tomatoes, halved

2 baby seedless cucumbers, sliced

3 mini yellow sweet peppers, sliced

1 15-ounce can cooked chickpeas, rinsed and drained, skins removed

Instructions:

To make the dressing, whisk together olive oil, red wine vinegar, garlic powder, oregano, sea salt, and black pepper. Set aside. In a serving bowl, combine sliced red onions, celery leaves and tops, cherry tomato halves, sliced cucumbers, yellow sweet peppers, and chickpeas. Mix well. Pour the dressing over all. Toss to combine. Refrigerate for half an hour before serving.

Tomatillo Tilapia

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: Tomatillo Tilapia! Shortcuts are my saving grace. Take, for instance, charred tomatillo salsa. Sure, I could go through the process of boiling, grilling, or roasting fresh tomatillos with garlic and spices to transform them into a smoky, spicy, and tender salsa. But since I already had a jarred version in the refrigerator, I thought taking the easier route for dinner would be a better idea. You may, too.

TOMATILLO TILAPIA

Ingredients:

2 tilapia fillets

1/2 cup roasted tomatillo salsa

1/4 red onion slices

1 mini sweet red pepper, chopped

1/2 cup cherry tomatoes, halved

Instructions:

Preheat oven to 375°. Lay two sheets of aluminum foil on a work surface. Place one tilapia fillet in the center of each piece of foil. Divide the tomatillo sauce between the two foil packs. Place red onion slices over fish. Top with chopped red peppers and cherry tomato halves. Fold foil over top and roll up edges to create a sealed packet. Place on a baking sheet. Bake in the preheated oven for 20 minutes, or until fish flakes easily with a fork. Serve immediately.

Quiche Cups

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: Quiche Cups! Beginning the day with eggs in any form is always a good idea. Adding vegetables makes them even better when sautéed, which eliminates moisture than can turn a quiche soggy. By eliminating the bread crust, and focusing on the cream for a filling more like custard, the depth of flavor intensifies. Cheese simply makes everything incredibly Yumolicious. Need I say more?

QUICHE CUPS

Ingredients:

1/4 cup diced prosciutto

1/4 cup broccoli florets

1/4 cup onions, chopped

1/2 pint grape tomatoes, halved

5 eggs

1/4 cup light cream

1/4 teaspoon seasoned salt

1/8 teaspoon black pepper

1/4 cup sharp cheddar cheese, shredded

Instructions:

Preheat oven to 325°. Spray the bottom of a muffin tin. Set aside. Heat an iron skillet over medium heat. Add prosciutto. Sauté a few minutes, stirring often. Add the broccoli florets, chopped onions, and grape tomatoes. Cook 3-4 minutes longer. Remove from heat. Add 2 tablespoons of mixture to each muffin well. In a medium bowl, whisk together eggs and light cream. Add seasoned salt and pepper. Mix well. Fold in sharp cheddar cheese. Carefully pour egg mixture into each muffin well, filling about 3/4 full. Bake 25 minutes, or until quiche cups are set. Remove from oven and serve immediately.

Coctel de Camerones

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: Coctel de Camerones! Two of my favorite foodstuff cravings time after time lead me to cocktail shrimp and Mexican cuisine. A friend shared his secret recipe, adding clam juice, to enhance the liveliness this dish creates for the taste buds. For now, I put it on pause to use at a later time. The spicy Bloody Mary concoction is bold beyond measure. It is also all-natural, gluten free, and contains no high fructose corn syrup. Treat yourself to the real thing.

