Dining Outside the Home: Tortilla Republic Kitchen and Margarita Bar in Koloa, Kauai. Picture this. The sun is super-bright and tropical-warm to the point where ducking into a Mexican cantina for a salt-rimmed margarita would have been a good idea about an hour ago. Nevertheless, the shade on the outdoor patio feels 10° cooler under the turquoise blue umbrella as the breezes are beginning to stir. The house margarita goes down easy on its way to an order of Quesadilla Vegetariano. I’m sure you get the picture. Complimentary tortilla chips and spicy salsa are perfect for snacking. This is a recipe for making my day.

Bourbon Balls

Eating My Way Through the Holidays! Festive Foods: Bourbon Balls! Remember the scene from “The Grinch Stole Christmas” where the adults in Whoville are throwing a key party? Well, I’m convinced they may have been nibbling on holiday Bourbon Balls based on the way they were flirting and having a crazy-fun time. Be forewarned. This recipe does contain chocolate and alcohol. You may want to mention it.

BOURBON BALLS

Ingredients:

1 cup semi-sweet chocolate morsels

3 tablespoons corn syrup

1/2 cup bourbon

2 1/2 cups vanilla wafer crumbs

1/2 cup powdered sugar

1 cup pecans, finely chopped

Granulated sugar

Instructions:

Pulse vanilla wafers in a food processor to make crumbs. Set aside. Over hot (not boiling) water, melt chocolate morsels; remove from heat. Blend in corn syrup and bourbon. In a large bowl, combine vanilla wafer crumbs, powdered sugar, and nuts. Add chocolate mixture. Blend well. Chill 30 minutes. Using a melon ball utensil, scoop dough into 1″ balls. Roll in granulated sugar. Store in covered container for several days to season flavor.

What a Wonderful Year

Instagram knows how to make a blogger feel good. They took a look at all the photos that I posted @gail_dorna (Snapshotsincursive) for 2018 and listed the Top Nine most popular. We saw Lemon Elderflower Cake in celebration of the royal wedding, organic Mustard Glazed Rainbow Carrots as a healthy side dish, and scrumptious Banana Bread for a wholesome breakfast. The Pretzel Crust Pecan Pie drew rave reviews in addition to a colorful Chop Chop Salad that made a nice weeknight meal. Maybe you remember them all, especially if you follow me on Instagram as well as Facebook and WordPress. Without the support of endearing friendships and loyal family members, this journey of the palate would not be possible. Many blessings to everyone and thankfulness for all the encouragement. Dining Outside the Home: Olympic Cafe in Kapaa, Kauai! Slide into a booth with a view of the street, or sit in the bar where the crosswinds cool off sunburned skin. Olympic Cafe daily specials can vary from breakfast combinations to two-handed thick burgers or spicy ahi sandwiches. Either way, the portions are generous so if you walk away hungry it’s your own fault. Just make sure you leave room for dessert. It’s worth it. The Kauai Pie is meant to be shared. Listen to this: Kona coffee ice cream loaded with shaved coconut, dark chocolate, and macadamia nuts. Don’t forget the fudge swirls and whipped cream. Now grab a fork and submerge into an island sugar coma.

Dining Outside the Home: Pizzeria Portofino in Lihue, Kauai! If the aromas of Italian tomato, roasted garlic, and fresh basil waft through the air the second you raise the lid of the takeout box, you already know the pizza inside is going to taste good. The Americano combination of savory sauce, salty pepperoni, and gooey mozzarella cheese make chowing down come easy. Whether the crust is chewy soft or charred crisp, everyone wins at Pizzeria Portofino. That’s the beauty of ordering to please. Spend all day at the beach, then save some serious dough. Dine-in or carry out. For me? With a view like this with a private balcony, it was an easy choice to make.

Gruyère Onion Soup

Eating My Way Through the Holidays! Festive Foods: Gruyère Onion Soup! Everyone, sooner or later, falls in love with French Onion Soup, in my opinion. After all, who can resist the savory taste of caramelized onions, buttered croutons, and gooey melted cheese smothered in a beef broth that’s been splashed with a well-aged cognac? I wish I could tell you it’s as easy to make as opening a can of soup, but it isn’t. Don’t hate me. Let’s just say this…..if you are looking for an evening of mystery, romance, and excitement, then read on. This “soup de jour” may be the love potion that’ll woo the night away. Bon Appetît!

