Yellow Bloomin’ Onion

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Yellow Bloomin’ Onion! Nothing is more fitting for Spring than an appealing appetizer that resembles a flower, in my opinion. Now you can make a healthy version at home by baking the breaded onion instead of deep-frying it. The last few minutes under the broiler give it a crispy finish that adds extra crunch to the delicious petals. And the dipping sauce….oh my gosh, you have to try it!

YELLOW BLOOMIN’ ONION

Ingredients:

1 large yellow onion

2 tablespoons flour

1/4 cup Italian bread crumbs

1/4 cup Panko crumbs

1/4 cup Parmesan cheese, grated

1 tablespoon Cajun spices

2 eggs, beaten

1 tablespoon milk

1-2 tablespoons butter, melted

Seasoning salt to taste

Instructions:

Preheat oven to 400°. In one bowl, combine the flour, bread crumbs, Panko crumbs, Parmesan cheese, and Cajun spice. Mix well. Set aside. In another bowl, combine beaten eggs and milk. Whisk together. Set aside. Cut the top side of the onion. Turn over and carefully cut the root side just enough to peel the outer skin of the onion. Leave the root intact as this will be the base and hold the onion together. Discard onion skins. In order to give the appearance of an open flower, 16 sections are made. With the root side up, place the knife 1/8″ away from the core and slice straight down. It is best to begin with quarters and then make 3 slices in each quadrant all the way around. Carefully turn the onion over and spread the “petals” apart. Dip the onion in the milk bath and wash it completely using a pastry brush. Carefully transfer the onion to the bowl filled with breading. Beginning at the bottom, cover each petal with dry coating. Again using the pastry brush, continue coating the petals until the egg wash is gone. You may alternate the egg mixture and dry coating to cover the petals. Transfer the onion to an oven-safe pie plate or dish. Cover with foil and bake for 15 minutes. Using hot pads, take the pan from the oven and remove the foil. Using a pastry brush, coat the onion with melted butter. Return to the oven. Bake 10 minutes longer, or until crispy. I set the broiler on High and broiled it for 4-5 minutes to make it extra-crunchy. Watch carefully so it does not burn. Remove from oven. Sprinkle with seasoned salt. Place on a serving platter. Serve with dipping sauce. 

DIPPING SAUCE

Ingredients:

1/4 cup mayonnaise 

1/4 cup Greek yogurt

3 teaspoons ketchup 

2 teaspoons Lea and Perrins 

2 tablespoons horseradish 

1/2 teaspoon paprika 

1/8 teaspoon cayenne 

Instructions:

Combine mayonnaise, yogurt, ketchup, Lea and Perrins, horseradish, paprika, and cayenne. Mix well and refrigerate for one hour. Pour into a small cup and place in the center of the onion. 

Dried Beef Cheeseball

What’s Cooking in Gail’s Kitchen? Grocery List Ideas: Dried Beef Cheeseball! This is one of those all-time favorite appetizers that are crowd-pleasers. Some refer to it as “chipped” beef; others call it “dried” beef. I guess it depends on where you lived the first time you sampled it at a family friendly gathering. Either way, the umami salty savory concoction tickled your taste buds while tempting you for more. Just one more. In my experience, the firm texture of the spreadable cheeseball will last long after all the crackers and pretzels have vanished. Then there’s no other option but to “sigh” and reach for the celery sticks to finish it up. 

DRIED BEEF CHEESEBALL 

Ingredients: 

16 ounces cream cheese, softened 

4.5 ounces dried beef, chopped and divided 

5 green onions, chopped and divided 

8 ounces extra sharp cheddar cheese, shredded 

1/2 teaspoon seasoned salt

2 tablespoons Worcestershire sauce 

1/2 teaspoon garlic powder 

Instructions: 

In a large mixing bowl, combine cream cheese and chopped dried beef (reserving about 1/4 cup chopped beef), 3 green chopped onions, shredded cheddar cheese, seasoned salt, Worcestershire sauce, and garlic powder. Mix well. Roll into a ball and place in plastic wrap. Chill for one hour, or until firm. Unroll the cheese ball from the plastic wrap. Roll in the reserved chopped beef and remaining chopped onions. Serve with crackers. 

Jumbo Shrimp Cocktail

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: Jumbo Shrimp Cocktail! Cocktail sauces can be homemade using a chili sauce base or by using a ketchup base, (or both) which means you probably already have the ingredients on hand. You control the heat; you control the spice. Always begin with a little horseradish so your guests don’t end up red-faced, sneezing, or tears running down their cheeks. The unexpected rush of heat that horseradish can produce can be somewhat unpleasant or highly addictive. Serve it wisely. 