COCTEL DE CAMERONES

Ingredients:

2 cups Spicy Bloody Mary mix

1/3 cup medium chunky salsa

1 teaspoon Worcestershire sauce

1 teaspoon Everything But Bagel seasoning

1 teaspoon kosher salt

1/2 teaspoon dried Italian herbs

1 tablespoon lime juice

1 ripe avocado, chopped after skin and pit discarded

1 large tomato, chopped

1/2 yellow sweet onion, chopped

12 jumbo precooked shrimp, tails removed

Fresh cilantro, chopped

Tortilla chips

Instructions:

In a large bowl, combine Spicy Bloody Mary mix, medium chunky salsa, Worcestershire sauce, Everything But Bagel seasoning, kosher salt, dried Italian herbs, lime juice, chopped avocado, chopped tomato, and chopped sweet onion. Mix well. Divide “cocktail sauce” equally between four stemmed glasses. Place three jumbo shrimp in each glass. Top with chopped cilantro. Chill for one hour. Serve with tortilla chips.

Utz’s Spanish Tortilla

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Utz’s Spanish Tortilla! I like to talk with servers at restaurants. More often than not, they reveal significant tidbits about recipe ingredients or preparation that send my mind spinning. For example: Did you know instead of adding hash brown potatoes to an omelet you can substitute potato chips? When folded into a beaten egg mixture, they thicken the omelet while keeping it light and airy at the same time. It’s pure genius. After all, everyone has a bag of potato chips stashed somewhere.

UTZ’S SPANISH TORTILLA

Ingredients:

1 tablespoon butter

1 teaspoon olive oil

4 eggs, beaten

1/4 teaspoon seasoned salt

1/4 teaspoon black pepper

1/8 teaspoon red pepper flakes

2 cups Utz’s Kettle Potato Chips*, crushed

Grape tomatoes, green olives, and baby spinach for garnish

Instructions:

Warm the butter and olive oil over medium heat in a small frying pan. In a mixing bowl, combine eggs, seasoned salt, black pepper, and red pepper flakes. Mix well. Fold in the crushed potato chips. Pour the mixture into the preheated pan. Cook 2-3 minutes until golden brown. Place a flat plate over the top of the pan; invert the pan onto the plate to flip the tortilla out. Slide the tortilla back into the pan with the golden side up. Cook 2-3 minutes longer until firm. Transfer to a serving plate. Garnish with grapes tomatoes, green olives, and baby spinach leaves.

Kielbasa Grilled Romaine

What’s Cooking in Gail’s Kitchen? Here Come the Holidays: Kielbasa Grilled Romaine! When the sun comes out and the wind dies down, it’s not unusual to see Northerners uncover the gas grill for a momentary glimpse of Summer. Everyone needs a reprieve from the winter doldrums, right? Nothing works better than a protein-rich complex carbohydrate meal, in my opinion. And grilled foods definitely lift the mood like a breath of fresh air. Sound painless? It pretty much is. Even the birds are chirping louder than usual.

KIELBASA GRILLED ROMAINE

Ingredients:

1 pound kielbasa sausage link

2 romaine hearts

3 tablespoons olive oil

1/4 teaspoon seasoned salt

1/4 teaspoon garlic and herb seasoning

1/8 teaspoon red pepper flakes

1/2 pint cherry tomatoes, halved

4 ounces parmesan cheese, crumbled

Instructions:

Remove kielbasa sausage link from package. Rinse and pat dry. Transfer to a platter. Rinse romaine lettuce hearts. Pat dry. Trim the end stalks, leaving enough to keep the bunches intact. Transfer to a platter. In a small dish, combine olive oil, seasoned salt, garlic and herb seasoning, and red pepper flakes. Using a silicone brush, coat the leaves of the romaine hearts, inside and out with the olive mixture. Halve the cherry tomatoes; place in a serving bowl. Preheat the outdoor grill on High setting. Using tongs, transfer the seasoned romaine lettuce hearts directly to the grill. Repeat with kielbasa sausage link. Grill for 3 minutes. Flip the romaine lettuce and grill 2 minutes longer. Rotate the kielbasa sausage for even browning. Remove all to clean platters. To serve, place charred romaine lettuce hearts on a dinner plate. Divide the kielbasa sausage between plates. Add cherry tomato halves. Top with crumbled parmesan cheese. Drizzle with remaining olive oil mixture. Serve immediately.
