What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Glorious Glazed Pecans!  Go to any big city or farmers market and you’ll find street vendors roasting sweet and savory candied nuts. The bakery aroma practically has you walking on air. Now you can bring this enticing smell and sugary sweetness right into your very own kitchen. I’ve made it a tradition to bake a couple batches for holiday gift-giving. When mixed with an assortment of smoked almonds, wasabi peas, salty cashews, and honey roasted peanuts, these glazed pecans become a gourmet choice for absolutely anyone on your list. In fact, anticipation creates excitement followed by open delight and thanksgiving. 

GLORIOUS GLAZED PECANS 

Ingredients:

1 pound pecan halves 

1 cup sugar

1 teaspoon sea salt 

1 teaspoon cinnamon 

1 egg white, room temperature 

1 tablespoon water

Instructions: 

Preheat oven to 300°. Spray a baking sheet with nonstick oil. In a small bowl mix sugar, salt, and cinnamon. Stir well and set aside. In a large bowl beat egg white and water until frothy. Add one pound of pecans and coat well to cover. Pour sugar mixture over nuts. Stir completely to form a coating over pecans. Transfer nuts to the baking sheet. Form a single layer. Bake 30 minutes, turning every 10 minutes to form a crystallized finish. Remove from oven. Let cool and then store in an airtight container.

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Banana Toffee Pops! It’s no secret kids love bananas. Adults do, too. With the dog days of summer upon us, make a treat with frozen bananas. Turn them into tasty pops covered in sprinkles or throw them in the blender for a refreshing smoothie. Can’t make up your mind? Do both! 🐵Question: How do you get a monkey down the stairs? 🐒Answer: Have it slide down the banana-ster! 🍌🍌🍌Have a great day!
BANANA TOFFEE POPS
Ingredients:

3 firm bananas, peeled and cut in half

6 popsicle sticks

8 ounces Greek yogurt 

1/3 cup toffee pieces, slightly crushed

1/3 cup mini chocolate chips
Instructions:

Place a sheet of wax paper on a baking sheet. Set aside. Combine toffee pieces and mini chocolate chips. Sprinkle onto a sheet of wax paper. Once the banana is coated in yogurt, you will roll the banana in the toppings before placing on the wax paper-lined baking sheet. Peel bananas. Slice each banana in half. Insert one stick into the bottom end of a banana segment. Working one at a time, spread yogurt all over the banana until it is completely covered. Coat in candy pieces. Place on the baking sheet. Repeat. When all six are complete, place baking sheet in the freezer. Freeze 4 hours or overnight. Keep treats frozen in storage bags until ready to serve.*
*Serving Suggestion: For smaller portions, slice bananas into 2″ chunks.

What’s Cooking in Gail’s Kitchen? A Second Helping of Ice Cream Sandwiches! Oh sure, it would be way easier to open a box of treats from your freezer, but once you take the time to bake this cookie crust and fill it with gourmet ice cream, you’ll fill your freezer with this old-fashioned classic instead!
ICE CREAM SANDWICHES 
Ingredients:

4 cups flour

4 teaspoons baking soda

2 teaspoons cinnamon, ground 

1 teaspoon cloves, ground 

1 teaspoon ginger, ground 

1 teaspoon sea salt

1 1/2 cups butter, softened 

2 cups sugar plus 1/2 cup

1/2 cup molasses 

2 eggs

Vanilla Bean Gourmet Ice Cream 
Instructions for Cookie Crust:

Preheat the oven to 375°. Line baking sheet with a silicone baking mat and set aside.

In a large bowl, whisk together flour, baking soda, cinnamon, cloves, ginger, and salt. 

In the bowl of a stand mixer, cream together butter and 2 cups sugar until combined. Add in the molasses and eggs and mix well. Slowly add the flour mixture to the ingredients of the stand mixer and mix until all is combined. Fill a small bowl with the remaining 1/2 cup sugar. Form teaspoon-size dough into balls then gently roll them in the granulated sugar. Place onto baking sheet, two inches apart. Repeat until all the cookie dough has been used. Bake only 10 minutes for soft and chewy results. Let cool on baking sheet for 5 minutes then transfer to a wire rack to cool completely.
Instructions for Ice Cream Sandwiches:

Spread the softened ice cream evenly over one cookie into a layer one inch thick. Top with a second cookie. Press down gently. Place in a ziplock sandwich bag and freeze until hard, about 5 hours. Repeat with remaining cookies.