JUMBO SHRIMP COCKTAIL 

Ingredients:

2 pounds jumbo shrimp, precooked with tail on

1/2 cup ketchup 

1/2 cup chili sauce

2 tablespoons prepared horseradish 

1 tablespoon lemon juice

2 teaspoons Worcestershire sauce

1/2 teaspoon wasabi paste

Mixed greens

Instructions:

Rinse and drain the shrimp. Pat dry with a paper towel. Set aside. To make the cocktail sauce, combine ketchup, chili sauce, prepared horseradish, lemon juice, Worcestershire sauce, and wasabi paste. Mix well. Pour cocktail sauce into a serving dish. To assemble the shrimp cocktail, fill the bottom of a large bowl with ice cubes. Add a layer of mixed greens. Arrange the jumbo shrimp onto the mixed greens. Serve chilled with the cocktail sauce. 

Coctel de Camerones

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: Coctel de Camerones! Two of my favorite foodstuff cravings time after time lead me to cocktail shrimp and Mexican cuisine. A friend shared his secret recipe, adding clam juice, to enhance the liveliness this dish creates for the taste buds. For now, I put it on pause to use at a later time. The spicy Bloody Mary concoction is bold beyond measure. It is also all-natural, gluten free, and contains no high fructose corn syrup. Treat yourself to the real thing. 

COCTEL DE CAMERONES

Ingredients:

2 cups Spicy Bloody Mary mix 

1/3 cup medium chunky salsa

1 teaspoon Worcestershire sauce

1 teaspoon Everything But Bagel seasoning

1 teaspoon kosher salt

1/2 teaspoon dried Italian herbs

1 tablespoon lime juice

1 ripe avocado, chopped after skin and pit discarded

1 large tomato, chopped

1/2 yellow sweet onion, chopped

12 jumbo precooked shrimp, tails removed

Fresh cilantro, chopped

Tortilla chips

Instructions:

In a large bowl, combine Spicy Bloody Mary mix, medium chunky salsa, Worcestershire sauce, Everything But Bagel seasoning, kosher salt, dried Italian herbs, lime juice, chopped avocado, chopped tomato, and chopped sweet onion. Mix well. Divide “cocktail sauce” equally between four stemmed glasses. Place three jumbo shrimp in each glass. Top with chopped cilantro. Chill for one hour. Serve with tortilla chips. 

Ranch Pretzel Twists

What’s Cooking in Gail’s Kitchen? Ranch Pretzel Twists! You’re thinking snack-city. I know, right? Except this version of baked pretzels is made with one of the healthiest foods around: Chia Seeds! They’re a good source of vitamins and minerals in a balanced diet. With every bite you’ll practically be doing the “Happy Dance”.

RANCH PRETZEL TWISTS

Ingredients:

15-ounce bag of pretzel twists 

1 cup pure vegetable oil

1/8 teaspoon garlic powder

1/4 teaspoon cayenne pepper 

1/4 teaspoon seasoned salt

1/4 teaspoon Worcestershire sauce 

1 packet Ranch seasoning mix

1 tablespoon chia seeds

Directions:

Preheat the oven to 275°. Empty pretzel twists into a gallon storage zipper bag. Mix thoroughly all the remaining ingredients except chia seeds. Pour over pretzels and close the bag. Toss the bag to evenly coat all pieces until the oil is absorbed. Empty contents onto a baking sheet coated with non-stick spray. Try to form a single layer. Lastly, sprinkle the chia seeds over the pretzels. Bake 10 minutes. Then turn pretzels over and bake an additional 5 minutes. Remove from oven and let cool before storing in sealed container. 

Poppyseed Ham Sliders

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Poppyseed Ham Sliders! For a buttery good appetizer or game day snack, these quick and easy sliders get the party going. Be prepared to watch them disappear. If you’re short on time, make them a day ahead and store, covered, in the refrigerator. You will need to adjust the baking time to 20 minutes (covered) and then 8 minutes (uncovered). Either way, your family will thank you for being such a crowd pleaser. Simply smile and respond, “This old recipe? I’ve had it forever.”