GRUYÈRE ONION SOUP

Ingredients:

3 Vidalia onions, peeled and sliced

2 tablespoons butter

1/2 teaspoon sea salt

1/2 teaspoon Herbs de Provence

1 cup white wine

1 teaspoon honey

1/2 cup apple cider vinegar

10 ounces beef consommé

1 cup low-sodium chicken broth

2 tablespoons Lea & Perrins Worcestershire sauce

4 ounces Montamoré cheese, crumbled

Splash of cognac

4 slices baguette, toasted

4 tablespoons Parmesan cheese, grated

4 slices Gruyère cheese

Parsley flakes to garnish

Instructions:

In a shallow bowl, microwave sliced onions on HIGH for 2 minutes. In a large skillet, melt butter on low setting. Do not scorch. Layer onions over butter. Sprinkle with sea salt and Herbs de Provence. Cover and do not stir for 10 minutes. Remove lid and stir occasionally until onions are dark in color, another 10 minutes. Turn heat to High and add white wine and honey. Cook until wine is reduced and consistency is thick. Reduce heat to Simmer. Add apple cider vinegar, beef consommé, low-sodium chicken broth, and worcestershire sauce. Simmer for 15 minutes. Ladle soup into four oven-proof crocks placed on a heavy baking sheet. Add Montamoré crumbled cheese. Top with a splash of cognac. Place a toasted baguette slice on top of soup. Sprinkle with Parmesan cheese. Lay one slice of Gruyère cheese over each bowl, with corners slightly overlapping sides. Broil on High for 2 minutes until cheese is bubbly and golden. Remove carefully! Garnish with parsley flakes and serve immediately.

Dining Outside the Home: JJ’s Broiler in Lihue, Kauai. Even if you’re not a sport enthusiast, you can still get a healthy meal with an oceanfront view of Kalapaki Bay. Portions are generous, so sharing is encouraged. Order several menu items for a taste explosion of flavor. For starters, Crispy Won Tons with two dipping sauces is amazing: salty soy or hot mustard. Double-dipping allowed, as long as your partner doesn’t mind. The Cobb Salad is practically a vegetable garden on a platter. Crispy romaine lettuce provides a bed for chunks of turkey, ham, and bacon. Add avocado slices, chopped tomatoes, sliced eggs, and bleu cheese crumbles. Now you’re talking. Smother it with salad dressing, toss, and eat. Life doesn’t get any better than this.

Rum Raisin Cookies

Eating My Way Through the Holidays! Festive Foods: Rum Raisin Cookies! Before you turn the page, let me clarify…you can choose to omit the rum in this recipe and substitute with water and opt for rum extract instead. Either way, if you’re a raisin-lover, this version puts the “plump” in raisin to make them moist and chewy. In the time it takes to preheat the oven and assemble the remaining ingredients, the raisins are ready to use. Trust me, everyone will thank you!

RUM RAISIN COOKIES

Ingredients:

2 cups raisins

1 cup dark rum

3 1/2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon sea salt

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1 cup butter, softened

1 3/4 cup sugar

2 eggs, slightly beaten

1 teaspoon vanilla extract

1 teaspoon almond extract

1/2 cup almonds, chopped

Instructions:

Preheat oven to 350°. In a medium saucepan, combine raisins and rum. Bring to a boil; boil for 3 minutes. Reduce heat and simmer uncovered for 15-20 minutes until the liquid is absorbed and the alcohol has evaporated. Set aside; do not drain. In a medium bowl, combine flour, baking powder, baking soda, sea salt, cinnamon, and nutmeg. Set aside. Cream butter. Gradually add sugar, mixing until creamy. Add the slightly beaten eggs, vanilla extract, and almond extract. Gradually add the flour mixture, stopping occasionally to scrape the sides of the bowl. Mix thoroughly before folding in the raisins and chopped almonds. Drop with a tablespoon 2″ apart on greased cookie sheets. Bake 12-13 minutes. Cool on wired rack.

It has everything from succulent lobster to jumbo shrimp and crab legs. The presentation is incredible! Want to save room for dinner? The Ahi Poke Martini is perfect for two. The fresh Ahi chunks are tossed with soy sauce, onions, and toasted sesame seeds. The kick of chili is amazing! Entrees are served on a 500° platter that keeps food hot until the very last bite. Whether it’s a celebration or not, dining here turns every meal into a special occasion.
