There are a lot of people who call themselves a “chef” but cannot cook at all. Going to school does not mean you are a better chef or cook than someone who did not go to culinary school. The passion is still there. Be yourself and create what you like. Forget about the rest. As you say, follow your passion. 🙂
I used to have a “chef” work for me who either burned or under cooked everything, and he insisted that beef stroganoff was made from a tomato base. I pulled out at least 5-8 cookbooks showing him that stroganoff was made from sour cream, NOT tomatoes, but he still would not admit he was wrong. He claimed to have been a chef working on the cruise lines, but we found out later he was only a line cook, and not the Executive Chef. Needless to say, he did not stay in my kitchen for very long at all.