POPPYSEED HAM SLIDERS

Ingredients:

12-count Hawaiian sweet dinner rolls

1/3 cup mayonnaise 

6 slices Swiss cheese, cut into quarters

24 slices deli honey ham

1 tablespoon poppyseeds

1 1/2 tablespoons Dijon mustard

1/2 cup butter, melted

1 tablespoon onion powder

1/2 teaspoon Worcestershire sauce

Instructions:

Preheat oven to 350°. Cut the rolls in half; spread mayonnaise onto one side of the rolls. Place a slice of Swiss cheese between two slices of ham. Replace the top of the rolls. Transfer sandwich to a baking dish. Repeat. In a medium bowl, whisk together poppyseeds, Dijon mustard, melted butter, onion powder, and Worcestershire sauce. Pour butter mixture over the rolls, just covering the tops. Cover with foil; let sit for 10 minutes. Bake for 10 minutes, or until cheese is melted. Remove foil; bake 2 minutes longer until the tops are slightly browned and crisp. Serve warm. 

Oregano Garlic Salad Dressing

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Oregano Garlic Salad Dressing! If oregano and garlic were dance partners, they’d begin as a hip-hop two-step and quickly advance to the Argentine tango. Simmer lightly, highlighted with food and drink, for romance later on. Besides pairing well with the taste buds, they provide extraordinary health benefits to boost the body’s immune system. Some people even say this combo increases their energy level and metabolism. I know both spices take first place in my spice cabinet. Perhaps you agree. 

OREGANO GARLIC SALAD DRESSING

Ingredients:

1/2 cup olive oil

2 tablespoons lemon juice

1-2 tablespoons white wine vinegar

1-2 tablespoons Worcestershire sauce 

3 cloves garlic, minced

1 teaspoon dried oregano 

1/4 teaspoon sea salt

1/8 teaspoon cracked black pepper

Instructions:

Quickly whisk together lemon juice, white wine vinegar, Worcestershire sauce, minced garlic, dried oregano, sea salt, and cracked black pepper. Slowly drizzle the olive oil into the mixture. Whisk together until the oil and vinegar are completely blended. After about two minutes, the dressing should appear to be uniform in texture. 

Effortless BBQ Beef

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Effortless BBQ Beef! If you are a guy, or have a husband like I do, who craves the deep beefy flavor he can sink his teeth into, you may want to keep this recipe in your stash of favorites. It requires very little effort, but delivers satisfying results. Brisket is actually dense and savory, so don’t let the fatty underside deter you. Once it’s cooked, the fat is removed thus leaving behind the luscious beefy taste associated with lean steak. The thick barbecue sauce adds more moisture to the meat, making it perfect for sliders and sandwiches. Game on! 

EFFORTLESS BBQ BEEF

Ingredients:

2-3 pounds beef brisket

1 tablespoon dried thyme leaves

1 tablespoon paprika 

2 teaspoons black pepper 

2 teaspoons sea salt

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon ground cumin

1 cup water

1 1/2 teaspoons liquid smoke

3 tablespoons Worcestershire sauce

18 ounces prepared barbecue sauce

Instructions:

In a small bowl, combine dried thyme leaves, paprika, black pepper, sea salt, onion powder, garlic powder, and ground cumin. Mix well. Rub spice mixture all over the top of the brisket. Pour water into the bottom of a slow cooker. Transfer the spice-rubbed brisket to the slow cooker. Pour liquid smoke and Worcestershire sauce over the top of the brisket. Cover with the lid. Cook on Low setting for 8-10 hours. Once done cooking, remove the brisket to a platter. Remove fat from the bottom of the brisket; discard. Shred the brisket. Carefully pour the water out of the slow cooker. Place the shredded brisket back into the slow cooker. Cover with barbecue sauce. Gently stir to mix. Cover and cook 30 minutes longer until the brisket and sauce are heated through. Serve warm. 

Bleu Cheese Ball

What’s Cooking in Gail’s Kitchen? Bright Ideas: Bleu Cheese Ball! I’ll never forget my first taste of bleu cheese. I was having dinner with my father in a charming restaurant nestled along the Mississippi River in the heart of Nauvoo, Illinois. The waiter came over and offered us a complimentary tasting of their claim to fame, bleu cheese. It was aged in the local wine cellars, he boasted, while pouring a taste of wine for the perfect pairing. One bite, one sip and I was in love. My father, on the other hand, wrinkled his nose and said the cheese tasted like old socks. Needless to say, I finished his portion.

BLEU CHEESE BALL

Ingredients:

8 ounces Neufchâtel cheese, softened

4 ounces bleu cheese, crumbled

1/2 cup sharp cheddar cheese, shredded

2 teaspoons Worcestershire sauce

Green onion snips

Instructions:

In a mixing bowl, combine Neufchâtel cheese, bleu cheese crumbles, shredded cheddar cheese, and Worcestershire sauce. Form into a ball. Roll in green onion snips. Refrigerate for one hour. Serve with crackers, pretzel sticks, and smoked almonds.
